My Birthday Bábovka — a mramorová bábovka (marble bábovka)


We have no big plans for my birthday tomorrow. We are staying frugal right now. But to mark the day, I experimented with making a bábovka. The recipe I used called for a 6 cup Bundt pan as a substitute for a bábovka mold and all I had was a 12 cup pan. So my cake looks a little flat. But, I sliced a piece just to check it out and it looks just fine! Nice and moist. I did NOT eat it. Just carefully tucked it back into the cake—according to the folks at New World Witchery folklore says, “One should not celebrate one’s birthday before the actual date of one’s birth. It will bring bad luck.”
One of the things I love about these cakes is no frosting is required. I am terrible at icing cakes. It always looks like a three year old attempted it. In one of the articles I read, they said that sometimes in addition to powdered sugar, the cakes are decorated with almonds. I used twelve to symbolize the months of the year, and I like to think of the vanilla and chocolate parts representing the light and dark halves of the year.
Note: if you decide to make one, pay close attention to the instructions on preparing your pan AND the notes below on removing it from the pan. I followed the author at 196 Flavors’ (link below) advice to a tee and a cake that seemed extremely stuck, popped right out, after I followed the second step and left the Bundt pan upside down on a plate. Mine took only 10 minutes, not the forty-five the article said to expect. I had walked into another room and all of a sudden heard an unexpected THUNK.
Bábovka is a type of sweet pastry baked from rubbed or leavened dough. It is a typical pastry not only in the Czech Republic, but also in Poland, Austria, Slovakia and southern parts of Germany (known there as Gugelhupf and similar); in form and composition, Bábovka is also similar to Italian panettone and French kouglof.



In the Czech Republic, bábovka is most often prepared in two colors—mramorová bábovka (marble bábovka)—with a light and a dark part, with the dark part made from dough usually colored with cocoa In some regions, raisins, candied fruit, coconut, crushed walnuts, pieces of chocolate, pieces of apples and even bananas are added to the dough before baking. Bábovka is prepared in a special mold of the same name, which gives the pastry its typical shape with a hole in the middle, and is decorated with powdered sugar.
The cake has been a part of the Czech culinary tradition since the 17th century. The name originally evolved from the Old Czech word bába. Bábovka also meant a baking dish, i.e. a form for a báb. The origin of the word is not entirely certain, but it may come from the Polish word bába, which translates as children's food.

“The bábovka mold can be made of copper, but it is usually terracotta (earthenware). Its specific shape makes it possible to ensure a uniform diffusion of heat in the middle of the dough and obtain even cooking.”
“The bábovka molds, equipped with hooks, are often used to decorate kitchens and homes. Originally, they were hooked by the housewives in the kitchen to show a certain ease and the gastronomic quality of the house. The commentary of the Unterlinden Museum states that “copper molds, or their glazed terracotta versions, could also be offered as a wedding gift, at which time they were regarded as lucky charms for birth to come.”

“The unfolding of the bábovka can be a delicate task. As the cake is out of the oven, it must first be allowed to cool for one hour on a cooling rack. Then, place a plate above the mold, and turn the cake upside down quickly. Then let gravity operate for 45 minutes. Obviously, the times may vary depending on the mold and baking conditions. Magically, the cake will unmold perfectly. All you have to do is decorate it now.”
The sponge cake is made from a dough made from flour, eggs and milk . The base for the light component of the sponge cake is obtained by whipping the egg white. The dark component is prepared by adding cocoa. Another variation of the sponge cake is prepared from oil and water instead of milk.
The dough for a yeast-raised cake is prepared from flour, eggs, milk, plus butter and yeast .

BUONGIORNO BELL'ANIME ☕ 💖 😘 ☔ Che fatica stamattina mettere i piedi giù dal letto... Troppo freddo ❄ questi continui sbalzi termici non giovano alla salute. Parliamo degli outfit di questi giorni, non che i miei siano meglio nei giorni "normali", ma mi sono superata... Tenuta casalinga composta da tuta semi leggera con calzettone e ciabatte aperte...'na finezza, accompagnando il tutto con felpa spaiata, ritirata fuori dal cambio stagionale che avevo appena fatto 😭sono stata presciolosa!!!! Ma non mi aspettavo che in questo periodo le temperature scendessero così in picchiata.
