it’s funny because i am weird about food textures so i’d only eat potatoes in a sambar! it’s also funny because the only time i’ll eat sambar these days is if there’s dosa. i’m famously not a fan of idlis or sambar lol
have you ever had this .. paste of moong dal (?) (we call it uzhunnu, it’s a part of the batter as well) toasted with spices, ground and then mixed in oil?
This is so wild to me but I asked my grandma and apparently it is indeed a thing in some areas??? I guess maybe more in the border of Tamil Nadu and Kerala?
Yeah Dosai is my love (crispy with ghee 🫠) but Idli is way easier to make I was really lazy that night lol.
You mean the thaaliphu you add in the end aka thadka/tempering? Because hell yeah. Or do you mean a different dish completely something like uzhundhu vadai?

Prep Time: 20 mins Cook Time: 25 mins Servings: 4
Ingredients
Green Gram - 1 Cup Raw Rice - 50 Gm (Soaked For 1 Hour) Green Chilli - 4 Nos Chopped Chopped Ginger Rock Salt -1 Tsp Cumin Seeds - 1 Tsp Turmeric Powder - 1/2 Tsp Asafoetida Powder - 1/2 Tsp Water Ghee
Method:
Soak the green gram for 12 hours in water.
Transfer the soaked green gram into a muslin cloth, close the cloth, drain the excess water and let the soaked green gram rest for 12 hours for sprouting.
Keep the sprouted green gram aside.
Soak the raw rice/parboiled rice in water for 1 hour.
Now take the soaked rice with water, chopped green chilies, chopped ginger, rock salt, cumin seeds, turmeric powder, asafoetida powder, sprouted green gram in a mixer jar and pulse a few times without adding the water.
Transfer the ground mixture into a large bowl and add salt along with some water.
Mix it well and make sure it is in the dropping consistency.
Heat a tawa and drop a ladle of batter, spread it evenly.
Apply some ghee on the sides.
Roast the green gram dosa perfectly on one side and flip it to the other and roast again.
Healthy and tasty green gram dosa is ready to be served with any chutney of your choice.

Temple Food and Community driven food are part of Indian Culture In the recently concluded Roundglass Chefs Conclave; we had a glimpse of South Indian Temple Food, Architecture; Agama Shastra and Prasad based on Time of the Pooja I curated and cooked Tamil Brahmin traditional food which is served in weddings as Breakfast for the dignitaries These dishes are no onion garlic garam masala food Some Brahmin sect will avoid even ginger in their food We always start our food with sweets - We do not have a dessert concept The reason we have sweet first is, it activates enzymes and creates hunger pangs Let's see the menu now Kasi halwa Thiruvaiyur Ashok Kasi halwa is made of White Pumpkin Sugar Ghee and most important is Edible Camphor Thiruvaiyur is the place of Saint Thyagaraja, one of the Carnatic Musical Trio There are sweet masters who are experts in making this halwa in that Village It's a mix of Dal and Wheat flour. I guess this dish is about 300 years old as wheat is not part of South Indian Cuisine Podi Idly - Everyone knows this, so let's move to Godumai Pazha Dosai It's Wheat flour Jaggery and ripen banana made into Pancakes with generous portion of Ghee 😋😁 Pidi Kozhukattai is actually a dinner in the wedding.
