I've said this before but boiling cabbage when you have access to an oven that reaches 500 degrees is a war crime on multiple levels. Instead of fumigating the building with mustard green gas, cut that sucker of a head into eighths along the length of the stem and drizzle the wedges with olive oil salt and pepper and cook it for 10 minutes at temperature, or 20 if you're not planning on using it in something else. Turn halfway through to get a nice even brown on it. Slice it up into little pieces. Make your ancestors cry with joy at your access to superior heat sources. Make your housemates cry with anger that you cooked something in the oven at 500 fucking degrees in the middle of the hottest summer in recorded history and set off the god damned smoke detector again. Doesn't matter, they'll forgive you come chili and stew season and you can't hear them over the crunch of perfectly cooked brassica anyway.

Sloth Spaghetti

Slimy and green...eww!
Heathyish. Whole wheat pasta with a brassica blend pesto! Flavorful and filling! Make vegan by replacing parm with some nutritional yeast, or omit altogether.
Ingredients
2 heads broccoli, trimmed to large pieces
1 bunch kale, de-ribbed and leaves washed
1 bunch basil
3 garlic cloves
1/2 c walnuts or cashews
olive oil, about 1/4 cup
1/2 c shredded parmesan
1 tsp salt
1/2 tsp pepper
juice of 1/2 a lemon
1 lb whole wheat pasta
Recipe
Bring a pot of salted water to boil. Do the following steps, and cook your pasta when the water is ready.
Steam your broccoli florets. Drain and cool.
In a small sauce pan of boiling water, cook your kale greens. Let cool. Drain and strain.
Toast your nuts in a frying pan or in the oven.
In a food processor, puree the nuts and garlic finely. Add in your kale, broccoli, basil and the juice of the lemon.
Once incorporated, pulse in parmesan, salt, pepper, and enough water olive oil to liquify it a little.
Pulse in 1/2 cup of pasta water to further liquify your pesto.
Drain the pasta and coat it in your pesto.

Oh. My.
Soup. First off, anyone who knows me knows that soup sits in the top echelon of food stuffs along with pizza, bread, peanut butter, and Rainier cherries. Secondly, I can sorta cook.
Wanted broccoli cheese soup. No recipe (other than I did look at one quickly to get an idea how much cheese most people put).
When I got to that point, I realized I could have skipped the cheese, but I'd already grated it.
Two small bunches of broccoli including leaves, stems sliced into ¼ inch coins. Florets are saved to be roasted for topping the soup
Some of the stems and leaves from one bunch of broccoli rabe. (I'll be eating the florets and tender tops of the stalks at another meal)
One quart of nothing-fancy, store-bought chicken stock
The above, into a covered Dutch oven or braising dish, braised over medium high heat for about 45 minutes. The stock reduces a lot, but covered it should still be enough to finish beating the crap out of the tough stems. Into a blender and puree very, very smooth (if this were for a fine dining establishment, I'd press it through a conical strainer; it is not). Add about 4 tbsps heavy cream and spin to incorporate.
Leave that in the blender and in the same pot
A few tbsps of olive oil
Two leeks, diced
One small carrot diced
Pinch of salt
Sweat, then in a little pool of olive oil in a clear spot in the pan (I needed to add 1 tbsp more at this point) bloom...
A pinch of chili flakes
1 tbsp fresh cracked pepper
1-2 tsps freshly grated nutmeg
After blooming, stir into the veg, then add 2-4 crushed/minced cloves of garlic, stirring until fragrant.
Time to add these beauties to the blender...
Puree a little more, then back to the pot.
I found the mix to be a bit thick at this point, so added maybe a half cup of water into the almost-empty blender, spun out quickly, and added to the pot. If you're going to add cheese (seriously...it's not necessary but mine was already grated), go for a little thinner than the final texture you want here.
Add the cheese if you're adding, and simmer gently to incorporate.*
Taste and adjust seasoning.
Sing paeans to our ancestors who learned to manipulate wild brassica.
* I also tossed a ½ tsp or so of sodium citrate with the cheese before adding, to aid in emulsification. Not necessary, but I have it on hand.

my routine is: cast iron under broiler -> broiler on -> coat brassica ie 1/6th of a cabbage or a broccoli head cut in half in oil, drizzle with salt -> place on pan.
cut large piece of stale baguette in half -> make wet -> place under broiler too.
then thinly julienne a stalk of green onion -> begin microwaving beans -> garnish with olive oil and onion -> grab vegetable with tongs and cut into smaller pieces on cutting board.
wash the cutting board and knife -> wipe down table -> pour glass of wine or tea or water -> grab baguette.

I need approx. 10 days off in a row to just dick around, put the garden to bed for fall, pore over friends' manuscripts, catch up on TSV, finish my Nona the Ninth audiobook, read Mary Oliver and Anne Carson, fix the slow draining sink upstairs, start brassicas for the basement veggie patch, smoke cigars, host bonfires, learn everything I can learn about the flowering trees that live 1000 years and that turn Hawai'i's lava fields into lush rainforest through sheer joie de vivre, and snuggle my boo. THEN I'll be ready to reply to a benign email and make phone calls. NOT before.

+ Well, I have another Malibu business trip coming up in a couple days, so let's see how the garden is doing; I've created a second bed and planted big and small tomatoes, as well as a few cape gooseberry (goldenberry) plants; everything's staked and tied up because it gets very windy

1/4 cup garlic cloves, peeled
1 tablespoon sherry vinegar
Kosher salt and freshly ground black pepper
4 cups arugula

For the vinaigrette: Heat the oil and garlic cloves in a small saucepan over medium-high heat until simmering. Adjust the heat to maintain a slow simmer.
