Chantilly

A labor of love for our dear Saint Honoré

the only way to eat profiteroles is when they're frozen

I have been called insane for this several times, but come on. They don't even taste good when they're not frozen, I despise them. But if they're frozen they taste good. I don't know what kind of magic this is, but somehow it makes them so much better, good even. I have bought some frozen ones just to eat them instantly several times, and every time the people around me judged me heavily for it.
