Easy, one-pot vegetarian pasta
Preparation 5 minutes Cook Time 20 minutes Total Time 0:25 Serves 4 servings Vegetarian spaghetti makes an easy, healthy one-pot pasta dinner!
Ingredients
2 teaspoons extra-virgin olive oil ½ medium yellow onion, chopped 1 (8 oz.) package button mushrooms, sliced 2 cloves garlic, minced ½ teaspoon salt ¼ teaspoon black pepper ¼ teaspoon red pepper flakes (optional) 2 cups low-sodium vegetable broth 1 (14.5 oz.) can fire-roasted diced tomatoes 10 oz. thin spaghetti noodles 3 cups fresh spinach or baby spinach ¼ cup grated Parmesan cheese, plus extra for serving For serving: ¼ cup fresh chopped basil or parsley (optional)
Instructions
Heat olive oil in a medium pot over medium heat. Add onion and mushrooms and saute for 5-7 minutes, until tender and the liquid from the mushrooms has been mostly cooked off. Add garlic and season with salt, pepper and red pepper flakes (if using) and saute another 30 seconds. Increase heat to high then add canned tomatoes and vegetable broth. Bring to a boil. Add spaghetti noodles and stir until they wilt and fit in the pot. Cover the pot, reduce heat to medium-low and cook for 5 minutes. (Your liquid should be at a low boil this whole time.) Remove lid and add fresh spinach, a couple of handfuls at a time, stirring to get the spinach mixed in and wilted. Remove from heat and let spaghetti sit, covered, for a few minutes Stir in Parmesan cheese, taste and adjust seasonings. Serve with fresh basil or parsley and extra Parmesan cheese, if desired.

Salmon with anchovy butter, Linguine with lemon sauce
salmon with anchovy butter
serves 4
4 salmon fillets
3 tbsp butter 5 anchovy fillets 3 garlic black pepper 1/2 lemon parsley to serve

preheat oven 200C
mash butter, chopped anchovies, chopped garlic, pepper. melt half of mixture on skillet, high heat.
add salmon skin side down, spoon pan stuff over the top. 3 minutes.
put salmon in oven 8-10 mins
add remaining butter mix on top to melt. squeeze lemon, add parsley.

linguine with lemon sauce
2 tbsp butter 1 lemon zest 4 tbsp heavy cream 2 tbsp lemon juice
linguine or spaghetti for 4 people parmesan

Meatless Monday Dinner: Sun-Dried Tomato Pesto Pasta.
Sometimes I get frustrated over my food pictures and then I have to remind myself, I don’t have a professional camera nor am I a food photographer. I just have my iPhone and the occasional good lighting I get in my kitchen or greenhouse. I can tell you right now that my picture does not do this dish justice. I was so close to grabbing one off of google but I like to post my own, as ugly as they may be. So here’s to the realistic, untouched version of this pasta. I’m floored every time I eat this simply because of how flavorful it is. The best part about this meal is it only takes 15 minutes, if that. It’s definitely one of those simple pastas you can fall back on when you’re short on time and feel incredibly satisfied after eating it. You won’t miss meat or cheese at all when you make this pasta, trust me. I usually eat mine with a side of bread or a salad. Absolutely delicious and the texture of the sun dried tomato is kinda “meaty” which makes it one of those meals you can trick a meat eater with. Side note: I do not like the sun-dried tomatoes in a jar with olive oil. I like the dry ones. HUGE difference in taste.
What you’ll need: This recipe like many others depends on how many people you’ll be cooking for. We’ll start with 2-3.
4 cups of pasta ( I used fusilli) 1 cup of sun-dried tomatoes ¼ cup extra virgin olive oil 1 cup fresh basil 4 garlic cloves 2 tbs of Vegan Parmesan
Method: -While your pasta is boiling, blend or process your sun-dried tomatoes, olive oil, garlic, vegan parmesan, fresh basil, and salt + pepper to taste. You don’t want to blend it too much. Still want it to be a little chunky. Just keep it long enough to break down the sun-dried tomatoes. It will be a thick texture when done.
-Once blended, add it to your pasta with a little extra olive oil, stir, and get eating. I sprinkle mine with more vegan Parmesan afterwards.
This pasta can be eaten hot or cold. I prefer mine hot so I mix everything on the stove until it heats before serving. Recipe from minimalist baker.
In between lunch and this meal, I snacked on homemade granola and some tangerines. I also had a nice sized bowl of vegan ice cream.

Chicken and Bacon Pasta with Spinach and Tomatoes in Garlic Cream Sauce
4 servings
Ingredients
2 tablespoons olive oil
1 pound chicken (chicken breast or tenders)
1 teaspoon paprika
1 teaspoon Italian seasoning (thyme, oregano, basil - combined)
5 medium tomatoes, chopped in large cubes
1 cup cooked spinach
5 garlic cloves, minced
1/4 (maximum 1/2 teaspoon) crushed red pepper flakes
6 bacon strips, cooked and drained of fat
1 and 1/3 cups heavy cream (or heavy cream and milk)
1 and 1/3 cups Parmesan cheese, shredded
10 oz penne pasta
Instructions
In a large skillet, on high heat, heat 2 tablespoons of olive oil until hot. Add chicken and cook on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked sides of the chicken with paprika and Italian seasoning. Flip the chicken over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm.
To the same pan (but without chicken), add chopped tomatoes, spinach, garlic, crushed red pepper, Mix everything.
Add heavy cream and bring to boil. Only after heavy cream starts boiling, add grated Parmesan cheese - immediately reduce to simmer and stir, while simmering, until the cheese melts and makes the sauce creamy, only about 1 minute (at most 2 minutes). Then, immediately remove from heat. Season with more crushed red pepper and salt, if needed.
In the mean time bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the pasta, rinse with cold water and drain again.
Add pasta to the skillet with the sauce. Add bacon (cooked and drained of fat) and chicken. Season with more salt if necessary. To serve, top the pasta with grated Parmesan cheese.
