Thing's Rambles #1: Eggs
Eggs! You know them, you love them—at least I hope so, considering how awesome... Food?... They are. I think eggs are a category of their own. Ah, whatever, we're going out of topic.
(long shtick about eggs below, will bore u to death)
One of the reasons eggs, chicken eggs specifically, are so crucial to the past and modern day is because the birds who lay them can do so indefinitely as opposed to other birds who only lay a certain number at a time. So long as their nest is empty, presumably taken by predators (humans), then they can lay just about every day. In the industry, male chicks are basically useless, which results in a mass crush every day. Fortunately, scientists are working on changing the sex of the chick in the eggs. However, I don't know anything about that yet.
Speaking of eggs, a man somewhere in the 1970's conducted the '7 Country Study', his conclusion being that eggs raise the chances of CVD (cardiovascular disease, AKA heart attacks) by 17% due to the SatFat (saturated fat) and cholesterol. This, of course, raised panic and attention in the public, especially when the government set guidelines for saturated fat and cholesterol. While this link isn't necessarily 100% false, it is a clunking argument. Especially in comparison to the other study linking IR (insulin resistance) to CVD, which is also linked to high sugar and high carbohydrate consumption. And while it's still not an all-time cause, it's still true 90% of the time. Remember the '7 Country Study' I mentioned prior? It was actually conducted in 22 countries, except 15 of them proved to be against what the study was about, so he ditched them. What's even more baffling than this is that even after 50 years of study after study after study, these government guidelines are still in place. Eggs do not cause CVD, rather the exact opposite, and then some more.
I'm not completely sure what the nutrients that specifically fight against CVD are (mainly because they have unpronounceable names), but eggs still carry massive benefits for your skin, muscles, bones, organs, and even your brain! This is because of the many vitamins (especially vitamin B) and high protein. Time for the main part.
Laying it all out front, a whole egg contains: Vit A (has a part in yolk coloring), Vit E (good for the heart and skin), Vit K1, Vit B1, B2, B3, B5, B6, B12, and Vit D. Those are just the vitamins. Eggs also contain DHA (omega 3), which is for the brain; folate for degenerative disease; choline to burn fat and help against fatty liver; and lutein and zeaxanthin, which are beneficial for your eyes. 
And then protein—my favorite part. It's amazing, really, because of its ability to help build protein tissues and the percentage of egg protein made into our protein. In comparison, we get 17% of its protein from soy, 16% from whey, 32% from meat or fish, and a whopping 48% from eggs. You can really see the difference between egg yolk and egg white when you take into consideration that egg white's percentage is merely 17%. 
Alright, so now that we know we get a lot of protein from eggs, what do we do with that protein? 
Well, how it works is that when our body receives protein, it either invests it into tissues (skin, muscles, bones) or energy (glucose). The ratio of how much protein is invested in tissues to glucose is actually dependent on the meal from which the protein is extracted. For example, when you get protein from meat, 30% of that protein goes into the development of your skin, muscles, bones, joints, etc. (tissues), and 70% of the protein becomes glucose (energy). For eggs, it's 49% for tissues and 51% for glucose, ranking it as the highest rate of protein for tissues, but only after breastmilk, which is a whole different and fascinating discussion.
So far, we've talked about why chicken eggs are special, scandals against them, and the great yet still incomplete benefits of them. Lastly, we will talk about egg quality.
-Is the price difference between cheap and expensive eggs worth it? 
Absolutely! You'll be getting more bang for your buck. In fact, some suggest that buying the cheap ones makes you gain 40–60% less worth. 
-Types of eggs: Pasture eggs are definitely the best type. The others are free-range eggs and no-cage eggs, etc.; eh, most of these are just marketing terms anyway. 
-Yolk color; do they matter? Well, yes, but actually, no. They do, sure, but you can't really be too sure since farmers are prone to using artificial coloring. 
-Grades: grade B eggs, grade A eggs, and grade AA eggs. Do these actually matter? 
No. Grades are mostly based on cosmetics, which can hardly matter much when you whisk them up for baking. Plus, your grocery eggs are probably already grade A eggs.
All in all, the quality of eggs depends on what the chickens are fed and if they're ethically raised, but you can't control those factors. But what can you control? The way the eggs themselves are prepared.
Dr. Berg suggests the best method is cracking the egg on a lit pan, waiting until the whites turn into their white color but not too much, and then scrambling them. This way, you can optimize how much nutrition and protein you can squeeze out of your egg. Too tedious? Just scramble them normally. 
I think the best part of eggs, despite how beneficial they are, is how relatively cheap and accessible they are. Don'tcha think?
P.S. Remember that omega 3 I told you about? The one that's good for your brain? That's a good omega. What's not a good omega is omega 6, specifically the oil restaurants use to fry eggs and such. This one actually increases the risk of CVD.

hi, i’m Des. i haven’t had an @na/mi@ account since i was probably 14. that was the last time i was thin. all my life i have had weight issues, which i now know are due to PCOS (i’m ftm, have been for 12 yrs). the only 2 times i was ever thin were when i was 9 because i played sports, and when i was 14 because i was r3stricting. i’m 5’6, and i should be somewhere in the 120-150 range to be considered healthy. my lowest was 130 in high school. i’m currently at my highest, somewhere between 250-280. at about 18 i started ballooning, rapidly gaining weight no matter how much i worked out. since then i’ve rel@psed a couple times but it never stuck because i was so scared of being how i was in high school.
back then i was a zombie. due to mental health issues but also because of my ed. i was constantly tired and sad and i wanted to be a skeleton. i preferred being d3@d thin rather than fat and alive. i don’t feel that way anymore. i don’t want to be underw3ight, i don’t want to d!3. i want to be thin, i want to lose.
i’m aware that reverting to this lifestyle and r3stricting isn’t the healthy way to lose. however, it’s the only thing that has worked for me in the past. and i believe it’s the only way to regain my self control. i definitely b!nge sometimes for emotional reasons and i am not okay with that. whenever i’ve tried to diet in a “healthy” way, i fall off of it, or i don’t hold myself accountable enough.
i feel like i’m the type of person where if i say i’ll only eat 1200 cals it turns to 1500. if i say i’ll only eat omad it’ll end up being tmad. so my theory is that i have more than enough to lose, so if my goal is to eat n0thing, i’ll probably fail but still progress.
some things i’m trying to avoid:
• ending up malnourished
i plan on taking vitamins and if i do eat, making sure it’s the right type of food to get me thru my physical job/working out/life.
• my mental health declining
i’ve been working very hard on my mh and i’m not going to throw that away. so i’ll be tracking my moods and modifying what/how much i eat to keep myself stable.
• “⭐️vation mode”
i dont want to end up keeping my fat on because my body goes into this mode. so i’m gradually going to reduce my calories over probably 6 weeks.
• going under my ugw
if i even hit my ugw it’ll be a miracle, but i don’t want to become so @ddicted to r3stricting that i continue rather than maintaining if i eventually get there.
• my loved ones finding out
i plan on making it seem like im just changing my lifestyle. i don’t want to lie, so i’m hoping no one will notice.
• failing
pretty much the only perk of me being obese right now is that my doctor wants to put me on appetite suppressants. i just have to figure out which i’d rather have, do some bloodwork, and then i’m golden.

You’ve probably heard a lot about how important it is to eat organ meat: things like liver, kidney, tripe, heart, and even brain [kaleji]
What do these meats have that the muscle meat that we’re used to eating doesn’t have?
The answer is A LOT!
🔹Organ meats are the most concentrated source of just about every nutrient, including important vitamins, minerals, healthy fats and essential amino acids.
In the olden days, organ meat was revered and saved for those at the highest echelons of society. Sometimes it was saved for pregnant women, sometimes the head of the family or tribe, sometimes the oldest members of the society, sometimes the hunters, etc.
But most of us don’t eat any organ meat anymore.
So, what changed? How have we, as a society, migrated so far from organ meats in just one generation?
There is one BIG benefit for us: organ meat, even from grass-fed animals, can be very cheap compared to muscle meat (and organ meats from grass-fed animals are even higher in nutrients than organs from grain-fed animals). So, not only do you get to eat the healthiest meat from the animal, but you get to save money doing it!

i’ve been trying to ignore how scared i really am about my health.
i’ve noticed a decline since January, where I was weighing in around 145-150 pounds a day. February is when I said something to someone. I remember all the actual muscle aches. i remember thinking i just had a crappy bed, or work was strenuous on my body. i remember how hesitant i was to consider myself celiac. i remember my stomach hurting once a day, sometimes more depending on what i might have had.
i remember mid april when i decided to go gluten free completely. i remember eating the giant drag brunch breakfast for my best friends birthday, to which turned into three days of me being immobile from the amount of pain i was in. i remember the aches. the stomach pain. the gastrointestinal issues. i remember vowing to not eat gluten.
and for some time, i improved!
i remember how frustrated i was that it was going to take a month and a half to get into the gastroenterologist. but hey at least i got an appointment. i remember counting down the days to June 13th. i remember getting poked and prodded three times over for bloodwork. i remember turning in 7 different take home tests.
and yet… nothing. labworks indicate NOTHING. the only thing it indicates is inflammation (where i do now know), low protein, an iron and vitamin b deficiency. my mother is stuck in mom mode and had bought me iron and vitamin d pills in hopes something will magically change.
i have four different doctors/clinics trying to figure out what’s wrong. no one seems to have answers. i ask my sister who went through something similar advice.
it’s getting worse. i’m getting worse. the stomach pains happen much more frequently and get worse every time. even if i’ve just had something i consider a “safe” food. i don’t know what i can or can’t eat anymore. i’m hungry all the time but have no desire to eat — if all it does is put me in such pain why bother?
at this point i just laugh when i tell my mom some things about my health. like today when i took the pee test and on the cell inflammation color match, it was the color of the highest amount of inflammation the paper provided. “that’s really bad mik,” yeah i KNOW!!! try living with it. try score higher than an 8 on 6 of the 7 surveys.
i know i’m experiencing malabsorption. i’ve lost 25-30 pounds in 4 months — nothing in my physical activity has changed. im hungry all the time but never experience hunger pains. im exhausted all the time. i have no energy. i have no drive.
i’m scared whatever is wrong with me, can’t be fixed. or it’s too late to be fixed. or it’s things that could have been fixed but now it’s been too long. i worry i’ll never return to myself. i worry ill always have the fear in the back of my mind that i may not feel well enough to go to work, a dinner with friends, a date with my girlfriend, hangout with my neice/nephews. i feel bad for canceling or calling out but i have no choice.
and no one seems to have answers.
