FLOURLESS CHOCOLATE CAKE

Rich, thick, and fudgy, flourless chocolate cake is also surprisingly simple to create. It's a tried-and-true recipe for chocolate cake that also happens to be gluten-free.
Everyone may enjoy the luscious and rich treat known as flourless chocolate cake. There is no need to modify a recipe for gluten-free diets because everyone who enjoys good dining will know how well-liked this dessert is. Don't be fooled by its seeming simplicity. Although though it is only a little over an inch thick and frequently topped with berries and powdered sugar, this dense cake has a powerful taste.
Torta Caprese is the Italian term for flourless chocolate cake. There are various genesis myths, but we adore the significance of such a "lucky mistake."

IS FLOURLESS CHOCOLATE CAKE GLUTEN-FREE?
It is, indeed! A flourless chocolate cake is ideal for a gluten-free diet because it includes no gluten-containing components. Although this cake wasn't initially intended to be gluten-free or Celiac-friendly, it has grown to be a very popular option for both.
WHAT KIND OF CREAM SHOULD I USE FOR A GANACHE?
Your ganache will be more stable the more fat there is in your cream. You will most likely find both heavy cream and whipping cream in your local grocery shop. Whipping cream and heavy cream both work to produce ganache, while heavy cream has a slightly greater fat content. Theoretically, crème fraiche or sour cream are also acceptable, but they result in a less solid ganache.
WHAT KIND OF COCOA POWDER SHOULD I USE?
Dutch process cocoa powder works well in this recipe. But plain cocoa powder that hasn't been sweetened will also work. The finest outcomes come via dutch processing. We advise avoiding low-cost, generic products as they frequently offer the lowest quality chocolate since cocoa powder quality fluctuates.
INSTRUCTIONS
An 8 or 9-inch round cake pan should be lightly greased and the oven set to 375 degrees. Use parchment paper to line the bottom.
2. In a mixing bowl that can go in the microwave, combine butter and chocolate chips. Stirring in between, microwave for 30 seconds at a time until everything is melted and smooth.

4. Pour the mixture into the ready cake pan. Bake in the preheated oven for 25 minutes.
5. Let the pan cool for five minutes. To turn the cake onto a serving dish or cake stand, loosen the edges using a knife. Let to totally cool.
6. In a mixing bowl, add the chocolate chips to make the ganache. For about 45 seconds, microwave heavy cream until it is just boiling.
7. Over chocolate chips, pour hot cream. After 2 minutes of standing, stir until smooth.
8. Cover the cake's top with ganache. Before slicing and serving, allow it cool.

The simplest peanut butter cookies ever
first introduced to me by a member of my extended family
makes between 12 and 20 cookies depending on dollop size
1 egg
1 cup sugar
1 cup peanut butter
Mix together egg and sugar
Add peanut butter and mix well
Dollop dough onto cookie sheet
Bake for 6 to 8 minutes at 350°F
This recipe scales very easily. The amount of sugar can be cut back if desired, especially if you’re using peanut butter with sugar in it.

Super nutritious meal this evening! After a Mathem grocery delivery showed up just as my blood sugar was trying to drop, and I was trying to get in something to eat anyway.

The first course, which I wolfed down while I was trying to wrangle the frozen and chilled stuff.
Since I'm doing a little better with the whole eating thing lately, I decided to try several kinds of protein bars which I thought I could handle with some careful chewing. Yep, no problem with this one! And it was tasty.
Peanut Butter Core Protein Bar consists of a deliciously creamy core of peanut butter, covered in smooth milk chocolate topped with crisp .
I noticed more peanutty nougaty stuff than actual peanut butter, per se. There's also a little caramel in there. Probably better go easy on the no added sugar stuff, if I don't want a full-on "giant bag of sugar free gummy bears" experience. Which I do not particularly. But, not at all bad for the occasional snack as planned.
And, the decidedly less sugar free main course, which I spotted and couldn't resist!

Hadn't eaten anything like that in so many years, and I figured I should be able to handle the sugar cones by now. (Yep! 😀)
Only really able to get a still pretty limited start at trying a little more of it, but I really have been impressed at the ready availability of celiac-friendly foods here. And all the SIA ice cream I've tried has been pretty good stuff. Going in optimistic about the quality here.

Because everyone obviously needed to see a chomped-on ice cream cone! 😁 It's swirled with strawberry sauce inside, besides the chocolate on top. The inside of the cone was also well enough chocolate coated that it did stay pretty crispy inside the package.
Far cry from the US-classic Nutty Buddies I grew up on! 😅 Used to absolutely love the things, though--strange half stale-soggy, half shatteringly hard as the cones were. Never mind the rest.
But yeah, a thoroughly enjoyable very late lunch, when my blood sugar was trying to plummet from more exercise than usual anyway! Add a couple of cups of coffee to wash it all down with, and that was honestly just about perfect for me right then.

I tend to feel hungrier a little fast after meals but I believe thats because I am eating more carbs from fruits and those don't take as long to digest as protein does which would come from the fish that is usually in my diet.
I have less bloating issues eating gluten free! I tend to bloat a lot and it is unpredictable.  However now I think gluten may have something to do with this problem.
I also find I feel less tired, and there is less brain fog than usual.

In terms of budget this would be my main motivator for staying fully vegan.  As long as you eat whole foods that is.  Meat is expensive, eggs and dairy are expensive.  Vegan substitutions are expensive and also significantly processed. My desire to cut costs would ultimately keep me on a vegan diet or gluten free.
However, going out and trying to eat gluten free is a challenge.  Most if not all gluten free products like gluten free bread are expensive and the only way out of paying that much money to eat gluten free is to just to avoid the substitutes all together and stick with rice and starches. 
Fish is not a sustainable food source and due to the pollution of the worlds oceans it is not very healthy to eat it either especially in large amounts.  
I think I am close enough to eating vegan that I may one day decide to stick to a vegan diet.  However, I wouldn’t stay gluten free.  I normally eat whole foods so I don’t eat much gluten but there are so many incidences where I would eat it by accident and it is too hard to keep track of.  For example, I would probably go to a friends house and eat oreo’s forgetting that almost any processed food has wheat. In addition, even though I felt better, I am also not celiac so there isn’t a very important reason for me to remember 24/7

Pepernoten - Spiced Festive Cookie Bits
To start off my first recipe, let me give you a short history of this treat. In Holland, we celebrate Sinterklaas on December 5th. It’s a holiday kind of similar to Christmas, in the sense that it revolves around presents, treats, and the presence of an old, friendly guy. Sinterklaas visits all children in Holland on this magical December evening and grants all their wishes (present-wise). But, besides all the presents, another important factor is the treats and snacks. The most important one being pepernoten. Pepernoten can best be described as spiced bits of cookie. They are made up of spiced dough, cut up and rolled as little balls, and baked in the oven (however, most people just buy them in the store). 
Since I’ve only recently been diagnosed with Celiac disease, I’ve had the chance to enjoy these treats for over 20 years. Now, I can’t have the real deal anymore, so I decided to make and bake them myself, and boy was it easy. Below you will find my first glutenfree recipe for pepernoten. Enjoy.

Ingredients:
150 grams of glutenfree flour (I used buckwheat flour, but any white basic flour will work)
brown/dark casterd sugar (You can use however much you prefer, I like mine with less sugar, but the guideline is around 75 grams)
90 grams of butter (Margarine is fine too)
10 grams of speculaas spices (Finding this outside of Holland might be tricky, but there are some good recipes for this mix online too)
2 tablespoons of milk or water (I used almond milk for this one)
Optional: a dash of vanilla essence, the liquid kind (It makes the dough a tiny bit stickier and sweeter)
The Procedure:
Put all ingredients in a bowl and mix thoroughly until a smooth dough is formed. Use your hands for this, I tried using a machine for this once and the dough stayed too lumpy. Take a baking tray and cover it with baking paper. Make small balls by taking bits of dough and rolling them. Try to keep the balls small, otherwise the center of the ball with not bake thoroughly in the oven and you want them to become crunchy in the end. I added a picture of the rolling process in the end of this recipe, so you can get an idea of the size of the balls. (Side note: you could even make them a dash tinier, these are a bit on the big side.) Put all the balls on the baking tray with a bit of space between them, they might expand a little while baking and you don’t want them to stick together in the end. Pre-heat the oven at 150 or 160 degrees Celsius (300-320 degrees Fahrenheit). Put the baking tray in the oven and leave it in for around 20 to 25 minutes, depending on the size of the balls. When done, take out the tray and put the bits on a plate UPSIDE DOWN. This is because the bottom of the bits is usually a bit moist still and you want it to become crunchy through and though. Leave the bits to cool completely. 
And that’s it! This recipe is very easy to make and the bits will remain tasty until the next day or two. The glutenfree variant of this treat is a little more crumbly and brittle than the original, but it’s very tasty nonetheless. I like mine more spicy than sweet, and that’s the fun thing about this recipe: you can decide for yourself how sweet you want them to be.
