cause like.. my body is anything but gluten friendly
in fact my body reacts very poorly to gluten
it goes into self destruct mode
I have celiac so being friendly to gluten is the opposite of what we’re going for here
we’re very anti-gluten

mushroom yogurt pasta || 10-15 mins
it’s pretty hard to show off earthy/hearty food in an appealing way, but you gotta take my word for it! this was honestly so nice + it made my apartment smell amazing!!
ingredients
- 1 serving dry gf or regular pasta (about 70g)
- a handful of chestnut mushrooms (like 5)
- 1/2 yellow onion
- a splash of soy milk (30g-ish, enough to coat the pan but not so it’s all swimming)
- 1 dissolved stock cube in 1 cup of water or a cup of veg stock
- a dollop of soy yogurt (30g-ish, enough to make it creamy but add more if you like it v v creamy)
- 2-3 frozen spinach or frozen kale cubes
- enough olive oil to fry up the goods (10-15g)
recipe
1. bring a saucepan of water to a boil and salt the water, add the pasta once ready, or as according to instructions + don’t worry if it cooks before the sauce is ready cuz we’re gonna toss it through the sauce anyway
2. as that happens, dice up your onion and sauté in the olive oil on high heat in a frying pan stirring semi frequently, as you’re doing so, you can also slice up the mushrooms and add those in once the onions have browned a little (like 5-6min)
3. once the mushrooms have absorbed the oil, add in the soy milk and slowly add the stock, adding more and more as the water cooks away
4. add the yogurt and then your frozen leafy green of choice and reduce to medium low with the pan covered, stirring and adding more stock if it starts to dry up
5. add the drained pasta to the sauce and give a nice toss through, serving into your fav bowl of choice and optionally adding some yogurt and a further drizzle of olive oil to finish up with

optionally you can also work in miso into this recipe and it adds a bit of depth to the sauce
pumpkin seeds make a great topping and add even more healthy fats to this dish
chilli flakes go amazingly with the cream sauce
to reheat, just pop in the microwave for about 2-3 mins stirring halfway or make on the stove again with a bit of extra water or stock to revive the moisture

"Well, I offer you both my deepest congratulations on your engagement," Beau nodded with an earnest smile, before turning a touch melancholy as he looked at the pair, asking, "And, on a more dour note...please, tell him I send my deepest condolences, in regards to the passing of his mother. She was...a lovely woman; hard-working, kind, a good friend...she was an admirable woman, who raised an admirable son."
Though Mrs. June Pace didn't work at Gracey Manor as long as she would've liked (having found the pay worth it if it meant getting to tend to such a beautiful, sprawling garden day in and day out, as well as see her one and only son finally have a friend beyond his teddy bear), she and Beauregard Ghast got along very well in the time she was in the Gracey's employ, her expressing gratitude at Beau looking after her son, treating him no different than Dorian, while he openly admired her resolve, her sense of humor in the face of adversity, and her skill with all things that grew. She was a lovely woman, and Beau would've liked to have gotten to know her better.

Theres a startling number of tourists who come in to the ice-cream shop asking what vegan options we have, and I'm just like "Ma'am, this is a town with approximately 10 permanent residents, where you can buy handmade moccasins next door. We are naught but simple country folks who drink milk and eat meat, both of which came from farms down the road."

If you’re Australian & haven’t seen yet. Gluten free tiny teddy cereal!! They’re also vegan if anyone’s lactose intolerant, &/or vegan too (may contain statement for milk if you’re super sensitive).
Endorsed by Coeliac Australia.
Note they don’t say GF on the front but I think it was probably a smart from a business perspective. They know this will spread through the celiac community quick, & it has already. They don’t want to turn off people who would turn their noses up at a GF label. I’m just so impressed they chose to make these super inclusive! Of course there’s some people who won’t be able to eat them, but the ingredients seem like they really tried & they’ve made something really fun. The boxes are quite big & the price is at least on par (if not better) with similar size boxes of non-GF cereal.
I’ve had the chocolate ones so far, they’re yummy. My favourite GF chocolate cereal so far (recent diagnosis, so very picky). They’re not super sweet or super chocolatey (I’m a super sweet tooth) but they are really satisfying & have a good crunch. Not too hard like many GF cereals.

Been a while since i posted here. But im back. My mental health has been up and down a lot the last few years and thus my health and cooking habits have taken a hit. I am back though.
Today i made turkey sausage patties.
Ingredients:
1lb lean ground turkey
1/2 teaspoon granulated garlic
1/4 teaspoon garlic salt
1/4 teaspoon fresh crack black pepper
1/8 cayenne (totally optional and can even increase to 1/4 if you like spice)
1 teaspoon italian seasoning
1/4 teaspoon fennel fronds or 1/8 teaspoon fennel seed
1/2 teaspoon smoked paprika
2 teaspoons minced dried onions
Mix your ground turkey with seasonings until well incooperated, then let it sit covered in the fridge for 2 hours minimum but preferably overnight. I made 2 oz patties with this batch but they plump up a lot and therefore shrink in circumference, so i recommend 3 oz patties. Warm your pan before adding the patties, and cook on medium low heat. Cook in extra virgin olive oil (other fats optional), and after you flip when they are browned on one side, cover the patty for 2-3 mins until it is finished cooking. Covering it allows it both to brown and steam, which helps it keep moist.
These freeze really well and i ended up turning them into sandwhichs with some cheese. Next time i will add some egg as well.
These are low in sodium, low in fat, and high protein. They are easy to make, so are perfect for your low energy days.

stuffed aubergines w toms + mushrooms | 20-25 min
a very light meal that’s packed w fiber and will keep you going until dinner. :) highly customisable too!
ingredients:
1 aubergine/eggplant
1/2 onion
3 tomatoes or 1/2 can chopped tomatoes
a handful of brown mushrooms (like 4-6)
2 tbsp oil of your choice, divided
(optional) a drizzle of plant yogurt seasoned w mint
1 tsp smoked paprika, salt, pepper, basil, oregano
method:
1. preheat the oven to 200c (400f) and in the meantime heat up oil in a frying pan.
2. slice the aubergine in half and score the flesh into a grid and lay flat on the pan, cooking on high heat until the oil has been absorbed.
3. remove the aubergine from the pan and place onto a baking sheet to roast on the med-high rack, roasting flesh side up for 10 minutes.
4. in the meantime, chop up your mushrooms and dry fry them until the moisture has been cooked off, stirring frequently. add in the onions later with the remaining oil, cooking until they’re fragrant and browned, about 8 minutes and then add in the seasoning followed by the tomatoes, which are either freshly chopped or canned.
5. fry with the pan lid covered on low heat now for 2 min and remove from the heat.
6. take out the aubergines from the oven and using two forks, shred up the flesh and spoon the pan mixture into the aubergines, returning to the oven for a further 10 minutes.
7. plate as desired and optionally drizzle the yogurt onto the food with some extra oil of your choice and diiiig in.
notes:
olive oil works best but can go great w avocado or walnut oil too, a neutral oil will otherwise bring out the seasoning more if that’s your preference
for extra good fats consider sprinkling crushed pumpkin seeds or hemp seeds on top
if you can’t find a plant yogurt then tahini works also or otherwise hummus :)
if you feel like this is too light for you still or need more to fill you up, i recommend also adding chickpeas or your fav beans into the mix for satiety!

All the recepies I have so far are gluten-free as I'm a celiac and I'm generally looking for a bit more diversity...

In gluten sensitivity news - since our food options were limited when we got to Little Rock on Wednesday, I had lemon pepper wings from Dave and Busters for dinner. I peeled off some of the breading. My reaction the next day was slight. I had a small rash on both arms. No swollen lymph nodes. Hard to tell if the gut weirdness was just due to junk food but it was the true awfulness I get from gluten.
The shake from Braum's in OK did not affect me even though butter brickle is not listed as Celiac friendly on their website. My guess is the stabilizers used can cause a reaction if you have Celiac. Luckily, I don't. I just really want another one of those shakes right now, though

Would any of y'all mind directing me to your favorite cookbooks that are vegan-friendly? For medical reasons, I've dropped all animal protein (except for honey), and now I need recipes. I love tofu, and damn near every veggie (green bell peppers are disgusting though) and fruit (except kiwi). I also have celiac disease, but I've got substitutes well covered for that.
Recipe books are my preference. I don't care to have a tablet in our tiny af kitchen. It gets messy in there, and a tablet won't handle the damage. Plus, I can write notes in books with ease.
