Baking Goal for October
Since I am trying to clean up the kitchen for September, I have baking and cooking goals for October because I haven't cooked real food in a very long time.
I have acquired . . . a bread maker.
$50 at ALDI.
My late uncle got a bread machine after my aunt died, loved the thing, and asked me several times if I wanted one. I lived in a tiny apartment and on the rare occasions I made bread I enjoyed kneading it by hand.
Life is different now. I still live alone, but can pass food on to coworkers. This bread machine is only $50. It makes loaves in 3 different sizes, so suitable for the terminally single. And with a curious cat, it's a more secure place to proof dough, knowing little paws and noses won't be in it.
So, $50. I made a special trip to ALDI on Saturday specifically to get it (and cat food) because I was worried it would be sold out on Sunday. (It wasn't sold out, but I would have had to get an uber home because it was not possible to carry it AND groceries).
Bread-ventures await, but I'm waiting until a) the kitchen is more functional and b) for next paycheck to buy new baking staples, like flour and yeast.

Hi nieces and nephews! 🧡 Today, I’m showing you how to make Honey Wheat Berry Bread from scratch—using a bread machine for part of the process to keep things simple. Don’t worry if you’ve never worked with wheat berries before; I’ll walk you through how to prepare them step by step!
Honey Wheat Berry Bread
Ingredients 1/2 cup hard red wheat berries 1 cup water
2 tbsp vegetable oil 3 tbsp honey 3/4 tsp salt 2 tbsp instant potato flakes 3/4 cup whole wheat flour 2 1/2 cups all-purpose flour 3 tbsp powdered milk 2 tsp white vinegar 2 tbsp vital wheat gluten 1 tbsp instant yeast
Directions
How-To cook the wheat berries. Combine 1/2 cup rinsed wheat berries and 2 cups water in a saucepan and bring to a boil. Reduce heat to medium-low and simmer, covered, for about 1 1/2 to 2 hours, stirring occasionally, adding water if necessary. Cook until soft and some are opening. Drain any standing water before adding the cooked wheat berries.
Proof your yeast with 1 cup of warm water 110° F. and the honey. When you have bubbles add to your bread machine pan.
Now add the drained wheat berries to the bread machine pan.
Next add the rest of the liquid ingredients followed by the dry ingredients on top, the salt will be the last.
Set the bread machine to the dough setting. Watch the mixing cycle, if the dough looks too dry or too wet, add a few tbsp.'s of warm water or flour to get a good soft dough consistency.
When the dough cycle is complete, remove the dough from the bread machine pan onto a lightly floured surface. Shape the dough into a roll.
Put in a bread pan that has been sprayed with cooking oil spray. Let rise for about 40 minutes to 1 hour, or until about 1 1/2 inches above the pan.
Bake at 350° F on the middle rack of the oven for about 30 to 35 minutes. The loaf should be a golden brown

When using a bread maker, sometimes they tell you this and sometimes they don’t, the order of the ingredients is what goes in first. And you want all your wet stuff in first before adding dry so you don’t have an unmixed product. It also helps not only having the ingredients but putting them in correctly. These last two days have definitely been an experience.
And once I realized how this process works my mind has been put at ease. My determination has been renewed. Plus all adhd/autism people should indulge in a breadmaker. Once it goes all you have to do is forget about it and it’ll shut itself off when it’s done. Then you can make your own stuff at home whenever and if your not hungry for it after waiting you can save it for later. And knowing you made it, put all the ingredients in yourself is comforting.
So yeah, on my attempt of 4th banana bread using the first recipe I tried. I’m cautiously optimistic this time.
