We had some nice cabbage and some lentils, and I was really in the mood for a big bowl or three of hot soup. So, we're getting sort of a mashup of these basic ideas!

Good way to profitably use up some odds and ends of vegetables, too! My mother would be proud. 😅

(I just sauteed the onions, what little celery we had, and garlic in the Instant Pot, then added most of the seasonings and the lentils with veggie broth. Cooked that for 10 minutes under high pressure, then added the rest of the stuff including a leftover half a 400g can of tomatoes. That's currently going for another 10 minutes, then we'll see. From past experience, I would NOT recommend cooking it all together for the full time unless you want crunchy lentils and/or disintegrating vegetables with sulfurous cabbage. 😰)

And, for the first time since we moved in here? It's Proper Soup Night, with some cornbread in the oven too! And smelling amazing. 😎

I actually ran across that particular recipe while looking for guidance on whether it might be a Very Bad Idea to put it in a smaller Pyrex dish, since I didn't think we really needed the usual full skillet load tonight. (May end up needing to make another batch, from the smell of things!)

General consensus? Pyrex works great.

And that actually looked pretty much like my default classic recipe from my mom, only with more sugar added. As in, any sugar at all. 😬 But yeah, that one looked good enough to share. They also mention optional adjustments to make a sweeter, cakier style like some people prefer in other regions.

Everything is smelling awesome, and I ca hardly wait.
