Roasted Cauliflower with Fried Caper Gremolata

Coriander-roasted cauliflower florets served over garlicky yogurt with a punchy, herby gremolata and roasted pitachios.

1 large head cauliflower, cut into medium-large florets (8 cups) Extra-virgin olive oil 1 tsp. ground coriander 3/4 tsp. kosher salt 1/2 tsp. black pepper 2 Tbsp. capers in brine 1/4 cup finely chopped fresh parsley 3 Tbsp. finely chopped fresh dill 1/4 cup roasted pistachios, finely chopped 1 tsp. lemon zest plus 2 Tbsp. fresh lemon juice Pinch of chili flakes 1/2 cup plain full-fat Greek yogurt or labne 1 garlic clove, grated on a microplane

Preheat oven to 450ºF. Arrange cauliflower on a large rimmed baking sheet and toss with 3 Tbsp. extra-virgin olive oil (or avocado oil), coriander, salt, and pepper. Bake for 20 to 25 minutes, tossing once midway through, until crisp and caramelized. Meanwhile, dry the capers very well by wrapping them in paper towels and pressing to absorb moisture. (If there is too much moisture, the oil will sputter aggressively.) Heat 2 Tbsp. extra-virgin olive oil in a small saucepan or skillet over medium heat. Once hot, add capers and fry until the capers start to bloom and turn golden, about 3 minutes. Transfer capers and oil to a bowl and let cool for 5 to 10 minutes. (They will crisp up further as they cool.) To the bowl with capers, add parsley, dill, pistachios, lemon zest and juice, chili flakes, and 3 Tbsp. extra-virgin olive oil. Stir, taste, and season with additional salt and pepper, if desired. In a separate bowl, combine yogurt and grated garlic; mix well. Spread garlic yogurt on a serving platter or bowl. Add roasted cauliflower, and spoon caper gremolata overtop.

denver random legacy gen 1 rolls!

i used the online generator here to roll for the legacy and the random aspiration generator here for emma’s aspiration.

traits: High Maintenance, Romantic, Lactose Intolerant 

definitely got a bit unlucky with these rolls, but this should make for an interesting playthrough. let’s go lactose intolerant food critic 

(the useless help means that on top of getting married, emma will also have to hire a nanny/butler/gardener to help around the house.) having to do that with gen 1 finances will be a bit of a stretch. this one child is going to be so spoiled.

Egg Yolk Confit Toast

•4-6 egg yolks. •Light olive oil or duck fat (nothing beats the duck fat). •Ciabatta. •1 garlic clove. •Parmigiano to taste. •Black pepper to taste. •Flaky sea salt.

Directions: 1.- Preheat oven to 170 F degrees. 2.- Add the yolks to a small baking dish and cover in oil. Make sure they’re submerged in the oil, also...handle them super carefully so they don’t break. Cover the baking dish with foil. Place inside a bigger baking dish and fill halfway with hot water. 3.- Bake for 45 min. Turn the oven off and let them sit for 20-30 min inside the oven, depending on desired level of doneness. I left them 20 min. 4.- toast your bread, run the garlic on there. Add the yolk and you basically have 2 options...you break it and then add the toppings on your Egg Yolk Confit Toast

I love that Monday was National Iced Tea Day.  What better way to celebrate it is by reviewing a Sun Brewed gem from KuCha.  This shop in Denver has turned me on to their Blueberry Lavender Bliss.  Think about a lovely blend of blueberries, lavender and cocoa nibs mixed with a plethora of additional aromas such as ginger, cornflowers, mint, and other berries.  Add on the smoothness of the brew (you can’t beat the sun for brewing), lower acidity and great structure makes this a beautiful, tasty blend.  I’ve been craving an excuse to run to Amish country for their fried fruit pies and this works.  I know this blend will be a great pairing.  A cup of this in one hand and a fresh warm fried pie in the other will equal a smile and a nap.
