In today's video you can see how I made this No-Bake Vegan Cheesecake. 😍 This creamy, light, and airy eggless cheesecake literally melts in your mouth and tastes heavenly! The recipe is also refined sugar-free, gluten-free, and easy to make!
I made the video for my mother for Mother's Day and I wish I could share the cheesecake with her tomorrow. Unfortunately, there is a huge distance between us, and as you all know traveling isn't possible...
My mom is the most amazing woman in the world and I love her so much! ❤️❤️❤️
Recipe:
Gluten-Free Cheesecake Crust:
1/2 cup (75 g) nuts or seeds of choice
1 cup (90 g) oats, gluten-free if needed
20 small (150 g) dates, pitted
1 tsp vanilla extract
1/2 tbsp coconut oil
Vegan Cheesecake Cream:
2/3 cup (100 g) cashews, soaked
1 cup (240 g) canned coconut milk
3 tbsp (60 g) maple syrup, or a different liquid sweetener
1 1/2 tsp agar powder not flakes! + 1/4 cup (60 ml) water
1 tsp vanilla extract
2 tbsp lemon juice, or lime juice
3 tsp pink dragon fruit powder (optional)

I did not at all watch the Super Bowl, but best believe that I used it as an excuse to make a batch of chili, which I've really been craving recently anyway.
I halved this using fresh tomatoes, water, and a 400g can of black beans and skipping the chili peppers — believe me, the cayenne was enough for my poor little mouth.
This is a super easy recipe that, with 30+ minutes of simmer time, gives you ample opportunity to clean up, or even make ahead your breakfast, give the sink a good scrub, and read a chapter of a book like I managed to.
I served without any other additions or toppings and thought I'd just skip the blending step given how thick this already was. However, after several bites, I kind of started to see the appeal, so I got the immersion blender out and gave this a couple of quick spurts, which was all it really needed. And believe me when I tell you, with all of the ingredients nicely melded together, this really went up to a new level, from just okay to pretty damn good. Don't skip the blending step!
However, at any rate, this was still rather far from what I'd deem the "best vegan chili". Maybe I'm too used to the meatiness of the version I grew up with, but I have yet to find a recipe in my largely vegan adulthood that truly lives up to my expectations, though I don't want to discredit this as a decidedly delicious attempt.
