Lamb Rogan Josh

Spicy, fragrant and hearty, this beautiful Lamb Rogan Josh brings back memories of travelling through Southern India ten years ago (oh, dear!) I had fallen in love with the dish, as well as with the country, and remember relishing the gorgeous flavours at a seaside restaurant in Goa! I am so happy, and rather proud, with how it tastes. It might require a bit of time, but it makes a very special lunch on a slow Sunday, and is well worth the effort! Have an excellent one, friends!
Ingredients (serves 4):
3 tablespoons sunflower oil
1 tablespoon Mustard Seed Oil 
1 teaspoon Graines à Roussir 
1 teaspoon Garam Masala
1 teaspoon ground turmeric
4 cloves
6 cardamom pods
1/2 teaspoon Red Chili Flakes 
1 large onion
4 garlic cloves
1 heaped tablespoon Ginger Paste 
1 teaspoon coarse sea salt
2 bay leaves
4 Whole Peeled Tomatoes + 1/4 cup of their juice
1.2 kilos/2.65 pounds lamb meat, like lamb shoulder
1 cup water
1/2 cup plain yogurt
1 teaspoon demerara sugar
4 fluffy sprigs Garden Cilantro 
In a large Dutch oven over a medium-high flame, heat sunflower oil with Mustard Seed Oil.
Add Graines à Roussir, Garam Masala, turmeric and cloves. Fry, 1 minute.
Crush cardamom pods, and add them to the Dutch oven, along with Red Chili Flakes. Fry, 1 minute more.
Peel onion and, using the coarse side of a box grater, grate it.
Stir grated onion into the oil and spices, and fry, a couple of minutes.
Using the thinner side of the box grater, grate garlic cloves.
Add grated garlic, along with Ginger Paste to the Dutch oven, and cook, another minute.
Cut lamb meat into generous chunks, and add to the Dutch oven, in batches, browning well on each side. Season with coarse sea salt, and stir in bay leaves.
Finely chop Whole Peeled Tomatoes, and stir, along with their juice, into the Dutch oven. Cook, 1 minute.
Finally, stir in the water and plain yoghurt, and bring to the boil. Once boiling, reduce heat to medium-low, cover with the lid, and simmer, one hour to one hour and a half, until the sauce has darkened, reduced and thickened.
Remove the lid, and stir in demerara sugar until completely dissolved.
Finely chop Cilantro, and stir into the Dutch oven.
Simmer, about 5 minutes more.
Serve Lamb Rogan Josh hot, onto Cardamom Rice, and with warm Podeena Paratha.

My mom was often called “Doña”, maybe because she was the “Manang” of the family, living her best life abroad.
It was nice to dine at the latest Filipino restaurant opened by London’s own Maginhawa Group: Donia Restaurant.
They combine Filipino warmth with British cuisine. Check it out at Kingly Court at Carnaby London in the “heart of London’s West End.”

Spicy yogurt-crusted lamb with black-eyed beans

The scotch bonnets bring a tropical fruitiness to this marinade, but they can be eye-wateringly hot, so leave them out if you prefer; the marinade will still be well spiced as it is. If you can’t find black-eyed beans, swap them for tinned black beans. Serve with flatbreads or rotis, if you like.
Serves 6-8, as a main course
For the marinade
1½ tbsp allspice berries, finely crushed in a mortar
1½ tsp cumin seeds, finely crushed in a mortar
1½ tsp coriander seeds, finely crushed in a mortar
1½ tsp paprika
1½ tsp black peppercorns, finely crushed in a mortar
½ tsp ground turmeric
¼ tsp ground cloves
1 tsp soft light brown sugar
50g ginger, peeled and roughly chopped
1 head of garlic, cloves separated, peeled and roughly chopped
1 medium onion, peeled and roughly chopped (180g)
80g Greek-style yogurt
Salt and black pepper
For the lamb
2kg bone-in lamb shoulder, trimmed of excess fat
2 tbsp sunflower oil
600g plum tomatoes, halved
2 medium onions, peeled and quartered (300g)
5 garlic cloves, peeled
2 tbsp tomato paste
40ml cider vinegar
1-2 scotch bonnet chillies, pierced all over with a knife (optional)
2 cinnamon sticks
500ml chicken stock
600ml full-fat coconut milk
3 x 400g tins black-eyed beans, drained and washed (720g net)
For the salsa
300g plum tomatoes (about 2 or 3), halved, deseeded and finely chopped
1 medium red onion, peeled and finely chopped (150g)
60g coriander, leaves and soft stems, roughly chopped
1½ tbsp lime juice
Put all the ingredients for the marinade, bar the yogurt, in a food processor with a tablespoon and a half of salt and blitz to a paste. Add the yogurt and blitz again for 20 seconds, until smooth. Put the lamb in a large bowl, pour in the marinade and toss to coat. Cover and chill for at least three hours, and preferably overnight (if you do the latter, take the lamb out of the fridge an hour or so before cooking, to bring it back up to room temperature.
Heat the oven to 190C (170C fan)/375F/gas 5. Put the oil in a large, 28cm-wide, cast-iron saucepan for which you have a lid on a medium-high heat. Add half the tomatoes, onions and garlic and char, stirring, for three to five minutes, until nicely coloured and starting to soften. Transfer to a bowl and repeat with the other half of the tomatoes, onion and garlic.
Return the first batch of tomatoes, onion and garlic to the pan, then stir in the tomato paste, vinegar, scotch bonnets (if using), cinnamon, stock and quarter-teaspoon of salt. Add the lamb and all of its marinade, bring up to a simmer, then cover the pan and transfer to the oven to roast for two and a half hours.
Take off the lid and gently lift out the lamb on to a platter. Stir the coconut milk and beans into the pot, top with the lamb and return to the oven uncovered for a further 45-60 minutes, or until nicely browned and crusted. The lamb should by now be very tender. Remove from the oven and leave to rest for 15 minutes.
Meanwhile, make the salsa. In a medium bowl, mix the tomato, onion, coriander, lime juice and an eighth of a teaspoon of salt, then set aside.
To serve, carefully lift the lamb onto a board, then use a ladle to skim off and discard any excess fat from the liquid in the pan. Pour the bean mixture through a colander set over a bowl to catch the gravy, then transfer the bean mixture to a platter with a lip. Pour over half of the gravy, then top with the lamb and a few spoonfuls of the salsa, and serve with the remaining salsa and the extra gravy on the side.

easter lunch has spiralled out of control (i got too excited and kept inviting people and now i'm cooking for 8) so if anyone knows any good side dish recipes i would appreciate it!! i'm already making gratin dauphinoise potatoes and minty peas and leeks - looking for maybe one other thing? broccoli based perhaps?

My husband indulged me by going as He Who Waits from the same game. Continuing in our streak of Halloween Costumes That Are Technically Couples Costumes, But Weird.

Cassoulet attempt #1 is fully assembled in the fridge and ready to bake tomorrow. I oversalted it but I'm coping.
I'm not sure about this recipe...it calls for lamb and pork loin; the former has that gamey taste and the latter I expect to turn to shoe leather upon being cooked twice but we'll see how it goes

Physical concept explanation -
-> As always, I live to add a tail to everything I can but I mainly did it here because it helps me understand how to be more expressive with this specific creature, because I'm not the most comfortable with drawing animals.
->I mainly used the Tarot fleece for this because that the fleece I main-ed, but I did just unlock one of the second round of fleeces so idk...that may be subject to change but I really do like the design of that one for the Lamb.
->Can't really see it, but this Lamb has some heavy eyebags. Earned through extreme devotion and hard work, the stress of managing 24 idiots 27/7 has its weight over time, and never being able to sleep, eat, or die has some more...visible side effects.
I didn't change a thing with Narinders' design, at least not his Bishop design. I expect something a bit more...indulgent when I get to his defeated follower form.
But now a quick question (not really heavily ruling on answers but I am a little curious) but I have this idea for another Lamb OC/self-insert. Adding her would mean the existence of another Lamb with this version of the story, and I would likely pair it up with the other Lamb, or should I keep the Lamb of this one as the last and just make this other one a separate story? So the question is-
My version of the lore under break
Okay so I am running very heavily on a family dynamic here. Spot can advocate... but the whole idea is that Narinder kinda adopted this thing and it was SO gosh dang grateful that it worked, lived, and breathed for him. It wasn't long that Lamb starting viewing Narinder as a sort of father figure, never having one for itself since lambs were hunted down to extintion. Lamb would use every death as an opportunity to see Narinder and tell him about the Cult, or the most recent crusade, or just what sort of people Lamb has been meeting, anything to keep his attention.
The first time Lamb called him "Dad" was a slip up, quick and accidental, but Lamb never really apologised, and seeing that Narinder didn't really get mad at the title, Lamb just kinda kept calling him Dad, and eventually even gets cute with it and calls him Papa Nari (this is a reflection to me playing the game...but I met him one time and was like...yeah that's Papa Nari, no one can tell me otherwise). Eventually Lamb hangs around enough during that little bit of time that it takes for it to be resurrected it begins to talk to Aym and Baal as well, who both, seeing that their Master favors this one, oblige to conversate with. It wasn't much longer after that that Lamb began to really view the two as older siblings, playing knucklebones or sharing cult dynamics like a sort of gossip with the two.
As time progresses and the Cult grows, so does the family dynamic, and the Lamb is viewed as Papa Nari's golden child, which doesn't really bother anyone other than Narinders siblings, who catch on that this Lamb is successfully a killer by nature and is learning to be loved by The One Who Waits. Slowly, as they each fall to its blade, does it really sink in that this mission may succeed in the Fifth Bishops' favour. Well, that doesn't quite sit right with Lamb... what will happen when they complete Papa Naris' mission? Don't get it wrong...it WILL complete what was asked, but Lamb has this nagging fear and anxiety that this happy afterlife, this second chance at a real family, will be stripped when they kill all the bishops and provide with Narinder the freedom he so deserves.
So far, that's all I care to type out for now, but boy has this been lingering on my mind for the past couple of days.
Oh and quickly back to the idea of a second Lamb! Spot! Know that this doesn't stop me from crossing our headcannons together. In my mind, your Lamb still exists somewhere out there and just ticks off Papa Nari by not doing anything killing wise. It does not like it one bit but doesn't mind it enough seeing as it makes Papa more proud of it when it continues with the mission.
