“Feta” marinated chic peas have been the hit of the summer for me. I throw them over salads or grain bowls and they add this bright, herby punch that just makes everything better. Have you ever made homemade granola? It’s pretty dang easy and a whole lot less expensive than buying it in the store - plus YOU get to choose the ingredients so you know exactly what you’re putting into your body. I have a few recipes on the blog - go and check them out and then customize to your liking! Here’s a few pro tips to get your granola crispy, cluster-y and packed with flavor: 1. Add a little sprinkle of salt when mixing your granola, a little goes a long way! Who doesnt love the salty sweet combo - plus, the addition of salt brings out the sweet flavors, so you can add less and get more bang for your buck! 2. Use old fashioned, gluten free thick oats from @bobsredmill and then take them for a spin (aka few quick pluses) in your food processor before mixing up your recipe- this varies the consistency of your granola - increasing the likelihood of some awesome clusters. 3. Add quinoa to the mix! This ups the protein factor and keeps the texture super crisp. You can add it raw - no need to pre cook! 4. When spreading your mixture out on baking sheets for the initial bake - PRESS the granola down firmly into an even, thin layer with the back of a spoon or bottom of a measuring cup. THIS is what ensures even cooking and clusters. 5. I always cook my granola at 340*F and flip it half way through the cooking time (also remembering the flip the baking sheets around in the oven) - firmly pressing it back down again so those clusters can form. 6. LET IT COOL - I know your anxious to dig in but your granola needs to cool completely in order to establish the proper clustery texture! Once cooled, break it up with your hands and store it in an airtight container. 7. This is kind of a no brained but always add any dried fruit after the baking process is done - the key to good granola is varied texture and you don’t want your juicy, chewy fruit to be dried out and hard! Fun fact: I have a background in graphic design and graduated with a BA from @parsonsschoolofdesign (of project runway fame) in 2010 just after the recession hit. It’s funny because i struggled for years to put my degree to work and with food i feel like I’ve finally found the art form that resonates with me most. I love food for its imperminance which keeps me in a constant state of creation and presence, i love food because it is communal and connected. It lets me express myself while serving others - the most fulfilling combination. We tend to compartmentalize our lives - job, rest, career, hobbies - I always loved to cook but saw it as separate from my life goals, little did i know it would make me feel more like a working artist than ever before. Point is - Everything is connected. I still do plenty of freelance graphic design and have an affliction for rebooting our branding way more often than i should.
