Don't let anyone fool you into believing that just because something is #glutenfree and (gasp!) a veggie patty, it can't possibly be tasty. This was our household's attempt at Impossible Big Macs & a Whopper. It was a win. There were gluten-free #eggrolls too. #impossibleburger #meatsubstitute #bigmac #whopper #homecooking #absolutelystuffed (at Pendleton, Oregon) https://www.instagram.com/p/CpUB0AWuEM_/?igshid=NGJjMDIxMWI=

Two of the main products responsible for deforestation are beef and soy, the latter being used for animal feed. Almost 80% of all agricultural land is used as pasture or to grow crops for animal food, and the expansion of pasture for beef drives 41% of annual tropical deforestation. Yet it turns out putting even a modest dent in our rapacious desire for beef could have big environmental benefits. Swapping just a fifth of our beef consumption for a mycoprotein like Quorn could dramatically slow the pace of future deforestation. A new study in the journal Nature modeled what would happen if people swapped out beef or other ruminant meat in their diet for meat substitutes or continued on our current trajectory. In a world where demand for beef kept going up, deforestation rates would more than double. But if people swapped 20 percent of their beef for mycoprotein, deforestation rates by 2050 would be half what they would be if beef consumption continued to rise as projected. The study highlights how even a relatively small reduction in beef consumption can pay big environmental dividends. Meat Substitutes Fool Even Meat Eaters
Some vegans are health nuts and only want to eat fruits and vegetables. Others are not health nuts and still want a fat, juicy burger from time to time. What do you do when you’re just looking for the same meals you used to have all the time as a non-vegan?
Luckily, more and more restaurants are implementing meat substitutes that are becoming more and more realistic. From chicken-free strips at Tropical Smoothie Cafe to the Beyond burger at T.G.I. Fridays, vegans and non-vegans alike can eat delicious meals that don’t even make you miss the meat!

Brands like Gardein, Beyond Meat, Field Roast, Tofurky and Morning Star Farms are making their way into restaurants and grocery stores to provide customers with tastes and textures similar to meat. They are often prepared similarly to how you would prepare their meat counterparts, making them excellent and believable replacements for any meal.

Besides the believable tastes and textures of these alternatives, one of the best parts of choosing meat alternatives over meat is its reduced environmental impact. For example, the Beyond Meat burger uses 99% less water, 93% less land, 46% less energy and produces 90% fewer greenhouse gases than traditional beef burgers. That should be a difference big enough to turn any meat eater’s head in this new direction!
Meat substitutes can also be great sources of protein and other nutrients. While an average four oz. raw beef patty contains about 19 grams of protein, meat alternatives like Beyond Meat’s four oz. patty contain 20 grams. The Beyond Meat burger also contains iron, vitamin C and phosphorus.
These delicious, nutritious and environmentally conscious alternatives are popping up all over Gainesville. Some of my favorite dishes and where to find them are Gardein’s crispy tenders at Karma Cream, the Beyond burger at BurgerFi and MorningStar Farms' breakfast sausage at East End Eatery. Whenever I am not eating them at a restaurant, I am definitely cooking them in my own kitchen!

First, it’s good for the planet. Since the jackfruit tree is naturally drought and pest-resistant, it requires no artificial irrigation, pesticides, or herbicides to thrive.
Second, it’s easy to grow, and the fruit itself is huge. (Literally. A single jackfruit can grow up to 100 pounds!) This makes it naturally easy to grow and a great high-yield crop for farmers.
And finally, it’s good for us: versatile flavor, meaty texture, and full of sustaining fiber and important nutrients.
