Took an extra day off work to make it a looong bank holiday weekend. I’ve not been feeling great recently so I thought I’d give myself a boost by cooking something on the barbecue. I opted for a Boston Butt from @johndavidsons this time. It arrived frozen and took a day and a half to defrost! I then trimmed off some of the fat (there was a MASSIVE fat cap) and dusted it in @angusandoink Porky White Chick. In the morning, before putting it on the barbecue I put a layer of Sweet Bones and Butts on it too. I set my @weberuk 57 kettle up with a 2x1 snake using @weberuk briquettes and some @smokewood_shack wood chunks. Later, when I struggled to get to the temperature I wanted, I realised that I should probably have gone 2x2 instead because it was so cold and windy out! I spritzed the pork every hour with a mixture of chicken stock and @aspalluk apple cider vinegar to help form a nice bark. After 5 hours, I put the pork in a tin with some beef stock, wrapped with foil and finished in the oven. 3 hours later it probed with my @inkbird_uk at 205°F and was ready to come off and rest. Another 2 hours later it was time to pull it and it was perfect. Since the supermarkets have started getting a better variety of stock I’ve been able to get my hands on some @dovesfarm white rye flour again. So last week I resurrected my white rye starter, Jaskier, from the freezer (with a little help from his little sister, Dax) and this is the first proper loaf I’ve baked with him.
