"How is she?"
A loud groan sounded through the whole house in response. Gil winced as he walked in with a bag in hand.
He had completely forgotten that his mom didn't keep any caffeine or alcohol in the house. She wasn't one for it, Makkari simply didn't need any caffeine to be as brimming with energy as she was, and Sersi didn't drink unless it was socially. Kingo wasn't opposed to a coffee here or a beer there, but he considered visiting home like 'being on a cleanse', or whatever.
Thena needed caffeine.
She drank no less than four coffees a day in a regular work week. He was always telling her he was worried about her caffeine intake, but there was no arguing with the stubborn Goddess of War on that one.
It hadn't taken long for the lack of caffeine to cause an irreparable headache which shook her to her core.
Gil walked into the living room, where his very sweet family was being very useless at curing Thena's migraine. His friend - and fiance - was curled up in a ball on the couch, face pinched from the tension within her head. He whispered, "Thena?"
"Gil?" she whimpered back, not even moving at the sound of his voice.
Sersi handed him a cool cloth, freshly soaked and wrung dry, "none of the pain meds Mum has will help this. It's pure caffeine withdrawal."
"Did we try?" Gil couldn't help but ask, not that it didn't irk both his Doctor mother and his bio-chemist sister. He sighed, "sorry, just...I hate to see her like this."
Gil bypassed them, going right over to the ball of Thena and turning her over so he could put the cool cloth on her forehead. "Hey."
"Hey," she whispered back, just barely getting her eyes open to look at him. She looked even paler than normal. "You're back."
"I'm sorry," he whispered, lips pressed to her temple, unable to do much more for her. "I had to go out looking."
"It's okay," Thena turned over slightly with a smile, "Sersi and Makkari have taken wonderful care of me. And your poor mother is trying to find anything that will even simulate caffeine for me."
"Thena!"
"Quiet!" Gil glared towards the door to the living room, where Kingo was striding in without a care in the world. His arms tightened around her, "she's not feeling well, man!"
"Sorry, sorry," he chuckled much too light heartedly for Gil's taste. He swirled his hand in the air, "I made chai!"
Gil glared at his cousin--basically his brother. Chai was a strong enough blend of tea, and it probably would have just a enough caffeine to alleviate some of Thena's symptoms. "You had this the whole time and let her-?!"
"Come on, Gil," Kingo pouted at him, Thena still wrapped protectively in his thick arms. "I forgot I had it, okay? And anyway, I had the seed pods whole--I had to do actual work to make them ready for brewing."
Gil sighed a little more roughly, all but ignoring his loud cousin next to him, "whatever."
"I thought it might help," Kingo leaned blithely into Gil's personal space to get a peek at Thena. "I also suggested yoga to help clear her head, but all she wanted to do was lie around and wait for you."
Gil was already pulling Thena closer so he could carry her to the kitchen, "y'know, dude, I'd appreciate if you didn't do shirtless yoga with my fiance when I'm not around?"
"Who said it was shirtless?"
"I've never seen you do it with a shirt on," Gil shot back without hesitation. Kingo just snickered at his obvious annoyance (dick). Gil stood with Thena in his embrace, "I have something better."
"Something to put me out of my misery?"
"Something like that," he chuckled, kissing Thena's temple again just because he could. She was really funny, even if she didn't think so. "You know this is why I'm always on you about how much coffee you drink."
"Yes, yes," she managed to roll her eyes at him, although even doing that much seemed to reawaken her pain. She grimaced, "how long have you been waiting to bring that up?"
"Until I also had something to help."
"Gil, I--oh."
Ajak made room for them at the kitchen island so Gil could set Thena down in one of the plush bar seats.
"It's okay, mom, I found some," he sighed as he made sure Thena was settled. "Had to go all the way to that organic store where you fill up your own jars."
Damned retiree town and its hipster stores.
Thena forced her eyes open again, "what did you find?"
"Coffee."
Thena perked up like a dog offered a steak after being in the desert.
"I got the lightest roast they had," he held Thena's eyes, waving the jar of fresh grounds in his hand. She watched it, utterly entranced. "Just enough to keep the pain away, okay? This shit was still expensive, even as the cheapest stuff I could find."
Thena let out a faint laugh, in better spirits just at the promise of some relief. "Are you going to ween me off of it with this?"
Gil looked at her again as he set out the coffee grounds and french press he had to buy just to make coffee here. He could just tell her that he told her so and that this was probably for the best, to get her less dependant on caffeine to even function. But he sighed, "gently. I won't let you suffer if I can do anything to help."
Some colour returned to her cheeks, which was honestly more of a relief than anything.
"I'll make you just one cup to start, okay," he continued to speak softly, shaking out just enough grounds and then reaching for the kettle.
"Thank you, Gil."
He looked up, compelled by the gentle, almost musical tone in her voice. Some colour rose in his cheeks as well as he looked back down at his brewing, "anything."
"Hey."
Gil looked up once the grounds were starting to brew. Thena nodded him over to her, and he moved automatically, like a man possessed. Her knees made room for him and he had to stop himself from putting his hand on the other side of them reflexively.
Thena leaned forward, pressing a gentle kiss to the corner of his lips, just close enough to his cheek to be considered not actually 'kissing' him.
He blushed and his all his hair stood on end.
"You're a life saver," she said afterward, forcing a much lighter tone. She tucked some hair behind her ear and moved to watching the coffee brew. "Is it done yet?"
He had to laugh just a little. He gave above her knee - just at the hem of her skirt - a squeeze and moved away again, "will you just try having some patience?"
"You are not the one who has spent all morning with a jackhammer within your skull."
"If you took it even a little easy on the cold brew it probably wouldn't be so bad."
"I knew you were dying to tell me you told me so," Thena rolled her eyes.
Gil smiled; she didn't wince this time. He poured her cup, which really needed more time to brew than it had. Maybe he was just as impatient to cure her as she was. "Just put some shit in it to cover up the taste."
"Gladly," she sighed, although it was Gil who moved toward the fridge for said 'shit'.
They both completely forgot Ajak was still hovering at the edge of the kitchen.

afternoon coffee & dessert @ DOSC
After lunch at Jack's, DQ & I headed to DOSC for afternoon sweets~
I recommended this place - sadly, it was a disappointment. It has been a long time since I've been here. I suggested it bcos they had coffee & a small pastry menu. Looks like the desserts/pastries are completely gone. Although still a cafe on one side of the restaurant & a restaurant/bar on the other, the cafe only serves beverages now.

Not what we were looking for but. .. *shrugs* you know that awkward situation when you wanna leave but you're already seated & water has been brought to your table? Thankfully, there was ONE item that somewhat resembled a 'dessert' lol & that was the buttermilk hot cakes.

For those that have a sweet tooth, THIS IS IT! But for me, . .. just no-no. Wayyyyy too sweet. The pancakes were sooooo soft & soaked. The part I liked the most were the dry crumbs . That, & the condensed milk! I did not expect condensed milk. Ahhh too sweet & soggy!

I also ordered the nitro cold brew. You know, now that I have better understanding of coffee beverages. .. this did not pass as a nitro cold brew =( therefore it was disappointment as well. Nitro cold brew should have a microfoam layer on top, kind of like beer. The idea in terms of production is very similar to beer. Anyway, mediocre =/
If I came by myself, I don't think I would have been quite as upset but bcos I recommended it to DQ, I internally felt bad bcos it didn't live up to the expectations. Sorry >.< !!

Welcome class! Let's get right into cold brew 101. Cold brewing coffee is a simple but flavorful technique that takes advantage of the lower acidity levels in cold or room temperature water. It's been a simple and delicious way to get your caffeine fix.
All you need are some grounds, water, fridge space, and time!
Cold brewing is all about finding your own process. No one recipe will work for everyone, but with these few tips, you can start experimenting to find what suits you the best!
The best part about cold-brewed coffee is that it's ready for you in the morning without much effort. Just zombie-walk over to your fridge, pull out your premade brew and you're done! But let's not get ahead of ourselves just yet.
We'll start with the most common question we get concerned cold brew coffee...
Is Cold Brew the Same as Iced Coffee?
No, iced coffee and cold brew are not the same things. Iced coffee is just what it sounds like: hot coffee that has been cooled down and poured over ice. It's a wonderful summer drink, but not the same as its cold-brewed beverage counterpart.
Why does this matter?
It all comes down to what happens when you add heat to coffee grounds. By adding hot water, you release oils, acids, tannins, and flavors, albeit quickly. On the other hand, cold brew coffee slowly extracts the trapped caffeine and more subtle nuances of the bean over time.
The resulting beverage provides a wider variety of flavors that just aren't present in regular iced coffees.
How do I Make Cold Brew Coffee at Home?
Now that you understand the differences, let's cover the steps you should follow to make cold brew at home the right way!
Step 1: Gather Your Whole Coffee Beans
We recommend starting with whole coffee beans because pre-ground grocery store options are often not the right size for a cold brew.
This will ensure that you get the best flavor out of your cold brew batch, as well as limit the amount of sediment you'll have at the end. 
I don't know about you, but I'm not a fan of drinking coffee grinds or sediment in it. We'll choose whole beans and grind them down to size.
What are the Best Coffee Beans to Choose for Cold Brew?
Here is where many cold-brew lovers start to diverge in their preferences. Choosing the best coffee beans for cold brew depends largely on which flavors you enjoy most, and secondly, which brewing method you'll go to (covered later in the article).

Step 2: Grind The Coffee Beans
There are many grind options you can choose from when it comes to preparing your coffee grounds for cold brew. I'll save you most of the guesswork by recommending that you coarsely grind the beans in any coffee grinder with the option to do so.
Why do we want coarsely ground coffee for cold brew?
We want as little sediment as possible leftover while offering the most surface area we can for the water to extract what we want from the coffee grounds. To put it simply, coarsely ground coffee beans result in better-tasting cold brew coffee in most cases.

What is the Best Type of Coffee Grinder for Cold Brew Beans?
There are plenty of coffee nerds who will argue back and forth about which coffee grinder is best to make your coarsely ground coffee, but for most people, it really does not matter which method you choose to ground coffee, as long as the resulting coffee grounds do not end up in your final batch.
Step 3: Choose Your Brew Method
As cold brew innovation continues to improve year over year, the methods you can use to make cold brew coffee increase. As of this guide, there are 3 primary methods for making cold brew coffee and each have their pros, cons, steeping times and context:
Immersion: Placing coffee grounds in room-temperature water, allowing up to 24 hours of steeping time without any disturbances. Some examples include using a mason jar, french press, or pitcher.
Cold Drip: Arguably the oldest method for making coffee without heat, the drip method slowly extracts caffeine and flavors from coffee grounds a single drop at a time. This can be cool to set up as a showpiece and is a more artisan way for making coffee without heat. Some examples include drip towers and dutch brewers.
Agitation or Friction: The latest craze in cold brew technology speeds up brewing time, but comes at a higher price. Some examples come from the most popular brands in the industry.
What is the Best Brew Method for Cold Brew?
Depending on what is most important to you when it comes to cold brew will determine which brew method serves your needs the most.
For example, drip towers are cool and hip, but they do not yield as much as immersion brewers do (the most common choice for coffee shops). Maybe you don't have time to wait. If this sounds like you, then brewers utilizing agitation might work best for you.
Step 4: Combine Your Coarsely Ground Coffee Beans with Water
This step largely depends on which brew style you've chosen in the previous step, but the gist is we are combining coffee and water within the contraption we've chosen to brew with.
What is the Best Ratio of Beans to Water?
It is best to follow the cold brew machine's manufacturer's instructions to get the best result from the device. However, in most cases, you'll have to choose between volume and strength.
Keep in mind that it is much easier to weaken the strength of your cold brew by adding filtered water than it is to add more coffee to water after you've finished brewing.
Weak - 1:1 = 1 cup of water per 1 oz of coffee grounds
Regular Strength - 1:2 = 1 cup of water per 2 oz of coffee grounds
Cold Brew Concentrate - 1:3 = 1 cup of water per 3 oz of coffee grounds

Ready to Drink Cold Brew vs. Cold Brew Concentrate
If you want to save room in your fridge, make a cold brew coffee concentrate, but make sure you label your concentrate, otherwise, you might accidentally drink too much and suffer from the side effects of excessive caffeine consumption.
Make weaker ready-to-drink batches to serve you throughout the day, or to drink after eating a heavy meal.
Step 5: Allow Time to Let it Steep, Drip, or Agitate
Follow the instructions from your cold brew device's manufacturer to get the best result.
What is the Recommended Steeping Time?
Immersion: No more than 24 hours. 18 hours seems to be the sweet spot.
Cold Drip: Cold drip coffee can take anywhere from 4 to 12 hours, depending on how much you want to make.
Agitation or Friction: 15-45 minutes for most devices.
Step 6: Strain the Coffee Mixture
Using a fine-mesh strainer, coffee sock, or paper filters, layer a large pitcher or carafe with one of the coffee filters and slowly pour your brew into the next vessel, keeping a close eye to prevent spills or splashes on sustainable surfaces.
How do I strain my cold brew?
Depending on which coffee filter you choose, your filtering options will change. Just know that the more coffee grounds you have in the coffee filter, the longer it will take for the coffee to strain through it.
Fine Mesh Strainer: Offers a stable filtering process and comes with most cold brew machines.
Coffee Sock or Cloth Coffee Filters: This is the most common option for those who choose pre-ground cold brew coffee at the store, and is used widely in commercial brew batches due to the many size options and price.
Cheese cloth or Paper Filters: Mostly a waste of time since they tear easily. You'll find these in some lesser expensive cold brew packs. I can recommend using one with your fine mesh strainer to prevent sediment, but that is really the only time I've had luck with them.
Step 7: Bottling and Storing Cold Brew
Now that you've strained your cold brew, you'll need a vessel to store it and some room in your fridge unless you plan to drink a large cup of coffee right away (not recommended).
How long does Cold Brew Last?
If you store it immediately after brewing, your homemade cold brew will last up to 2 weeks or 14 days left in your fridge, but can last even longer if you make cold brew coffee ice cubes.
What Are the Best Storage Methods for Cold Brew Coffee?
Bottles: Most larger towns have homebrew shops where you can easily find bottling equipment. This can be a costly upfront expense, but offer you the longest potential storage options for your cold brew batches, give you can completely seal and pasteurize them.
Carafe or Jug: The most common and least expensive cold brew storage option, and likely the best cold brew storage option for most people.
Keg: If you plan to store your cold brew pressure, want to infuse nitrogen for Nitro cold brew, or just want a longer shelf life for larger brews, you can store your batches for longer in kegs.

I am a certified iced coffee HATER and as soon as it turned April my local starbucks has done this thing twice now where they have made my hot latte into an iced latte no matter how I order it on the app, and each time it literally tastes like it has no espresso in it. tastes just like ice cold milk and a flavor shot. I know this is not like, a real problem, and I should just order in person if I want it done a specific way, but I want the warm weather iced coffee hegemony to END and I'm tired of people telling me I'm wrong for hating it
