I've learned that I would literally just have to stay up rather than wake up. Staying up until 4am? Cakewalk. Getting up at 4am? I would rather end up at the pointy end of Rook's bow

Analysis of Emil's dish: Croquembouche
Croquembouche is the most popular French wedding cake. It is a mounted pyramid or cone shape made out of choux pastry puffs, which are filled with pastry cream. The whole thing is bound together with caramel, after which it can be drizzled with chocolate sauce, surrounded by sponge sugar, or decorated with various things including icing, fruit, flowers, macarons, and more.

It is very popular in the UK and Italy, where it’s known as croquembouche, though French know it as “Piece Montee”. Croquembouche is an English term but a French word. The term did exist in 19th century cookbooks, but never made it into the 20th Century France. Croquembouche means “something that crunches in your mouth” (due to the caramel encircling it), while Piece Montee means “mounted piece”.
The croquembouche is simpler (relatively speaking) while the Piece Montee is more flamboyant. In the Piece Montee, the choux buns are usually arranged on elaborate nougatine bases to assemble a piece that stands out. While in the Croquembouche, the buns are arranged in a pyramid and bound with caramel.
As for its history, it started with choux pastry, which is the dough that is the base of many French desserts, including profiteroles, eclairs, croquembouche, and beignets.
Pâte à Choux was created by the court of Catherine de Medici when she came to France to marry King Henry II (also known as Henry of Valois) in the 16th century. She was Italian (born in Florence, Italy) and brought a lot of Italian chefs with her, and one of them by the name of Signor Panterelli is credited with making the first choux pastry puff.
The pastry Panterelli made was known as pâté a Panterelli. A century later, it was known in France as pâté a Popelini, a popular form of cake during the Middle ages. Around mid 18th century, Chef de Patissierie Avice perfected the dough and created the choux form we are all familiar with today, so the dough was renamed to pâte à choux due to the characteristic look which resembles a sprout (chou in French). Later, French chef Marie – Antoine Carême had the inspiration to fill the choux with cream.
Carême studied architecture, and because of that he was interested in creating structures out of pastry. This carried over into his Croquembouche construction, with the cone shape eventually becoming the one we all think of today.
Essentially, Pâte à Choux uses the moisture of the water to create a leavening effect. A hole is formed as the dough rises, ready to be filled with various creams or custards.
Choux pastry starts as a mix of salt, sugar, water, milk, and butter. Then it’s all heated up until the butter dissolves. Next is to add flour, stir, then finally to add in eggs gradually as you stir.
It’s difficult to get right because you need to get the right texture (needs to be a little bit elastic). If you don’t, then when you put the choux pastry puffs in the oven, they won’t really puff. They stay kind of flat.
Once made, they’re filled with pastry creams. Usually vanilla flavored but it can be varied. Then the construction begins.
Traditionally, the bride and groom would lop the top off with the groom’s sword, then the pieces would be caught in a tablecloth held by the bridesmaids. Though now people choose normally just use just a long knife. 1 serving is 3 or 4 puffs.

[ february the eighth: vanessa mateo and the chocolate bouquet ]
Vanessa runs into Katya’s store six days before Valentine’s day. She’s huffing and panting and by the time she reaches the counter Katya is struggling to understand what the poor girl is saying as sweat drips from her temple. It rolls all the way down her neck, colouring the maroon of her tank top with burgundy splodges. Katya struggles to hold back a laugh and the sound of her stifled snorts shuts the panting girl up. Vanessa fans herself with her hands, long scarlet nails waving in the soft breeze from the door (which was left swinging on its hinges by the red tornado).
“What can I do for you today then, Miss Mateo,” Katya asks, teasingly - two fingers walking themselves up and down the soil dusted countertop.
Vanessa quirks her eyebrow and tilts her head, eyes scanning the board behind Katya’s head before she comes up with an answer. “Can you make me a bouquet that smells like chocolate?” She asks with the unmistakable confidence of somebody who desperately needs to be correct.
Katya takes in the full picture. The missing thumbnail, the loose baby hairs and the half untied shoelaces trailing through the damp muddy floor. She assesses the level of sarcasm she can approach this with so as not to make Vanessa (who clearly has some pent up emotion) punch her. She unequivocally decides none.
“When do you need it?” She asks instead, pairing up flowers in her head as she scans the room. She identifies a carolina allspice towering in the back of her greenhouse and pictures the dark maroon bloom with some baby’s breath, heuchera and chocolate cosmos. She’s pretty sure she can source the latter from her exotic flower guy and is just trying to remember where she stuck his business card when Vanessa answers.
“Can you do it for the twelfth?” She asks, voice hurried and Katya smiles reassuringly.
“Of course I can,” She responds, “paying on collection?”
“Uhuh.”
When Vanessa returns on the following Wednesday, the floor is cleaner the counter is smooth and she is dressed in a long red bodycon dress. Katya has to resist the urge to trail her eyes up and down the shorter woman as she clips delphiniums and hydrangeas for a different bouquet. Upon the girl’s arrival to the counter, Katya smiles.
“You scrub up well,” She comments, a joking hint behind her voice. She and Vanessa have been friends for years - her ex brought her once and even when they broke up Vanessa remained a loyal patron. Katya has a few of those - loyal customers, they typically come to her for flowers and then cross the street to Yellow Cloud Patessiere for some of Trixie’s handmade chocolates. They’re a good team, working across the street in tandem sorting people out for anniversaries, holidays, big dates and small dates. They also run discounts between the stores - a free box with twelve roses, a discounted floral arranger for a wedding order. Katya looks through the display window and smiles as the blonde potters around the patisserie, apron covered in flour and chocolate.
“Bitch I would like the flowers sometime soon,” Vanessa jokes loudly to bring Katya back into the room. “I know your boo has a fine ass but I have a date.”
Katya coos like a teen cheerleader who’s just found out her best friend lost her virginity to the quarterback. She places the bouquet on the counter and leans forward conspiratorially.
“I. Need. To. Know. Everything.” She tells her and Vanessa gives a coy smile.
“Well, she about this tall,” She waves her hand high above her head. “And she’s blonde. Very you but Canadian and hot.” this makes Katya cackle, arms flailing, knocking a tin watering can off the shelf behind her. “Calm yourself Mr-fucking-Tickle,” Vanessa attempts to say in a stern voice but she’s too excited to hold it.
“She sounds great Ness,” Katya says, utterly sincere. “The bouquet will be fourty five ‘cause I had to call in my exotic flower guy and I’ll be honest the allspice is hella hard to breed and now my entire shop smells more like chocolate than usual-” She rambles til Vanessa cuts her off.
“I am gonna be late to this date if you don’t shut up and just let me pay you. I don’t care about the cost.”
“Good luck.”
“Bitch, I don’t need luck - I have flowers that smell like chocolate.”
The door slams and Katya watches out of the window as a tall blonde hurries up to the smaller brunette. They hug and the blonde’s face breaks into a smile when presented with the flowers. That’s the best part of the job.

Hi, I’m the anon from before who asked about your fic ideas? Do you mind sharing them? Of course, it’s completely up to you and I don’t know if it’s rude of me to ask, so I apologize if I do come off as rude or something like that. You don’t have to tell them if you don’t want to.
Here’s a few:
The guardians were started by a princess whose mother was Mongolian and her father was Chinese. Hei Mao and Piao Chong, the Chat Noir and Ladybug at the time served in her court. She was believed to have been assassinated; either by Hei Mao or an unknown assassin. It was believed Hei Mao and Piao Chong died killing each other. The only belongings of her  that survived was a portrait done in embroidery and preserved by the Guardians and her Phoenix Crown. (In China a dragon symbolized the emperor and a phoenix the empress.)
Years later a sect within the Guardians believes that the princess has been reincarnated and wish to find her so they can prove/disprove who actually killed her. Their search takes them to Paris...
Another one:
When Chloe was seven she was saved from being hit by a car by a classmate who later died. Her parents were bakers and divorced after selling their business after their daughter’s death. Every once in awhile Chloe brings flowers or scraps of fabric to the door of the old boulangerie-patissierie and lights a candle. Only her friend Adrien knows why; she feels guilty and thinks that girl still haunts the bakery. Adrien decides to prove her wrong by staying the night in the abandoned building after a fight with his father.
One more:
Orphaned at four Marinette Dupain-Cheng grows up wild on the back of a motorcycle with her Nonna, Gina. Basically a good girl but a little untamed, a bit dangerous. One day Gina decides it’s time her little fairy has a bit more stability so she moves into the building owned by her late son and dear daughter-in-law. A cute little boutique where she and her granddaughter sell made-to-order clothes. Marinette attends Francois Dupont where she makes an enemy of the HBIC and becomes the object of many boy’s affections.
Adrien Agreste lives a carefree life with his mother and father, if a bit sheltered and restricted. After many years of urging he’s allowed to attend school with his oldest friend, Chloe.
When he arrives on the first day of school he so excited he nearly collides with someone. That someone is an attractive girl in a leather jacket who has the most beautiful blue eyes he’s ever seen.
Unfortunately, she’s not pleased to learn he’s friends with Chloe.

Okay, we saw everyone in the ending scene as grown ups. Ichika travels the world with Kirapati, Aoi continues with her band, Himari is a scientist now, Akira works in a hospital, Ciel and Pikario have a patissierie together, Pekorin has her own patisserie and Yukari...no idea what's doing. Even the bad guys got a mention: Bibury and Glaive are arguing near Pekorin's pattisierie while Noir, Lumiere and Diable got reborn. Everyone is here.
EXCEPT ELISIO. Toei, I wanted to see Elisio as a human!!! And I wanted to see him finally happy!! But the last mention of him is when Ichika says she promised Elisio to "connect hearts all over the world". And that’s all. WHAT HAPPENED TO HIM??
