FULL MOON SPICE COOKIES
This spiced cookie recipe is just waiting for a full moon and a gathering of happy pagans to partake in it. Whether you’re celebrating with family or friends, or connecting with this energy in a solitary way, cookies are always the right choice. The cinnamon, allspice, and cardamom are sure to spice things up and pave the way for prosperity and good luck.
MAKES: 24 COOKIES / PREP TIME: 25 MINUTES / COOK TIME: 15 MINUTES, PLUS 30 MINUTES TO COOL
Ingredients:
1¼ cups all-purpose flour
¼ teaspoon baking soda
¼ teaspoon fine sea salt
½ cup unsalted butter, softened
½ cup granulated sugar, divided
¾ cup light brown sugar, firmly packed
1 egg
1 teaspoon maple extract
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cardamom
Instructions:
Preheat the oven to 350°F. Grease a cookie sheet and set aside.
In a medium bowl, sift the flour, baking soda, and salt together. Set aside.
In a medium bowl, cream the butter with ¼ cup of granulated sugar and the brown sugar until fluffy. Whisk in the egg and add maple extract. Gradually add the sifted dry ingredients to the wet ingredients, a little at a time, folding until well blended and no flour streaks remain.
In a small bowl, mix the remaining ¼ cup of granulated sugar, the cinnamon, allspice, and cardamom until evenly combined.
Drop the dough by teaspoonfuls onto the prepared cookie sheet, about 3 inches apart. Sprinkle each cookie evenly with the sugar and spice mixture.
Bake for 12 to 15 minutes. Remove from the oven and let the cookies cool for 30 minutes before removing them from the pan.
If you like, place the cookies in an airtight container and leave them overnight in the moonlight before serving.
