Soft Pretzels
Chef’s note: These taste like pretzels! I just got them stuck on the parchment paper, which was shite. I’m hoping the cooking spray mitigates that. Much better fresh out of the oven than the next day
Original recipes: link1, link2, link3
Ingredients
1 1/4 cup self-rising flour, plus more for kneading
1 cup plain Greek yogurt (I used nonfat)
2 cup water
2 tbsp baking soda
2 tbsp unsalted butter, melted
pretzel salt/coarse salt/sea salt OR cinnamon sugar
Instructions
0. Preheat oven to 425°F. Line two baking sheets with parchment paper. Spray with cooking spray
1. Add the 2 cups of water to a small saucepan and bring to a boil.
2. Mix flour and Greek yogurt together in a medium bowl until a shaggy dough forms.
3. Turn the dough out onto a floured surface. Sprinkle the top with flour, knead a couple of times, and form the dough into a ball. Continue adding flour as needed if the dough is too sticky.
4. Cut the dough ball into four wedges.
5. Using your hands (cover your hands with a bit of flour), roll the dough into logs.
6. Cut each log into about 12 small segments.
7. Add baking soda to the boiling water in the saucepan. Stir until dissolved.
8. Using a slotted spoon dip each pretzel bite into the water then let drip dry a couple of seconds and place onto the parchment paper.
This should only be for a few seconds. You just need them to puff up a bit. They should float on their own
9. Bake for 7 to 10 minutes until golden brown.
10. Brush pretzel bites with melted butter and sprinkle with salt or cinnamon sugar.

Sausage Bread
This recipe is from my boyfriend, Jordan’s mom. She is an excellent cook and I am excited to have this recipe to try. This is the first time I have ever made or had this and it is as Jordan puts it, ‘not a health food,” but truly a taste sensation. It reminds me of a savory croissant, only substantial enough to make a meal. Ingredients 1 loaf frozen or refrig bread or pizza dough 1 lb bulk…

Everything Bagel with Smoked "Salmon" Rugelach
Rugelach recipe is from "Jew-ish" by Jake Cohen (for image of the recipe see "Food" folder on desktop). He uses actual smoked salmon, but I used marinated roasted carrot strips that I chopped up. That recipe is from here. I think these are great! They taste very savory, good with and without the everything bagel seasoning but better with. Baked at 325ºF for about 14-15 minutes (Summerhill oven). They don't brown much at all on top, partially because there's no egg or leaveners. Subbed chives for the scallion because chives are smaller and it worked well.

Adventures in Maud's Recipes
New Moon Pie
The Recipe
I got the recipe book of LM Montgomery's recipes today and knew I needed to start immediately! Most of the recipes were beyond my skill level (hey, anyone know how to gut trout?) or else had ingredients/tools I do not (hey, anyone have a damp cellar to store fermenting raisin wine for a year?), but there was ONE I did have ingredients for (two, actually, but I didn't feel like canning several pounds of plum jam tonight, sorry ya'll) - New Moon Pie! Apparently LMM served this quite a lot! And after making it, I can tell why.
New Moon Pie is a bread pudding-esque substance made of bread crumbs, milk, sugar, eggs, lemon rind, and topped with meringue. At first, looking at the list, I suspected it would be granola esqe (see bread crumbs) but it was very moist!
The Results
(without meringue, this beautiful golden color!)

The Reviews
my food photography skills are those of a caged monkey, and so I do not have any photos of the slices. Suffice to say, it was delicious. Lightly sweet without being too overpowering (much like Teddy Kent). Here is a review from Roommate (of the clifford debate fame).
"It tastes like a warm friendly treat for a pleasant afternoon chatting with friends about our recent comings and goings."
On brand for LM Montgomery! Will I make this again in the future? Absolutely yes! it was simple and (taking out baking time) VERY quick to make the base. Overall, what would I rate it? Well, if a ten is Valancy telling off her family, and a zero is Kilarney's (hehe) axe scene, then I'd rate this an Una visiting Miss Meredith! Onwards!
