September 2, 2021 - The Wisdom of my Wife
Today is the day when an imaginary version of my wife sat on my shoulder and repeated whispered sage advice in my ear. While I might once have considered it subconscious nagging, I have to ask: Is it really nagging when she is almost always right and it usually prevents me from making huge mistakes?
If you have been following the blog, you are aware the Deutsche Bahn (the national railway) went on strike at midnight and will not return to work until next Wednesday. While I had done my best to make alternate arrangements, this is the kind of thing that usually raises my stress level to Defcon 4, with collateral damage to all around me. However, when I got up this morning I just kept hearing Lu-Anne’s voice in my head, “slow down for a minute and take a deep breath, it will all work out somehow.” She was right as usual. I managed to make it to Frankfurt where I exchanged my second DB ticket for one on a private railway that was not on strike. While it would not take me to Bingen, it would let me gaze longingly across the Rhine from the Rudesheim Bahnhof and I understood there was likely a ferry somewhere nearby. On arrival, my GPS informed me that the “personenfahre” was right below the station at riverside (20m). After waiting half an hour for a ferry that likely never came, I realized that the “autofahre” was crossing every 10 minutes only 200m further down the riverbank. After dragging my suitcase a little over 2km on both sides of the river, I walked into Cafe Hotel Koppel with a smile on my face. To make a long story short, throughout this I remained uncharacteristically calm and relaxed thanks to my wife’s ethereal advice.

After checking in and getting organized I went back along the River for lunch at about 15:00. I stopped at a ridiculously expensive restaurant with loads of character on the riverbank. I decided to treat myself and once again my wife’s wisdom echoed in my one good ear. “Too many $10,000 vacations have been ruined by spending all your time trying to save $20.” (Or words to that effect). While I recognize that, even on a public service pension, one needs to be careful and not waste money, my wife has taught me that $20 here and there can literally shove thousands of dollars of enjoyment down the toilet.

I perused the menu and spotted something called a flame cake. I saw one go by and it seemed to be a pizza. When my waiter came I asked him what it was. He said it was hard to describe, but it was kinda like a pide (Turkish pizza) but with no cheese of tomato sauce. I asked “is it good”. His response was “some people like it” all the while shaking his head from side to side. I asked if he liked it and his response was “I always have something else”. My wife’s advice again kicked in “always ask your waiter and always listen to (his/her/their) advice”. Cheeseburger and fries were ordered ($21) and he broke into a huge smile, “you will like that a lot”. I did, and, after all, Hamburg is in Germany so this is still local food😊.
One caution though, I have had three hamburgers in Germany and all three have been about a 1/2 a pound on a 5” bun. Germans seem to love their meat. My schnitzel last night (with large salad) was roughly the size of a frisbee, but nonetheless I somehow managed to choke it down. At lunch yesterday on the market square in Wurzburg, I joined a line to a kiosk that stretched about 150 m around the square uncertain of what they were selling, only convinced that it was likely very good. When I eventually got to the front, it was only for a “simple” bratwurst on a bun with mustard. Nonetheless, when I finished that one, I would have two more (as many did) if I had had time to brave the lineup again.
Oh yes, I should also probably mention the wine. In Canada a standard glass is 5 ounces or about 150 ml. Here, a standard glass is 200 ml and almost everyone that I have had has been closer to 250ml (glasses are marked) or about a third of a bottle. Depending on the situation I have switched between everyday Silvaner ($5.50 a glass) and some lovely Rieslings (up to $8 a glass). Basically 2/3 the price we are use to paying for a glass in Edmonton restaurants for 30-60% more wine. Little wonder I spent another two hours after my meal savouring a couple of glasses while I watched the barges and tour boats pass by while a huge statue of Germanic looked down from across the river.

Will take another walk down by the river, but will make it an early night as I walk to Kalb tomorrow 20+ km and 2,000+ ft gross vertical climb. The good news is the breakfast should be good as many Europeans serve sweet baked goods with breakfast, and my hotel is also a cafe/pastry shop👍🏻.

Kalimera! Something to eat?
Greek hospitality means food. It taste like kalamata olives, fresh, sweet figs and strong, delicious olive oil, not to forget the soft grapes that torn you between harvesting them for the next delicious sip of House White versus indulging yourself in them straight out from the vine.
There are certain musts you should try in Greece (if you haven’t done so in Turkey or in Georgia) like Tomatokeftedes or sun dried tomato croquettes, Greek Fava Dip, that delicious yellow split pea puree, feta cheese in one of their multiple, exquisite special preparations, meat filled zucchinis and tons, tons of wine to pair with all of it.

I gained almost 2 kilos in 2 weeks, - thank god I was prepared and I lost weight before traveling - but no regrets nor harm feelings: those were the best 2 kilos I gained in a while. All the beauty and history surrounding you deserve a proper celebration, and when it comes to commemorate something, Greeks know exactly how to do it. A little bit of cheese, some home made pies or veggie croquettes, you name it. And that is just for starters.
We took this hospitality really seriously, and as my friend Mau would say, we knew our “priorities”, so FOOD became a crucial part of our experience and tour. The heat also made it easier for us to stop every 2 hours for a soul refill- since when we ate, we were happy. Here’s the recap of our favorites places went in Athens:

It was our first dinner and we were both starving: Mau from flying 10+ hours from the future and myself flying almost another 10 from the past. Luckily, this restaurant which we researched before and was recommended to us, was around our place. It was a gorgeous taverna. Exactly as you would imagine a mild night in Greece might be like. We ordered some zucchini, tomato croquettes and an octopus, which seemed to be more tasty than what they usually and actually were given our flight famine. It wasn’t a brilliant idea, to be honest, to have a kick-in-the-butt-awaken Ellinikos or Greek Coffee that night instead of a regular espresso. Same as in Turkish culture, their coffee is extremely strong, heavy and with the grounded bean in it so it has this dusty and dry taste. Strong. Killer. Not at all jet-lag helpful. Worth it, though? Since that moment, each time we needed a refilled, we stoped by the closest Everest we could find in seek for an orange juice or a cappuccino. Cheap, delicious, great service. Finding this secret gem was pure coincidence but once again, we ended up in the most wonderful corner in between Plaka and Anafiotika. There was only one table left, with a “reserved” sign on it, and as soon as we mentioned we were there for lunch, they remove it, reverse their glasses and brought the bread. It was meant to be. The view, the service and the food was all perfect. We ordered some of our favorites: spanikopita, tzaziki and greek salad. Spanikopita or otherwise known as Greek spinach pie is a traditional yet delicious recipe. With its versatility the dish matches with every time of the day. Feta cheese, butter, olive oil all are mixed and baked until golden crispy perfection.

Greek salad is a must have for Greeks with almost every meal. Choriatiki, as they called them in Greek, are made of tomatoes, olives, cucumber and a large piece of feta cheese and served undressed. Dressing is left at person’s choice hence all restaurants serve vinegar, salt, pepper and olive oil with the salad - although, in our experience, most of the times, it came already prepared. With the tradition of being a starter, Greek salad can also be a great side dish. Look at this beauty! We were definitely in food heaven!

At night, we had a reservation on this place a Greek friend recommended. A little bit touristy yet fun, the only regret was that a couple came in after us and sat super close to our table, and started smoking non-stop, which became really annoying. Yet, there was nothing left to do, since it was an al fresco dinner place. Regardless, it was a lovely evening. They had live music with the traditional guitar and two guys with the typical voice you expect from the Greek coasts. The highlight of the night, aside from the great Moussaka, a lemon dressed lamb and some more croquettes, it was the time the musicians start playing the amazing Zorba Song! I couldn’t help myself and stood up, went to the front, and tried to learn that beautiful dance. After a while, right next to a two-left-legged old guy, I managed to do something, but the highlight of the night was when Mau joined and we killed the dance floor, throwing shame to all the other not-so-gifted people with our grace and moves! Coming back to the food, the moussaka is a legendary, traditional dish that is creamy and juicy. Moussaka is served in almost all tavernas in Greece. In the big family gathering this dish is prepared by Greek homemakers. In Moussaka, tomato sauce is used to cook minced beef which is subsequently layered with sweet eggplants and creamy béchamel sauce. This irresistible cuisine is filling so you don’t need too many side dishes. I was a little bit skeptical about moussaka at first since the ones I had before weren’t that good, but this one, OMG, completely changed my mind about them! Brettos  Kidathineon 41, Athina 105 58

Brettos is Athens’ oldest bar and distillery, established by Michail Brettos in 1909. Most of the alcohol served there such as ouzo, mastiha, liqueurs and other beverages, are home made and they still respect the old recipe from Mr. Brettos. You can taste them are feel the fermentation happened in the old oak barrels placed inside. As soon as you step inside Brettos, you will be amazed by the wall adorned with colorful glass liqueur bottles and impressive original wooden barrels.  Its unique décor is probably one of the reasons why Brettos is one of the most photographed locations in Athens, behind the Acropolis, Syntagma Square and other ancient monuments and sites in the city. We had two strong and delicious drinks: Aphrodite, which was ouzo gold, raspberry liquor, pink grapefruit soda and mint leaves and the one called Sea Breeze, made with Gin, fresh lime, fresh orange cubes and soda. Guess who got what ;)

When researching about the Acropolis, when to go, how to get tickets, etc, etc, the obvious question of “is the Acropolils museum worth a visit?” pops up. It is if you are super into history. Its greatly display showcases all the valuable stuff they removed from the Acropolis seeking for preservation. But, if you are like me and decide to go just for the real ruins per se avoiding an overflow of information, then the Acropolis and the other monuments spread out around Athens should do the trick. Although, there’s one thing not so many sites mention, and is that the Acropolis museum has a terrific terrace where to contemplate the Parthenon and a delicious seasonal menu to go with the view. We had some eggs, two delicious cappuccinos and the fantastic feta me meli - another Greek food dish that can be tasted as dessert or an entrée. Feta is wrapped in filo pastry before oven baked and honey is drizzled over it. The optimum balance between salty feta and sweet honey creates a mesmerizing taste. Play it safe, avoid a heat stroke: have an ice-cream! And if it’s a gelato, even better. The creative cone flavors at Da Vinci match the delicious and unique ones from the gelatos so be sure to pick wisely, or come again and again to try them all!

This was another fantastic, last minute Mau finding. It was so great, we ended up going twice. Close to Plaka but far enough from the crowd, this boutique hotel counts with a privilege terrace and rooftop bar from where we could see the sunset. It wasnt happy hour, but the drinks were so cheap and the prosecco was so good, we had two!

This place is definitely unique within the fusion restaurants I’ve been to. This is truly a delicious blend in between Greek, Asian and German cuisine, all the influences its owner has ingrained. As a Michelin recommendation, we left it aside pursuing Greek traditional tavernas, but it happens that after a while, you’re craving for something different like a burger or some pasta. What you don’t actually know is that what you need is a stop by Nolan. Once again, wondering in what we thought was a new, orthodox neighborhood, we ended up by its corner and its name rang a bell. We went in during a sunny Greek noon and we were lucky they were able to sit us regardless of not having a reservation. Minutes after, the restaurant got full, local artists started playing music on the streets and we were having a true fusion feast. We had some marinated tuna, a delicious octopus salad and some lamb dumplings. It was amazing, a must stop during your stayed in Athens.

This is one of the top coffee places I’ve ever been to. Not because its price, look or location, but because of the love and passion they put on each brew. This is how they described their daily special - hence, the coffee of my choice: “Rosebud double shot cap creaming feeling, smooth body caramel chocolate and nutmeg aroma. Taste of cherry and caramel with apricot tangerine and almond nuts.”

I took the train to Peristeri, just outside Athens, to check out what according to Buzzfeed “one of the coffee shops around the world you must check out before you die” Happily, it didnt disappoint. Not only the little town is super cozy, where I got a pair of amazing leather boots, but also, took the morning to write and to enjoy this wonderful plaza where Mind you Cup is located. It reminded me of old Montevideo, the city where I was raised when I was younger. I keep specifying this time and space issue since nowadays it’s quite different. It also reminded me of an out-side the tourist epicenter mini towns around the north of Spain or outside Porto, in Portugal. Even a “ciudad del interior” or countryside town from Uruguay.  Even the tree to which shadow I was sitting and enjoying, was the same Willow tree I had at my school. It was a beautiful time travel adventure, on top of the delicious European house white wine, the home made pizza and the great service from the place. The menu looks like an old and corky newspaper and is not in English, which makes the adventure even more authentic, but the gentle waitress will assist you with all your questions. People were selling their crafts and some plants, and I couldn’t resist to get an envy eye anklet. On my way back, I found this delicious and traditional dessert Greek people have for Christmas, but I could have them every day with a glass of milk. They are called Kourabiedes, a shortbread-type biscuit usually made with ground almonds, flavored with either brandy, vanilla, mastika or rose water and they are shaped into little cute balls. In the end, they are sprinkled with icing sugar and they are just to die for!

In the historic triangle of Athens there is a small tavern in a backyard called Avli which means ‘backyard’. This place is kinda secret: more and more people are accessing to its charms due to TripAdvisor’s fantastic reviews - although it still is easy to miss if you don’t go specifically looking for it. Within a small alley, behind a not so charming door, you can hear loud voices, laughs and some Greek music in the background. If you dare to go inside, disregarding your first thought of “oh, this is a private house, I shouldn't trespass it”, the scenery you will see is like it came from the ’60s. Checkered tablecloths, traditional chairs, old photos and a makeshift kitchen create an authentic feeling reminiscent of old Athens.
The always smiling owner, Takis, has operated this tavern since 1985. He pretended to know me, and after a nice “Kalimera, I remember you, please sit”, I sat down on one of the last free tables of the alley. I sat down right next to Stellios, this wonderful old man who greet me with yellow prunes, peanuts and come other spicy snack while we both waited to be served. He ordered some cheese and tomato, while I ordered the delicious feta with olive oil and some grilled peppers which were outstanding. I was so excited that I decided to copy Stellios and ordered a beer, the first Greek beer during by whole trip was waiting for me on my last day, and I ordered a Manos. It was good - that’s how far my beer knowledge and palate goes: good, not good :D To thank him for the company and the snacks, I invited him two more rounds of beer, which of course I’m not sure what happened since my Greek wasn’t that fluid so I made the best I could with Takis, so let’s hope at least some of the cash went for another Manos and the rest as tip! The whole experience was amazing, Stellios told me about his family, his lovely wife and two kids, as well as about his dog in very broken English. I showed a picture of my parents and told him I lived in New York, but that I was from Uruguay, land of football and meat. Yeap... some have Aristotles, others have Benedetti, and both of us share a Manos. Yamas, Athens!

PONDICHERRY -THE BEACH IS CALLING

The beach is calling.
Breathe in the fresh sea salt .Soak in the beautiful sights which makes you feel at peace.
Puducherry or Pondicherry.This place has many names.
Look around and you are struck with the picturesque image of France with its little cafes and beautiful streets.The heavy downpour seems to have given the place a fresh coat of paint.The clean and cool air replenishes your lungs,make you feel alive .
 .First lets head out to the famous seaside promenade ,which translates to seaside walk.This is a beautiful 2 km walk alongside the Rock beach,also called the Pondicherry beach .

Cars are restricted in this area so grab your flip-flops and let your hair down because this is one path you will not regret taking.
Stop and feel the breeze fluttering through your hair.Engulf the spectacular  view.Enjoy the sea salt sticking to your face.You would feel at bliss,oblivious to everything else happening around  you.The feeling is exhilarating .
Sink our feet into the sand .Collect some beautiful seashells.Or just sit on the rocks and the waves dancing .Listen to the  sound of the  waves crashing. 
A few things you are really going to appreciate is the cleanliness of the entire union territory and the culture of the people there.The people over here are super polite and are always ready to lend a hand in helping you learn about the culture and heritage of this esteemed place.
You might wanna grab a snack so head out the Aura Cafe .The cottage cheese croissants and the banana chocolate waffles will make your mouth water.Grab a scrumptious cookie or a gooey brownie on your way out.
You could have a chat with your co coffee drinkers and learn their story too.
Beside the Aura cafe we have the Aura shop. Step into a mystic portal where various concoctions  are brewing.The essential oils and incense sticks will ebb all the tension out of your body .
You might find it interesting to know that the Aura franchise is all a social initiative of the Aurobindo ashram . Aurobindo  was a spiritual leader who fought during India's freedom struggle and set up an ashram
Let me now take you over to Nehru market.The place to be for shopaholics.Be sure to have cash in hand.Dresses,skirts,shorts,culottes,candles and lights deck the streets.
Travelling in Pondicherry is a walk in the park ,quite literally !.Everything in this place is not more than 20 mins far away from each other by walk.You could also grab an auto rickshaw or rent out a bike.
Its dinnertime.For dinner I would recommend a small quaint place called Les Sauvers.(The flavors)

As soon as I enter  I am greeted with  a typical  french cafe.Tables shaped like pizza pans and a small winery too.People of different countries and continents are dining under the same roof.
Bite into the scrumptious thin crust pizza and the delightful Bruschetta .Try the amazing   cheesy Ratatouille. .Do try conversing in French with the waiters,or should I say 'Les serveurs'
To revisit the French era visit the Sacred heart of Basilica and the French war memorial
The French East India Company set up their headquarters  over here way back in 1674,dominating the entire union territory .Don't miss out the Pondicherry museum to get  a glimpse of various war artifacts and memoirs.
And now we have reached the end of our  wonderful journey.Pick up chocolates at the famous Zuka  shop or  head out to  Baker street and try some delicious baguette or pastries.
Pondicherry is a place which will elevate your spirits  and make you appreciate the little things in life. It is a memory you can always count on to brighten up your day .

Day 37 July 8 Chepstow - Bridgend 82kms
Yesterday as I was posting my blog I had the door to my shoebox jammed open with a stool to let some air in. A couple of cyclists wandered by ( they were carrying their helmets so I knew they were cyclists ) so I popped out to talk to them. Moments later I had an invitation to join Irish cyclists, Mark and Dominic for dinner. I had just been boasting to you all how cheaply I eat then I went out and paid quite a lot more than usual for dinner. I prefer not to go out by myself mainly because it’s always awkward eating it alone ....not just to save money.
Mark and Dominic cycled from their home down to the bottom point of England, now they are on their way to the top of Scotland, then they will cycle most of the way home again. Like me, they don’t camp and they like to do big kms every day. They are actually doing longer days than me because they have a time limit, however they are travelling much lighter. I think the hills have been killing them too.
Somehow I had the impression that they would be shooting off quickly after their breakfast this morning. Not so! I had time to talk to my daughter and grandchildren, my friend Siggy, eat breakfast, pack up and load Shirley then sit and watch them get ready. I guess I liked having someone to talk to and check out how other people do things. I had to quickly remove Shirley from the function room where all three bikes spent the night. Dominic was carefully cleaning and oiling his bike. I didn’t want Shirley getting any funny ideas!
At about 8:15 I took their photo and cycled off up the hill.

The plan today was to mostly follow the A48. It was really a very easy day with only a moderate amount of hills. Unsurprisingly the terrain was a little like home, New South Wales.
This photo was somewhere I actually stopped to do a wee. I looked around when I was finished and thought it was quite pretty.

I would like to say I had my morning tea at this lovely looking place but it wasn’t open yet and I passed it too early to stop anyway. I just liked the words and the writing.

Morning tea was actually just before Newport at a big shopping complex. There are Costa coffee places everywhere so I thought I’d patronise one for a change. The cake was good!

Somehow I slipped off the A48 ( the roundabouts are huge here) and found myself heading to Cardiff. The plan had been to avoid it but I decided just to go through it and have a look rather than double back up to the very busy A48. I knew the roads would meet up later anyway.
Cardiff is the capital of Wales and really not very big. All the traffic lights meant it was slow getting through but I enjoyed having a look. It’s always fun to roll through the mall in the middle and look at the people, checkout the shops and listen to the buskers. There is a big castle in the centre but I didn’t want to stop in the middle of traffic so I cycled into the park next to it to get a photo.

I was wishing I had bought something for lunch but I hadn’t. A little way up the road I saw a ‘Spar’ supermarket so I ran in and grabbed some pastries. I had been hoping for a Lidl because all their bakery items are baked fresh and yesterday I got some delicious twisted donut things with caramel in them. They were yummy! Another few kms along and I saw the Lidl. Oh well, there was no hurry today so I stopped again and bought a few more things including the donuts!  When I came out there was a rather large man trying to park his little bike behind Shirley. He was shocked that I hadn’t chained Shirley up so I explained that it was pretty hard to make a quick getaway on something that heavy. Maybe I should chain her in future. I have seen a few suspicious looking characters around.
On the way out of Cardiff I took a photo of these houses since I’ve have posted photos of houses in the other countries I’ve cycled.

On the lookout for a nice park to sit and eat my lunch I could only find this.

A slightly unusual lunch venue but there was a nice bench to sit on, it was very quiet and the outlook was not unpleasant.
Just up the road from lunch I rejoined the A48 hoping it would get a bit quieter. Eventually it did and in spite of the before mentioned hills it was a pleasant afternoon ride into Bridgend.
My accommodation is a very old style motel but it has a little fridge so I am happy. Once again I was greeted with the note in the window advising me to call on arrival. I sent an email and the owner was there in a few minutes. Shirley is in the ground floor room with me so maybe I should lavish on her some of the attention Dominic’s bike was getting this morning. Maybe....

The beach is calling.
Breathe in the fresh sea salt .Soak in the beautiful sights which makes you feel at peace.
Puducherry or Pondicherry.This place has many names.
Look around and you are struck with the picturesque image of France with its little cafes and beautiful streets.The heavy downpour seems to have given the place a fresh coat of paint.The clean and cool air replenishes your lungs,make you feel alive .
.First lets head out to the famous seaside promenade ,which translates to seaside walk.This is a beautiful 2 km walk alongside the Rock beach,also called the Pondicherry beach .
Cars are restricted in this area so grab your flip-flops and let your hair down because this is one path you will not regret taking.
Stop and feel the breeze fluttering through your hair.Engulf the spectacular  view.Enjoy the sea salt sticking to your face.You would feel at bliss,oblivious to everything else happening around  you.The feeling is exhilarating .
Sink our feet into the sand .Collect some beautiful seashells.Or just sit on the rocks and the waves dancing .Listen to the  sound of the  waves crashing.
A few things you are really going to appreciate is the cleanliness of the entire union territory and the culture of the people there.The people over here are super polite and are always ready to lend a hand in helping you learn about the culture and heritage of this esteemed place.

You might wanna grab a snack so head out the Aura Cafe .The cottage cheese croissants and the banana chocolate waffles will make your mouth water.Grab a scrumptious cookie or a gooey brownie on your way out.
You could have a chat with your co coffee drinkers and learn their story too.
Beside the Aura cafe we have the Aura shop. Step into a mystic portal where various concoctions  are brewing.The essential oils and incense sticks will ebb all the tension out of your body .
You might find it interesting to know that the Aura franchise is all a social initiative of the Aurobindo ashram . Aurobindo  was a spiritual leader who fought during India's freedom struggle and set up an ashram
Let me now take you over to Nehru market.The place to be for shopaholics.Be sure to have cash in hand.Dresses,skirts,shorts,culottes,candles and lights deck the streets.
Travelling in Pondicherry is a walk in the park ,quite literally !.Everything in this place is not more than 20 mins far away from each other by walk.You could also grab an auto rickshaw or rent out a bike.
Its dinnertime.For dinner I would recommend a small quaint place called Les Sauvers.(The flavors)

As soon as I enter  I am greeted with  a typical  french cafe.Tables shaped like pizza pans and a small winery too.People of different countries and continents are dining under the same roof.
Bite into the scrumptious thin crust pizza and the delightful Bruschetta .Try the amazing   cheesy Ratatouille. .Do try conversing in French with the waiters,or should I say 'Les serveurs'
To revisit the French era visit the Sacred heart of Basilica and the French war memorial
The French East India Company set up their headquarters  over here way back in 1674,dominating the entire union territory .Don't miss out the Pondicherry museum to get  a glimpse of various war artifacts and memoirs.

Pondicherry is a place which will elevate your spirits  and make you appreciate the little things in life. It is a memory you can always count on to brighten up your day .

How sustainable is Sweden?

Sweden is sometimes called the Valhalla of sustainability. Not wrongly; the country has set itself stricter climate targets than the Paris agreement. By 2045, the energy must be 100 percent renewable and fossil-free. What is the country doing to achieve that?
Sweden has a few advantages that make it a sustainable country. It is relatively sparsely populated, with 10 million people living in 500,000 km². There is therefore a lot of space for nature and forest. Forest that captures all CO2 as it grows.
But the country does not rest on its laurels. It does several things to become as sustainable as possible as quickly as possible.
1. Green Steel
Most striking is their attempt to make 'green' steel. Normally, the production of steel requires energy and coal is needed as a raw material for the steel process. SSAB[1] is now working on techniques to generate the necessary heat with hydrogen. If successful in the planned time, Sweden will be the first country to supply green steel. This steel already exists in small quantities. Car manufacturer Volvo (also Swedish) used it in a construction vehicle.
2. Sustainable cars
Buses, cars, trucks and delivery vans must be climate neutral by 2030. That means they should, at the very least, run on a biofuel. This has been the case for buses in Stockholm since 2017; there is no more public transport that runs on fossil fuels. The challenge is greater for other sectors, especially heavy transport. The advantage of Sweden: the gigantic forests provide a lot of biomass, which you can also use to make 'green' diesel.
What is striking is that these green ambitions do not necessarily get through to the local car industry. Volvo was one of the last car brands to announce an electric model. However, the (Chinese) sister company Polestar is working on a car that costs no net CO2.
3. Oat milk
The Swedes love a bowl of consolation. Fika,[2] the tradition of coffee with a pastry, is part of the culture. That coffee contains oat milk more often nowadays. Moteover: that oat milk often comes from Sweden. The most famous brand of this type of milk is Oatly[3], a company that has its origins in the Scandinavian country. It is no coincidence that this company was one of the first to make oat milk on a large scale. Oat milk is in fact a Swedish invention; Rickard Öste[4] developed this type of milk in the 1990s.
4. Ikea
As a capitalist colonizer of the furniture landscape, IKEA has become indispensable. One of the largest companies in the world, and the company feels the responsibility that comes with it. So it has the ambition to become 'climate positive': emit less than they absorb. The wooden furniture helps with that.
But there is also criticism of the furniture giant[5]; they would foster a throwaway culture, as their furniture is less durable than robust (but more expensive) versions. The renaming of the Bargain Corner to Circular Hub also managed to make some customers look askance. On the other hand, it promotes vegetarianism with meatless versions of the meatballs and makes people hand in their old furniture so IKEA can properly recycle it.
5. Recycle plastic
Sweden not only wants to become CO2-neutral, but also circular. That means: reuse everything. And that is not easy; especially plastic is tricky. Plastic can be made of many different materials with different properties. Sweden recently invested a billion kroner (100 million euros) in a gigantic factory[6], Svensk Plaståtervinning, that has to separate and recycle all types of plastic.

DAY ONE
103.1 km from Delphi to Nafpaktos
Know thyself - one of the three best known Delphic aphorisms carved in the Temple of Apollo - can also be translated as 'Know thy place'.
Last night's visit to the museum and temple is still weighing on our minds.
The rumbles of thunder as we wandered the ruins were certainly telling us who is boss.
The ruins are ruins, but it is the location that strikes you now as hard as it must have those who buit and rebuilt the temples, ampitheatre and stadium.
Nestled on the slopes of steep craggs - dark but seemingly rubbed and scratched in places to reveal a red gold shining beneath - the paths and platforms look out down across and down a valley to the sea. Ancient olive groves wash across the valley floor like water as far as you can sea.
A magical place the Ancient Greeks considered the centre of the world.
Our point de depart.
We gather at 7.30 breakfasted, for a group photo. And are off with no faff.
Down. Down. Down. 600 meters of vertical descent at a steady shallow gradient. Little need to brake. Plenty of time to enjoy the view. And then we turn left and are cycling through Olive trees. The morning sun dappling the road.
We are being guided by Alex (Mark's find) ably assisted by Giorgos in the smart black support van.
Alex leads us from the front. He's far fitter than us. Though has a rather curious way of standing with his pedals level that is going to get some getting used to.
We break up out of the olives and the rest of the day, we follow the coast road, the sea blue and calm to our left. The mountains up to our right. We've had bad experiences with coast roads, they can be busy transport routes, lorries and coaches thundering past. But this one is calm, with little traffic. Nevertheless, Alex regularly takes us off the road down, to stay closer to the coast and through little seaside holiday villages, each of which looks almost exactly the same. Alex says tourists don't come here, lovely as they are in their simplicity, in the summer they are corwded with families with roots there, now living in the city. But now they are quiet. Just a few people gently getting on with the daily grind of sweeping, washing and sitting.
We stop after 50k for coffee, CocaCola and some flaky pastries - cheese, ham, sweet...
A brief outbreak of faffing breaks out as we leave - "why do you start fixing your bike now!". The point has been made. Discipline will surely be restored.
Now, we need to talk about Martin. Martin is the reason this group exists and why we always drink so well at dinner. He's a force of nature. But a force somewhat dented by a skiing accident earlier in the year. His usual training regime (two 70 milers and a couple of bottle of chianti should do it) was disrupted. He did buy a new bike, but that was about it.
Your ride in the van for the last few km was well earnt. Managing the battery will be a skill we will all be learning in the next few years.
The signs to Nafpaktos have been a constant presence on our route, most of them saying it is 43km away, but finally the town arrives. Just in time. It's hot and we are running on empty (no lunch stop!)
Finally, we can jump in the sea that has been tempting us. Poseidon calls. Swimmers on and in we go.
("Is it safe to swim here? Yes if you are brave enough"). It's lovely once you get used to it.
Alex has just arrived to complete the group of eight.
Tomorrow, we head North into the mountains and into the Unknown.

8th July: 
I just moved out from Filaretai hostel and heading towards the station with all my bags. It is a big day today. Sun was shining and gently tickling my skin. Not even one dark cloud in the sky. That's the day when I suppose submit all my paperwork for Japanese visa and then head home to the deep countryside. I was bloody nervous. There was so many what if’s running in my head. That was a day where everything or nothing could go wrong.
Lucky me, Vilnius train station has a storage place, so I don't have to drag all my luggage to the embassy.
After dropping off my luggage, I was going with public transport towards the embassy… 2 hours earlier than I suppose to. First thing after I got off the bus, I went straight to the embassy. It started to get cloudy, and cold.
I am standing in front of the embassy gate, is raining. I am looking at it, and getting myself mentally ready. Meanwhile calming myself down, by claiming "There is no reason to decline me, my papers are spotless”, at least that’s what I thought.
After staring at the gate for a while, I realized that there is still 1,5 hour to kill. What now? On the way here I saw a supermarket. So then, let's go shopping.
I was strolling around a shop for 10 minutes. I could not decide what to buy. What I end up buying was a local pastry and pack of cigarettes. The strange choice isn't?
When I looked at the clock there was still more than an hour. Waiting was driving me crazy! I was so restless! But I need to do something… Should I get some coffee? probably… The nearest coffee place was 500 meter away. Well, I do have time.
So I went to the coffee place, I got some locally brewed fancy cappuccino, and tried enjoying myself, but the anxiety was killing me. I had a lot to lose! All the flights are booked, all the arrangements in Japan were made. I did spend a lot of money! I even quit my job for that!
After spending some time in the cafe, It was almost time to go. When I get to the embassy, it was still minutes too early for my appointment. Well, fuck it, let's go in. What happens, that happens! There is the only way, and that's forward.
So, I rang the doorbell on the gate, and the gate opened! I went to the front gate. The security guard opened. In front of me, there was a full-body scanner. I stepped through, and it started beeping! The first thought in my head " I don't have any guns!" I was so glad, that I didn't say out loud…
The secretary through the glass-covered counter asked me to step forward. The first question she asked:
Secretary: - Do I have all my papers?
With trembling voice I answered:
Me: - yes!
Awkwardly, I started to unload all the papers. She stopped me because I had to fill up some other forms first. At that moment I was very confused. It was just a paper with my name and purpose of visit. But I couldn't find out where to even write my name.
Her voice softened, and she started to point with the finger, where and what to fill up. I felt like the first-grader, who just learned how to write. It was quite embarrassing when I think about it.
Then she asked for my papers. I gave her all had from my yellow transparent envelope. With a confused look,  started to go through my flight details. She got even more confused when she looked at other papers, such as the list of activities  ( a paper I had to fill up, to show what I am going to in Japan ). She started to ask questions, such:
Secretary: -  Where is written means of transport in Japan? Where is the date of entry?,  Where is the port of exit?. 
In my head “Did I completely misunderstood, a whole form?”, “Do I have re-do everything, as kindly ask for another appointment?”. My anxiety was pilling up, and my hands were trembling. 
The secretary, with a kind voice, asked me to sit down and wait until she will go through all the papers. 5 minutes later, she came back and asked to come to the counter. In my head " It definitely gets declined". The secretary started to go through the papers and gave me a pen at the same time.
Secretary: - If you can correct, this and this point, and write down the entry and exit dates, and will be fine. But I don't understand your bank statement! I am not sure if the ambassador will accept it. Now sit down and wait for Ambassador.
A few minutes later, short, timid Japanese guy came out and called out my name.
Ambassador: -  Miss Janina, I understand you want to apply for one year visa to Japan".
Me: -  Yes sir.
He pointed to the door which led to a semi office sitting area. He apologized for his English, and there is no assistant today, who can help to interpret. He asked for my reasons why I want to go to Japan. We had a very nice chat for 10 minutes.  he said, that all my papers are in order, but he can't accept my bank statement. It has to be written by the bank officials, that I have enough money, and stamped. Otherwise, he has no problem to issue by this Friday.
I left the office and started googling for the nearest office of my bank branch, here In Vilnius. I asked the secretary, yo get my passport, so I can go to the bank to get a statement. She agreed, but she was in doubt if I will ever come back.
I left the embassy and started heading towards Danske bank office I saw on google maps. It was raining, but I didn't care, I had to get that statement. It was around 3 km, but I never walked that fast, I didn't even have time to look up If any buses were going that direction. I kept walking. At the same time, I was so happy, because I almost have a visa! Almost there!
The first Danske bank office I reached, it turned out to be a headquarters. Damm… I saw on the map, there was another office 700 meters away. Rushed over there! Damm it looks like another strange office. I didn't resemble a bank at all. Well, let's ask. I went to the first person I noticed at the counter, and I asked with a desperate voice:
Me: - Hello, do you serve the customers here? Right?
Receptionist:- yes.  
Me: - Is there is anyone who can print an official bank statement regarding my account balance?
Receptionist:- Yes, wait a moment over there.
She pointed to the furthest cover in the room, with few chairs. A few moments later she made a call. 
Receptionist:- Hello, there is someone to meet you. Can you come down for a moment?
Meanwhile, I was staring in empty space, calming my self down, that everything is going to be ok. Time was going slower with every second. Waiting was becoming unbearable... All I wanted was to get it done and return to the embassy and get it over with. My head different questions were running through with no answers. „ Will get the statement? Will I return on time? Will I get visa!!?“At that moment it seemed hours have passed since I sit down. I am about to look at my phone to check the time. At that exact moment, I hear steps, coming down the stairs. It was a blond message woman, coming towards me.
Women: - Are you waiting for me?
Me: - Yes.
Women: - Let's go to my office.
We started going towards stairs, and small relief inside me, "Just, maybe I will get this over finally!" I started to explain my situation. Immediately she cut me short in my speech.
Secretary: - I am sorry, I can¨t help you, since your account is in Denmark, I am not allowed to look at foreign bank accounts, even it is the same branch.
At that moment I felt even more desperate. I tanked for her effort and wished her a  good day. In my mind, I was trying not to panic and calmly asses the situation. The more I thought the more I came to the conclusion that I have the only option was left. I NEED TO CALL, TO MY BANK IN DENMARK!
I went to nearby shopping centre, so I can sit down somewhere. Before entering the building I started calling my bank in Denmark. It took at least 20 minutes maybe even more to reach them. The line was busy. Probably a lot of people were trying to solve their issues with the bank too. After endless waiting finally, someone end of the line picked up. I managed to talk with customer service, they agreed to write a statement for me. I would get the next morning.   That's when I was finally relieved… I contacted the embassy and agreed to bring the bank statement the next morning. Great!
Finally, I can be at ease! But wait... where I am going to sleep tonight? I have checked out from the hostel already... Ummm, YEAH...

Off the Beaten Path: Paros
I was looking for ferries to Ios but then I realized that given the start of low season, this wouldn’t happen any time soon. Hence, I booked one to Paros. Although this ferry never happened either for the same reason, which I happily found out while in Santorini, it all worked out perfectly. This wonderful and noble guy created a connection for me on the system and I sailed towards what, according to him, was the best (and only) option.  I managed to have lunch in Naxos, another island in between Mykonos and Paros, enjoyed some sun to later and finally make it to Paros. On my way, I met Linda and Dawn, two wonderful and strong ladies from the US who with I ended up sharing a beach lunch during my last day. 
I didn’t know what to expect from Paros. Booking this trip meant to actually hearing this island’s name for the first time. It actually happens to be one of the biggest Cyclades islands. Paros at first sight is wonderful. It’s friendly, it’s organized.  Although it counts with all the services and its daily life changed abruptly since tourism became a thing, once again, going offseason was not only worth it but also the best choice.

Paros feels like being stuck in time. Probably due to the off season days, this beautiful  island is perfect for chillax after your island hopping, full of non-stop adventure, in Greece. Empty narrow streets, delicious seafood, exquisite sunsets, infinite crystal clear shores and friendly locals are there to make your stayed in Paros, an unforgettable one. 
If the previous cities were ruled by cats, in Paros they are the freaking mayor. But they have a major competitor for the throne: ducks. Ducks and cats stroll freely by Paros’ shores and it’s hilarious seeing them interact. I’m not talking about cute little ducks, those too. I’m talking about enormous, swan-like birds, cuaking their way through people and aground ships.

Time doesn’t pass as in the rest of the planet. It runs on a smoother, more relaxed way. People, probably tourists on an Airbnb Experience, were sketching different houses, fishermen (and women!) were preparing the fresh octopus they just  caught in between chairs, letting it dry to the fresh, sea breeze. An old men, probably a sailor, with tons of life lived on his tanned, wrinkled face, was wearing a yellow t-shirt, chilling with a cat, sat down by his house entrance, without realizing he was in color-coding matching uniform with his yellow and white House. It was gorgeous.

Walking around its narrow streets, it was wonderful to see all the stuck-in-time constructions, its colorful houses and shy sun rays coming through the pink bougainvillea flowers, that highly and beautifully contrasted with the clear, sky-blue sky. One man approached me, probably a little bit tipsy on Mastika or Racomelo, wearing this olives branches on his head, greeting me with a cheerful Kalimera, which of course I replied back. He started to engage in what could barely be defined as a conversation, with his very scarce and broken English vocabulary, but he managed to ask me where I was from, complemented Uruguayan football and told me something else in Greek which will be a mystery.

There are two main town in Paros: Naoussa and Parikia. Parikia is where the main port is, and Naoussa the most developed fishing village up north. I stayed in Naoussa’s main street, right by the water and next to some of the most renown Paros’ restaurants.

Staying in Naoussa was a great choice. I managed to walk to some of the great beaches around, yet being on a beautiful little town. Everything was walking distance from my place. I was staying at the Ragoussis Bakery and Hotel, or as they call themselves, “Ragoussis Sweet Rooms”. It’s a wonderful bakery that smartly enough decided to expand its business and adding some rooms on top of the bakery for the morning pleasure of their guest, who would delight themselves with the warmly, fresh baked scent as a wake up call. Complementary cookies and a very homy and family oriented service is provided. Delicious pastries and breakfast is served, and the kitchen is open until late so it’s great for night owl travelers (definitely not my case).
I didn’t realize how much I was craving for a comfy, mushy mushy bed with a baby-butt soft cover. Man, I slept good! With a sea and port theme, it’s minimal decor was wonderful and blends right in with the vibe and feeling of Naoussa.

Checking out Naoussa’s port, its church and downtown will take you less than a day and it’s a must. Paros is also commonly known by its strong winds, which they have a proper name and everything for it: the Meltemi. According to locals, heavy winds haven’t arrived yet, but I almost got flown away several times. The first one, I managed to hide myself from it, seeking for shelter in a cosy restaurant by the port, and had a deconstructed eggplant lasagna which was very good. That dinner was all I needed: I was ready to hit the sack and prepare next day’s adventure.

There are ferry services to the main island beaches, but after waiting for a few minutes, I thought that maybe being offseason the ferries won’t part. So, I took my morning quite slowly, enjoyed my breakfast, rested in bed and read my book, before embarking on an hour and fifteen minute walk towards Kolympetheres Beach. The walk was worth every step: beautiful hidden houses, breathtaking views, outstanding cliffs. I was enjoying the sun, the breeze and my music, laughing out-loud thinking about the amazing experience I was living right there, right now.

I had some delicious lamb on what it was one of the most secluded yet beautiful restaurants I’ve found in all Greece: Kolympetheres Taverna. Family owned, they offered me the BEST grapes I’ve had in a while: seriously, they were juicy, tender, no pit, not too sweet, an absolute delicacy. I know, they were just grapes, but oh my god those grapes.

I went back and explored Piperi Beach, Anargyroi Beach, Xifara Beach until Stephano plage, 4 kms towards the opposite side of Kolympetheres. It was a unique beach strip that connected a little island with Paros, having sea on both sides. It was a beautiful place to watch the sunset and call my mom. It’s always important to call you mom. Love your parents, and tell them so often. While we are busy traveling, we tend to forget they are growing old. Before mobile phones, data plans and emails, I had the chance to travel with my parents a couple of times (yes, I’m that old) and clearly remember making long distance calls, dialing millions of numbers featured on a lame, bendy paper card on public phones just to talk less than 2 minutes with my grandparents. It was technology at its best! So now, it’s crazy the possibility to randomly call family and friends just to share a live sunset or sent multiple videos and photos at the same time, feeling as if they were sharing the same experience, right next to you, beating all time zones and distances. I keep it classy and vintage though, sending postcards of every single country I go. You should try it, there’s a unique feeling of receiving one handwritten memory of someone who thought about you across the world.

For my last dinner in Naoussa, I decided to go for king crab orzo pasta by the bay. There was an empty restaurant with extremely friendly waiters, that opened the rooftop part, firstly just for me, later for an Asian family to join, and we all were witness of an incredible sunset. It was a yummy dish and later on, the waiter insisted on having a shot with me ( I tend to be perceived as extremely friendly so waiters and service people from all over the place like me a lot) so we had what I thought it was initially Mastika, but ended up being this delicious honey grappa drink: Racomelo.

The following morning, I made sure to taste a delicious cappuccino and some sweet treats downstairs before heading to the bus stop where I randomly met Dawn again. We both wanted to check out Parikia, so there we went. We first explored solo the wonders of the port city, as one of the oldest Byzantine  churches in Europe, from the IV century,  its beautiful narrow streets, the iconic and touristy Market St. and the Dionysus hill with a current Windmill on top of it.

We met for a lovely lunch. Everyone recommended us Koralli Restaurant, but since it was closed due to the low season, we ended up on what it was the greatest way to say good to a strong and delightful island hopping vacation: Livadia Restaurant and Hotel. Double dose of house wine, red and white, homemade moussaka, grilled and panfried fetta with honey and sesame seeds as well as spinach fritters (which were da bomb!) was the selected menu for this occasion, that matched to perfection our conversation about lost and found love stories, women’s choices in today’s world and exciting and promising plans for our near future. Once back in downtown Parikia, there were two beautiful cafes which I wanted to visit, but were already closed in the afternoon:  Cafe Symposium Paros and Martin Denisse Cafe & Snack Bar. Both beautifully located, one in the middle of a square, the other one under a tree on a hidden alley intersection, they seem to have delicious house wine waiting for the thirsty throats and warm coffees for the cold visitor who needs an energy boost.

I ended up at Kakao Cafe & Bar, a very nice, delicate and cosy cafe rooftop that faced the sea and it was the perfect spot to have one last frapuccinno, those sugar rush of exquisite Greek delight before departing for Athens. Paros, you were wonderful. Ευχαριστώ!

Djerba was a curious start of a road trip around Tunisia, it turned out it is a rich little island with a lot of tradition, it was also pretty raw. And it was puzzling how intact it remained despite the flood of tourists who come in the summer to relax.
Accessing Djerba
While planning the itinerary the goal was to minimize driving time and win a day.  The trip theoretically  would take 7 hours on GPS which meant 12 in reality. That’s mainly because of the lack of real highways, most of the roads connecting the cities are bidirectional roads with only two lanes with no separators, means you are subject to rush hours, dangers like people or animals crossing the street or other drivers trying to pass the traffic ahead, the roads are not straight either, there are many curves except on Douz-Tozeur road which also meant we had to avoid night driving.
Anyhow, we decided to book a local flight, it was not fun to drive in the capital and my rental car (check my recommendation here) was waiting for in Djerba’s airport. The rental cost, fuel, a lost day and my spinal health seemed more expensive than a “less than one hour” flight. And actually it was cheaper if I we were two…You could also directly fly to Djerba from Europe. Look for great offers in those sites: Flyin ,Expedia,Trip
Tip: Use these sites for information on best deals and timings but book directly from the airline official site as it gives you more flexibility and you don’t pay a commission.
The car matters because Djerba is small, you can tour it in a day but it has many points of interest, it offers you a lot more in terms of what you see and when to stop. I am a car rental addict, I used to reject the responsibility but a few years back by pure luck in Jordan I got hooked.
The majestic island of traditions
In case you’d like to do it differently, there are points of access to the island one through the ferry from Jorf that drops you in Ajim which is around 20 kms from houmt souq in the north which is where I recommend you to stay. And looking at the map that gives you an idea on the size of the island.
The other access point is through the historical “Chaussee romaine” that extends along 12 kilometers between El Kantara and the road to Zarzis. Djerba is a special island as the water is shallow all around it, so the Romans strategically placed an amount of stones to form a pathway linking the island to the mainland built mainly for commercial purposes. The road lasted from the 2nd century till today. So you should at least pass by there once, it feels like you have become part of the story.

  Accomodation
Now I’ve mentioned that it’s recommended to stay in Houmt Souq, cause this is where you can easily find accommodation, restaurants and above all it has the souk (market) for local crafts, food, also the traditional fish market. There is also a huge tradition museum that is very informative and explains a lot of what you see, architectures, beaches, port and a roman castle.

It’s also easy to stay in a hyped tourist area on the eastern part of the Island because this is where you’ll find the beaches. . I personally stayed in a traditional Djerbi house owned by a french guy who’s married and settled in Tunisia, it’s called Dar Sema and all rooms were equipped with a kitchenette not to mentioned the quality of the furniture, bedding and service. You can find similar experiences in Booking and Expedia.
We had to keep the memory of the place, it was one of the best we had in Tunisia…
Djerbi  Attractions
Cultural experiences (Live the Djerbi tradition):
There’s a lovely feeling of diversity cause despite the strict tradition and raw nature of the place, people accept differences. In terms of religion, there are plenty of mosques built in a simple and attractive architectural style. There is a couple of churches for foreigners that are only open during service as well as a major Jewish community, the largest one of the most vibrant in North Africa.

Biological diversity is also a thing, you’ll find goats, sheep, olive trees wherever you go, you’ll enjoy the diversity of sea life, there is also a zoo that unfortunately was closed during my stay but it’s also an interesting natural reserve on the island.
Fact: the island was not all olive and palm trees, there were apple orchards but somehow the locals lost interest in apples and preserved vegetation to different crops. This you learn at the entrance of the castle of Djerba, it has a great view in addition to some Roman and Islamic relics as the island had a key role strategically and economically in the old days.

Ultimately it doesn’t have to be all running around, checking out museums, religious and historical relics. The best you can do is to relax by the sea at sunset or sunrise with or without your favorite drink.

Another tradition you gotta observe; the fish auction. All fishermen gather in “souq el hout” (fish market) and offer lines of their fresh catch: what typically happens is that they thread a variety of fish on a thin rope and everyone offers their bid and so on…
He was very proud showing off his line to my lens…
I’ve asked for a few fish only as we wouldn’t be able to eat a full line or store it and they were very generous to give me exactly what I wanted at an excellent rate. Outside the market there are restaurants that would cook your fish and prepare the classical fish sides, like the “harissa” “eggs with peppers salad” and so on…I recommend Chez Hanini.

Then you need to try the original Djerbi specialties like the Djerbi Rice (the spices and different aromas make it heavenly) or Couscous, the Ojja with Merguez (eggs with merguez sliced and dipped in a red sauce)…

You can eat the “Rouz Jerbi” in el Medina restaurant, it had the most enticing flavors, you can also check le Berbere for a fast meal. Do not miss out on breakfast at cafe Ben Yedder in the heart of Houmt Souq medina and right in front of the covered market entrance. The location is optimum for relaxing, contemplating, people watching and writing diaries while sipping your coffee and nibbling on your breakfast pastry.

There is a place for men only in the park right off of el medina, where we used to sit in the afternoon for some tea and more people watching, mostly elder men activities this time and jobless guys. We were three girls but they were enjoying our co-existence in a friendly manner. One of the waiters though cheated on us as the tea was so cheap but his colleague apologized on his behalf and served us for free the day after, so in case you go one cup of green Tunisian tea there costs 0.5 TND.

Shopping and Local crafts
We regretted not buying local crafts from the market there, we thought everything would be available in Tunis Medina which was true to an extent but they didn’t have same quality or variety in terms of traditional clothes, Pottery, palm leave crafts or leather. Mostly traditional clothes and pottery…There are few spice specialties also like dried fish that you reduce into powder while making soup as well dried red chilis.
