The knife Ringo was using to cut soba noodles was made by Mizu.

It has her signature as the blade smith, which we saw her make when Master Eiji told her that a smith signs their name and to make 1,000 kitchen knives and then she might be ready to make a sword.

So Mizu cut off Hachiman's fingers with a kitchen knife she herself had made

And we can assume that's her unique signature as a smith and not a generic signature for Master Eiji's forge because Blood Soaked Chiaki's sword which they both worked on has two smith signatures; the first one likely Master Eiji's with Mizu's signature below it

I found out a couple months ago that I'm apparently the Knife Guy, according to the colleague who handles most of our weapon cases. He had some very particular questions about knives--turns out that he needed to know about clip point and drop point blades. I didn't even realize I talked about knives that much at work, but I guess it was enough that he knew who to ask about that.
So if I can't be the Morally Reprehensible Guy, I guess Knife Guy is a decent consolation.
