První dojmy 88: Scuk na České, Chào Teavolution a Bistro Pod Schody

(28. 8. 2023) Další espressa a bubble tea.

V souvislosti s kavárenskou a částečně i bubble explozí v Brně jsme dospěli do stadia, kdy je asi opravdu zbytečné podivovat se nad tím, že v širším centru anebo některém z četných kávových distriktů otevřel další podnik. Vezměme to tedy tentokrát ryze informativně.

Scuk na České je primárně take away espresso bar, který odstartoval před týdnem v prostorách bývalé pivní speciálky U Modrého lva, jež se přestěhovala na Pálavské náměstí na Vinohradech. Parcela je to malá, rohová, útulná a designově atraktivní a je umístěna v miniaturní pasáži/průchodu mezi ulicemi Česká a Veselá.

Interiér je, jak už to u těchto podniků bývá, výrazně minimalistický a laděný do odstínů černé a šedé a zvolenou barevnou škálu narušuje pouze zeleň pokojovek, žluté polštářky ve výloze a částečně bílá dvouskupinového Sanrema Zoe, časté volby v rámci ekonomického řešení kávovaru. Ten doplňuje klasika v podobě černého Fiorenzata F64 třetí generace (viz úvodní foto).

Milý chlapec i slečna za barem mi potvrdili, že vybavení mají od QB, ale majitelé jej zakoupili a nemají ho tedy za odběr zrnek. Na adresu jundrovské "holistické" pražírny (a to není legrace, viz jejich web) zazněla slova chvály co se týče přístupu a pomoci s nastavením vody, ale za sebe si říkám: neměla by být ochota a pomoc firmy, od které kavárna kupuje vybavení, samozřejmým standardem? (Zmínil jsem, že s QB bohužel nemám dobrou zkušenost a že jim pověst kazí i vlajkový provoz Manukyan naproti Hlavnímu nádraží, který jimi připravená zrnka vydává za kávu z vlastní pražírny.)

Káva je očekávatelně jejich a na úvodní dny – než budou mít připravenou surovinu z Bali – je to samozřejmě Brazílie a pokud jsem se dobře díval na krabičku a správně přečetl fotku na Instagramu, jde o naturální Brazil Fazenda Chapadão. V obvyklé selekci alternativ mléka tu mají i selské Miil, které zpopularizoval Rohlík.cz a v tomto ohledu si tedy nelze stěžovat.

(Hláška na krabici, tedy že Země, kde pijí mléko, vyhrávají více Nobelových cen, je ovšem zbytečná.)

Určitě pěkné a nápadité pojetí otvíračky, u které oko poškádlí jen ta úvodní slabika...

Prostor kavárny je veskrze příjemný, protože komorní, posezení na žlutých polštářcích v okně působí útěšně, personál ochotný a i ceny s přihlédnutím k lokalitě neulétly do stratosféry: espresso 55, doppio 70, cappuccino 65 a latte 75 + limonáda ZON za 25 Kč. Dám-li tedy stranou svou kávově vybíravou maličkost, má podnik, nahlíženo optikou "běžného" či kávově poučeného zákazníka, šanci na úspěch?

Vizuálně jsem se nemohl ubránit srovnávání s Milady nebo Punkt.espresso.bar, který prý těží z kanceláří umístěných ve stejném domě. Pokud sem tedy novináři Mafry a lidé z přilehlých obchůdků a firem třikrát denně zaskočí na kafe, šance tu možná je. Ale nemají tyto zákazníky dávno rozebrané ostatní podniky v okolí České?

Malou poznámku lze směřovat k IG prezentaci podniku, kde druhý čtverec prvního týdne tvoří avízo na prodej Būcheckovy kuchařky. Proč nabízet produkt někoho jiného v okamžiku, kdy provoz ještě veřejnosti neukázal svůj interiér a jedinou kávu? Skalní fanoušci už knihu nepochybně mají a na kuchyňské lince leští kompletní sadu Peterových nožů s kšiltovkou na hlavě a firemním kabátem ve skříni...

Aktuální atak bubble tea v centru Brna minulý týden završilo Chào Teavolution, které představuje, pokud mě má evidence neklame, sedmý provoz tohoto typu za posledních devět měsíců (a celkově jedenáctý ve středu města), přičemž služebně "nejstarším" je od prosince 2022 Ten Bubble Bar v Alfa Pasáži.

Při tomto počtu už můžeme učinit opatrné dílčí shrnutí, které z mého pohledu podpořeného mnohými průchody kolem vychází takto: jasnou jedničkou je Gotcha u Velkého Špalíčku a s jistým odstupem za ní následují Geicha a COMEBUY. Všichni ostatní hrají druhé anebo dokonce třetí housle.

Nejnovější člen skupiny zaujal místo bývalého řeznictví a uzenářství MP Krásno, ale oproti bukolickým výjevům chasníků klimbajících pod stromy z buřtů a klobás nepřinesl v oblasti designu nic nového. Žádné barvičky, žádné neony, žádné fancy slogany a skoro žádné chyby (machiato je myslím výjimkou); vizuálně jde o nejchudobněji působící brněnský bubble tea. Na baru sice snaživě mává kot packowy střední velikosti, ale bude to stačit?

Grand Opening 27. 8. okolo 16 hodiny. Ani přes balonky na vchodu a procesí lidí na ulici nebyl uvnitř jediný zákazník...

Jak si povšiml kavárník z nedalekého podniku, se kterým jsme se pozdravili uplynulou sobotu, jen pár dní od otevření nasadili slevu 20 %, což je sice pravda, ale tím promo úvodních dnů zdaleka nekončí, protože příspěvek na Instagramu (zvětšený a vyvěšený za sklem) avizuje u příležitosti Grand Openingu 27. srpna další slevy ve výši 25 a 50 %.

Popiska úvodního čtverce lákající na otevření (Comming soon in next week) nebudí valná očekávání stran angličtiny, ale přesto jsem zde při třicetivteřinovém nakouknutí tento jazyk použil, protože se mi zdálo, že češtinu obsluha moc nedává.

Jistě hodnou, avšak unaveně působící Asiatku jsem o dva dny později viděl nabízet degustační kelímky před podnikem, ale nikdo se k ní nehrnul. Inu, nebudou to mít lehké, když uvedený počet perličkových provozů doplňuje v areálu siršího centra nejméně osm klasických čajoven. A třebaže tohle není klasický bubble tea, ale spíše interpretace čaje s prvky tapioky, je to svým způsobem výlučné pojetí...

Bistro Pod Schody otevřelo tam, kde před časem skončilo několik let fungující a korejské Doširak. Suterénní prostor je vždy problematický a tento je umístěný v relativním závětří na Kabátníkove, přičemž okolní ulice rozhodně netrpí nedostatkem kaváren, restaurací nebo míst, která kladou důraz na vymazlený brunch.

Provoz zahájil 10. července a soudě dle Instagramu, je tento "vzorkovou prodejnou" cateringové firmy, což je v poslední v době relativně běžné (viz o kus dál umístěný Šílený myšák nebo pod eskalátory OC Letma pozicované Tasty-Giraffy). Nevím, jak lákavě Vašim uším zní firemní snídaně a občerstvení na teambuildingové akce, ale je-li pro to prostor na trhu...

Ještě než jsem provoz navštívil – v interiéru se v zásadě nic nezměnilo a dřevěné "parkové" lavice tu zůstaly – prostudoval jsem Instagram podniku i jeho matky. Naprosto mě odrovnalo logo, jež je ještě méně povedené než u Kafe Halasák a myslím, že nejednomu grafikovi se z něj musí orosit čelo. Mně změtí linií, výčnělků a ploch víc než co jiného připomíná droida, kterého si vzal na pomoc Darth Vader při návštěvě princezny Leiy na cele.

Moc nechápu, proč v obsahově chudém výběru storíček zůstala týdenní nabídka z půlky července a proč jsou mnohé snímky cateringového profilu překopírované na ten patřící bistru. Ani kávu bych si tu nedal. Je to totiž opět Enzo Bencini a žádná z použitých fotek mléčných káv neměla projít autocenzurou podniku. Jak "řemeslně" Vám zní popiska fotky Přijďte po práci na výbornou kávu od @agfoods_cz (...)?

Pravda, paní za barem a dost možná majitelka byla při letmém nakouknutí usměvavá a milá, ale nabídka pro mne představuje stokrát viděnou nevyhraněnost: bramborák i tiramisu, halušky a cupcakes, žebra i avo toast, pražma a lívance, Vejce Benedikt a Anglická snídaně, která pochopitelně není úplně autentická...

Uvedené kombinace samozřejmě nebyly takto párovány v jeden den, ale vyjadřují obsah fotek, které člověk vstřebává při procházení na IG. To ovšem nic nemění na mém prvním dojmu z podniku, který zní: Proč bych si tam vlastně měl něco dát?

A lényeg vagy trükk, hogy minél jobban kontrollálni tud az áztatási időt, a víz hőfokát és a tea mennyiségét. Én tearészegséget eddig dancong, öreg fehér tea és sheng esetén tapasztaltam. A sheng puer tuti tipp. Az nekem szinte mindig működik, de azért egyéne is válogatja, hogy kinek mi. Itthon teavolution, flying bird, levél és zhao zhou, ami tuti tipp beszerzésre.

Russian Imperial Afternoon Tea Workshop at Raffles Makati

This summer, tea lovers and aficionados can take their love for afternoon tea to the next level with the Russian Imperial Afternoon Tea Workshop at the Writers Bar. This is the third in their Royal Afternoon Tea series which previously featured themed sets from Queen Marie Antoinette of France and Queen Victoria of Great Britain. Now, its time to socialize with Russian aristocracy as Raffles Makati brings us another enchanting afternoon tea.

To make it more special, Raffles Makati has invited Ms. Sheryl Ebon, a certified Tea Sommelier and founder of a local tea brand Teavolution® Manila, for a series of workshops this summer at the Writers Bar. Participants can bask in a rich session covering tea history, art & ceremony, culture, and basic knowledge on how to make the perfect cup of tea. Afternoon Tea lovers are invited to join in from 3:30pm to 5:00pm on three special afternoons on February 28, March 28, and April 25, 2018 at only P2,650 for two persons. I wanted to broaden my knowledge about this exquisite past time so I attended their first workshop last week and went home with a new appreciation for this delicate ritual.

My first encounter with afternoon tea actually happened right here at the Writers Bar. Before, I thought that tea was just like any other beverage but it was not until I experienced the Afternoon Tea at Raffles that I began to appreciate the tradition and complexities woven into this classic ritual. The workshop was attended by a small group of participants which made the discussions casual and free-flowing. Ms. Sheryl opened with a short history of how tea began in China in 2737 B.C. and eventually traveled over to the rest of the world. 

Joining us at the table was the always-elegant Monique Toda, Director of Communications at Raffles Makati. Afternoon tea is an elegant pre-evening tête-à-tête popularized in Europe with its own history and traditional ceremonies. Each country has developed their own tea rituals so it is really interesting to know how it blends into their cultures and traditions.

It was surprising to find out the different varieties of tea depending on how they are processed and that the tea bags we normally use are actually the lowest type. Teavolution Manila (www.teavolutionph.com) is one of the few retailers here that offers loose leaf and high quality teas so they know what they are talking about.

Ms. Sheryl then followed with the specificity of Russian tea tradition, while also giving us a taste of the world famous Russian Caravan black tea blend. The blend was inspired by the tea camel caravans traveling to Russia in the 19th century.  

One peculiar Russian tradition is to put strawberry jam or any sweet item into the cup before pouring the tea. I have never seen this done before but I guess the Russians also have a sweet tooth like Filipinos do and like their tea sweet.

The Samovar is considered as an integral element of Russia's rich history. This is a heated metal container Russians traditionally use to heat and boil water. They usually drink tea throughout the day, especially with their cold weather, so every house has one of these.

We poured the Russian Black Caravan Tea over our cups and had a sip. The tea is quite strong but the sweet flavors of the strawberry jam made it a fruity and sweet blend.

To make it a complete Russian Afternoon Tea experience, a medley of sweet and savoury delicacies was also served to us on this three-tier tower, inspired by the era of Imperial Russia. 

Starting February 1 until April 30, 2018, the Russian Imperial Afternoon Tea is served daily at the Writers Bar from 2:30pm to 5:30pm. This comes with your choice of tea from Raffles Makati’s finest selection of flavors courtesy of Master tea blenders Harney and Sons, including the Russian Caravan blend. An assembly of Russian-inspired savoury and sweet bite-sized delights is then presented, delicately prepared by the hotel’s master chefs. You can Indulge in this delectable collection for only P1,150 for two persons (without the workshop).

The first plate consists of savory items which includes Kanapki, an open sandwich topped with smoked salmon, salmon roe, and herbed sour cream. It also has a Pirozhki which is a small pie stuffed with sun-dried tomatoes, goat cheese, roasted peppers, and artichoke.

This colorful and savoury tart is a Capelin Fish Roe with cream cheese, boiled egg, and lemon. Rounding off the plate is the Pickled Herring Blinis, a Russin pancake with beet purée, horseradish cream, quail egg, and caviar.

No afternoon tea set is complete without scones. The Russian Afternoon Tea comes with Cranberry & Orange Scones served with strawberry jam, clotted cream, lemon curd. What I found more interesting though was the sweet Russian Tea Cakes or tea cookies made simply with flour, butter, and rolled into powdered sugar.

The topmost layer is where all the desserts can be found. Let’s start with the Moloko Pitchye (left), a soft chocolate covered candy made from chewy meringue milk souffle and which literally means bird’s milk. The Fabergé Egg Sugar Cookies (right) are designed to look like the iconic jeweled Fabergé eggs which the Tsars gifted their wives and mothers during special occasions. At the back is the Chocolate Korolevsky or King’s Cake, a layered cake traditionally made in the imperial cities in Russia and eaten by aristocracy.

It’s hard to miss the macarons and these are special Honey & Roasted Apple Macarons. Beside them is the Zefir Strawberry Tart with sliced and whipped Strawberry purée in gelatin.

Also on display at the Writers Bar are fine English tea cups and sets from Wedgwood, which has graced the tables of royal families.  Bits and Bobs owner Mila Lee, who also joined our afternoon tea workshop, showed me the various cups and mugs which I really found so elegant and charming. The quality of the tea is highlighted even further when you use these exquisite cups. 

We did not discuss it, but we all came here wearing red dresses! I would like to thank Raffles Makati for giving me another wonderful and memorable afternoon tea experience here at the Writers Bar. Értelmetlen teaposzt vol. sok

Voltam tegnap az 1000 Teában, mert az a nagy nyári tervem, hogy minden kínai teával foglalkozó teaházat meglátogatok, hogy legyen tapasztalatom a teakészletükről, áraikról és eszközeikról. A Váci utcában van a bolt egy tök hangulatos kis belső udvaron. Viszont ahogy beléptem a boltba éreztem, hogy ez gázos lesz, mivel arcon vágott a mentás füstölő illata. Nagyon szép nagy méretű csészéik vannak most, bár nekem túl vékonyfalúak. Most nem keresek ilyesmit. És aranyos kis "teahajóik" is vannak. Aztán megnéztem a teákat. A korongok az ajtó mellett vannak, szerintem a páratartalom nincs toppon, de hát az néha nálam se. Vettem tesztnek két kicsi (8-10 g) shu lepényt. Illetve megszagoltam a Tie Guanyint, de abból elég is volt annyi. Éreztem, hogy az nem lesz túl jó az illata alapján. A két kis lepényből ma egyet teszteltem, de a második felöntés után dobtam is a picsába az egészet. Igen, a füstölő beleitta magát a teába és ilyen élesen mentás gyógyszer íze volt a teának. Borzasztó volt. Árban egyébként nem rosszak és van vákuum csomagolt wulong teájuk az talán biztonságban van. Azt meg lehet kockáztatni vagy esetleg ha egyébként a többi puert máshol tárolják. Ezt nem tudom, nem kérdeztem rá. Következőre felkészül a teavolution, mert beleszerettem Nagy-György Ágnes woodfired kerámia alkotásaiba és hát élőben is szeretném megtekinteni őket!
