One More Dawn, One More Day, One Day More
In less than 24 hours we’ll be rid of Trump.  I don’t want to hear his name again unless it’s coverage of his trial. American voters toppled a wannabe dictator and already things are looking up.  Have you seen photos of the National Mall?  It’s beautiful.  The Biden inaugural committee has planted more than 200,000 flags representing states and territories, and at night there are 56 pillars of light as a nod to the50 states and six territories.  The installation represents us, the wonderful mishmash that makes up our nation, from sea to shining sea. Not just red or blue states, not just one gender or ethnicity, all of us.

It’s supposed to represent unity, but also the hundreds of thousands who can not attend the inauguration because of the pandemic.   No one has mentioned the curtailed inaugural activities due to the sinister and seditious events at the Capitol, but you know that safety is a concern as well.  The Biden team said that they have "commitment to an inclusive and safe event that everyone can enjoy from their home.”  Wow, an administration that actually cares about citizen safety and well-being. How refreshing! BUT... enough about politics.  My last post about ball gowns received such a positive response that I am determined to make this corner of the internet a HAPPY place again.  I started this blog in July of 2007 (yeahhh, it used to be more entertaining)  with the intent of putting positivity and whimsy into the world.   After four years of feeling angry every day, I’m going to get back to my roots. I’m going to remember how I found joy in little things, laughter in awkward moments, and beauty in the mundane.  Prepare yourselves for some happiness, folks.   Let’s start with a little bit of joy for your taste buds.  Good food is probably on my top ten list for things that make life enjoyable.  I do not understand people who forget to eat, or even worse, who don’t care what’s on their plate.  I worked with a woman once, an absolutely lovely woman I should add, who used to eat whatever was handy. We worked for the same airline and usually by the time we could grab a bit we were starving.  We worked crazy hours and my lunch(or dinner) was a reward for getting through the craziness. I’d bring a Lean Cuisine and dress it up.  If I packed a sandwich, it had to be pretty. Her lunch would consist of a plain piece of bread and a half cup of coleslaw - “I had to get it out of the frig.”  Once she had a bowl of baked beans and an orange. I used to offer her parts of my lunch but she’d wave me off. She was not strapped for cash, she was not lazy, and she said to me “It doesn’t matter what you eat, you just need a little weight in your stomach.”  Technically, I guess she was right - but where’s the joy in that?  I should probably add that she never had to go up a skirt size in her entire career with the airline, and I could probably use my old skirts for hot pads now, so joy could be fattening. Anywho...last week I checked out a few library books online and then zoomed over to pick them up.  One of the books I checked out was Joanna Gaines’ latest cookbook, volume two of Magnolia Table.

I flipped through, putting bookmarks in recipes that sounded interesting and decided that the first one I’d try was this -

Mmmm, what’s not to love about spicy shredded chicken, corn, cojito cheese, pickled onions, cilantro, lime....hungry yet?  It was such a simple, easy recipe and had a big flavor payoff (joy!).  I’ll definitely be making these again. The only extra step in the recipe was making pickled onions.  But that takes about two minutes.  I did it while I was in the kitchen making lunch.

The cookbook provided a recipe that required red wine vinegar, which I was out of - so I used my own tried and true method of about a half cup of apple cider vinegar, a tablespoon of sugar, a teaspoon and a half of salt, and a thinly sliced red onion.  It worked just fine. This soaked from noon til around six.  It doesn’t have to be that long.

To make the taco meat just put chicken breasts in a baking dish, cover them with the spice mixture, pour a half cup of chicken broth into the bottom of the pan, cover and bake.  She provides her recipe for the spices, honestly you could easily use a packet of taco seasoning - your choice.

Why yes, my tin foil does have creases in it.  I am Ethel’s granddaughter and con not toss out a perfectly good piece of foil if it can be reused. This was the last use for this piece, but she had a good run.
While your chicken is baking you’ll mix up the yummy topping.  Couldn’t be easier. Drain a can of corn, chop some cilantro, crumble some Cotija cheese, and you’re nearly done.
Cotija cheese can be found in any supermarket.  It’s often in a cooler near the taco shells and refried beans, stacked with various salsas.  I always see it in a large round, but I think you can also buy it already crumbled in a tub.

I think it tastes and feels like Feta, I’ll bet in a pinch you could swap it out.

The corn, the cheese, the onions, and the cilantro get tossed into a bowl with a couple squeezes of lime juice and some chili powder and salt.  Mixed together, that’s the topping for the tacos.
Once the chicken is out of the oven, let it cool a few minutes and then shred it with forks, mixing it into the juices in the pan.

The last step is to get your tortillas ready.  Sadly, I didn’t have yellow corn tortillas, only white corn.  Yellow would have been prettier.

You’ll toss them into a hot skillet or on a griddle for about a minute on each side, just to get a little color, you still need them to be bendy.  I guess pliable would have been a better word, but bendy works.

I’m trying another recipe from the book tomorrow, if it’s as good as this one, I’ll share it here. That’s what’s happening at the Pullen spread.  We’re counting the hours until Joe and Kamala take their oaths and we can be assured that adults are in charge again.  I admit, I’ve been playing One Day More from Les Miserables this afternoon.  I may have been shouting the “One day to a new beginning, raise the flag of freedom high!”  part.   Vive la résistance!  Okay, different war, but I’m a little giddy today.  Maybe I should just close with this...

Vegetarian Nachos With Homemade Chips
I really can’t do those bagged tortilla chip things anymore. They honestly pale in comparison to the tortilla chips you can make at home. After having these homemade ones, you’ll never look back and you’ll be happy you don’t have to. Now I’m not talking about starting from corn flour to make your own bread, although that’s awesome if you’re up for it. These chips were actually just made from ready tortilla bread I bought from the store. These are a cinch to prepare and cook up in no time at all, and that’s awesome when you don’t have much of that concept called “time.” Plus, they’re baked and they’re to die for!
These homemade tortilla chips are made with corn tortillas, they’re fresh, the texture is crispy, but not crazy crunchy—because it sucks when you put a chip in your mouth, start to close your mouth, and you’re immediately stabbed by it and have a silent freakout moment inside, desperately trying to rearrange the chip in your mouth. And if you’re really, really lucky and you can’t rearrange the tree bark chip in time, the inside of your mouth is essentially a wound for a whole week! OH that makes me so mad! Stupid chip.
OK, I can’t believe this but simply writing that has actually raised my blood pressure and riled me up so much right now. Breathe, Bita. It’s just that I 100%, completely and truly, really can’t stand when that happens. Tree bark tortilla chips, you can go ahead and walk on out. These homemade ones also simply taste a billion times better. So walk. on. out. bark chips.

Anyway, like I was saying before I thoroughly (albeit willingly, take note) embarrassed myself, these chips are spectacular and they give these easy and quick nachos that extra bit of special flavor that tastes like what a tortilla chip really needs to be.
We make these nachos probably at least once or twice a week when we are burnt out, exhausted, or just really craving quick and fresh, awesomely delicious Mexican food at home.
These are Vegetarian Nachos with protein-rich black beans, fresh produce, spicy and zesty pickled jalapeños, and all the bells and whistles of your favorite Mexican chip dish. There’s actually no real recipe to follow, just simple and easy to find ingredients that you should feel comfortable to switch up depending on what you crave. That’s what’s so easy about this dish (in addition to it being an incredibly fast meal to make)! Add what you want, and how much you want. I went ahead and listed what we add and approximately how much, but to be completely honest, we just eyeball it when we make them because, well …it’s nachos for heaven’s sake! You can’t really go wrong with what your body tells you it feels like. I definitely crave that perfect crunch and heat from the onions and jalapeños, so I always opt for more of those on my nachos.
And typically, Barry and I will make a whole tray of these nachos, take them out of the oven, and eat them right off the baking tray, family style! Fun and yum! And the great thing about it is that if the people in your family like different things on their nachos you can make the whole tray of chips and then add certain toppings to one half and certain toppings to the other half. Once in a while we like to add cooked ground beef to one side of the nachos because Barry likes it but I prefer my nachos vegetarian. Honestly, so easy peasy, this dish.

Green Mung Bean Pancake
Green Mung Pancake, is a part of the Indian cuisine and is mainly eaten for breakfast or as a evening Snack. It looks tiny however has huge health benefits as it's high in protein, diabetic friendly and contains fiber not only that it's even a good source of potassium, copper, manganese, zinc and vitamins.The recipe for this delicious snack is so simple and is easy to follow that even a beginner could easily prepare
Here's the recipe, Let's get started!
Ingredients
2 Cups of whole green mung beans
2 - 3 fresh green chillies
2 garlic cloves
Salt to taste
1/2 to 1 Tbsp olive oil or any refined oil
Note
There are two ways to prepare the green mung batter, the first one is, by using the mung flour and the second is by soaking the whole green mung overnight or for 4 - 5 hours minimum, until it looks double then its size.
If you choose to soak mung overnight, wash it, drain the water and soak in fresh water, however if you are preparing the green mung pancakes the next day and you forget to soak mung the night prior, you can soak mung in hot water for 4 - 5 hours  before preparing the pancakes.
If you like to make pancakes out of the mung flour, 2 cups of mung flour, mix it with ground chillies and garlic with salt (according to you), now add little water and stir well, to bring to the pouring  consistency. (add water until the batter is smooth and thick)
Once mung is soaked, wash it and drain the water and blend with 2 chillies, 2 garlic cloves and salt to taste. Add little water, as we require thick batter and blend until the the batter is smooth.
If the batter turns out to be as desired, then remove the it in the mixing bow
Taste the batter and add salt if required and if you are the one who likes to eat spicy, you can add chillies, if you like.
Now give a good stir to the mixture and place the pan on medium flame. Once the pan is hot, check the mixture, if it's of the pouring consistency, that is, if the batter is too thick you can add 1-2 tbsp of water. Then drizzle few drops of oil over the pan, take a ladle full of batter and pour in the center of the pan and spread batter outward in a circular motion, to form a round pancake. You can either use the back of the spoon or a spatula to gentle spread the batter.
Cook the pancake until golden brown, then flip it and drizzle few drops of oil and cook until even the other side turns golden brown. Once the pancake is ready, remove it on a absorbent sheet , to get rid of excess oil.
Follow the same procedure to prepare the pancakes out of the remaining batter
This soft and yum snack is ready to serve! The condiment like Garlic Pepper yogurt dip, Tomato Sauce, Mango pickle etc, goes pretty well with this snack.
Tips
I use whole mung for this recipe, however if you are looking out for an substitute for whole green mung, you can also use green mung dal (split skinless mung dal)
Little water would be just enough to make the desired batter
You can also use sprouted mung as an alternative to soaked mung.

balsamic kale with cranberries
I’ll admit that simple sauteed kale with balsamic vinegar and dried cranberries is not the sexiest recipe to highlight in the first few days of the the new year, but with so many of us (myself included) cutting back on refined sugars, grains and dairy, I think it is appropriately useful to share it with you today. It’s a recipe I have been making for the better part of a decade, and it is always a great addition to our healthy plate. It happens to be vegan, paleo and gluten-free, but that’s not all it has going for it. It also happens to be sweet and tart and a delicious way to enjoy fresh kale! 
I originally shared this recipe on October 29th, 2013. I have updated the text, images, added a video (see below) today.  
Are you craving fresh food right now? I am pretty certain you’re going to say yes, and friend, me too! Like times 1,000,000! I’ve been digging into the veggies like there is no tomorrow. Don’t get me wrong, I had a great December and holiday season. But after a lot of Eggnog White Russians (OMG yum!) and Pecan Snowball Cookies (who can say no to a snowball) I don’t feel that great. In other words, I am ready to get a little bit of green on my plate right now. I have more news to share on all that and what I am doing about it, so if you follow me on instagram or you’re on my email list I’ll be sharing more about it over there. 
a Super Easy Vegan Side-dish
The first time I made this recipe seven years ago, I’d been in a similar boat. I’d been traveling with my family and after too much processed foods, I craved something whole and fresh. So I went out to our row of kale in the garden and took no mercy. After I removed the ribs from the kale, I chopped it up. Then I sauteed it with some onions from the CSA, some apple juice-sweetened organic dried cranberries from the cabinet and a drizzle of really good balsamic.
I have been making it ever since. I almost always have the ingredients on hand and it provides a nutritious and delicious counterpart to so many dinner combinations. I love the way the sweet and sour flavors work with the slightly bitter kale. It is such a simple recipe, after trying it once, you’ll be able to do it over and over again without even measuring!! I have noticed that sometimes it is the most simple recipes (like this green beans with walnuts and balsamic or this lemon garlic broccoli) that resonate the most with busy families. So I really hope you enjoy it too. 
How to Make Vegan Balsamic Kale with Cranberries
Shopping Notes: You can use green, purple or lacinato (dinosaur) kale to make this recipe. Also, dried cranberries are most commonly sweetened with sugar. If you are following a paleo diet, look for cranberries sweetened with fruit juice. I find them near the bulk department at our local health food store. 
Kale cooks down a lot when you cook it, so you’ll need to start with a full head of kale. Since the size of bunches of kale varies, if your market or CSA has smaller bunches, grab two. Remove the ribs, chop the kale and wash it. You’ll want 8 cups of chopped raw kale to make this recipe. If you use lacinato, you’ll want to cut the leaves more finely. 
Next you’ll need a diced onion. If you missed my post earlier this week, please check out the proper way to dice an onion. It is part of my new series of cooking basics called “In The Kitchen.” I use whatever kind of onion I have on hand, but I think sweet onion is really nice to naturally boost the sweet flavor of this kale recipe.
Sauté the onion in olive oil until it is brown. (See the video for a visual of that.)
After that add on the kale, salt, cranberries and water. Quickly cover the skillet to capture the steam from the evaporating water, and let the kale wilt. I usually stir it once or twice, to help it wilt down evenly. 
To keep an ever so slightly crunchy texture and brighter color, err on the side of not over-cooking the kale. But if you prefer soft and tender greens, feel free to continue cooking it to your preference. If you do so, you’ll likely need a splash or two of water as the skillet goes dry.

vegan balsamic kale with cranberries paleo
Description
Easy healthy kale saute with dried cranberries and balsamic vinegar. Gluten free, vegan, clean eating and paleo.
Ingredients
1 tablespoon extra-virgin olive oil
1 medium onion, diced
8 cups shredded kale leaves (no stems)
¼ cup dried cranberries
2 tablespoons water
¼ teaspoon salt
4 teaspoons best quality balsamic vinegar, or to taste
Instructions
Heat oil in a large skillet over medium heat. Add onion and sauté until starting to soften and are browned, 3 to 5 minutes. Add kale, cranberries, water and salt, cover and cook, removing lid to stir often until the kale is wilted and tender, 3 to 6 minutes longer. Drizzle with balsamic vinegar.

16 Of The Best Tacos To Make For Every Meal Of The Day
When you’re the one who has to decide what to make for breakfast, lunch, and dinner, it’s easy to get stuck in a food rut. But there’s an easier way to get out of a food rut than by trying out a bunch of new, unfamiliar recipes. Instead, choose one very versatile food, and start exploring the different forms and varieties of that one food.
For instance, one of my very favorite versatile foods to experiment with is tacos! There are thousands of taco recipes out there just waiting to be discovered, including ones for breakfast, lunch, or dinner! I make tacos frequently at home for that very reason, so I thought that for today’s blog post, I’d offer up an ode to the versatility of tacos!

I’ve gathered together a list of 16 delicious taco recipes for every meal of the day and included it below. The list begins with a few breakfast options, then transitions to lunch and dinner varieties. And that’s one of the beautiful things about tacos—you can fill them with what you want, and eat them whenever you want too. By the end of this post, you’ll not only have plenty of tacos to try, but might also be inspired to start exploring your own unique taco creations! :-)
16 Delicious Taco Recipes For Every Meal Of The Day
1. Potato, Bacon, and Cheese Breakfast Tacos

Cook chopped bacon in a skillet on your stovetop over medium-high heat until it’s crisp and browned, about 4 minutes. Then remove the bacon with a slotted spoon and add cubed russet potatoes to the skillet and the hot bacon fat.
Add salt and pepper to the potatoes and cook, stirring occasionally, until they are browned and fork-tender, about 10-12 minutes. (Or you can spreed up the process by using refrigerated hash browns instead!)
Once the potatoes are cooked, add a couple of whisked eggs to the skillet, and stir them constantly until the eggs are set, but still soft.

Ingredients:
4 slices bacon chopped

“My love for Miami is endless,” Tatiana Moreno, a Miami native and bartender at cocktail hotspot Sweet Liberty, says.
Located in Miami Beach, Sweet Liberty is relaxed and welcoming, despite the countless awards and accolades that have poured in since it opened in 2015. It’s a testament to its dynamic team, undoubtedly one of the best in the country.
Moreno is proud to be from Miami and represent her city. “Being born and raised here might make me a little biased,” Moreno says. “However, I truly believe my city is full of some of the most cultural and diverse communities. We have something for everyone, every mood, every day.”

The Corner
“While popular for being open insanely late and being littered with bartenders and weirdos alike in the early hours of the morning, I love this bar for a different reason: their smoked weenies. Tiny little cocktail weenies surrounded by cornichon pickles. Simple but delicious. Once for my birthday they brought an order of these with a candle in it. Tuesdays there are my favorite because it’s jazz night and being that The Corner is a small place, you get a pretty intimate, free show. They also carry over 100 craft beers and make a mean cocktail.” Location.

Mac’s Club Deuce
“The Deuce is the ultimate dive of all dives. It’s an important stop if you’re interested in being a part of real Miami Beach culture. “Miami Vice” even had their cast party here in the ‘80s. It’s been open since ’64, and it’s closed for just three hours a day and with possibly the best happy hour on the beach going from 8 a.m. to 7 p.m. This is my favorite place to have a High Life and shot of tequila. Don’t forget your cash, though. They don’t take plastic.” Location.

“I tend to overindulge here — but this is one of my favorite places to bring people when they’re visiting. Mama is home away from home! They have shaggy red carpet, sick tunes, and a ceiling with actual shooting stars, plus some of the most fun bartenders to take shots with — and you can get a bag of chips for 50 cents. There are also 800-plus spirits and a badass cocktail menu to explore, and I like to think we’re a pretty rad crew to hang with.” Location.

“You’d better wear something stretchy to come here. When I tell you that this is the best Italian food in all of south Florida, you better believe it … with an array of pasta, cheeses, and killer wines curated by Jacqueline Pirolo, this has become one of my preferred places to eat in Miami. The pork sausage polenta is my go-to starter and the reason I come, but I stay for the cacio e pepe. If you’re in town (especially if you’re here on a Thursday) you don’t want to skip out on $10 pasta night.” Location.

“A little off the beaten path up in north Miami is where you’ll find the best Thai food in the city. Ricky Thai is a small mom-and-pop restaurant maybe seating 25 people max with some seriously authentically delicious and spicy food. The red curry and tom kha gai are my go-tos, but if you’re into pad Thai, theirs is phenomenal. There’s something so homey and warm about eating here… It’s only open for seven hours a day, but this place is a must.” Location.

“Want to feel like you’re at a dope house party with some fire food and drinks? Then you need to come here. The service at 27 (located right next to Broken Shaker) is always something to be talked about and elevates the experience to the next level. My favorites include: the whole catch of the day paired with taco fixings along with Chef Jimmy Lebron’s seasonal chicken dishes, which in the past have come in the form of chicken pot pies; jerk chicken; and, currently, a chicken tagine made with 27 spices and paired with a bulgur couscous.
