So on a day like today, the old me would have been in the kitchen, eating everything in sight, tapping into my cider reserve before noon, trying to numb out with food and drink until I could pass the torch to Paul. Terrible 2's suck... and I'll be so glad when she's over them, just in time to do it all over again with the baby. But, today, I took in all the love and support, breathed, and came home from my pedicure feeling much better, thanks largely to my sister who not only watched the girls while I went off to decompress, but also cleaned my kitchen... something I can never stay on top of and is a big contributor to my stress level. Working on myself with personal development is paying off... though I should find some that specifically address tyrannical toddlers. 😂😂 So, I heated up some of the rice and sweet potato I prepped on Moday, and made a small spinach salad with an AMAZING sun dried tomato vegan cheese by Miyoko's kitchen. So proud of myself for not going back to old ways, and staying on track! I was having one of those moments... you know, when you could have gone one way, but because of personal growth, you went another? The 2 big ones were outside chasing each other and fighting in the back yard. The hubs is texting me, asking what's for dinner while I'm in the middle of doing the dishes so that I can start making dinner, and this little one is screaming her Itty-bitty lungs out from my feet, because she wanted to be held. I was being pulled in so many directions, so much noise, so much chaos... and I decided to stop. Breathe. Wear the baby. I looked in the mirror to adjust the shoulder, and we had such a sweet moment, I had to capture it. She was clinging to me like a little baby monkey, catching her breath, nuzzling into me, and when she saw us in the mirror, she smiled. I smiled. We smiled. I would've normally lost my cool, stormed back into the kitchen to keep scrubbing dishes, more irritated and peeved with a baby on my hip because I'm never allowed to have a moment of peace to myself, even when doing my most hated chore... but I chose to pause and find the joy in the moment, and make it a happy memory. It's a common misconception that vegans eat nothing but salad. . That's what most restaurant chains seem to think. Maybe some pasta with marinara sauce, hold the cheese. But if you're gluten free too? Forget about it. Here's your plate of naked romaine lettuce... enjoy! . I can honestly say that in the last 2 months, I can go back and count the number of "salads" I've had on one hand, including this one here. . Times are changing. Lots of people are discovering this plant-based lifestyle, and many more cannot eat dairy or gluten for health reasons. . That leaves us nothing but REAL, whole food to eat. Imagine that. It's not complicated at all, and yet when I went to a major chain restaurant over the weekend, trying to find something from their complicated "gluten free" menu, it was very disappointing and frustrating... and I've only been doing this for a very short amount of time. .
