Figs are one of the most delicious and healthy fruits you can eat. Their nutritional value is highly impressive. They're high in fibre, rich in vitamin A, B1, B2, manganese, magnesium, copper, iron and phosphorus. It's an Asian species of flowering plant in the mulberry family. Every part of the fruit is edible except for the stem at the top and the skin tastes different to the fruit and seeds inside. Middlesbrough is a cosmopolitan town with many different influences when it comes to food. One of our favourite lunch spots in Middlesbrough is the Middle-Eastern Shawarma place on Victoria Road. Today we had chicken , naan, salad comprising of jalapenos, cucumber, lettuce, tomatoes, pickle, garlic and mint, with a cup of cinnamon tea. What an absolute pleasure and privilege it's been meeting food industry pioneers from around the world at the Speciality and Fine Food Fair. So much creativity and flair all under one roof! Sharing ideas with expert foodies has been brilliant, I've learned so much today it's been amazing. I set off from Middlesbrough at 4am by car, drove to Watford and then got the train to Hammersmith. When creating a business you've got to put in maximum effort at all times. This has been one of the most well organised and enjoyable events I've ever attended, I'm just gutted I couldn't stay for the next few days! Made some outrageous saffron, pistachio and vanilla ice-cream, because that is how we roll! It's always a pleasure using the mezzaluna to crush nuts up 😎😋😊😀 Simply get some good quality vanilla ice-cream, take out of the freezer for 5 mins to soften. Put the ice-cream in a large bowl. Use a small glass, add boiling water and a very generous portion of saffron. Stir and leave for 5 mins to allow the flavour to be released. Add to the ice cream and whip with a spoon. De-shell some pistachios, crush up with a mezzaluna. Add the crushed up nuts to the ice cream and whip well once again. Add to the freezer and leave overnight. FOCUS ON LEBANON Lebanon is a Mediterranean country in the beautiful Middle-East that is west of Syria and north of Israeli-occupied Palestine. The main language is Arabic but English and French are also commonly spoken too. Considering Lebanon is a fairly small country with a population of around 6.8 million, it's cultural impact, especially in relation to food, is astonishing. The capital city is Beirut and it's known for it's beautiful boutiques, vibrant nightlife, liberal locals, historical/religious sites and world class food, amongst many other things. Beirut is known as the Paris of the Middle-East and although it still bears some scars from the civil war that ravaged the city from 1975-1990, the city is one of THE up and coming destinations in world travel. GROUND CORIANDER - Is a spice native to Southern Europe and the Mediterranean, which is the ground seeds or fruit of the coriandrum sativum plant. The flavour of the ground seeds is very different to the coriander herb. It has a sweet and fragrant flavour, with a hint of citrus. I've found a little taste of Amsterdam 🚲 right here in Middlesbrough!! (Park Lane Garage, Ts1). This beautiful Dutch drink is hugely popular and widely available in the Netherlands 🇳🇱, Germany 🇩🇪 and Belgium 🇧🇪 but I don't believe I've ever seen it in England. After reminiscing a few days ago about the time we spent in Luxor, Egypt, I'd been thinking about the National Dish of Egypt which is Foul Moudamas. This is boiled beans crushed with garlic, lemon and oil with spices such as cumin. It's often served with bread. That dish is popular amongst many countries in the Middle-East so I knew I'd find it around here somewhere. Luckily my hometown of Middlesbrough is home to one of the most diverse communities on Earth and there is a great Lebanese restaurant a 5 minute drive from my house 😊 @thebake.two I had some lush foul moudames, my daughter had some falafel which she really enjoyed, we had a few naan just out the oven and a freshly-squeezed orange juice too. The bill was less than £9 for everything!
