Last night, I cooked it with sausage and added in homemade avocado based sauce. Food prep doesn’t have to mean eating the same thing every day. You can take food prepped in bulk and recreate the dish you eat. Is this #meatless .....? 🌶🥬🍄🥟 YUP. Always! I’m approaching 15 years since the last time I ate meat. It’s crazy to think that I have been a vegetarian for this long. Here are some reason why I chose to go Meat Free: 1️⃣ I didn’t like the taste. I came from a “meat and potatoes” family. Typical New England Irish cuisine. I ate it because it was normal and everyone did it but with the exception of hot wings and chorizo when in Rhode Island....I could easily skip eating it. When I was younger, it was all about the carbs and cheese. 2️⃣ Heart Disease runs in my Family. I first came in contact with vegetarianism when my maternal grandmother was nearing the end of her life. Per doctor’s order, she gave up red meat to help her live longer. Around this time was the first time I gave up eating meat in solidarity with her. This was 3 years before I became a veg head for life. 3️⃣ Commercially processed meat is Pumped with Antibiotics @peta educational materials were definitely key in my exposure to the woes of the meat industry. This fact is also why I switched to dairy free milk as well. I am someone who is weary of taking any medications, including OTC ones. I always think it’s best to try every natural alternative first. I couldn’t continue to knowingly ingest second hand antibiotics. 4️⃣ Unethical Treatment of Helpless Animals Yes, more PETA and reading Upton Sinclair definitely exposed me to the nuances of slaughterhouse etiquette. Yeah, no thank you. If you think this behavior has stopped. Google Fairlife dairy. If I ever ate meat again, I would rather hunt it myself or know the farm who raised it. I don’t want to be anywhere near that level of cruelty to a living breathing creature. 5️⃣ Environmental Impact The American meat industry uses up an astronomical amount of water and causes detrimental pollution. Climate change is real and the livestock industry is a massive part of the problem. 🐮🐷🐔✅ Let me know if you’re looking for resources on becoming meat free, I can point you in the right direction. You don’t have to give up all meat. Just a few meals or a day each week. Choose local farms/grass fed meat over meat from the livestock industry. When is the last time you appreciated yourself? Like truly said, “Damn, I rock/I’m amazing/ I killed it” • We spend a lot of time criticizing ourselves for not being good enough. It’s time to tell yourself, “I love you” until you mean it. • Be proud of your accomplishments, no matter how small it may seem. Leaving the house, walking a mile, going to an interview, one healthy meal, completing education degree/certificate. • All of us are on different timelines, gaining different experiences in varying aspects of life at our own pace. Just because someone else has XYZ doesn’t mean they don’t envy something you have too. • THEY lost weight. THEY got married. THEY bought a house. THEY got a promotion. THEY won some money. THEY are loved and accepted. • We spend too much time comparing ourselves to others. Nobody is perfect or everyone is perfect, there is no in between. • Lift up those around you but remember to lift up yourself too. If you spend time telling yourself you’re not good enough, spend more time telling yourself you are enough. • I AM strong. I AM beautiful. I AM fierce. I AM blessed. I AM healthy. I don’t even know who I am any more! •••••••••••••••••••••••••••••••• Bring 1 cup of unsweetened Almond Milk to a boil with cinnamon and/or pumpkin pie spice Slowly whisk in 1/4 cup of Cream of Rice and remove from heat. I have been thinking about making a Vegan Alfredo Sauce for weeks and I finally did it! #veganalfredo #brownricelinguine #asparagusrecipes Alfredo Sauce: 1 Can of Lite Coconut Milk 1/8 cup EVOO (Probably not necessary if you use full fat coconut milk) 2 TBS Garbanzo Bean Flour (Used to thicken the Sauce) 2 TBS Nutritional Yeast Salt, pepper and garlic powder to taste. I used lots of garlic and pepper. Wayyy more pepper than I thought. Annnnd that’s it. I wish there was more GREEN in this dish. My asparagus to noodle ratio was way off. These are some leftovers from meals earlier in the week: Wild Rice Quinoa and Red Lentil Mixture Black Beans/Kidney Beans • I always cook extra and leave it plain to continue to use for more meals. It’s meal prepping without commitment. • Yesterday, I decided to try an make some Leftovers Spring Rolls. • I took a half cup of each plus a half cup of frozen peas. Then added in all the all the spices pictured and microwaved for 1 minute. • I used the same Rice Paper I used for Fake Bacon (See Iron Throne Salad post) and rolled up for Spring Rolls. Now....this is not 100% cleanse perfect because I heated 2 TBS of coconut oil to crisp up the Spring Rolls. I cooked them very lightly and kept the heat low but 3 out of 4 fell apart. Probably due to overstuffing! In hindsight, I shouldn’t have cooked them at all. These homemade protein gluten free pancakes were so good, I don’t think I will ever eat regular ones again. Inspired by @simnettnutrition 🥞 PANCAKES 1 cup of Gluten Free Oats ground up using a blender 1 banana 1 tsp baking soda 1 tsp baking powder 1 TBSP ground flax seed 1 tsp monk fruit sweetener 1/2 tsp cinnamon 1/2 cup unsweetened almond milk 1 scoop protein powder @tryabouttime (Use code RICH19 for 15% off) • Using a cast iron pan was the best for not sticking. • Makes 5 small pancakes 🥥🍓🍇 COMPOTE 1 cup Frozen blackberries/blueberries 2 TBSP Hemp Hearts 1/8 cup shredded coconut 1 TBSP chia seeds • Heated until melted down. “I can’t meal prep” is a statement I hear from many of my clients. The idea of living the Tupperware lifestyle is nauseating. The idea of prepping for hours on a Sunday is daunting. The idea of eating the same thing everyday is horrendous. ... I get it. I sympathize. I know.
