IT'S ROSEWATER SEASON!

My neighbor has what appears to be a Damask rose growing under my fence, so I've been helping myself to the dozens of intensely fragrant, oddly unattractive flowers it produces every June. I store them in the refrigerator, then when I have an afternoon free, I start distilling.

The technique I use involves a Dutch oven, a mason jar ring, a bag of ice, and a soup bowl. A turkey baster is helpful.

Place the mason jar ring in the bottom of the Dutch oven and add about 1/3 inch of water. Place the bowl on the mason jar ring, so it's not touching the bottom. Place two handfuls of rose petals on the water outside the bowl. Cover the Dutch oven with the lid upside down. This is important. The handle of the lid must fit inside the bowl, so the whole thing closes properly. If not, choose a shallower bowl. Now, place a quart ziplock bag full of ice on top of the lid, and cover all exposed edges of the lid with a damp washcloth. Bring the pot to a low simmer.

The idea is that steam from the water and petals inside the Dutch oven will condense on the curved surface of the upside-down lid and then drip down into the bowl. Every 5-10 minutes, lift the lid slightly, tap it up and down to shake off condensation, then remove the lid and use the turkey baster to suck the collected condensation out of the bowl within. Transfer this to a clean glass jar for storage.

As the rose petals cook, they will shrink and lose their scent and color. Add more. Periodically, you will need to scoop out used petals and add new ones, also add more water. The yield is quite small: about a gallon of petals yielded about 10oz of rose water.

Rosewater keeps for at least 6 months refrigerated, but not indefinitely. It can be used to flavor cocktails, drinks, or baked goods; really anywhere vanilla is used, but it's much much easier to overuse than vanilla. If you're too aggressive with it, your food will taste like soap.

The reason to pursue this tedious process rather than just steeping the rose petals in water, is to avoid picking up the tannins found in rose petals that give them a bitter taste. The steeping liquid at the bottom of the Dutch oven has a brown color, while the rosewater, which contains primarily the volatile oils, is clear. The reason to pursue this very wasteful process rather than using an actual still is that I'm cheap.

I'm also making rose-infused vinegar (for rinsing my hair; I've ditched conditioner for 3-in-1 shower gel followed by a dilute vinegar rinse), rose-infused grapeseed oil (to later extract with vodka for rose-infused vodka; the idea is that the oil shouldn't pick up the tannins so when I extract the oil with the vodka it should get just the desirable flavors), and gulkand (rose petals pickled in sugar for a month).

Everything in my house smells like roses and will do so for the rest of the week. My eyes itch. My fingers are dry. Pray for me

Every Rose Has Its...  Jam

This past summer, the combination of the excessive heatwave and the brush fires about 2 miles away from my home had me worried about many things.  One of them was my rose bush, which according to my mom she planted over 30 years ago.  At one point, they took over an entire side of our backyard, but now we’re left with only two plants, and they looked like they were dying.  I kept watering them anyway and last week I was surprised to find a dozen rosebuds.  I did cut a few to enjoy indoors on the kitchen table, and the rest I left alone.  The ones I plucked blossomed beautifully and even after the petals fell, they still looked and smelled lovely.  I thought it was a pity to toss them, and then I wondered if I could turn them into jam.

After Googling a lot to make sure I wasn’t going to poison myself with this, I did see a few people who made some form of rose petal jam.  Almost all used pectin, which I didn’t have, and the one recipe didn’t but specified that the jam was more like syrup.  I did have gelatin on hand, but there were no recipes that recommended gelatin so that meant I had to experiment a bit, and quite amazingly, I think I got it right on my first try.

First made sure I had enough rose petals - 1 cup packed.  I rinsed then under filtered water and then patted them dry, and I removed the petal stems as well as any petals that looked like they were deteriorating.  Next I threw them into a sauce pan with 1 cup of granulated sugar and lemon juice from half a lemon (approximately 1 tablespoon).  Using my fingers, I mixed them all together to release some of the color and perfume from the rose.  Next I added 1/2 cup of filtered water and then turned the burner on to low heat until it comes to a slow boil, stirring gently throughout this time.  Once the jam boiled, I added in 1 packet of powdered gelatin (approximately 7g).  Once I could see the gelatin had completely dissolved, I then poured everything into a jar to cool and refrigerated overnight.  The next day (which was today) I had a lovely jam to enjoy with my croissant!

Recipe

Servings: About 10oz

Ingredients:

1 cup (packed) rose petals

1 cup granulated sugar

Juice from 1/2 lemon (or 1 tablespoon of lemon juice)

1/2 cup water

1 packet of powdered gelatin (approximately 6g)

Cooking Directions:

Rinse and dry rose petals.  Make sure to remove petal stems and any deteriorated petals.  Some petals may be salvaged by trimming the edges of the petals.

Add the cleaned petals to a sauce pan and add sugar and lemon juice.  Mix by hand, gently massaging the petals if you prefer the jam to retain whole petals.  The mixture should be paste like after thoroughly mixing.

Add water and turn burner on to low.  Gently stir until the jam comes to a low boil.  

Add gelatin and continue to stir until gelatin has completely dissolved.

Transfer jam to a mason jar (or glass container of your choice) and cool.  Best to leave in the refrigerator overnight.

Side note: gelatin is made of animal collagen, typically pork, so pectin is a better option for jams as it is made from fruit.  If you have pectin on hand, use 1 tablespoon in place of the gelatin.

DIY Floral Candle

Here’s what you’ll need:

soy candle wax (1 lb. will make about two 10oz candles)

candle jar or tin

candle wicks and wick stands (I used a wooden wick for a nice rustic touch, but any wick will do!)

flowers of your choice, petals removed

essential oils of your choice

Start by securing your wick to the bottom of your jar. I used a Glue Dot on the bottom of the wick stand to make sure it would stay in place. 

When your jar(s) are ready, melt the soy wax over the stove using a double boiler, or a bowl placed on top of a pan of simmering water. Allow the wax to melt completely, then remove it from the heat.

Allow the wax to cool for a few minutes. This will help ensure that your essential oils don’t smoke when you add them.

Next, add your essential oils of choice. (Keep in mind that a pound of wax requires quite a lot of essential oils to be able to smell the scent. I used White Fir as my main oil, and I ended up using around half a 15ml bottle of it.)

Once your wax is scented, dip your flower petals into the wax and stick them to the sides of your candle jar. This part is a little tricky, but just press each petal onto the glass for a few seconds each to adhere it.

Once you’ve placed all of your petals, gently pour the wax in to fill the jar, and let the wax set completely.
