Crunch Time: The Ultimate Crispy Smashed Potato Recipe!

Ingredients:

Small potatoes (about 1-2 inches in diameter) – as many as you'd like to make

Olive oil – for that golden crisp

Salt – to taste

Pepper – for a bit of spice

Your favorite herbs (rosemary, thyme, or parsley are great choices) – to add a burst of flavor

Step 1: Boil 'Em

Start by boiling your potatoes in a large pot of salted water. You'll want them fully submerged. Boil them until they're tender, which usually takes about 15-20 minutes, depending on their size. Poke them with a fork to check – if it slides in easily, they're done.

Step 2: Cool & Smash

Once your potatoes are boiled, drain them and let them cool for a bit. You don't want to burn your fingers in the next step! When they're cool enough to handle, place them on a baking sheet lined with parchment paper. Now, here's the fun part: gently smash each potato with the bottom of a cup or a potato masher. You're aiming for them to be about 1/2 inch thick.

Step 3: Season

Drizzle your smashed potatoes with olive oil, then sprinkle them with salt, pepper, and your chosen herbs. Make sure both sides get some love! This is where the magic happens, turning them from boiled potatoes to something irresistibly delicious.

Step 4: Bake 'Em Crispy

Preheat your oven to 425°F (220°C). Once it's hot and ready, slide your baking sheet into the oven. Bake the potatoes for about 25-30 minutes, or until they're golden and crispy. Halfway through, you might want to flip them to ensure even crispiness.

Step 5: Enjoy!

Your kitchen will smell amazing, and those crispy smashed potatoes are ready to be devoured. Serve them hot, with a side of your favorite dipping sauce or just as they are – they're that good.
