Luigi Themed Dinner!
Tumblr media Tumblr media Tumblr media
Green Irish Soda Bread and Creamy Mushroom Soup Fairly healthy, vegetarian friendly, and cheap!
It's my first time trying these recipes, so I'm happy to say both turned out very well.
I did mess up the soup by adding the garlic to the mushrooms before sauteing them instead of after, but it turned out fine despite. (I also added 1/4 teaspoon of thyme instead of the recipe's suggest 1/8th teaspoon. 1/8th teaspoon felt like too little to me, IDK.)
The soda bread was good, but I feel like it didn't pair with the soup as well as other breads might have. On the website the recipe's image shows the soda bread smothered with butter and jam, so I saved half my roll to try with jelly in the morning.

Shout out to @insertdisc5 for including the recipe for the malanga fritters in the ISAT manual! I can see why they're Siffrins favorite, they were a big hit for me and my roommates!

Super simple salmon recipe (I usually make 2 pieces) can be paired with anything
Salmon *From Frozen*
Tools:
Baking pan or cookie sheet
Aluminum foil
Ingredients:
Salmon fillets (frozen)
Marinade/sauce of choice/seasoning (I like to use olive oil and kinder's steak seasoning)
Prepare:
Coat fillets in marinade/sauce or olive oil and seasoning rub, both sides
Wrap with foil, sealed but loose (to steam)
Bake at 425* for 15 minutes
Remove foil and continue baking for 13-15 minutes
Enjoy!
oooh and it cooking from frozen means i can cook two and leave the others for another day 🤔 and it seems very easy!! now to research what spices go well on salmon, since my spice cupboard is incredibly limited at the moment
thank you!! this will also help me branch out my proteins so i’m not always eating chicken and peanut butter

SUCCESS.
Mojo marinated pork shoulder, black beans, rice, tostones. The second batch of the tostones admittedly got a little frazzed but they still taste good so 🤷
