As Sweet As Honey - Chapter 4
The farmers market was busy, the sunshine and good weather always bringing people out to enjoy what the town had to offer, and as the summer approached the amount of tourists increased too. From the moment Sy had set up there had been a steady stream of customers stopping by his stand, but at every given chance he would be looking around, trying to find one particular face in the crowds. 
It was one such moment when he was looking away did someone clear their throat, to which he was a little startled by as he turned and spotted an older man in his late 60s standing beside his stand holding a jar of honey;
“You make this?”
He spoke with a strong Italian accent.
“I do Sir. Would you like to try it?”
“And the bees, they are local, yes?”
“Yes Sir, the hives are on the meadow as you head West out of town”
“Ah, so not far, hmmn”
The older man held the jar up to the light, watching as the amber liquid glinted in the sunlight. Sy bit back his smile, he knew exactly who this was, although had never met in person before as he turned back to him;
“Is it good to cook with?”
“It would be perfect for the dip to go with the churros. Though a Jalapeno would work better with this rather than the red chilli’s you already use”
There was a moment of quiet, before the older man finally smiled and held his hand out;
“Antonio Cosentino”
“Lucas Syverson”
“Good to meet you Mr Syverson. I saw you in my restaurant last night with your lovely lady”
Sy smiled at the mention of you;
“Yeah, she’s great. She actually suggested i approach you about the honey”
“She’s got a good head on her shoulders” he leant forwards; “And a good pair of burrata… if i was 30 years younger you’d have some competition i tell you that” 
He held his hands out in front of him in a cupping motion and Sy did his best not to laugh too much at the old Italian commenting about your breasts and likening them to the shape of balls of fresh mozzarella cheese. Instead Sy diplomatically changed the conversation;
“I tell you what Mr Cosentino, take that jar - it's on me - put it on the menu tonight and i’ll swing by on Monday for an espresso, you can tell me what you think”
Antonio held out his hand and gave Sy’s a firm shake;
“You have a deal… and you said espresso without the ‘x’ so you already have gone up in my book”
“I spent a couple of months in Italy on special assignment with the Pozzuolo del Friuli after my last tour of Iraq, you only say it with an x once when you are with them”
“Bosnia?”
Sy shook his head;
“Before my time with them. Assisted with peacekeeping in Lebanon”
Antonio nodded solemnly;
“You’re a good man” he held up the honey; “Grazie. 11 o’clock on Monday?”
“Sounds good”
As Sy watched the old man walk away he smiled but it was bittersweet. His time with the Italian’s had been his last in the forces, and the sights he’d seen in Lebanon had made him question a lot of things, but had been a deciding factor in leaving the Army. He took a deep breath and looked around the market, taking in the bustling crowds and happy faces. He glanced up to the higher walkway that surrounded the market place and saw a sight that lifted his mood immediately; you.

You were surprised at how busy downtown was, but then it was also approaching lunchtime so there was the lunch crowd out as well as locals doing their shopping and people just enjoying the sunshine.
After sleeping in late you did some chores before Tamara swung by to drop the books off she’d borrowed and had offered you a ride into town, but you’d declined as a walk in the sunshine was just what the doctor ordered after the indulgences of dinner the previous evening.
Once you’d stopped at the post office and mailed the original manuscripts for the SATS test papers you’d finalised, you just had a couple more errands to run before you made a trip to the market. It wasn’t that you were nervous about seeing Sy, but you knew you wouldn’t be able to concentrate on much once you’d seen him, so you got as much done as possible before that eventuality. As you came out of the post office you recognised a tall burly figure crossing the road towards you, a very familiar dog on the end of a leash trotting alongside him. For a moment you stood and watched as Sheriff Marshall and Akia approached, noting how the dog was as obedient for him as she was for Sy. He passed you without noticing, but Akia started to drop behind, turning to look back at you;
“C’mon girl” Walter tugged gently on the leash but instead the dog just planted her butt on the sidewalk, looking back at you. The hulking Sheriff finally turned and looked up to where Akia was staring, before a moment of recognition. Looking back down at the dog he spoke;
“Do you want to go and say hello?”
Akia stood and wagged her tail, to which he let her trot along the sidewalk to where you were standing;
“Hi”
“Morning Sheriff”
He held his hand out to you;
“I guess as my cousin is dating you, you could call me Walter”
Shaking his hand you smiled at the normally grumpy Sheriff, before Akia let out a quiet ‘wuff’ and you moved your attention to her;
“Have you been a good girl?”
The big dog got all wriggly like a puppy before laying on the pavement and showing you her belly, which you obliged and gave her a quick tummy rub;
“You big softie” standing you smiled at Walter; “So Sy said we’re dating?”
Walter nodded, before gesturing to say he was going to continue walking which you nodded in agreement too, Akia moving and falling into step between you;
“He called me after your date last night, he was so happy” he paused; “I shouldn’t be telling you this, but it’s been a while since he let anyone this close, even longer since he admitted his feelings to me”
You nodded;
“I really like him too, I just want to take things slow at first, you know?”
Walter nodded, as he did in fact know. You’d made a point when you first moved to the town to make an appointment with him and give him details of the restraining order, and he had quietly taken in the information you’d given him. He’d assured you it was a safe, tight knit community, and would make sure your new identity was kept private.
As you turned the corner and walked alongside the railings you could look over the market, spotting Sy’s yellow sunshade immediately. He gave you a wave and smiled before turning his attention back to his customer, Walter clearing his throat;
“Just… be honest with him. I know you don’t have to tell him anything, but…”
“I know. He’s my first relationship since. When the time comes i’ll tell him”
“Thank you” Walter said quietly.
As you approached Sy’s stand Akia picked up his scent and started to strain on the leash, excited to see him again. Once it was safe and there was a clear light of sight, Walter let the leash drop and you watched as the big dog ran to the stand and shuffled under the table, sitting on her haunches as she almost vibrated with excitement whilst Sy handed the customer their change. He turned to her and smiled;
“Have you been a good girl?”
“Wuff”
“Did you chase racoons at Uncle Walters house?”
The response was a whine, to which Akia was greeted with an enthusiastic face rub as Sy called her a good girl and gave her rump a couple of friendly pats with the palm of his hand. Your mind focused on that, how he was gentle but firm, and you wondered how the palm of his hand would feel doing that against your own ass.
“If you ask him nicely he will”
You hadn’t even realised Walter had moved in close until he’d whispered in your ear, but you felt the heat rise to your face immediately;
“I didn’t say that out loud did I?”
“You didn’t need to. I could see your mind working and where your gaze was trained”
You smiled;
“You should be a detective”
“I was. Much prefer this” he grinned at you, before turning to Sy and checking in with him briefly until a local came up to him and started to draw him into a conversation about nuisance speeders on the North road out of town.
“There’s my girl”
Turning to Sy, you were a little taken back by his public show of affection, but didn’t shy away from it. Resting your hands on his chest you smiled as he pressed his lips to yours. His kiss was warm and welcoming, and held just a little promise of more had it not for standing somewhere incredibly public.
“Come sit in the shade with me”
He took your hand and led you around the table, pulling out a second camping chair for you. He delved into a cooler and pulled out three bottles of water and a metal bowl, filling the bowl for Akia before handing you a bottle.
“Thanks. How’s it gone this morning?”
“Busy. Lots of weekenders from out of state”
Just at that moment more customers turned up, and you watched from the shade as Sy worked his sales magic, their purchase list soon growing;
“... and they’re the bath fizzers, simply run a hot bath and pop one in. The honey helps moisturise and the locally grown lavender helps relaxation”
The tourist nodded;
“Is the lavender local? I don’t like that artificially scented stuff”
“Grown right here in town by the lovely lady in the shade”
You looked up and waved, and that seemed to reassure all of the customer’s thoughts on the product, who happily nodded and asked for three. Once they’d left Sy turned to you and pulled a small paper bag out from one of the storage totes he carried stock in to the market;
“For you”
Taking the bag from him you peered inside and saw there were a pair of bath fizzers in the bag;
“Oh, thanks”
You realised your reply hadn’t been as enthusiastic as he was probably expecting, looking up just as a customer arrived but you didn’t fail to miss the slight look of disappointment on his face. For a moment you weren’t sure what to do or say, but as the customer left you stood next to Sy;
“Thank you, really. They smell amazing… would they work in a shower?” Sy blinked a couple of times, trying to process his emotions before you continued; “I don’t have a bath”
“Oh. OH”
“I’m not disappointed Sy, i really do like them, they smell absolutely amazing”
He let out a deep breath;
“But without a bath… yeah, I get that. Sorry, I didn't mean to get pouty” he smiled at you.
“Don’t apologise, please. I should have explained”
For a moment you both just stood there, the bag of bath fizzers awkwardly between you before you set it down;
“Are you hungry?”
“I could eat a horse”
You laughed;
“How about some tacos instead? I passed a stand as we walked in”
“That sounds good”
Ten minutes later you’d returned from the authentic Mexican food truck with two take out dishes of their best tacos, sliding in behind the table at Sy’s stand and handing him a box. As the stand was quiet you both took a seat, eating in silence before you took a rest between your 2nd and 3rd tacos.
“Everything alright?”
You nodded and rubbed your stomach;
“They’re really filling, just taking a break”
Although he didn’t have to, Sy sat back and paused his eating;
“Can I ask you something?”
“Sure”
“You can tell me to fuck off if it’s personal, but I kinda thought all girls loved baths? Like if you remodel a chick’s place the first thing they do is install a fuck off enormous tub”
“Well, it is personal but i’ll tell you the short version; I was in a car accident a few years ago where the car ended up going into a river in the middle of winter. I now can’t cope with being surrounded by cold water… and baths get cold no matter how hot you run them”
Sy nodded thoughtfully;
“I understand” he paused; “If there was a way to guarantee the water stays hot no matter how long you were in the water, would you consider it?”
It was your turn to pause and consider what he was saying;
“Possibly. I never really looked into it. I just know i didn’t want to be surrounded by cold water and i was super happy with my walk in steam shower”
“Now that does sound nice” Sy agreed 
In a moment of bravado you lowered your voice;
“I look forward to showing you how nice”
It was Sy’s turn to blush, the moment interrupted by a customer. You settled back in your chair when a furry snout rested itself on your lap, the drool from Akia’s mouth soon seeping through your dress;
“Yes i got something for you too Akia” before pulling a small plastic bag from the corner of your takeout box; “One burnt end of the brisket”
As the dog happily crunched away on the small morsel you watched Sy, taking in how his ass looked in jeans, how the fabric clung to his thighs. No flannel shirt in the heat, instead he wore a red t-shirt, the fabric taut across his wide shoulders.Your mind wandered to how he’d pushed one of those meaty thighs between your own as you’d kissed on your porch, and the thought of him doing that to you without any clothing barriers between you, in your shower no less, was something you were more than happy to let your mind drift off to.

As the afternoon grew late and the flow of customers waned, Sy sat next to you again and looked around;
“Thanks for the company today, sometimes these things can get a bit boring without anyone to talk to apart from Akia”
“It was fun. You’re a good salesman, I think you could convince anyone to buy your stuff”
Sy laughed;
“I’m just a good negotiator”
Soon it was time to pack up, the market coming to an end. You happily stayed to help as it wasn’t like you had anything other than a book waiting for you at home, and babysitting Akia as Sy went to get his truck. Once everything had been loaded he opened the passenger door and watched as you easily climbed up in your sneakers and shorts.
When he reached your place he turned to you;
“So, still on for dinner at my place tomorrow night?”
“Sounds good. What time do you want me?”
He looked you up and down, a smug grin on his face;
“Oh baby, i want you all the time”
“Sy!” you laughed
“Come over about four, or i can pick you up”
“It’s fine, i’ll walk across the meadow”
You leaned across the centre console of the truck and let him draw you into a deep kiss, which neither of you were in a hurry to finish until a soft whine came from the back seat and you could hear Akia’s stomach grumble;
“I’ll let you go home and feed Akia”
Sy pulled you back for one final kiss before letting you go. He watched as you crossed your yard and let yourself in, making sure you were safe inside before he left. Old protective habits die hard.

Now, I'm sharing just because I'm saving MY recipe here and for the ones who would like to eat some decent fucking Mexican food.
INGREDIENTS FOR THE 3 LITERS OF SOUP. 
6 big tomatoes
4 garlic cloves
1 big ass onion
2 chiles guajillo (dried mirasol)
2 chiles de guisar/ancho (dried Capsicum annuum)
120g of chile chipotle 
1 chicken leg (or just a chicken bone... any bone)
2 chicken breast
carrots to taste
potatoes to taste
Cucurbita to taste (that green veggie)
2 Avocados
Fresh cheese to taste (when I mean fresh, I mean; go and buy it from your local market, not the shit that has probably 6 months in a fridge, this needs a cheese that breaks once you slightly press it between your fingers) if you can't get it, use mozzarella.
15 tortillas (please use tortillas made of CORN, but if you don't have them... well then the dish you will prepare can't be called "Aztec," but hey, you have my permission to use bread or even those shitty nachos BUT YOU CAN'T USE DORITOS... or I'm personally chasing you over and murdering you.)

METODOLOGY!!
1) Bring half a liter of water to boil, turn the energy down (fire or ignition WHATEVER!), and add there the dried chilis (this will help them soften.) Leave them to rest. (just look how sad they look and how happy they turn after a nice hot bath 🥺✨ if you are weak and can't tolerate spicy food take away the seeds and the little veins, Omacatl is going to curse you without friends bc of your puny palate.)
2) In a pot, add 2 liters of water, add salt to taste, and put there the chicken; (as it cooks, take away all the foam.) Cook medium-high heat for 35 min.  
3) Cut the tomatoes and the onion into big chunks, and peel the garlic cloves (do it with your fingers pretend they are the eyes of your enemies and release some anger.) 
4) in a very hot comal (or if you are basic, in a nonstick pan,) put your tomatoes and onion to cook, DO NOT USE OIL!! just let them cook on a hot surface.

c: STFU YOU WEAK HUMAN, THEY NEED TO LOOK LIKE THIS if they don't look like this you are doing it wrong; if you don't do it like this the nearest Mexican human corpse is going to haunt you down.
5) Take away the chicken from the broth, and put it in a bowl.
6) Take away from the jacuzzi those dried chilis and put them on the mixer, add the cloves of garlic, tomatoes, and onion you just cooked, the 120g of chipotle chilis, and now my fellas, dear colonizers reading this, pay attention, this is crutial THIS IS WHAT MAKES IT TASTE GOOD:
add a pinch of: 
salt, black pepper, cinnamon, powder of cilantro seeds, brown sugar, thyme, AND 3 PINCHES OF DELICIOUS GLORIOUS CARAWAY. Add a liter of water and mix it well, once looks as homogeneous as it can be, pour it into the chicken broth.

Just look at how pretty that looks!!! That looks like decent food, that looks like something my ancestors would be proud of!!! *honestly I got some tears after tasting this, ABSOLUTELY DELICIOUS!!!*
7) Use any method you like to make eatable those chunks of meat, I like to separate the meat with my hands.
8) Add the meat again to the chili-spicy/broth and add the minced veggies 
9) cook for 40 min, low heat.
10) Mince the coriander
11) If you are a cool decent human cut the tortillas into small rectangles and fry them until they are hard 🔥😏 2 to 3 tortillas per serving. If you are not cool use your shameful nachos.

12) TIME TO FUCKING SERVE AND TASTE THE FRUIT OF YOUR 3 HOURS OF WORK!! 
In a bowl, serve the meat and veggies, add some chili broth, put in the center your tortillas, around the tortillas the cheese, on top the minced coriander, and decorate with slices of avocado.

no no...I see your point about olive oil. I have a local place that makes it, and I tried that expensive high-quality olive oil, and it literally tastes like nothing. It's so close to avocado oil or something. cheap, cheap olive oil from the regular grocery store often has a bad rancid ish taste (faint but there). no good! I like the olive oil I get from my local middle east market--no rancid taste, but good olive oil flavor. I will eat it w/balsamic & mozzarella and fresh bread, but it's not THAT good, i.e. I'm gonna toast my bread with butter and even the cheapest butter is gonna taste better than dipping in the best olive oil.

Three slices of bread. Two medium slices of fresh mozzarella—and not the pre-sliced stuff, but the good, wet, supple kind that Lexa could only find in the farmer's market. Piping red tomato and the lettuce a crunching green, and yes, the roasted beef, dripping in caramelized onions sauce.
It was the perfect sandwich.
"Someone’s happy." Anya sat next to Lexa on the dining table, the hub of the station dying down in the kitchen. They had returned from a call where the police did most of the work, and Lexa finally had time to prepare dinner: the perfect sandwich dinner. "Did you finally learn how to cook?"
"Clarke prepared all the ingredients," Lexa confessed with a mouthful. "I stack them like legos."
"A true chef." Anya stirred her canned soup. "But you’re not smiling like that because of a sammy."
Lexa took her time chewing and nodded at Lincoln as he perused the fridge. He emerged with a pink Gatorade and chugged it down in four long gulps. Lexa placed her sandwich back on her plate with the care of someone dealing with something precious. "I got the ring," she said, and Anya froze with her spoon halfway to her mouth.
"No shit. For real?"
"For real."
"Holy shit, Lexa, congrats!" Her captain patted her on the back, and Lincoln joined them at the table. 
"What happened?" he asked while trying to grab Lexa’s sandwich, but she swatted his hand away.
"Lexa is finally going to propose."
"For real?" Lincoln’s cheer was a paradox in his hard-angled face; his smile and eyes were always so kind. "Congrats!"
"Griffin is going to flip," Anya added. "I need to tell Raven."
"Don’t tell her yet!" Lexa protested. "We’re going to her dad’s hunting cabin this weekend. I want it to be a surprise. So no telling Raven or Octavia." The last warning was for Lincoln, who mimicked a zipper over his lips. "I mean it," she threatened, and her cousins shared equally innocent looks. "Hell, I really want it to be—" The blaring station alarm sounded, and the firefighters reacted on impulse, dropping everything to answer the call. Lexa took the biggest bite she could from her perfect sandwich and ran to grab her uniform. If they were lucky, it would be their last call of the night.
The cops had formed a perimeter when they arrived, and Anya instructed their crew to check the victims in both cars. Lexa followed Niylah to the first vehicle, while Anya and Lincoln went to the second, overturned one. "Call if you need help," Lexa shouted, and Anya nodded. A bad crash, but the truck Lexa checked was in better shape, and they had the victims in the ambulance in a short time. The second ambulance arrived, but there was no sign of Anya and Lincoln. Lexa caught Anya’s eyes between the first responders' crowd of police officers and paramedics, seeing the concern there. She understood it as a call for help and trotted in the direction of the upside-down SUV.
She didn’t notice at first. She didn’t read Anya’s concern as a warning and approached the car, kneeling down. Lexa didn’t recognize the vehicle, running on the adrenaline of the call. She didn’t recognize anything. And then she saw it; blonde hair spilling on the car ceiling, pink with blood; unconscious arms down and unmoving; and eyes she knew so well closed and unblinking. If she weren’t kneeling, she would have fallen. Pain flared at a grasping hand on her rough uniform collar, a thumb pressing down on the base of her throat hard enough to leave a mark. 
"Can you do it?" Anya asked, eyes flashing in kaleidoscopic emergency lights. "If you can’t do this, I want you out of here." Lexa’s tendons protested in her neck, and she swallowed. She nodded. "Good," Anya continued, "you hold her while I cut the seat belt. Lincoln and Niylah are ready for her when we take her out."
A loud knocking on the car’s side. "There’s smoke," an officer in full navy uniform said, "you got a few minutes tops." Anya nodded, and Lexa’s heart hammered in her chest as she adjusted to receive Clarke’s weight once she was free from her seat belt. Blood trickled on Lexa’s uniform, and she grasped her girlfriend tighter. She nodded at Anya.
"One, two, three!" Anya ordered and cut the seat belt. 
The scream that broke from Clarke’s mouth was unlike anything Lexa had ever heard. It was raw, visceral pain, her arms flaring in desperation, hitting Lexa square on the jaw. Lexa was prepared to receive Clarke’s full weight on her arms, but realization hit her amid Clarke’s desperate wails. 
"She’s stuck," Lexa yelled at Anya, who grunted an affirmative and crawled her way to the passenger’s window. "Clarke, stay with me. It will be okay." Blood flowed rich and arterial on Lexa’s shirt. Clarke, her unfocused eyes landing on Lexa, controlled her sobbing for a single moment. "It will be okay," Lexa promised. "Anya, can you see it?" she asked, her arms burning at her effort to keep Clarke’s weight from pressing on her wounds.
"Two penetrations: hips and calf. I need a saw!" Anya commanded, and Lincoln brought it from the other side of the car.
"One minute!" the same officer from before said, extremely unhelpful.
Lexa held Clarke, smelled smoke, and cursed. The ringing of steel on steel echoed in the crumpled car, and Clarke, feeling the vibration of foreign bodies inside herself, screamed again. She screamed and screamed until she abruptly stopped. Lexa held her with smoke on her nose, blood on her arms, and tears in her eyes. Anya cut the first part off Clarke’s hips—an ugly, sleek black piece of metal jutting from skin and muscle. More weight fell on Lexa’s arms.
"I need another saw!" Anya yelled from above Lexa, working on the second wound.
"Thirty seconds! The fire will spread!" 
Lexa wanted to strangle the officer yelling at them. She knew protocol; she knew that in different circumstances, they would leave the car, with or without Clarke. 
The gritting sound of the saw resumed, and Clarke’s eyes blinked awake, tears marrying the blood and sooth on her face. "Lex," she cried, sobbing. "It hurts."
"I know, baby, I know, she’s almost done." But Clarke had lost consciousness again. Her face had been red from being upside down, but as Lexa’s uniform grew redder, Clarke’s face turned pale. Lexa swallowed bile. 
"You gotta go! Go, go, go!" Yelling from outside the car increased, and Lexa wasn’t only smelling smoke; she was seeing fire, hearing it crack, and hearing the shouts of her colleagues to control it. Her nose was full of blood, chemicals, and smoke. But also Clarke, the woman she wanted to be her wife. 
"Lexa, I’m sorry." Anya’s voice was small in the cabin, and Lexa’s heart grew heavy in desperation. She saw Anya’s face, and a sudden calmness took over her.
She nodded and held on tight. 
Lexa made it to the hospital 90 minutes later. She would have made it in 80 if Anya hadn’t stopped her at the station. "Shower," Anya had ordered, looking down at the drying stains over Lexa's uniform that coagulated into one long, horrific crimson flag over her body. Lexa hadn't noticed her state in the past hour, trying to balance her work with the other victims, controlling the fire, and finally being able to rush to the hospital.
She saw Abby outside the ICU. Clarke’s mom talked to a doctor in scrubs, and no one had made him change his blood stains. Abby’s jaw worked from afar, processing what the doctor said with sharp nods. Her left finger spun her wedding band constantly, something that Clarke also did with her rings.
"Lexa." Abby’s voice was rough. "Did anyone call you? There was an accident—"
"I was the first responder." She held Abby's eyes and watched the recognition there—a tired, respectful tilt of her head. 
"Thank you," Abby said with the weight of the world, and she also nodded at the doctor. "Thank you for the update, Jackson."
Lexa stood next to Abby in that well-lit hallway, the noise of beeping, scrubbing, and whispering carrying around them. Everything smelled sterile, and Lexa hated it. For the hospital, it was just another night. But for both these women, everything they cared about was intubated inside that door. 
Lexa didn't ask. She gave Abby time. "Clarke is in the post-op. They think she will make it."
Lexa exhaled hard, only then noticing she had held a full breath for hours. She almost gagged in relief, a reaction so strong she bent forward and held her hands over her head.
"Thank God," she whispered. 
Abby's voice shook as she continued. "They told me it saved her life.  That it had to be done. Was it… was it you?" Lexa shook her head. 
"I was there with her, though. She was not conscious."
Abby’s ring spun and spun and spun. "Good."
They sat there for hours. They were only allowed to see Clarke the following morning. 
Five days later, in a hospital room, Lexa proposed. In its own way, it was perfect.

It was nice that I had today off. I slept in. Marinated some steak, made a pasta salad. Made a dip for chips. Still planning to make a cheesecake and some gf banana bread. I have mangos, peaches, blueberries and strawberries to top the cheesecake with. I plan to drop it off at a friends bbq tomorrow.

I experimented with this pasta salad. I used lemon infused olive oil and white balsamic vinegar for the dressing. The noodles are a garlic and chive noodle I found at the farmers market. Threw in some red onion, cucumber, garlic marinated olives and fresh mozzarella.

You've written before about Farmer's Market Marcus, but how about going to the source: you and Marcus take a day trip to the countryside to visit an artisan working farm. There are goats (mmmmm, goat cheese 🤤) and lavender fields and an art studio where they make beeswax candles from the farm's apiary. And of course, an on-site café, featuring sandwiches made from their own fresh food products.
You and Marcus share a sandwich made with goat cheese and arugula from the farm, fresh mozzarella, fig jam, and double smoked ham.
And there may or may not be fresh donuts for you and Marcus to take home and reprise your Donut Delights activities... 😏

I made this tonight and it was very good! I do have notes, though, for future me and anyone else who'd like to try it:
The recipe says it takes an hour, it took me about 1.5 hours. Which is pretty good, honestly, I was hustling. Plus I ~embellished~ the sauce and was working with tiny slices of eggplant.
(I used eggplant from the farmer's market, which was small and globe shaped, so I used all 8 or so of those. [I also bought mozzarella that came in 4 medium-sized balls. All of this slicing slowed me down considerably!])
Normally I make my family's spaghetti sauce recipe if I'm making something like this or lasagna, but it adds a lot of time. Here, I just sautéed some diced onions and bell pepper and mixed it in with my fave sauce (Classico fire roasted tomato and garlic 😜). It was fine!
I think the whole dish could be moister. Next time I'd add a 1/4-1/2 c. of water to the sauce so it doesn't dry out in the oven.
I had quite a bit of breading left over after breading the eggplants, so I just used it to top the whole dish before baking it. This also saved me from needing the other 1/4 c. of parm.
I used 2% milk (what we had on hand) instead of almond milk for the wet eggy stuff and it was just fine. I don't know why they call for almond milk.
I did not have fresh basil for topping, which was a shame! I had already maxed out my totally arbitrary quota of fresh herbs I allow myself to buy at the store. But fresh herbs are the star of the dish!
(The fresh thyme was certainly worthwhile.)
I baked the eggplant for 20 mins and really should have cooked it longer (n.b., I think my oven runs cool).
I served it with veggie Italian sausage but it's hardy enough that the sausage was totally unnecessary. A light salad and garlic bread would be 😘👌 That's all!

Can you tell I bought a truckload of fresh figs this week?
This is my third recipe so far — I can’t resist fresh figs when I first see them in the market. So, we’ve had two versions of salad (with figs of course) and one pizza — I’ve made this pizza numerous times since I first posted about it last year.
One of us, as usual, added some fresh arugula on top and one of passed on that.

Fig, Caramelized Onion and Cheese Pizza
2 tablespoons olive oil
1 large onion, sliced
1 tablespoon Balsamic vinegar
cornmeal
about 15 ounces of pizza dough
3/4 cup ricotta cheese
5-6 fresh figs, cut into quarters
2/3 cup mozzarella cheese
2 tablespoons Parmesan cheese (or 1/3-1/2 cup crumbled blue type cheese)
arugula, optional
Balsamic vinegar, optional
Preheat the oven to 450F. Preheat a pizza stone if you have one. Heat the olive oil in a saute pan over low-medium heat. Add the onions and cook for 15-18 minutes, stirring frequently or until the onions and beginning to turn golden. Add the Balsamic vinegar, stir and cook another 10 minutes or until the onions are soft, well glazed and golden brown. Set aside. Place some cornmeal on a board or on parchment paper and stretch/roll the dough into a circle (Mine was 12-inches but you can make it 11-13-inches depending on how thick you like the crust.) Spoon the ricotta cheese evenly over the dough surface, leaving about 1/2-inch at the edge. Cover the ricotta cheese with the onions. Top with the quartered figs, placing them evenly round the surface. Scatter the mozzarella cheese over the top, then the Parmesan or blue cheese. If you have a pizza stone transfer the pizza to the stone using a pizza peel; or, transfer to a large baking sheet with the parchment paper underneath. Bake for 15-20 minutes or until the crust is crispy and browned to taste and the cheese is melted and bubbly.

It's like string cheese that comes in a ball that you detangle once you use it. It has a similar taste to fresh mozzarella cheese. Store bought Oxacan cheese doesn't compare to freshly made Oxacan cheese.
OOOOOH it says it's a staple for quesadillas. I love me a quesadilla so I would love to try it! Alas, I don't live close to the international market the way I used to; I bet they'd have it fresh there.
