This week I made Chraime, a Moroccan Jewish fish in tomato sauce! The recipe was from The Jewish Cookbook by Leah Koenig and it was absolutely delicious. I used skin-on salmon filets to make it. The rice was from a box, but it was delicious anyway!

For years, you could find pletzl, a flatbread topped with raw or caramelized onions and poppy seeds, sold alongside bagels and bialys at Jewish bakeries along the East Coast. Pletzl was brought to the U.S. by Polish, Lithuanian and Ukrainian Jews in the mid-20th century, but the bread never seemed to capture the American palette the way bagels have, and it slowly faded into semi-obscurity.
Pletzl (aka onion board or platzel) is typically made from flour, yeast, oil, salt and water. In “The Encyclopedia of Jewish Food,” Gil Marks explains how this bread, the texture of which can be thin like a cracker or light and airy with a more focaccia-esque crumb, gained popularity in the 19th century, as Eastern European Jews gained access to modern milling equipment and techniques that allowed them to move beyond the rye bread they were accustomed to and toward lighter flatbreads.
Pletzel’s exact origins are unclear, but we can fairly reliably connect them to their successors, bialys, which Mimi Sheraton, food critic and author of “The Bialy Eaters,” theorizes was born from a pletzel gone rogue: 
“My theory is that a pletzel, having been formed but not baked, fell on the floor and somebody stepped on it with the heel going into the center, and being frugal decided to bake it anyway and see what happened. And so, the bialy was born.”
Linguistically, Marks connects pletzl to German plätzchen (crackers). He also notes that the origin of the term “onion board” is likely due to the fact that the flatbread would’ve been formed on a baking board, known in Yiddish as a lokshen bretl. Bretl, Marks suggests, sounds similar to pletzel.
You can still find this tragically underrated bread — if you know where to look. These days, rather than the traditional oblong shape formed on a baking board, some bakeries sell pletzlach as rolls or discs, which more closely resemble the bialy. Kossar’s Bagels and Bialys in New York sells an almost pizza-like circular version, which, thanks to the miracles of same-day shipping, is available to order via Goldbelly.
The Yiddish word “pletzl” means ‘little place,” and it’s also the former name of the Jewish quarter in the 4th arrondissement of Paris. There, on Rue de Écouffes, Florence Kahn sells a pletzel sandwich from her eponymous bakery. Though traditionally pletzel were served whole with a schmear of cream cheese or chopped liver on top, Khan cuts hers down the middle to make a sandwich, filled with pastrami, turkey or corned beef, topped with a variety of vegetables.  Following suit, Joe Baur uses pletzl to play on the Iraqi-Israeli sabich sandwich, with silky eggplant and flavorful amba. 
Pletzl is simple to make at home. Like many historical recipes, there are plenty of discrepancies. “There are at least eighteen or so varieties of pletzl,” Marks writes. “The most famous one is topped with the principal Ashkenazic seasoning, onions (tzibele); it is known as tzibele pletzl; tzibele zemmel, tzibele papalik, and simply pletzl.” There are also sweet pletzels without onions. 
While Kahn’s pletzl dough is enriched with eggs and sugar, Leah Koenig’s recipe in “Modern Jewish Cooking” (as well as my recipe below) omits egg in the dough and tops the flatbread with pre-cooked onions. More than the dough itself, it’s the ease of cooking that seems to be a common thread among pletzls. Whether you whip up a quick dough of flour, yeast, salt and water or use a big pinch of your Shabbat challah dough, the idea is the same.
Note: Bread will last for 2-3 days in an airtight container on the counter.

avi is absolutely that person who absent mindedly finds things she needs to buy on amazon , adds them her basket then just ... forgets to place the order. she eventually wonders a few days down the line why something hasn't arrived or casually remembers when she actually needs something and runs out of it. her current amazon cart looks like :

Chopped liver is gross. Like, gefilte fish level gross. It’s not just the fact that it resembles cat food, but knowing that its origins have been traced to 11th-century Alsace-Lorraine where it began being made from the livers and fat of force-fed geese is enough for me to push the plate away. 
So, the idea of mock chopped liver is really a welcome culinary evolution for me, even if the idea of creating a liver-like schmear is equally weird. 
The name “mock chopped liver” comes from its resemblance in appearance and texture to the traditional liver-based pâté. However, the main ingredient in mock chopped liver is not actual liver but rather a combination of cooked or roasted vegetables, onions, hard-boiled eggs and walnuts.
During the mid-20th century, “mock liver” became a prominent item on the menus of New York City’s numerous “dairy restaurants,” which served as the meat-free counterparts to traditional delicatessens. Those keeping kosher could now enjoy a chopped liver-esque spread alongside an egg cream without having to make a choice between the two. 
Mock chopped liver has become super popular over the years as more and more folks hop on the plant-based train or look for meatless alternatives. People dig it for a bunch of reasons, like caring for their health, the environment or sticking to ethical beliefs. It’s also a win-win for those with dietary restrictions or allergies to animal products.
Chef Cara Tannenbaum remembers indulging in real chopped liver when she was a kid on Long Island. As the years passed, the Tannenbaum family adopted a health-conscious approach to eating, prompting them to revamp their traditional schmaltz-filled chopped liver recipe. They embraced a vegetarian version, brimming with the delightful flavors of caramelized onions, mushrooms, peas and walnuts, creating a savory and wholesome alternative.
While the basic concept remains the same – using vegetables and nuts as a substitute for liver – the specific ingredients and cooking methods can differ based on regional preferences and individual tastes.
In Arthur Schwartz’s “Jewish Home Cooking: Yiddish Recipes Revisited,” he writes that onions are a defining flavor, in the sense that some dishes rely so heavily on onions that they wouldn’t taste Jewish without them. 
“Chopped liver immediately comes to mind. In fact, I’d say mock chopped liver, the vegetarian version, relies mainly on fried onions to resemble the real thing.” 
Gil Marks, another culinary expert, considers mushrooms to be another essential ingredient in creating this savory spread.
In the old school North American versions of vegetarian chopped liver, the typical ingredients included canned green peas or string beans, which were mashed together with fried onions and mushrooms (and occasionally eggplant) to create a creamy, taupe-colored spread. 
“Some recipes included walnuts, hard-boiled eggs, or crushed crackers for heft. As far as photogenic dishes go, it wasn’t exactly a looker. But it was, and continues to be, deeply desirable,” writes Leah Koenig in Bon Appetit.
In more contemporary iterations of vegetarian chopped liver, cooks often opt for fresher ingredients while staying true to the traditional layering approach. This clever technique allows them to replicate the unctuous texture and delectable savory-sweet flavor that made the original dish so beloved.
In Aly Miller’s Nosher recipe for vegan chopped liver, she incorporates mushrooms and miso for a rich “faux gras.” While Nino Shaye Weiss, a food blogger in Vienna, incorporates caramelized onion and shots of Slivovitz to his as a nod to its Central European roots.
In Israel, vegetarian chopped liver is usually made with roast eggplant or summer squash, (particularly zucchini), hard-boiled eggs and carmelized onions. It is arguably more popular and available than regular chopped liver countrywide. 
From its modest beginnings as a practical adaptation in Europe to its current global appeal, this vegetarian delight has become a timeless treasure in the world of Jewish cuisine. As we savor its savory legacy and modern adaptations, we celebrate mock chopped liver’s ability to honor tradition while embracing new flavors and culinary adventures.

my copy of the beatles’ please please me that isn’t actually please please me (when it was released in the USA on vee jay records it was called introducing…the beatles) is probably my favorite; the beatles were what got me into record collecting and it remains really special to me that that record was my grandmother’s and for many sentimental reasons i don’t think i could pick any other :’)
