Hearty Vegan Chili
Superfood Chili Ingredients:
*2 tablespoons avocado oil *1/2 medium red onion, chopped *2 small shallots, chopped *2 cloves garlic, pressed or minced * large red bell pepper, chopped *2 medium carrots, chopped *2 ribs celery, chopped *4 roma tomatoes , diced *Organic tomato sauce (Brand of choice: Pomi Tomato Sauce - 17.64 oz carton). I used the entire carton for this batch. *1 medium purple sweet potato (regular or white sweet potato optional) *1 small cauliflower chopped *2-3 teaspoons sea salt (add more based on your personal preference) *2 tablespoons organic chili powder *2 teaspoons organic smoked paprika *2 teaspoons organic cayenne pepper *2 teaspoons organic ground cumin *1 teaspoon dried oregano *1 can organic red kidney beans, rinsed and drained *1 can organic black beans, rinsed and drained ) *2 cups low sodium vegetable broth/stock or water *2-3 cups chopped Lacinato Kale (add 15-20 mins before you serve chili)
* Optional garnishes: chopped cilantro, sliced avocado, tortilla chips, vegan sour cream (brand of choice: Forager), or vegan shredded cheddar cheese (brand of choice: Violife Cheddar Cheese Shreds).
INSTRUCTIONS:
- Heat avocado oil in heavy-bottomed pot or crock pot over medium heat, warm the oil until shimmering. Add the chopped onion, garlic, bell pepper, carrot, celery.. Stir to combine and cook, stirring occasionally, until the vegetables are tender and the onion is translucent, about 2-3 minutes. -Add chili powder, cumin, smoked paprika, oregano, snd salt. Cook until fragrant while stirring constantly, about 1 minute. - Add the diced tomatoes and their juices, tomato sauce, broth, sweet potato, cauliflower, the drained black beans, kidney beans, and pinto beans.. Stir to combine and let the mixture come to a simmer. Continue cooking, stirring occasionally and reducing heat as necessary to maintain a gentle simmer for about 30-45 minutes if cooking on stove. You can simmer on low to medium heat in crock pot for 2-3 hours or until veggies are tender and stewed. Add the Kale a few mins 15-20 mins before you turn the heat off.
***Divide the mixture into individual bowls and serve with vegan garnishes of your choice. Can be stored in fridge up to 4 days or can also be frozen for longer storage. Enjoy!

What TO Stock for An APOCALYPSE, PART THREE (Updated)
Right up there next to water, a top-priority post-apocalypse need will be FOOD.
  5.      THE FOOD you will need:
  Since most of us will be short on water, dried beans and other foods that require a lot of water for cooking may not work out too well. Dry beans also need a lot of cooking time, meaning more firewood or other fuel. Canned goods are a practical way to go (and most come with some liquid inside), though it would be hard to stock enough to last years. Plus, canned goods can get mighty unappetizing over time, and will eventually spoil.
  To survive well without getting malnourished, you’ll need protein, carbohydrates, vitamins, minerals, and a little fat – the basic food groups, though meat and dairy aren’t essential. Unless you have your own well-guarded farm or hunting preserve, you can’t count on being able to eat meat. And if you’re growing your own food, in most cases you will get much more protein per acre by growing beans instead of animals. But chickens and milk goats can be very useful and will take up less space than other critters (though you’ll need to learn animal husbandry between now and the end of the modern world).

 Whole proteins are made up of eight essential amino acids. Most beans and nuts have seven of those acids, while most grains have only one. To get whole protein from beans or nuts, you need a companion grain to eat with them to make the protein complete. Think beans and rice, beans with tortillas, beans with cornbread, hummus with chips, peanut butter sandwiches (made with pancakes or biscuits cooked over an open fire).

  Soybeans have the full eight essential amino acids, but they take a lot of time and water to cook. My personal experience with them (which is extensive) is that they aren’t digestible unless they’ve been pressure-cooked for at least an hour, and pressure cookers can be dangerous and hard to come by. Soybean skins tend to plug up the vent holes. If the cooker isn’t removed from the fire immediately and the skin isn’t removed from the vent, the cooker could explode. People can get burned by the buildup of steam inside the cooker.
 Soybeans are a pain, BUT, if you need whole protein, they will provide it. The flavor is not the best, the texture can be off-putting, but they’re not bad in tortillas with salsa and fresh veggies. Once the beans are cooked, you can make decent patties out of them if you have anything to flavor them with. Some women, like me for instance, can’t eat soybeans when they’re pregnant, and soy allergies are serious issues for many. If you have a lot of water, you can make soybeans into soy milk and tofu. There’s also tempeh, the making of which is an artform.

   You can make milk out of lots of things these days: almonds, oats, rice, hemp (my fave). I don’t have a clue how to make these things, but I’m sure you can figure it out—if you get to googling while the internet still works.
In my novel, prepper Grandma Bea stocks barrels and bags of many kinds of beans, flours, oatmeal, rice, sugar, cooking oil, peanut butter, sugar, salt and pepper. She has cases of canned goods—mostly soup, chili, and stew—and cases of powdered milk and eggs.
 6.      GROWING FOOD
If you want to get serious about providing for long-term survival (or if you just want to live more sustainably), you will need to do more than stockpile food. You need to set yourself up with ways to grow it. Think garden beds full of rich soil, compost piles, bee hives for honey and pollination, fruit trees and vines, and ways to scare off the birds. And you need to stockpile seeds that suit your soil, drainage, and growing season, along with plenty of organic fertilizer and the tools and equipment to help it all grow. You’ll need to get creative about where and how to grow this food: in your suburban yard, inside in front of your windows, in pots and buckets and barrels, on rooftops and ledges, along fences, etc., etc.

     My main character, Bea, has fresh tomatoes, peppers, squash, greens, purple hull peas, and herbs growing in pots and in her garden. She has a second garden full of root veggies, and she has a bee hive installed in an exterior wall. A few neighbors have chickens. One family has some rabbits. When the neighbors finally get organized, Bea has plans for urban farming that involve building gardens and compost piles in yards and vacant lots, and later plowing up front yards for cornfields, and the neighborhood park to try growing winter wheat and other grains in the scorching Texas heat.
 7.      STORING & PRESERVIING FOOD
 In my novel, Bea has a root cellar full of root veggies: russet and sweet potatoes, carrots, garlic, and onions. Beets don’t grow so well in Texas as far as I know (meaning, I don’t actually know). Turnips are, well, turnips, but they last a long time in cool, dry storage. Parsnips, rutabagas, and Jerusalem artichokes are other good root veggies to grow and store.
Root cellars are awesome if you can keep them from filling with ground water. Being under the earth tends to keep the temperatures nice for storage of food with a long shelf-life, like root veggies and—for a lesser length of time—compact cabbages, pumpkins, and winter squash (butternut, acorn, etc.)

Though impractical when water is scarce, home canning is also a good way to store food. Many foods can be dried, which only requires water for cleaning before and after drying. Of course, you’ll need water to reconstitute most dried foods before you eat them, with dried fruit and jerky being the primary exception to this, and field corn, which can be ground into cornmeal.

On top of growing and preserving food, you also need to know how to preserve seed, since there will be no seed catalogues, no seed companies. The Seed Savers Exchange is one of many good resources for this: https://www.seedsavers.org/how-to-save-seeds.
Remember that you will also need biodiversity (more than one kind of seed for each veggie) to give you better odds that some types will survive a blight, fungus, or insect attack. And you need to protect your pollinators: bees, wasps, butterflies, etc. Know your bugs and learn to distinguish the helpful ones from the harmful ones. Crickets can be eaten (sorry, but you may need to know this someday).

  I could go on about food forever (I already have, lol), but going further would be beyond the scope of this blog. My advice is to get busy studying up.
If all else fails, you can follow the example of Mad Max in ROAD WARRIOR and chow down on yummy dog food.

 I held soft leaves and wet grass. They told me green felt like life. To this day it is still very much my favourite colour.

Emotion: That omnipresent coolness you feel whilst swimming, feeling relaxed, blue is cool and light, feeling intelligent, feels like having a cold, a runny nose, feeling down, icy, distant, isolated, conservative and traditional, tranquillity, secure and orderly, lonely, masculine, unappetising, heavenly, emotional, inspirational

They put my hands in their pool. They told me that that sensation I felt while swimming, that omnipresent coolness, that’s blue. Blue feels like relaxation.

Taste: Juicy plums, grapes, berries, parma violets sweets, aubergines
Touch: Velvet,
Smell: Lavender, musky and aromatic,
Emotion: Feeling luxurious, purple is mysterious and sometimes spooky, being aware of spirituality and your dreams, linked with royalty, imaginative, it is rare in nature so it is intriguing, exotic and artificial, regal, sensual, lush, peaceful, a deep daydream, wisdom, unearthly, evokes creativity, stimulates the body, a harmonious balance of awareness and peace, the feeling of escaping reality,
 Spiritual awareness, mystery, luxury, royalty, truth, dreams
 Pink:
Sound: noisy, little girl’s voices, people chatting, giggling
Taste: sweet, sugar, jelly beans, marshmallows, ice cream, lollipops, strawberries and cream, cupcakes, icing, doughnuts,
Touch: soft, fluffy things, light,
Smell: Women’s perfume, bubblegum, candy floss at a fair, smells cheap, fruity and sweet, floral, blossom
Emotion: feeling nurtured, pink is warm and comforting, feeling feminine, light hearted and bubbly, can regulate moods, youthful, good health, playfulness, the feeling of your first love,  innocent and cheerful,  caring and compassionate, the feeling of unconditional love, motherly love, considerate, the feeling that everything will go well and be okay, a sign of hope,  tender, intuitive, comfort, gentle, emotional, takes us back to our childhood, inexperience, naivety, lack of self-confidence and self-esteem

Touch: can be soft, crisp, fluffy, smooth, snowflakes slowly falling on your face, icy cold, hard like diamonds
Smell: clean and pure, fresh linen, washing powder, soap, powdery, aquatic, lilies,
Emotion: heavenly, a feeling of clarity, innocence, feeling at peace, emptiness, loneliness,  can create space,  sterile, can feel empty and unfriendly, untouched, a blank canvas, a new beginning or fresh start, harmonious, safe, fresh, a feeling of concentration and focus, serious, the opposite of black, light
 Grey:
Sound: heavy rainfall, thunder,
Taste: bland and dull, beans and plain oatmeal, chalky
Touch: concrete, hard walls, dry surfaces, harsh to the skin, a sturdy road under your feet, cold, dead, stones, gravel, cold

Let’s talk sweet potatoes!
Sweet potatoes…. One of my favorite foods out there. How can one vegetable be so tasty and versatile, yet so amazingly good for you??? Sweet potatoes are an ancient vegetable and have been a staple in my ancestor’s diet for centuries, which is probably why I love them so much and why I find them easy to incorporate into my diet.
Now, I will be honest, I didn’t always run to the sweet potato. I do have a deep love for the white potato and would eat a baked potato, mashed potato, fried potato, or potato chip in a quick minute. But all of that changed when I was diagnosed with Endometriosis. My primary care doctor at the time, the last doctor I would have imagined, told me that I needed to make some dietary shifts to better help me navigate my life with endo. Big picture he suggested switching to a more Mediterranean diet and to eat more sweet potatoes. I looked at him crazy with that “huh” look on my face. I got the Mediterranean part, because I knew that the diet would provide me with good fiber, healthy fats and help to eliminate inflammation by ridding my system of toxins and other free radicals. But it also learned that it would help in hormone regulation, which plays a major role in the manifestation of the Endo. I then asked him even more about the sweet potatoes. So he proceeds to explain that sweet potatoes help in the removal of free radicals as well, and also help in the removal of heavy metals, which can cause the body to become sluggish. But the most important benefit of them all was that they help in the delivery and regulation of progesterone, which is very important the balance and functioning of the female reproductive system. If progesterone is off, the chances are the estrogen in the system is off as well, which results in all sorts of issues.  So by regulating the progesterone, then the estrogen can be better regulated and the ill effects of endometriosis can be minimized. Mind=Blown!
Just a quick snippet on endometriosis (had to take a moment to bring awareness to this disease), because it affects 1 out of every 10 women. Essentially, Endo is when the lining of your uterus grows primarily outside of the uterus, mostly in the pelvis attaching to other organs and structures but can grow and attach on any organ and cause extreme pain. It sadly takes years to decades for a woman to get diagnosed because the symptoms are brushed off or a doctor doesn’t believe us when we say something is wrong. Some of the symptoms of endometriosis include:
-          Nausea and vomiting
-          Dizziness
-          Weight gain
-          Heavy bleeding during your period
-          Bleeding between periods
-          Intense pain before, during and after your period
-          Cysts ( sometimes called chocolate cysts because they are blood filled and not easily visible on imaging)
-          Infertility
-          Trouble with bowel movements and digestion of food
- ��        Shortness of breath
-          Irregular heart beat
And these are just a few symptoms. Endometriosis has the capacity to affect literally EVERY ORGAN SYSTEM, thus causing a wide variety of issues.
That’s a lot right? I have a very odd and severe case—the growths are on my intestines and sciatic nerve, as well as all over my pelvis to include my round ligaments. During my last surgery, my surgeon tried to get as much as he could but he was limited because he didn’t want to leave me paralyzed or put me through having to get a colostomy bag because of how it was affecting my intestines .  Treating me medically has been difficult to treat due to my other health conditions. Which is why I was grateful for my doctor suggesting a different route to help ease my pain (sorry for the long detour, but I had to set up the whole picture for you!!) Food was one of the last resort options to be medicine for me. I knew it wouldn’t be easy for me to adjust to this new diet but this was my Hail Mary in the 4th quarter.
So just how great are sweet potatoes to your health??? Well, here are just a few benefits:

Sweet potatoes are a highly versatile food, and can be manipulated into a lot of different dishes. You can do sweet, savory or a combo of both. So incorporating this super food into your diet is very easy! Once I learned just how great this food is, I started searching for recipes outside of the traditional sweet potato casseroles or candied yams that we serve at Thanksgiving, Christmas and Easter. I wanted to make things that gave me ALL the benefits of this great veggie. I learned through trial and error that the flavor of sweet potatoes goes really well with certain flavor profiles. My fave go to recipe is a baked kale, sweet potato and black bean dish served with brown rice. Here is the recipe (it is super, super easy!!!)
-          1 can black beans, drained and rinsed
-          2 bunches of kale, cut, washed and dried
-          1 large sweet potato, diced
-          ½ a red onion diced
-          Paprika
-          Salt
-          Pepper
-          Dried Oregano
-          Dried Basil
-          Cumin
-          Garlic ( 2 cloves fresh, or garlic powder, or the 1 tsp of the minced garlic in a jar)
-          3 tbsp of olive oil or canola oil
Preheat oven to 375. In a small bowl combine the paprika, salt, pepper, oregano, basil, cumin and garlic. Set aside. In a 9 by 13 baking dish (I use my pyrex dish) put your kale, beans, sweet potato and onion. Drizzle olive oil over the veggies then sprinkle the seasoning mixture over them. Toss the veggies around to coat with the oil and seasonings. Once well coated, even out in the dish and place in the oven to bake uncovered for about 20-25 minutes. You want the kale to be crispy and the sweet potatoes to be tender when poked with a fork.
You can eat it just like this or serve with brown rice or quinoa. I also like to top mine with feta cheese, which gives AMAZING flavor profile.

The Big Salad | An All-Star-Anytime Plant Bonanza

I eat a lot of salad. It is a daily occurrence at Rue du Moulin. But not all salads are of the same calibre.  When I was younger, a salad was made of a bunch of iceberg lettuce leaves, a few slices of cucumbers, and a handful of cherry tomatoes drenched in one of Kraft’s 68 different kinds of salad dressings.  This salad, affectionately named after one of the best food moments in Seinfeld, is a next level salad.

In fact, if there are levels in salad-goodness, I would consider this the all-star.
Chock-a-block with:
Superfoods: like pomegranate, kale, lemons, yellow peppers, miso, and tomatoes. 
Organ cleansers: like green onions, daikon, grapes, and parsley
Nutrient-heavy satiating carbs: like sweet potato, beetroots, and cauliflower
A protein-rich creamy tahini dressing 
But really, where this packs in the goodness is just the abundance of flavour and supreme combination of textures. 
Also—it is basically everything free—no animal products, oil, sugar, gluten or nuts. 
Just beautiful and delicious plants.  For those of you who can’t imagine eating a salad and feeling full for hours later, give this one a whirl—it is not only a delight on the tongue, but will leave you satiated in a way a ham and cheese sandwich never could. 
Let’s get tossed! 
Ingredients: 
For the quick pickle

1/4 beetroot, finely diced
1/4 daikon, finely diced
3 tbsps parsley, diced
1 tbsp pomegranate seeds
1/2 a lemon
Salt
Add all the ingredients together in a bowl, drizzle with the lemon, and crack a lot of salt on top. Set aside for at least 10-15 minutes. You could also use vinegar and sugar, but this is a very simple, plant-y pickle. 
For the dressing

3 tbsps tahini
1 tsp garlic powder
1 tsp coconut sugar
1 tsp white miso paste
Chili, salt, and pepper
Water to thin
For the salad

1 small sweet potato, roasted, peeled, and chopped in pieces
1/3 cup curry roasted cauliflower (toss in curry spice, and roast for 30 min, leave to cool) 
1 packed cup of finely chopped kale
1/2 cup green leaf lettuce, chopped
1/4 of a medium yellow pepper, diced
1 green onion, finely sliced 
3-4 cherry tomatoes, quartered
7-10 red grapes, halved
pomegranate seeds for garnish
Putting it together
A salad is just a salad, right? 
Yes, but food should be beautiful. It should be a joy to look at, even it is just you eating it. Instead of slopping all the ingredients into a bowl and smearing sauce all over, take a moment to practice moritsuke, the Japanese art of plating—re-enchanting the world of the ordinary.
Step one: start by mixing those greens in the bottom of the bowl:

Step two:, arrange the vegetables in a colourful wheel on top of the green bed.  Note: don’t copy the colour wheel, but contrast colours to make them pop, like greens beside reds, and purples beside oranges.

Step three: garnish with pomegranate seeds
For the dressing  Start by mixing the tahini and lemon together. It will get very thick, like butter. Add the white miso. 
Then add water until it is smooth and “drizzle-able.” 
When you’ve got a great creamy consistency, add coconut sugar, garlic and sugar. Stir together. Add salt and pepper to taste. (I like a lot of both.)

Go ahead and drizzle that sauce all over that beautiful bed of colourful vegetables. Your salad is now looking gorgeous and ready to serve.

I’m not big on kitchen gadgets that serve only one purpose. Avocado pitters, egg slicers, and garlic presses are a waste of space in my tiny kitchen. However, there are a few plating tools that I keep on hand for making my dishes beautiful. Most of them you likely have on hand.
Toothpicks
Use toothpicks to create cool swirls and zig-zags through creams and sauces on your soups, smoothie bowls, and plates.
Spoons
You, of course, have spoons in your kitchen. But did you know you can use spoons to scoop a sauce or purée on a plate, and then drag the back of the spoon through it for an artful swipe effect?
Pastry or Biscuit Cutter
You can use your round pastry cutter as a boundary and mold to layer terrines, veggies, greens, and the like.
Squeeze Bottles
Speed-pouring bottles are great when you have lots of oils, drizzles, and sauces to dress up your dishes. They are lightweight, offer precision and keep all of your options looking uniform and tidy. Label them with a little masking tape and a sharpie.
Vegetable Peeler
Use this common household gadget to create long ribbons from your carrots and summer squash. They’re pretty in a salad to add a pop of color. You can even use them to shave chocolate into delicate curls over your cakes, cupcakes, and other pastries.
Mandolin
Mandolins are the quickest and most uniform way to get paper-thin sliced fruits and veggies. We’re talking gorgeous, paper-thin raw beets, radishes, rainbow carrots.
Spiralizer
Spiralizers let you transform raw fruits and veggies into fanciful “noodles” to pile on top of your dishes. Swap them in for a healthy twist on pasta or add spiralized beets and carrots to your salads for a colorful pop of color.
Precision Tongs/Tweezers
You can purchase long, culinary precision tongs, or designate a pair of drugstore tongs to your kitchen. These come in handy when stacking, adjusting and plating teeny items on your dish. I also use regular tweezers to remove the pin bones out of fish filets.
Choosing the Right Dishware
Natural, plain and nondescript dishware are a good place to start.
Opt for a white dish, and you’re automatically working with a high-contrast, natural background. It’s great for plating most foods; a plain white plate can make even drab-looking food pop.
When plating lighter and brighter foods, use darker hues like wood or a dark, stony gray for contrast.
If you’re feeling creative, there are plenty of unorthodox options to play with. There’s fine china, crazy patterns, earthen and stoneware, wood planks, ceramic, cast iron, and slate boards. There are hundreds of shapes, sizes, platters, plates and bowls to choose from!
The Rule of Thirds vs. Central Plating
If you look at your dish like a clock, start by imagining your dinner guest seated at the 6 o’clock when served. Now that you are oriented with your dish, you can easily decide and delegate what goes where.
When serving a dinner party, I often ask my front of house staff to serve according to the clock. I will say things like, “The radish should be at the 3 o’clock.”
Most classic plating guides will have you regard your dish in thirds. Plating your focal point, usually your protein, a touch off-center, in either outer third of your plate, is considered most attractive.
The same goes for plating in odd numbers, like seven carrot batons instead of eight, or three slices of duck instead of two, and so on.
Salads and other composed items are quite striking when piled high and central on the dish.
Use moist foods as a base and anchor for the star of your plate, usually the protein. You can then use other components of your dish to scatter and lean against the stack you have already created.
If you are plating centrally, like with a leafy tall salad, go for minimal landscape garnishing; a few straying micro greens or petals can be pleasant on the plate beyond your salad, or a simple extra swirl of infused oil on the plate.
Artful elements like dots, swirls and swipes create more of a landscape plating. Using the rule of thirds for your plate can help you decide how, when, and where your embellishments belong so your dish doesn’t get away from you.
Garnishes
Microgreens, baby arugula and fresh herbage are a great garnish on most things savory, and even those that are sweet. Mint, basil, fennel fronds, and sweeter herbs like anise and hyssop have a big place in the dessert-garnishing world.
Colorful garnishes certainly elevate your dish. Plates with beige and brown foods are drab and muted, but adding pops of bright green herbs, or edible flower petals, are an awesome way to stand out!
On the other hand, don’t be afraid to go monochromatic. Peruvian purple potatoes garnished with micro-greens, purple skinned radish, purple basil, or blue-hued cornflowers can create a stunning effect.
Texture
Top off your dishes with seeds, nuts, sprouts and palatable hearty spices, powders, herbs, and salts.
My favorites include:
Hemp seeds
Chia seeds
Poppy seeds
Sesame seeds
Pink peppercorn
Aleppo pepper
Crushed nuts
Dried lavender
Dried calendula petals
Getting Creative
Every chef will have their own idea of what looks best, so use these tips as a guideline for the plating possibilities out there. Being creative sometimes means that you need to color outside of the lines, or find your own way and style.
Think about your fresh garnishes that may otherwise be scraps or compost that you naturally discard. These can be reinvented and used as a plating element.
These include:
Herb stems, blended into a sauce or infused in an oil or salt
Carrot top greens
Fruit and vegetable skins (opt for organic)
Chips, either fried or dehydrated, made from fruit and veggie scraps
Think outside of the box when preparing your garnishes – perhaps an applied method makes all the difference.
Tie a knot in your chives
Sear or grill your lemon wedge
Fry your basil leaves

What TO Stock for An APOCALYPSE, PART THREE
Right up there next to water, a top-priority need will be FOOD.

 5.       THE FOOD you will need:
Since most of us will be short on water, dried beans and other foods that require lots of water for cooking may not work out too well. Dry beans also need a lot of cooking time, meaning more firewood or other fuel. Canned goods are a practical way to go (and most come with some liquid inside), though it would be hard to stock enough to last years. Plus, canned goods can get mighty unappetizing over time, and they will eventually spoil.

To survive well without getting malnourished, you’ll need protein, carbohydrates, vitamins, minerals, and a little fat – the basic food groups, though meat and dairy aren’t essential. Unless you have your own well-guarded farm or hunting preserve, you can’t count on being able to eat meat. And if you’re growing your own food, in most cases you’ll get much more protein per acre by growing beans instead of animals. But chickens and milk goats can be very useful and will take up less space than other critters. You’ll need to learn some animal husbandry between now and the end of the modern world.

Whole proteins are made up of eight essential amino acids. Most beans and nuts have seven of those acids, while most grains have only one. To get whole protein from beans or nuts, you need a companion grain to eat with them, in order to make the protein complete. Think beans and rice, beans with tortillas, beans with cornbread, hummus and crackers, peanut butter sandwiches (made with pancakes or biscuits cooked over an open fire).

Soybeans have the full eight essential amino acids, but they take a ton of time and water to cook. My personal experience with them (which is extensive) is that they aren’t digestible unless they’ve been pressure-cooked for at least an hour, and pressure cookers can be dangerous and hard to come by. Soybean skins tend to plug up the vent holes. If the cooker isn’t removed from the fire immediately and the skin isn’t removed from the vent, the cooker could explode. People can get burned by the buildup of steam inside the cooker.
Soybeans are a pain in the ass (though probably less so than slaughtering meat). BUT, if you need whole protein, soybeans will provide it. The flavor’s not the best but it’s okay, the texture can be off-putting, but they’re not bad in tortillas with salsa and veggies. Once the beans are cooked, you can make decent patties out of them, if you have anything to flavor them with. Some women, like me for instance, can’t eat soybeans when they’re pregnant, and soy allergies are serious issues for many. If you have a lot of water, you can make soybeans into soy milk and tofu. There’s also tempeh, the making of which is an art-form.

You can make milk out of lots of things these days: almonds, oats, rice, hemp (my fave). I don’t have a clue how to make these things, but I’m sure you can figure it out—if you get to googling while the internet still works.
In my novel, prepper Grandma Bea stocks barrels and bags of many kinds of beans, flours, oatmeal, rice, cooking oil, peanut butter, coffee, salt and pepper. She has cases of canned goods—mostly soup, chili, and stew, and cases of powdered milk and eggs.
 6.       GROWING FOOD
If you want to get serious about providing for long-term survival (or if you just want to live more sustainably), you will need to do more than stockpile food. You need to set yourself up with ways to grow it. Think garden beds full of rich soil, compost piles, bee hives for honey, fruit trees and vines, and ways to scare off the birds and critters. And you need to stockpile seeds that suit your soil, drainage, and growing season, along with plenty of organic fertilizer and the tools and equipment to help it all grow. You’ll need to get creative about where and how to grow this food: in your suburban yard, inside in front of your windows, in pots and buckets and barrels, on rooftops and ledges, along fences, etc., etc.

  My main character, Bea, has fresh tomatoes, peppers, squash, greens, purple hull peas, and herbs growing in pots and in her garden. She has a second garden full of root veggies, and she has a bee hive installed in an exterior wall. A few neighbors have chickens. One family has some rabbits. When the neighbors finally get organized, Bea has plans for urban farming that involve building gardens and compost piles in yards and vacant lots, and later plowing up front yards for cornfields, plus the neighborhood park to try growing winter wheat and other grains in the scorching Texas heat.

7.       STORING & PRESERVING FOOD
In my novel, Bea has a root cellar full of root veggies: russet and sweet potatoes, carrots, garlic, and onions. Beets don’t grow so well in Texas as far as I know (meaning, I don’t actually know). Turnips are, well, turnips, but they last a long time in cool, dry storage. Parsnips, rutabagas, and Jerusalem artichokes are other good root veggies to grow and store.
Root cellars are awesome if you can keep them from filling with ground water. Being under the earth tends to keep the temperatures nice for storage of food with a long shelf-life, like root veggies and—for a lesser length of time—compact cabbages, pumpkins, and winter squash (butternut, acorn, etc.)

Though impractical when water is scarce, home canning is also a good way to store food. Many foods can be dried, which requires water only for cleaning before and after drying. Of course, you will need water to reconstitute most dried foods before you eat them, with dried fruit and jerky being the primary exception to this, and field corn, which can be ground into cornmeal.

On top of growing and preserving food, you also need to know how to preserve seed, since there will be no new seed catalogs, no seed companies. The Seed Savers Exchange is one of many good resources for this: https://www.seedsavers.org/how-to-save-seeds.
Remember that you’ll also need biodiversity (more than one kind of seed for each veggie) to give you better odds that some types will survive a blight, fungus, or insect attack. You need ways to deal with such problems with the things you have on hand. And you need to protect your pollinators: bees, wasps, butterflies, etc. Know your bugs and learn to distinguish the helpful ones from the harmful ones. Crickets can be eaten (sorry, but you may need to know this someday).

 I could go on about food forever (I already have, lol), but going further would be beyond the scope of this blog. My advice is to get busy studying up.
If all else fails, you can follow the example of Mad Max in ROAD WARRIOR and chow down on delicious cans of dog food.
