Meal Prep Sunday!!!
This was a super simple and quick meal. I really love prepping things and then storing them in my Pyrex dishes with lids....it makes reheating meals a breeze!! I prepped this meal in advance and stored it in the Pyrex dish until I was ready to bake. All I had to do was remove the lid, place foil over my dish and heat in an oven at 375 degrees until the cheese was nice and bubbly!! But you can use whatever dish you like.
So now to the recipe!!
Cheesy Tortellini Bake
1 jar Pasta sauce ( I make my own roasted red pepper sauce, but you can use whatever sauce is your favorite!)
1 pack cheese Tortellini
1 bag baby spinach
1 pack smoked turkey sausage ( or any meat you prefer)
Parmesan cheese
Olive oil
Salt
Pepper
Garlic powder
Oregano
Basil
Chop smoked sausage into pieces. Set aside
In a food processor or with a knife, chop up baby spinach until in little pieces. Set aside
In a pot of boiling water, add tortellini and cook until slightly soft. Drain and set aside.
Heat sauce in a separate pot. Once heated keep in a separate pot or bowl.
Saute turkey sausage until brown and remove from heat. Set sausage aside. In the same skillet heat a teaspoon of olive oil and then add in spinach, salt, pepper, garlic powder, oregano and basil. Cook until slightly wilted. Turn off heat and remove spinach from skillet into a bowl.
In a large bowl mix tortellini and spinach and turkey sausage. Mix well.
In a 8 by 8 or whatever size you like Pyrex dish, spread some sauce. Then add a layer of the tortellini mixture. Then add a layer of sauce. Keep alternating tortellini mix and sauce until you reach the top and end with a layer of sauce. Then top with a layer of parmesan cheese.
You can either cover and store in a refrigerator or freezer until ready to bake or bake in a 375 degree oven until the cheese is melted and bubbly!!

I recently came across this quote on #Twitter and thought that it just brilliantly summed up the experience of living with #chronicillness perfectly. Because although there are good days, sometimes even wonderful days - pain and illness are still there, still a part of that memory and experience. In my experience, there is never a day when pain or the #symptoms of the #neurologicaldisorder I live with are not there; it is my full-time job, just one where I never have a break or a holiday entitlement, and which I work 24 hours a day, 365 days a year. Knee arthritis

Knee pain is the most common reason for a visit to the Orthopaedic surgeon’s office. Arthritis is the inflammation of one or more of your joints. Pain, swelling, and stiffness are the primary symptoms of arthritis. Any joint in the body may be affected by the disease, but it is particularly common in the knee. The most common types of arthritis are osteoarthritis and rheumatoid arthritis, but there are more than 100 different forms. While arthritis is mainly seen in adults, there are some forms, which can affect the children. Although there is no cure for arthritis, there are many treatment options available to help manage pain and keep people staying active.
Anatomy
The knee is the largest and strongest joint in your body. It has three bones: The lower end of the femur (thighbone), the upper end of the tibia (shinbone), and the patella (kneecap). The bones never come in contact with each other. This is due to the presence of a smooth slippery substance on the inside of each bone, which acts like a cushion. It is called cartilage. The inside of the joint is lined by a thin membrane called the synovial membrane. This membrane releases a fluid that lubricates the cartilage and reduces friction.
Description: Three major forms of arthritis are osteoarthritis, rheumatoid arthritis and post-traumatic arthritis. The major types of arthritis that affect the knee are osteoarthritis, rheumatoid arthritis, and posttraumatic arthritis. Osteoarthritis: Osteoarthritis is the most common form of arthritis in the knee. It is a degenerative,”wear-and-tear” type of arthritis that occurs most often in people 50 years of age and older, but may occur in younger people, too. In osteoarthritis, the cartilage in the knee joint gradually wears away. As the cartilage wears away, it becomes frayed and rough, and the protective space between the bones decreases. This can result in bone rubbing on bone, and hence cause pain.

Rheumatoid arthritis: Rheumatoid arthritis is an autoimmune disease. This means that the immune system starts destroying body’s own tissues. Rheumatoid arthritis is a chronic disease that affects multiple joints throughout the body, including the knee joint. It frequently affects the same joint on both the sides of the body. In rheumatoid arthritis the synovial membrane that covers the knee joint begins to swell, This results in knee pain and stiffness. Post traumatic arthritis: This type of arthritis occurs few months- few years following an injury to the knee joint. For example, a broken bone may damage the joint surface and lead to arthritis years after the injury. Meniscal tears and ligament injuries can cause instability and additional wear on the knee joint, which over time can result in arthritis.

It's Soup Season Y'all!!!!
Fall is here and what better way to celebrate than making soup!! I love making soups because it takes the burden off of cooking during the week. Plus it's a hearty meal and helps me get my veggies!!! This week, I made a hearty Tortellini Soup full of veggies and love and wanted to share it with you all. So here you go!!
I will say, it's a lot of steps but it is worth it in the end!!
Happy soup season!
Tortellini Soup
1 lb ground turkey
1 pack baby spinach
1 pack cheese tortellini
3 jars of roasted red peppers
1 carton vegetable broth
1/2 cup sweet onion chopped
1/2 cup carrots chopped
1/2 cup celery chopped
1/2 red bell pepper chopped
1/2 green pepper chopped
1 jalepeno chopped (optional)
1 tbs minced garlic
2 tbs of olive oil
Oregano
Thyme
Basil
Fresh parsley
Onion powder
Paprika
Salt
Pepper
Rosemary
Garlic powder
1. In a food processor, take two jars of your roasted red peppers and add peppers without liquid. Add salt, pepper and garlic powder, about a tsp of salt, a tsp of pepper and a tablespoon of garlic powder. Puree until it is liquid. Set aside
2. Take the last jar of red peppers and chop. Set aside.
3. Next, chop all the remaining vegetables and set aside.
4. In a dutch oven, heat 1tbs of olive oil. Saute minced garlic, carrots, celery, onion, green pepper, jalapeño fresh red pepper and fresh parsley. Cook until soft. Remove from pot and set aside.
5. Heat remaining olive oil and add ground turkey. Add spices- oregano, salt, pepper, garlic powder, paprika, thyme, rosemary, onion powder, basil. Cook meat until brown. Remove from heat and drain grease.
6. Add turkey and celery vegetable mixture back to your dutch oven. Heat together. Then add chopped roasted red peppers and roasted red pepper sauce and vegetable broth. Stir and let simmer. Then add tortellini and spinach. Add additional garlic, oregano and salt and pepper as needed. Let cook down and serve!!

This song made me cry. This song has so much power behind it. It explains what the misunderstood deal with daily within the medical field. It's the complicated cases and those with mental illnesses who understand in what it feels like in our souls.
For me this song holds alot of true and meaning. After my injury, my life changed so drastically. So many things I couldn't do because I wasn't physically able to do it anymore. My doctors didn't totally understand because the images came back normal. And for the longest time I blamed myself for going to a job that ended up hurting me, for choosing things I wanted because in the end it ended badly. I hated myself because I wasn't alright and no one could see it and they couldn't find a reason. I have had to fight for the care I've needed and deserved, and I'm still fighting.
I've been battling living post traumatic brain injury for 3 years going on four now. I've also been battling with a chronic illness that has changed the way I live my life since my tbi(I was diagnosed in 2019 by a cardiologist). My brain doesn't work the same anymore. And it's sad and terribly hurts because being my age I want to be able to do things that sadly I can't do because of my risk of falling and hurting myself. (I've fallen I think 4 times this year. Maybe more😮)
I've been battling depression since it all happened and therapy has really helped me on that front. I'm alot stronger but I still have my days. I'm fighting and enjoying life and making my own choices and it feels good.
This song gives us power because we get to show the raw side to ourselves. We are felt seen and heard. This song gives me hope that maybe one day people might understand better. My fellow #chronicillnesswarriors use this sound and let's show the world what we've been going through. Let's take our power back.
