In honor of tomato season coming at last, I'm gonna share my favorite grilled cheese recipe:
Take 2 slices of french bread, about 1/2" thick each, (or whatever other bread you want. It'd probably be just fine on white bread, I've never tried it yet). Spread with butter on one side, sprinkle on parmesan cheese, and stick in the oven (put it on the broil setting, or about 500°F) until the butter is melted and the bread starts to turn golden. This should take about 3-5 minutes.
Take out of the oven and flip over; spread cream cheese on both pieces. You want a good thick layer. top with mozzarella cheese (one sandwich slice, half on each piece of bread, is ideal. You don't have to. Go ahead and use shredded or sliced off a block, get it from a nice deli if you want. I use the cheap stuff from walmart), garlic powder and diced onion or onion powder, and a *light* sprinkle of salt.
Now, for the most important part: take one or two fresh cherry tomatoes, and slice those bad boys up (use a sharp knife so you don't end up smushing the seeds out). Put that on top of the mozzarella, and stick it back in the oven until all your cheese is nice and melty (this should only take a couple minutes).
Take it back out of the oven, let it cool a little bit, and enjoy! The cream cheese and the tomato are the real important players here, it's a very interesting flavor and texture.
