The Mexican Pulled Chicken tastes great and can be used in many different dishes. It goes well with tacos, burritos, salads, and anything else that needs a tasty protein. And the mix of spices gives it more depth of flavor. The slow cooker makes it so easy to make.

Ingredients: 1.5 lbs boneless, skinless chicken breasts. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 can 4 oz chopped green chilies. 1 tbsp chili powder. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 1/4 cup chopped fresh cilantro optional. Tortillas, for serving.

Instructions: Place chicken breasts in the bottom of a slow cooker. Add chopped onion, minced garlic, diced tomatoes, chopped green chilies, chili powder, cumin, paprika, salt, and pepper on top of the chicken. Stir to combine ingredients. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender and cooked through. Using two forks, shred the chicken in the slow cooker. Stir in chopped cilantro, if using. Serve the pulled chicken in tortillas, garnished with additional cilantro if desired.

POLLO AL BBQ: IL PULLED CHICKEN, COME SE FOSSE MAIALE

Una ricetta che valorizza le carni del petto e le rende super golose. Si procede come per la preparazione del famoso pulled pork: prendiamo il petto di pollo, lo cospargiamo di spezie in polvere a piacere e lo mettiamo in cottura per circa 3-4 ore a 130-150 °C. Il petto è pronto quando raggiunge una temperatura interna di almeno 92-95 °C: solo a queste temperature sarà possibile sfilacciarlo senza resistenza. Lo utilizzeremo per farcire un panino, meglio se rustico, ma vanno bene anche quelli da hamburger. Un po’ di coleslaw, salsa yogurt, salsa BBQ e il gioco è fatto. Nessuno si lamenterà.
