Damn. I know a lot of weird facts actually, but my brain went blank for a few minutes here.
Here's one that's related to my work:
There's a type of cow in France called the Salers Cow, it's the only cow that will refuse to give milk if her offspring is not under her first. So farmers in France have to keep the baby, they give every one of them names, and every morning, they call every baby to their mothers (they know their names like dogs it's so cute) so they can be fed before the farmer can access the milk.
That's it. That's the first weird fact that crossed my mind 🤣

Salers cattle Salers cattle is an old, traditional breed originating from around the city of Salers in Auvergne. These beautiful cows are a multi-purpose breed, bred for both their meat and their milk (used to make traditional cheese like Cantal or Salers cheese). They are also very hardy, which makes them one of the most common breed in the Auvergne/Massif Central region, despite them being less productive than modern breeds. They are also known for being very protective of their calves. I’ve seen horse riders being charged by a full herd because they provocked cows accompanied with their calves.

I GOT CHASED BY A  COYPU BECAUSE THIS MOTHERFUCKER DIDN’T LIKE SHARING HIS RIVER WITH CHILDREN WHO JUST WANTED TO BUILD A TREEHOUSE ON A LITTLER RIVER-ISLAND IN THE WOODS. HORSES AND COWS ARE VERY NICE BUT THEY WILL KICK THE SHIT OUT OF YOU IF YOU LOOK AT THEM THE WRONG WAY. PIGS WILL EAT YOU ALIVE, THEY DON’T GIVE A SHIT. RABBITS WILL RUN IN FRONT OF YOUR CAR LIKE IT’S A GAME OF WHO WILL KILL WHO FIRST. FOXES HAVE ENTERED MY HOUSE THROUGH THE CAT FLAP AND PEED ON MY COUCH. MULTIPLE TIMES. THERE WAS A TREND OF GETTING PEACOCKS AMONG ALL FRENCH FARMERS AT ONE POINT, WHICH WAS ALL FUN AND GAMES UNTIL THE FUCKERS DECIDED TO PERCH ON YOUR WINDOW AND SCREAM AT 4AM. THE NEIGHBOR’S DOG ALMOST BIT MY HEAD OFF AND MY OWN DOG JUMPED ON HIM JUST IN TIME AND SAVED MY FUCKING LIFE. RAT INVASIONS IN THE HOUSE ALMOST EVERY YEAR. HORNETS AND WASPS WILL MAKE NESTS IN THE WALLS OF YOUR BEDROOM AND THEN GET MAD AT YOU FOR BREATHING TOO HARD. WHEN I WAS VERY LITTLE I TRIED TO PUT MY RAIN-BOOT ON BUT MY FOOT WOULDN’T FIT BECAUSE SOMETHING WAS OBSTRUCTING IT, SO I FLIPPED IT OVER AND A WHOLE FUCKING RED-ANTS COLONY FELL OFF. ANTS ALSO LOVED MY BEDROOM, SO SOMETIMES I’D WAKE UP TO ENTIRE COLONIES CRAWLING ON MY BED AND ALL OVER THE FLOOR. I’VE HAD AN ANT-PHOBIA EVER SINCE. MY VILLAGE IS ALSO NEAR TO THE SEA AND EVERY NOW AND THEN WHEN THERE IS A BIG TIDE, THE RIVER WOULD FLOOD THE WHOLE FUCKING THING AND NOBODY WOULD GIVE A SHIT. ONE OF THE NEIGHBORS DOESN’T KNOW THE CONCEPT OF TRASHCANS AND RECYCLE BINS SO SHE JUST STRAIGHT UP BURNS HER FUCKING TRASH IN A DITCH EVERY COUPLE OF MONTHS. SHE MIGHT AS WELL BE FLIPPING OFF THE PLANET, AND US, WHILE SHE’S DOING IT. ASSUME EVERYONE DRIVING A TRACTOR IS DRUNK AND STEAR CLEAR OF THEIR WAY. THE COUNTRYSIDE IS LAWLESS, EVERYTHING AND EVERYONE IS OUT TO GET YOU. But hey, I was best friend with a little hen once and she would hop on my lap whenever I was in my swing so she could swing with me, so all-in-all, the countryside is okay.

Murol Salers Beef Burgers

Another tasty lunch made with delicious local produce, these Murol Salers Beef Burgers are a mouth-watering celebration of the generous terroir here, abundant in meat and cheeses, both full of character!
Ingredients (serves 2):
300 grams/10.5 ounces Salers Beef Mince (or other very good beef mince, like Angus)
1/4 teaspoon salt
1/2 teaspoon freshly cracked black pepper
60 grams/2 ounces Murol Cheese
a drizzle of olive oil
In a medium bowl, season Salers Beef Mince with salt and black pepper. Gently toss with clean hands to mix.
Cut Murol Cheese into thick slices.
Divide Salers Beef mixture into two portions, and form two patties, wrapping each around a slice of Murol.
Heat a frying pan over a high flame.
Drizzle both cheese-stuffed patties with olive oil, and rub them gently. Add to the frying pan, and cook, about 3 minutes on one side. 
Flip on the other side, and reduce heat to medium. Cook, another 4 or 5 minutes until cooked through.
Serve Murol Salers Beef Burgers with dressed lettuce, on their on or onto Cranberry Dinner Rolls, to make hamburgers...

Bacon, Broccoli, Spinach and Salers Clafoutis

I found a cookbook called ‘Les clafoutis de Christophe’ written by Christophe Felder in a charity shop in Wetherby. The book was published in 2001, it’s written in French and features over 80 clafoutis recipes both sweet and savoury. I instantly felt inspired to bake a savoury clafoutis using a French cheese – Salers – that I bought at Les Halles Laissac in Montpellier. Salers is a semi-hard cow’s milk cheese produced in the mountains of Auvergne in central France. When I tasted it at Les Halles Laissac I described it as “a bittersweet symphony” as the flavour starts out a little bit bitter then ends with a wonderful sweet and tangy finish that lingers on the tongue. So, I adapted one of Christophe’s clafoutis recipes with the inclusion of bacon, broccoli, spinach and the Salers. I also used Maran eggs in my recipe which, appropriately, are a French breed originating in the port town of Marans, south-western France. 
Here’s my recipe, if you can’t obtain the Salers, substitute it for mature cheddar.
Serves 4 to 6.
Equipment required:
a 25cm diameter baking dish or 4 to 6 individual baking dishes
Ingredients:
For the baking dish:
25g salted butter
50g fresh white breadcrumbs
For the clafoutis:
2 whole Maran eggs + 2 yolks
250ml milk
250ml crème fraiche
10g cornflour
6 rashers of streaky bacon or pancetta
100g Tenderstem broccoli, florets only
a handful of baby spinach, washed and spun dry
160g Salers (cut into cubes)
½ tsp Maldon sea salt
freshly ground black pepper
½ tsp freshly grated nutmeg
Method:
Preheat the oven to 200°C / 180°C (fan-assisted).
1.    Grease the baking dish with the butter then scatter evenly with breadcrumbs.
2.    Arrange the broccoli and spinach evenly in the baking dish.
3.    In a bowl, whisk the eggs, milk and crème fraiche then whisk in the cornflour. Add the salt and freshly ground black pepper and nutmeg.
4.    Pour the egg mixture into the baking dish over the vegetables making sure the broccoli and spinach are well covered.
5.    Arrange the rashers of bacon on top then add the cubes of cheese.
6.    Bake for 30 to 40 minutes until the clafoutis has risen and looks golden.

Little infodump about cow history! 🐄
So yesterdays cow was a chianina, which are one of the oldest cow breeds (dating back to the roman era) but!! Zebus are a lot older! Zebus appear in artwork as far back as the third century. Notable examples being the bull capital of Rampurva (300-200 bc) and a coin used in India around 20-21 bc.

Zebus are directly descended from aurochs, which is the (now extinct :[) ancestor of cattle. Supposedly all living cows are descended from a single herd of aurochs ! (also fun fact: the heck cattle breed is a result of German scientists attempting to recreate aurochs thru selective breeding.) European highland cattle might also be related to aurochs, since Scottish scientists have found signs of cross-breeding between highlands and wild aurochs. However highlands date back to the 6th century at the latest, while Zebus were around in India and Africa well before that :] Cows were apparently first domesticated around 8,500 bc in Southwest Asia, then brought to Egypt. (tomb wall painting from 3,500 bc) So, as far as i can tell, the zebus are the oldest distinct breed :) Another one of the oldest breeds is the salers (sa-lairs), which date back to 8,000 bc! They seem to be the same breed of cow featured in cave paintings discovered in the area, which would make them one of the first depictions of cows.

Also, as a fun fact, it’s believed that the first painting ever made of a cow (dating back 40,000 years) was, in fact, a cow!
