Regional branding: Cream cheese adds a tasty twist to Philly flavors
Champagne, San Pellegrino, Cape Cod Potato Chips, Seattle’s Best Coffee, Texas Pete Hot Sauce, Brooklyn Bagels, Philadelphia Cream Cheese… the list of food and drink products named after geographic locations could go on and on. Why? Perhaps it is to give the consumer assurance of quality associated with a locale. Or, in many cases named after the geographic region where they are produced. For example, Parmesan Reggiano cheese is produced in the provinces of Parma and Reggio Emilia, Italy or to be considered Swiss chocolate, the production must take place in Switzerland. Did you know Champagne must be produced in the Champagne region of France to be called Champagne; hence, Champagne is sparkling wine, however not all sparkling wine is Champagne.
Well, when it comes to Philadelphia cream cheese, you might be surprised that this famous brand did not originate in its namesake.  It was in 1872 when a farmer named William Lawrence, from Chester New York invented Philadelphia cream cheese…and it was by accident. He was preparing some Neufchâtel and his result was smoother and not as crumbly as what he set out to make.  Voila, cream cheese was born! Why did he brand it “Philadelphia” cream cheese? …at the time, the city was known for premium quality dairy products.
The beloved brand hasn’t changed its well-known packaging much over the years…you know, the rectangular silver box and silver foil encasing the cheese.
The use of cream cheese goes beyond the schmear on a bagel. Used as a base for dips, cheeseballs, an ingredient in soups and sauces and of course a plethora of desserts and cheesecakes, it is so versatile and can be a blank canvas for so many creations. It was surprising to learn that cream cheese is one of the five most popular cheeses in the United States.
The company’s website shares some milestones:
1939: The classic Philadelphia brick was introduced
950s: Cheesecake was introduced as a mainstream dessert in the U.S.
1971: Philadelphia whipped cream cheese hits the shelves for the first time
1981: Philadelphia soft cream cheese is introduced
2013: At the 9th annual cream cheese festival, the company created a 6,900-pound cheesecake and obtained the Guiness World Record for the world’s largest cheesecake
2017: Philadelphia cheesecake cups and Philadelphia bagel chip & cream cheese dip were launched to fulfill all of your sweet and savory snacking cravings.
2021: Philadelphia cheesecake crumble dessert was launched
2022: Philadelphia celebrated its 150th anniversary
Many cookbooks have been published with recipes using this iconic brand. Of course, as you might already know from reading my columns, this cookbook collector has a few in his ever-expanding collection.
Here are a few ideas and recipes.
Take whipped cream cheese and mix with chopped bacon, horseradish, and chives. Stuff large mushroom caps with the mixture or use as a dip for vegetables.
I add a bit of softened cream cheese when making scrambled eggs or mashed potatoes.
Make a quick Alfredo sauce by taking 8 ounces of cream cheese, a cup of Parmesan cheese, ½ cup butter, ½ cup of milk and salt to taste and cook over low heat until it becomes a smooth consistency. Add salt and pepper to taste.
Make an apple or other fruit dip by taking a package softened cream cheese and mixing it with brown and white sugar to taste, and a teaspoon of vanilla.
This recipe for fudge was written on a napkin and filed in an old recipe box I have.
Slowly add 4 cups of confectioners’ sugar, to 1 (8-ounce) package cream cheese, softened and mix until combined. Stir in 4 (1-ounce) squares unsweetened chocolate (melted), 1 teaspoon pure vanilla extract and ½ cup chopped walnuts. Spread the mixture in an 8-inch pan and put in refrigerator until chilled and hardened. Cut into squares.
This recipe is from “Philadelphia Brand Cream Cheese: All New Simple & Elegant Recipes” (published 1990)
Southwestern Cheesecake
The headnote says, “All of your favorite southwestern ingredients in a savory cheesecake.”
1 cup finely chopped tortilla chips
3 tablespoons Parkay margarine
2 (8-ounce) packages Philadelphia cream cheese, softened
2 eggs
1 (8-ounce) package Kraft shredded Colby/Monterey Jack cheese
1 (4-ounce) can chopped green chilies, drained
1 cup sour cream
1 cup chopped yellow or orange pepper
½ cup scallion slices
1/3 cup chopped tomatoes
¼ cup pitted ripe olive slices
Preheat oven to 325 degrees
Stir together chips and margarine in a small bowl; press onto bottom of 9-inch springform pan. Bake for 15 minutes.
Beat cream cheese and eggs in a large mixing bowl at medium speed with an electric mixer until well blended. Mix in shredded cheese and chilies; pour over crust. Bake for 30 minutes.
Spread sour cream over cheesecake. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
Top with remaining ingredients before serving.
To make an attractive design on top of this cheesecake, simply cut three diamonds out of paper. Place on top of cheesecake. Place scallion slices around diamonds. Remove cutouts; fill in with peppers. Add a strip of tomatoes down the center. Garnish with olives
The following recipe is from “Philadelphia Brand Cream Cheese” Cheesecakes (published 1989)
Coconut Choco Cheesecake
1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons Parkay margarine
Combine crumbs, sugar and margarine. Press onto bottom of 9-inch springform pan. Bake at 350 degrees for 10 minutes.
2 (1-ounce) squares unsweetened chocolate
2 tablespoons Parkay margarine
2 (8-ounce) packages Philadelphia cream cheese, softened
1 ¼ cups sugar
¼ teaspoon salt
5 eggs
1 (3 ½ ounce) can flaked coconut*
Melt chocolate and margarine over low heat, stirring until smooth. Cool. Combine cream cheese, sugar, and salt, mixing at medium speed with an electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate mixture and coconut; pour over crust. Bake at 350 degrees for 1 hour.
1 cup sour cream
2 tablespoons sugar
2 tablespoons brandy
Combine sour cream, sugar, and brandy. Loosen cake from rim of pan; cool before removing rim of pan. Chill. Garnish with chocolate shavings, if desired.
You might be wondering why margarine was used in these recipes. Back in the day when these recipes were published, it was a popular ingredient to use. Today, butter has replaced margarine in most recipes.
*Some products from older cookbooks might not be available, so if you can’t find canned flaked coconut, you can use the bagged version.

Vanilla “Philly” Frosting
1 (8-ounce) package Philadelphia Brand cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla
Dash of salt
5 ½ cups confectioners’ sugar, sifted
Blend together softened cream cheese, milk, vanilla and salt. Add sugar, one cup at a time, mixing well after each addition. Fills and frosts two 8 or 9-inch cake layers.
Variations:
Substitute 1 teaspoon almon extract for vanilla.
Stir in ¼ cup crushed peppermint candy.
Stir in ¼ cup crushed lemon drops and 1 teaspoon lemon juice.

➜ Summary: It isn't hard to be a pâtisserie chef, but it's not a piece of cake either. It seems like for you in particular, life keeps throwing in one wrench after another. It always finds ways to make your sweets bitter. The cherry on top is Jeon Jungkook — a rival with a sensitive sweet tooth who always finds ways to complain about you.

On Wednesday, you begin to bake, cut, and fill.   The ingredients are pulled from the borrowed kitchen — eggs, butter, buttermilk, vegetable oil, sugar, flour, baking powder, unsweetened cocoa powder, and vanilla. The oven is preheated to three hundred degrees fahrenheit and the round pans are greased. The four of you measure and mix together the dry ingredients, and then the wet ingredients.    Once it’s all ready, it’s baked while the ganache filling is worked on. Heavy cream, butter, chocolate, and a pinch of kosher salt are melted together with two tablespoons of brewed coffee to deepen the flavour. It cools and thickens, a fluffy texture that melts against your palate.    And when the moist cake is out of the oven, it cools too before being cut and filled.   “Alright, folks.” Namjoon dusts his hands off, shutting the fridge door. “Now on Friday, we just cover, dowel, and stack. Since the wedding is on Saturday, we want it to sleep overnight.”   “We’re going to have to prepare decorations tomorrow,” Sejeong says. If there was anyone’s cake that she wanted to perfect, it was her own sister’s. “Crumb coat the cakes and smooth the frosting, colour the fondants, make the flowers. Just so we can get it prepared in time and not be rushing on the last day.”    “Okay.” You offer a smile. “Are we still going with lavender?”   “That’s the plan. But we can worry about that tomorrow. How have you two been? Any problems?”   You glance at Jungkook, meeting his eye, but you divert hastily. “N-No, we’re fine. We’ve been enjoying ourselves. Thank you for bringing us along.”   “That’s not a problem.” Namjoon laughs heartily, practically glowing with a healthy tan. “We’re happy to have two more sets of hands. God knows the wedding is hectic and stressful enough, right, honey?”   “Chungha is having it tougher.” His wife sighs. “We’re just glad to get this done and over with.”   In between family feuds and relatives duking it out, you don’t need to tell them that you and Jungkook are incidentally sharing the same room over a mistake in booking. They have enough on their plates as it is.   But just because you don’t talk about your issues doesn’t mean that they’ve magically vanished.   Even if you wish that were the case.   “Morni—”   The moment you open your sleepy eyes, Jeon Jungkook has manifested in the mirror. You choke on your toothpaste, toothbrush sucked into your throat like a vacuum, lodged in. You choke it out and sputter.    Jungkook’s shocked awake, eyes widened as he pats your back.   You cough and rinse your mouth. “Oh my god. You scared me to death!”   “All I said was good morning!” He shoots you a look, leaning in too close with his still sleepy demeanour, fluffed hair and swollen face. “Are you alright?”   “Obviously not! I almost died!”   You’re not okay. Very far from any semblance of ‘okay’.   For one, you can’t look the bastard in the eye. You can’t stop yourself from perspiring. It’s as if your best friend is someone worthy to be fearful of…   No. It’s not that you’ve become afraid of Jungkook. You’re nervous.   “I’m going to shower.”   “Sounds good.”   It shouldn’t be surprising. He even warned you. But the moment Jungkook starts to strip off his shirt, you’re caught off guard at how he didn’t wait for you to leave ⁠— how comfortable he is with you. You have half a mind left to sprint out of the bathroom. Nearly falling over. Barely catching your stumble.    Jungkook watches with his brows raised incredulously.   The bathroom door eventually shuts and you change as quick as you can, and run out of the room without a word. Like you’re being chased by loan sharks.   “Hey, Y/N.” After ten minutes, Jungkook comes out topless, having forgotten to grab a shirt. But he pays no mind, toweling off his head. “We should get room servi—…...Y/N?”   The doe-eyed boy looks around, realizing that you’re gone.   You’ve headed across the resort to the restaurant for breakfast. Finally, you’re able to have a meal in peace without having to lift your head to see a big nose and brown, doe eyes.    You grab a healthy serving of eggs, toast and cereal. And you pick a good table to look out and enjoy the view.   But fifteen minutes into your meal, someone suddenly plops down across from you.   You’re startled to death again.   “I can’t believe you ditched me.”   “S-Sorry…” You look away. “I was too hungry to wait.”   “Could’ve told me at least. I would’ve hurried up.” He spreads cream cheese on his bagel, ruffled mop of hair flopping as he moves. He’s dressed like a true tourist again, this time with a hawaiian shirt that’s bright orange with blue florals all over it.   Jungkook’s eyes are round and buggy as he bites down and he hums in satisfaction at the taste. “So what are our plans for today? It’s the only full day we have left before we have to work on the cake.”   “I don’t know.” You stand up. “I finished. Should go back to the room. I have a stomach ache.”   “Really?” His left cheek is puffed out with food stored inside. “But I just got here.”   “Nature calls.” You run off, leaving your best friend in the dust.   It’s horrible being stuck on an island with Jeon Jungkook.    No matter where you run or how you hide, he’s always there.   “How was the—”   You scream.   “—bathroom trip.” Jungkook looks at you, brows furrowed deep.   “You scared me!” You put your hand over your heart where it’s pounding hard, threatening to jump out of your chest.   “But I didn’t do anything,” he defends, mouth drawing open as he gestures around, perplexed at how you could be frightened in broad daylight, in the middle of the day, with this many people around. “Are you sure you’re okay?”   “I’m fine. H-how’d you even find me?!”   “I don’t know, I was just heading back to the room. The resort isn’t that big.” He shrugs and finally is able to get a good look at you. Jungkook slowly smiles at your one-piece swimsuit. “Are you going in for a dip? I can join.”   The thought of Jungkook ripping off his shirt, jumping into the pool and getting all wet with you has your knees weak. It’s not a healthy idea.    “No. Changed my mind. It’s kind of….cold out for a swim. I’m probably going to go back inside to change.”   “Y/N. It’s hot. It’s like a hundred degrees out here.”   You muster stiff laughter. “Well I’m feeling a bit chilly. Gonna go back and change. See ya!”   You sprint off again, in a completely disoriented manner. Jungkook shouts your name when you nearly slip on a puddle of water by the poolside and almost crack your head open. But luckily, you catch yourself and throw him a half-hearted smile and an exaggerated wave goodbye.    Part of you wishes you would’ve just fallen into the pool or hit your head. Maybe it would finally knock some sense into your brain.   There’s no reason for you to be so nervous around him. This is Jeon Jungkook you’re talking about — IU fanboy, the biggest nerd of the universe, officially the worst flirt on this planet.   There’s absolutely no reason for your stomach to flip. For you to be unable to retain eye contact with your friend. For you to suddenly be so self-aware and conscious of him that you feel nervous when he’s around and nervous when he’s not. There’s no reason whatsoever…   “You need to get your head straight.”   You’re muttering to yourself as you walk. You probably look crazy, but need to hear it out loud. If no one’s going to help you by saying it, then you’ll say it yourself. “Focus, Y/N. Focus—”   A blood-curdling shriek tears from your stomach when there’s suddenly knocking. You turn to see Jeon Jungkook beside you, separated by a window, but laughing hysterically at your reaction. His nose is scrunched, mouth drawn up into that boyish smile of his.   He’s inside the fitness center in a white tank top, sweating enough to make his hair damp, and the dark stands are pushed back against his head. That little shit is scaring you on purpose now.   “Are you shitting me, Jeon Jungkook?!” Your fist pounds against the glass and you fail to notice how everyone else in the gym is whirling their heads around at the noise.   The resort attendant runs up on you.   “Ma’am, please don’t bang on the glass.”   “S-sorry.”   Jungkook is in bigger hysterics now, bent over and grabbing his stomach, laughing loud enough for you to hear through the window. His smile is excited, eyes lit up.   Everywhere. Every corner you turn to. Every path you take. Some way or another — whether you’re talking to Namjoon or Chungha, hanging at the bar, around the pool, on the beach to watch the waves — no matter how hard you try to evade him, Jungkook is always there.   You didn’t know it would be so hard to avoid him. He’s truly like the plague.   Or maybe a curse.    Better yet, it would be more fitting to call Jeon Jungkook the year-round Christmas grinch. He’s here to ruin your life, ruin your holiday, and make your head filled with him and only him.   “You’re not avoiding me, are you?”   He finally asks after crawling into bed beside you that night. His hands are folded on top of his midsection and he’s staring up at the ceiling even if he can’t see when the entire room is drowned in a comfortable darkness.   You muster some laughter. “Don’t be ridiculous.”   The sheets shift and from the little light coming through the terrace glass doors, you can see him looking at you. And you can feel his body warmth with the small distance. “I would hate it if you were a hypocrite since you don’t like when others ghost you.”   “I said I’m not,” you whine. The lie gives a tickle of guilt in your gut. “You shouldn’t accuse people after they’ve already defended themselves.”   “Okay.” The corners of his lips quirk. “Just making sure. I don’t want to scare you off.”   You scoff, eyes adjusting enough to be able to look at him. It’s quiet, with him beside you underneath the covers, too close but too far. Yet somehow, in spite of the silence of your room, it’s still very noisy inside your head. “You really think you’re going to get rid of me that easily?”   “No. And I’m glad for that. I wouldn’t want to lose you.” Jungkook grins and he teases, “You’re not a coward, Y/N. Right?”   “Psh. Go to bed, Jeon.”   “Hmm, I’m not tired, but I do know an activity we can do together that’ll tire me right out.”   “Yeah, my fist meeting your face.”   He laughs and you roll over, tugging the covers up to your chin.   You don’t say out loud, don’t admit it, but you are a coward.    One big coward who pretends to face the truth with courage, but actually learnt to run and hide in the face of trouble. A coward who can’t face the music, who’s actually wide awake like he is, but won’t say it. Whose heart is stuttering too loud to try to slip underneath the seduction of slumber.    You won’t admit the funny feeling you get when your gaze sets upon Jungkook. You won’t acknowledge it even when it’s screaming into your ear drums and drumming against your rib cage. You won’t confess that the nervousness you feel is far from platonic.   It’s hard not to feel stuck on Jungkook. These days, the last person you see before you sleep is him and he’s the first person you see when you wake up. He’s both the beginning and the end.   “Hey, Y/N.” You’re stirred away by a soft voice calling to you. “Wake up.”   When your lids peel back, you see him. The strands of his black hair nearly tickle the skin of your cheeks and he smiles tenderly at you. “We have a long day. Come on.”   You’re a coward and you have been for some time now.   //   Friday is the busiest day of the week. It’s the eve of the wedding and where you’re in the kitchen for hours on end.   Between the four of you, the lilac-coloured fondant is rolled out to cover the chocolate cake and ganache frosting. The dowel rods are inserted and the cake is stacked. Once it’s to Sejeong’s satisfaction, the decorating process begins. The sugar lavender that you made yesterday is used, placed delicately in the correct positions and you work on tracing a lace pattern on the bottom most layer.   Hours later, with muscles sore and eyes stinging, she’s finally satisfied.   It ends up looking magnificent. All the effort is presented in front of you — the cake is a soft purple colour, lavender flowers made from gum paste and real lilacs edible.   “It’s too pretty to eat.”   “It always is.” Sejeong smiles. “But when we do, it’ll be delicious.”   Namjoon stretches his arms over his head, making noises as his bones crack. “I’m starving. What time is it?” He checks his watch. “I think the snack bar is still open. We should go eat now since we have to wake up bright and early tomorrow.”   “I forgot how much work it was to be a bridesmaid.” Sejeong sighs lightly. “Let’s just get the cake in the fridge for now.”   Jungkook and Namjoon carefully move the cake into the refrigerator area, a whole cold storage, and you take your aprons off, washing your hands. Sejeong turns to you and Jungkook. “Are you guys hungry too? You probably are since we’ve been working so late.”   You exchange a look with him. “N-No. We’re fine.”   “Are you sure?” Namjoon asks, brows raised.   “Yeah, I’m sure. I’m more tired than hungry. I’ll probably call it a night.”   “Same here.” Jungkook offers a smile, following your lead.   “Well alright, I’ll see you both bright and early then! Good job, you two.” Namjoon smiles and both he and his wife leave the kitchen, talking to one another until their voices fade away.   Jungkook then turns to you with his brow raised. “Are you really not hungry?”   You look down at your stomach and it rumbles. You wonder if he can hear it too. “I thought I’d give them alone time since we’ve been busy all day….”   An extended sigh pulls from the man’s lungs.   Jungkook smiles and as he passes by you, he ruffles your hair. “You’re so unnecessarily thoughtful sometimes….”   You turn around, trailing after him. Jungkook opens the fridge and hums, eyes searching.    “What are you doing?” you ask curiously.   “Looking for ingredients since a little someone said they weren’t hungry and now we can’t go to the only place still open.” He grins easily. “So unless you want to go back to the hotel room and wait half an hour for room service, I’ll cook.”   Jungkook sounds so self-assured that you comply, finding your place on a stool as he begins to pull out mushrooms, shallots, parmesan cheese, butter, and starts digging around the cupboards. “You can cook?”   “’Course I can. I’m a master of the kitchen.” His eyes flicker up and the little shit mocks you. “Why? Can’t you?”   “The pan always burns,” you mutter.   “Is that why you can’t melt chocolate over the stove?” he questions with a glint of mischief.   “For the record, I’m getting better. Won’t we get into trouble?” It’s not your kitchen after all — just a small space the resort was willing to let you use.   He merely shrugs. “We have to live a little.”   You sit on the other side of the island, watching him closely.    Jungkook finds a can of chicken stock and heats it over the stove in a small saucepan. Then he moves to chop shallots and mushrooms, sleeves pulled up to his elbows, forearms revealed as he works the knife in a constant motion that’s therapeutic to listen to. Jungkook fries the shallots and mushrooms over the hot oil and butter in a skillet, tossing and flipping them as they sizzle.   He works fluidly, in a rhythm without needing to stop and think twice. It’s fun to watch.   “What are you making?”   “Mushroom risotto.”   “Sounds fancy.”   “It is,” he lies.    In your ignorance, you’re unaware that it’s actually an easy recipe. You’re also oblivious to the fact that Jungkook is secretly beaming with gratitude that his dad taught him this recipe years ago. His dad was right that he needed to learn how to cook basic dishes to one day impress.   Jungkook adds the rice, coating it in the butter before adding a cup of white wine he found in the cupboards. Once it’s fully absorbed, he puts in the chicken stock and adds salt to taste. All the while, he’s watching you from the corner of his eye. He can read you like a book and your amazed expression feeds directly into his ego.   When Jungkook turns around to throw something in the sink, he lets his enormous smile slip.   “If we ever have the time, I’ll make you shrimp or chicken risotto.”   “You can make that?”   “Of course, cooking isn’t hard.”   “Pft. You really know how to do everything, don’t you, Jeon?”   “You said it, not me.”   He serves it on a big plate, even taking the extra step to clean the edges up with a napkin. You’re amazed and when he arrogantly urges you to take a bite, you can’t even tell him off. It’s delicious.   And once you say so, he can't deny how happy he is.   Jungkook is over the fucking moon. He would cook for you for the rest of his life if you’d let him.

1. what is the color of your hairbrush? it’s grey on the back with black handle
2. name a food you never eat - hmm, i used to be such a picky eater but i recently slowly started eating a lot of food i used to despise... if you asked me a few months ago, i could write up a rather long list, but right now? the only thing that comes to mind are picked cucumbers 😬
3. are you typically too warm or too cold? too cold, 100%. somehow, my body stays cold even when it is like 30 degrees, which is hella weird.
4. what were you doing 45 minutes ago? eating lunch! i made bagels with ricotta, ham, cheese, egg and avocado and i had a couple of baby cucumbers along with it (mind you, not pickled ones) and it was super delicious.
5. what’s your favorite candy bar? i think twix is my favourite? or perhaps this slovak bar called ‘horalky’, which is basically wafers with peanut filling and sides dipped in chocolate... god, now i want one so desperately.
6. have you ever been to a professional sports game? i used to watch hockey a lot and i’ve been to a couple of games.
7. what is the last thing you said out loud?  huh, i think it was my order when i went for coffee a couple of hours ago? (i got a latte and a piece of apple crumble cake, in case anybody’s wondering)
8. what is your favorite ice cream? i could eat ben&jerry every day, so it’s probably their ‘half baked’ or ‘phish food’. also, i’d die for a good mango sorbet.
9. what was the last thing you had to drink? plain old water
10. do you like your wallet? i like how small and practical it is..... i’m trying to recall the last time i actually took it out of my backpack and i’m coming very short.
11. what is the last thing you ate? the bagels from question 4!
12. did you buy any new clothes last weekend? i bought a pair of new masks last thursday and they arrived on monday - does that count?
13. what’s the last sporting event you watched? haha, does the bake off count as a sporting event? if not, i think it would be some skiing competitions (slalom) last winter - my parents follow them rather closely and it kind of rubs off on me when i’m home with them.
14. what is your favorite flavor of popcorn? salty mixed with sweet!
15. who is the last person you sent a text message to? my boyfriend.
16. ever been camping? does setting up a tent in friend’s backyard and sleeping there count? if so, then yes.
17. do you take vitamins? not really... i sometimes take c during autumn for immunity, but i haven’t bought any this year so far... oh, i am taking probiotics right now, though i’m not sure whether that counts as vitamins.
18. do you regularly attend a place of worship? no.
19. do you have a tan? no, if i try to tan, i just turn pink (or red). though i’m pretty sure my skin is marginally lighter underneath where i wear my watch.
20. do you prefer Chinese or pizza?  if going out, pizza; if i’m cooking, chinese.
21. do you drink your soda through a straw? if there’s ice in it, then yes; otherwise, i tend to skip the straw. 
22. what color socks do you usually wear? black or white.
23. do you ever drive above the speed limit? gonna be honest and say yes. not by crazy amounts or anything like that, but if i know the road and i can see quite far around and ahead, i will go 10ish% above the limit easily. not gonna lie, it’s especially easy on highways (though i nearly got fined last time i drove, so who knows how i’ll feel about it the next i’ll sit behind the wheel) 
24. what terrifies you? haha, like i’m going to share that.
25. look to your left, what do you see?  a shelf with alcohol bottles, glasses that don’t fit into our kitchen cabinet, an assortment of cameras and other photography equipment and a scanner. oh, and a window.
26. what chore do you hate most? taking out our organic waste bin - it starts smelling very bad very quickly plus the bin for it downstairs hadn’t been taken out in a very long time and it’s always covered by fruit flies and smells veeeery bad and i’m feeling yucky just thinking about it.
27. what do you think of when you hear an Australian accent? i think - hah, that person is australian, how cool.
28. what’s your favorite soda? i love san pellegrino. limonata is my go to, but i recently had lemon & mint and my god, that one is amazing.
29. do you go in a fast food place or just hit the drive thru? i go in, even if i drove there - i don’t like eating in my car.
30. what’s your favorite number? i’ve always had a special connection to number three, so let’s go with that.
31. who’s the last person you talked to? depends on what you mean by talked to - actually spoke to, with my voice? the bartender at my favourite coffee shop. had a meaningful conversation? probably with a customer service employee who’s helping me resolve an issue. just chatted to, without much of a point? my boyfriend.
32. favorite meat? hmm, probably ham?
33. last song you listened to? i’m currently listening to ‘cigarette daydreams’ by ‘cage the elephant’, though that’s going to change in a minute and half.
34. last book you read? ‘renegades’ by marissa meyer! it was so. good! i started the second book, ‘archnemesis’ yesterday and i’m even more in love. 100% recommend if you’re into superhero stories with secret identities and enemies-to-friends(-to-lovers). such an amazing series.
35. favorite day of the week? what even are days?
36. can you say the alphabet backwards? only crazy people can.
37. how do you like your coffee? oat latte with a bit of honey.
38. favorite pair of shoes? i own way too many shoes to be able to pick a single favourite pair.
39. time you normally get up? between 8:30 and 9:00.
40. what do you prefer, sunrise or sunsets? sunsets.
41. how many blankets are on your bed? none. there is one on the couch though.
42. describe your kitchen plates? we found this kitchen set in tesco after eating from paper plates for at least a week after moving in - there are four bowls, four small plates and four big plates (a year layer, we found two extra big bowls matching our set) - the bowls are grey from outside and white on the inside; the small plates are grey on the top and white on the bottom and the big plates are white on top and grey on bottom.
43. describe your kitchen at the moment: very small - a third of it is a stove (with two heating pads? circles? whatever), another third is a sink and the last third is workspace with a small shelf for spices, cutlery etc, and a cutting board and knives stand. most of the workspace is taken up by a cutting board i used to cut avocado and cucumbers for lunch and there is a tiny pan (and i mean really tiny, like one egg sized) leftover on the stove. i’m probably going to do the dishes after i finish answering these.
44. do you have a favorite alcoholic drink? i’m not that picky, i’ll drink almost anything. i think i prefer fruity drinks though - i really like french martini or sex on the beach.
45. do you play cards? we used to play cards a lot with my parents and sister (and grandparents as well) - i love playing canasta, but you need four people for that, so i haven’t actually played in months... we also played a lot of joker and i taught my boyfriend to play this summer (not that he didn’t know how to play, he just wasn’t particularly good)... and we also play poker with a couple of our friends here from time to time
46. what color is your car? this is going to sound so bad, but i am actual not sure? we ended up finding quite a good deal on a car we wanted to get after uni, so we bought it - however, it is back in slovakia and both me and my boyfriend are stuck in uk right now. it’s either black or very dark blue, but for the love of my life, i can’t remember and the photos i found weren’t helpful at. all. (if it weren’t for covid, i’d be able to answer this question a lot better). oh, and the car i had before (my mom’s old car) is red.
47. can you change a tire? i like to think i’d be able to (after enough googling and youtube videos), but if there was somebody else with me, i’d gladly let them do it.
48. your favorite state or province? like in usa or what? i guess new york.
49. favorite job you’ve had? i don’t think i’ve particularly enjoyed any of the jobs i had so far - if i had to pick, i’d say working in an ice-cream shop, because if there is one thing that could make work during a very hot summer even slightly bearable, it’s the fact that every so often, you can nibble on a bit of an ice-cream.

Day 21. February 19, 2020. Havelock to Kaikōura. 180km.
Yeah, it is really something how your whole psyche may be uplifted by a weather improvement. I mean I'm a pretty positive guy but after a few dreary days it really puts a spring in your step (well my step anyway) when you awaken to a sunny blue sky morning. Walked across the street to have a coffee. Well, a cappuccino that looked more like a chocolate pudding before I dipped my spoon through the froth. Headed out after packing around 9 and enjoyed the gold waving grasses on the hills that had mostly been cleared of timber. Stark contrast to the green pine trees on the few that weren't deforested. Up and over a ridge line and dropped into the Marlborough valley, which is as I mentioned yesterday lined with vineyard after vineyard. 🍇 Very scenic. Pic above. I also included a shot from my seafood pasta from Slip Inn last night as it was delicious. We wound down the highway and took a few side roads, one by accident to avoid some of Blenheim but it doesn't take long to get through this town. We aimed for The Store. It is a well situated and busy cafe on the beach just north of Clarence. My salmon bagel with pickled red onion, capers and cream cheese was perfect. The orange and chocolate muffin wasn't bad either. 😋 Washed down with an Awaka Tasman Bay Berries sparkling coconut water. Walked down a manicured lawn to the beach. Pic. The rest of the ride to Kaikõura was along a rocky coastline with mountains on the right and loads of construction zones with flag men and some slow traffic as a result. Seal colonies were scattered along the rocks to our left and we stopped at a couple overlooks to get them on "film". We turned right at a brown marker sign indicating an Irish hotel. The Donegal House is proud of their well documented Irish ancestry dating back 150 years. It was a beautiful setting and a Guinness nicely complemented the setting and we sat for a while.
Kaikōura was less than 10' down the road and we rode to the town center to check it out. The water color today was really a nice turquoise hue and the setting here with white rocks, a peninsula and the surrounding mountains make it a hot spot for tourists. Whale watching by boat and air is popular here. Saw some surfers in the water a few bays north of town. Have definitely seen and heard more Americans in the last couple days in the NE quadrant of the South Island. We were able to check in to the motel even though we were slightly ahead of the official time. Bella Vista may have been a misnomer but it was clean and fine. Cleaned up and rode out along the shoreline to the peninsula. Food carts, campers, swimmers, people walking. It felt like a summer resort today for maybe the first time here. About 2-3PM real fog started to stream over the hills surrounding Kaikōura and toward the water. Mostly dissipating but visually cool to watch a la San Francisco. After a brief discussion we made reservations at the place the innkeeper recommended though the only available time was 5PM. A bit embarrassed to be eating this early but opting to go to the Pier Hotel anyway. Not like anyone is gonna read about my early bird ways, right?! 😉 Went into town after a number of stops for pics along the water and did a little shopping before getting a Panhead 🍺 at the Strawberry Tree. We then headed to join nobody but a few tables at the Pier. Right by the water about a mile down the road out onto the peninsula. Within a half hour or :45, all tables were full. Garlic bread was ordered to accompany the seafood platter. Whitebait (whole tiny fish), calamari, abalone, gurnard, salmon and a mini mussels pot with seaweed salad. 👍 Stuffed, we rode to Groper Garage to wind down the evening. This town has some nightlife it seems (not like Queenstown with discos until 4AM!) but we concluded the night in embarrassingly early fashion as we had started it just a few hours before. One pic above reflects the assortment of Maps.me location pins that I have been sporadically recording on this very useful app. I have found it is nearly as capable as any GPS app and once (before the trip) maps are downloaded there is no data requirement to use it. This is a nice way to not only navigate as needed without phone service but also to record a log of some stops along the way so I could go back on the app anytime and retrace my "steps". Most everywhere it is possible to ride on this island has been ridden these past 20 days. Great day. Easy day. Fun day. Only one more to go and the Kiwi 2020 adventure will draw to a close. It has been fantastic. 🇳🇿 🏍

Recipe Eats
Lets be honest, as fun as it is to go out and enjoy a nice meal and some fancy drinks with friends, this can get expensive (especially as college students). Many times as students we resort to ordering Jimmy John’s and spending our spare cash when we are tight on time. College is hectic. Between classes, work, family obligations, sleep, exercise, and trying to have a life, grocery shopping and cooking homemade meals is usually put on the backburner. 
Thankfully, grocery shopping and meal prepping can be quick and easy with my guide to recipe eats. Being prepared before a trip to the grocery store will save you time and prevent you from mindlessly buying food that will just go bad later on in the week. Also, never go to the grocery store hungry. You will be tempted to put everything and anything under the sun in that cart of yours. I promise, it is a disaster waiting to happen for your credit card.
Every weekend I do a clean sweep of my refrigerator and freezer. I get rid of things that have accumulated throughout the week (leftover Topper’s) and certain ingredients that I am choosing not to consume (sugar). I take out a pencil and paper and write down my grocery list the old fashioned way, based on the meals I want to make for the week. Having roommates in college means sharing a tiny refrigerator. Cleaning and restocking every weekend ensures you are not wasting space with uneaten food and only buying ingredients that you plan on eating that week. I highly recommend buying meal containers on Amazon that take up the least amount of space to easily store cooked food in the refrigerator. 
Here Are Some Of My Grocery Staples
PRODUCE 
My favorite place to buy produce is Costco. The big packs of fruits and veggies will last you all week so that you will not have to make multiple trips to the store; however, I purchase my bananas and avocados at Kwik Trip since they tend to go bad fast. The awesome thing about this time of year is being able to take advantage of the farmer’s market. You can always find ingredients such as lettuce mix, strawberries and sweet potatoes at the market for cheap!

In my house, dairy is kept to a minimum. If I do purchase dairy I am extremely cautious about sourcing. Dairy has been linked to inflammation and breakouts and overall always upsets my stomach. Instead of cow’s milk, I find dairy products that are made with almond milk; however, this is completely a personal preference. I enjoy going to Whole Foods to purchase my non-dairy products.

After an inside look at my grocery list and refrigerator, we can begin the meal prep. Here are some of my favorite recipe eats for the school year! You can always double the recipes to share with roommates or family. 
BANANA CHOCOLATE CHIP COOKIES 
These are a perfect dessert for chocoholics and pair well with dairy free ice cream. You can even make ice cream sandwiches!

Ingredients:
-2/3 cup oats, blended to flour 
-2 tbsp. peanut butter 
-1tbsp. flax seed 
-1 tbsp. maple syrup 
-1 banana, mashed 
-1/2 tsp. vanilla extract 
-Pinch of sea salt 
-1/4 cup dark chocolate chips 
Recipe: 
1) Blend oats, about 20 seconds 
2) Combine all ingredients 
3) Scoop onto cookie sheet, 1 tbsp. size, make round shape 
4) Bake at 350 for 12-14 minutes 
5) Dip into melted chocolate and sprinkle with sea salt 
SMOKED SALMON TOAST 
Toast is my go-to lunch. It takes the least amount of time for when I am running between classes and homework. It is also the best for using up just about any ingredient in your refrigerator.

4) Combine all ingredients on toast 
BANZA BOWL 
This bowl is a great pasta alternative, with a variety of flavors that cures my Noodles and Company cravings!

BUDDAH BOWL WITH JALAPEÑO TAHINI DRESSING 
It is like Chipotle but in your kitchen and much cheaper.

6) Place cooked turkey burger, lime, avocado, olives, and goat cheese on top of greens 
7) Drizzle dressing 
SWEET STRAWBERRY TOAST 
This breakfast is perfect for that weekend morning sweet tooth without having to drive to Denny’s.

I hope my grocery list and recipes help you break the staying-in stigma. Cooking is a great date idea, especially paired with a glass of wine and a movie! It is also a peaceful study break and a way to get your body up and moving from your couch on a Sunday. These recipes are easy! Trust me, I am not a whiz in the kitchen. I stick to simple recipes made with the least amount of ingredients that taste awesome and make me feel great. 
Next time you pick up processed foods at a gas station or on campus at school, turn it around and look at the list of ingredients. You will be surprised by how many ingredients you have never heard of and most likely cannot even pronounce. What we are choosing to put in our bodies matters and affects the way we feel, behave, and perform each and every day. Remember, you do not have to be perfect. No one is. Perfection is boring, but be different by caring about yourself. I cannot wait to see you recreate my recipes.

I woke up at 6, got to work at 8, got off work at 12, decided to go to the dollarstore but car got stuck in the snow for a panicking 30 seconds, we (i was with the sis) went to the dollarstore and grabbed some candy and went home. I watched Youtube for about an hour, listened to some music, read for a while, and now I’m taking this survey to relax before I try to squeeze in some writing.
Are you reading any books right now? - Yes! Right now I’m reading the Serpent and Dove series by Shelby Mahurin. I’m on book 2 called Blood and Honey.

Chocolate Chip Pecan Cinnamon Rolls

Ingredients
For the Rolls
2 1/4 oz packages active dry yeast
1 cup buttermilk, warmed to 110 degrees F
1/2 cup butter, melted and cooled
1/3 cup sugar
1 teas salt
2 eggs
3 1/2 - 4 cups flour
For the Filling
1/2 cup peacans
1 cup nutella, warmed but not hot
1 teas cinnamon
1/2 cup chocolate chips (I used dark chocolate chips)
For the Glaze
3 oz cream cheese, softened
1 tbsp powered sugar
1 tbsp buttermilk
1/4 teas hazelnut bakery emulsion
1/2 teas cinnamon
Preparation
For the Rolls
Mix the yeast in a mixing cup with the warmed buttermilk and allow to sit for 5 minutes until foamy.
Meanwhile, whisk the butter, sugar, salt, and eggs in a large bowl.
In the bowl of your stand mixer, fitted with the paddle attachment, add 2 cups of the flour and make a well in the center for the buttermilk. Pour the buttermilk-yeast mixture and the butter-egg mix and start mixing slowly adding in the remaining 1 1/2 cups flour, 1/2 cup at a time.
Knead on low for 5 to 10 minutes until the dough forms a ball. Add the remaining 1/2 cup if the dough is not coming together.
Transfer the dough to a grease bowl, cover and allow to rest in a warm dry area, until doubled in size, about 1 1/2 hours.
Turn the dough out onto a clean working surface sprinkled with a bit of flour. Divide in half and roll out into a large rectangle
For the Filling
Toast the pecans in a preheated oven at 400 for 5 to 7 minutes, until fragrant. Remove, allow to cool, and chop.
Spread the nutella filling evenly over the rolled out dough., leaving an inch on a long end to roll. Sprinkle with cinnamon and chopped toasted pecans.
Tightly roll towards the edge that has been left clear, and cut into equal portions.
Arrange the rolls in a grease baking dish, cut side down, and cover.
Allow to rest, 45 minutes to 1 hour, until risen again.
To Make the Chocolate chip Pecan Cinnamon Rolls
Preheat the oven to 375 degrees F. Bake the cinnamon rolls for 25 to 30 minutes, until golden and cooked through.
Remove from oven to cool
Make the Glaze
While the chocolate chip pecan cinnamon rolls are cooling, whisk the softened cream cheese with the powdered sugar, buttermilk, hazelnut bakery emulsion and cinnamon. Spread over the cooled (but still warm) rolls and sprinkle with more toasted chopped pecans for serving.

Alternatively, you can line a cast iron pan with parchment and bake the rolls in cast iron.

Junkfoodio Rambleosa!
This is almost all I have left of this most recent junk food splurging madness. This write up might be slightly longer than usual as a result, but not as long as it could have been. I might be able to squeeze yet another ramble out of what's left. You're welcome. Or I may simply decide enough is enough and forego any more food musings. You're twice as welcome. Some of these may not be all that new/exclusive/limited/whatever by the time this hits the wonders of the internet press, but they are new to me as of this writing. If they've been out awhile, this is simply the first time I stumbled across them while out and about. So let's just get to it. -Thomas' S'mores Mini bagels! A slight chocolate smell, as if they were lightly dusted with cocoa (they're not) but no real s'more flavor. There's a light chocolate flavor in the aftertaste, but it's not enough to make these memorable or worth seeking out. -How will the Thomas' S'mores English Muffin fare, then? To begin, it's a sickly cocoa color, so at first glance at least it appears that it may be chock full of flavor. It smells like a doughy s'more, so that's a good start. The flavor is definitely closer to a s'more than the mini bagels, but it doesn't quite get it right. Again, it's too... doughy. If that makes sense. Maybe s'more just isn't a flavor that translates to bread products. These were still enjoyable overall, though, and were good all warm and toasty with a dab of butter. Definitely the one to try. -Triscuit Ginger & Lemongrass! Is there a greater food complexity than Triscuits? It seems we all wake up one day after reaching a certain age, and we just instinctively, and suddenly, like Triscuits. If this rule doesn't apply to you, then a-ha! You are an android, and you have failed my fail proof method of sussing you out. This particular Triscuit could prove problematic. I'm of a mind to think it will either be heinous, or not so bad. So far, Triscuits have been pretty consistent in making their off color ventures relatively successful, so the odds are in their favor. Everything about this particular version turns out to be... faint. There are very faint notes of ginger and lemon upon opening the bag, but you must take a deep breath in. There is a very faint ginger and lemon taste when chewing, but it recedes rather quickly. These work okay enough, and I enjoyed them as is, but this is one Triscuit that truly begs to be topped with something, where the faint ginger and lemon aspects would play a small part to a whole. These may also work well crumbled into a soup of sorts. -Triscuit Fig & Honey! These gave me an audible "Oh!" moment when I first saw them on the store shelf. I never knew I needed this until it was presented to me. Unfortunately, I was slightly let down by the experience once I opened the bag. There is a light fig aroma to be detected, but it could also be perceived as an earthy tone. It's not that it's bad, it's just not the sweet kick I was expecting to take in. The first few bites are also the same, a light fig/earthy presence that doesn't impress or dissuade. Then the honey note kicks in, and it has a burnt or old aspect to it that doesn't play well on the tongue. I suppose Triscuit was due for a misfire, but I wouldn't have guessed this would be the one. Overall, it's still an okay snack, and it too may best be served with an accompanying topping, but I'm less inclined to explore that option than I was with the Ginger & Lemongrass ones. -Utz Grilled Hot Dog potato chips! Oddly enough, upon first whiff these remind me ever so slightly of the Crab Chip that Utz (and others) produce. Which is peculiar for a hot dog flavored chip. If you're not familiar with the crab chip, it's a chip made with Old Bay seasoning. If you're unfamiliar with Old Bay, then you are not from, or have never visited, the East Coast. It's a staple seasoning blend, and over the last few years it has grown quite noticeably, and one can find "crab seasoning" on all sorts of food items. It was fun at first to see someone put it on a chip, and it's not bad on a chicken wing, but purists will maintain it's strictly for seafood, with crabs (obviously) being the absolute number one use. Followed very closely by shrimp, then followed by every other type of seafood. But I digress... heavily. Taste wise, the first thing I notice is salt. These are quite salty. The second thing I noticed was a heavy smoke flavor, which isn't the most pleasant thing to get from a chip, but I must admit it does make me think of something being grilled. The last flavor that is at play here is mustard. Underneath the salt and the smoke is a clear and distinct mustard element. I like the mustard part actually, and am sad it comes after the too much salt and smoke parts. I can't say it distinctly reminds me of a hot dog, but a grilled something or other element is there. -Utz Cheeseburger potato chips! Will these best the not quite right hot dog chips? Let's see. First whiff gives me a very faint ketchup odor, but one that is overpowered by a pickle aroma. Taste wise, I would have to say the same. They taste like a dollop of ketchup that was mixed with some pickle juice, and at the tail end there is also a salty cheese element that comes out. I don't get any smokiness like the hot dog one, so the cheeseburger or grill element is missing. As they stand, it's a weird ketchup/pickle/cheese chip. It's not gross, but they're rather forgettable, and after eating a few I noticed that again, these are quite salty. It left out in a bowl with no labeling, I imagine most would think they're either a pickle chip, or some kind of cheese and onion flavor. -Little Debbie PB Rounds! A fudge dipped peanut butter sandwich cookie. Well, isn't that cute? They've scored the top in the method of a traditional peanut butter cookie. It also tastes like a peanut butter cookie dipped in chocolate, so there's nothing else to add about it. It was good, and if you like peanut butter cookies dipped in chocolate, give this one a spin. My one complaint is that the cookie parts were a little too thick. This needed to be an ever so slightly thinner treat. Well, now that I think about it, I have another complaint. The peanut butter is a little too sugary and fake. It won't stop me from finishing the box over some time, but I do wish it was slightly less artificial as well. But it's a snack cake from Little Debbie. It's going to be fake, and at worst a bad Little Debbie treat is still alright enough to eat, so why am I complaining? -Keebler Lemon Cream Pie Fudge Stripe cookies! Almost nothing to say about these. They are exactly what they promise to be. A lemon cookie with some icing. They're good, and if you like such things, they're worth a taste.   -Hostess Summer Berry Donettes! Smell like blueberries, taste like raspberries and have the color of some kind of sangria Kool-Aid. They are however, quite tasty with a very nice moistness level. They don't seem as thick as other donettes I've had. They seem a little flatter and a litter rounder. Or I'm just crazy. I like these a lot. -Pop-Tarts Frosted Chocolate Sugar Cookie. No exclamation point. Pop-Tarts deserve no exclaims, certainly no acclaim. Dry. Dusty. Tasteless. Sad. Drywallesque.  I imagine these are merely left over World War I rations Kellogg's repackaged and then painted pictures on. Oh, yeah. For whatever weird reason these have villains from the DC comics realm plastered on them. The one I begrudgingly took a solitary bite from had someone named Cheetah on it. I don't know who that is, but she looked like a sexy Thundercat and was in a bikini. That's the only exciting thing about this travesty of a treat. But aren't Pop-Tarts meant to be for kids? Why are you pasting nearly naked, top heavy cat ladies on a kids food item? They're eating a Pop-Tart, for crying out loud! Their young little lives have already been messed up enough! Don't warp their brains, too. Shame at you Kellogg's. -Jolly Rancher Green Apple Pop-Tarts. They did it. Those crafty bastards actually did it. Foil wrapped HATE that you can buy for roughly three bucks a box. With the added stank of a green apple candy flavor, the worst candy flavor. I tried one, and if I saw these in a bunker I was to live in after a nuclear fallout, I'd go back outside and take my chances instead. To be honest, if I even see these on a store shelf again, it might cause me to spontaneously diarrhea all over the store and anyone therein while simultaneously setting fires in the hopes it erases these foul and vile things from the planet. If the judge and jury at my impending trial has tasted one of these, there is no way I'll be convicted. Eat this damn thing at your own peril. -Jolly Rancher Cherry Pop-Tarts. To be fair (immediately previous comments excepted) there are a couple of the fruit Pop-Tarts that are just barely passable as an edible entity that I can get through without too much fuss. This isn't one of them. Of the three here, it's the one that didn't make me want to decide to live solely on plain oatmeal, but there's a tartness to it that I didn't find appealing. I haven't had a Jolly Rancher candy since I was kid, and have no recall of their flavor, so maybe this tartness is in fact a component to the candy they were able to get into the tart. If so, good for them. For me, this tastes like a lemon/cherry Pop-Tart which leans too heavily on the lemon. Maybe that sounds good to others, and were it a real pastry I'd probably like it, but in Pop-Tart form,  I'll pass.   -Strawberry Nut M&M's! A tasty little devil, with flavor profiles in perfect proportion. Unlike some of the specific seasonal fare M&M tries, this one seems like someone actually worked at getting the balance right. If you like peanut M&m's and you like strawberry flavoring, this is a good match. The only complaint is I felt more than a handful was too much with this one. This is a snack best done in small doses, so a bag may last you a little while. -Krispy Kreme Glazed Birthday Cake Mini Crullers! Well, I can't say these don't taste like a birthday cake. The problem is they taste very much like a stale sheet cake one would get at the not so great grocery store you never really go to, but it's on the way to work and you have to bring something for the office party and you just don't have time for anything else. -Twizzlers Key Lime Pie twists! They do taste like a key lime pie, surprisingly enough. However, the gummy/chewy aspect of these make them a bit gross somehow. It's just not right. Softer than a normal Twizzler, it's like having a glob of melting putty in your mouth. I give them credit for getting the flavor right, but a solid pass for the experience as a whole. -Twizzlers Orange Cream twists! These taste like orange medicine. Do not like. Don't want. Moving on. Nope. No moving on. That's a wrap! I've said all I can say and my brain is on full sugar crash mode and barely functioning. Seems I forgot the obligatory sexist comment about some female celebrity, though. Hmm. Um. Tonks (Natalia Tena) from the Harry Potter movies can Hufflepuff my Slytherin anytime. Good enough? Way too much? Eh. I'm going to bed.
