Carrot cake! I'm probably making frosting, but this is fresh out of the oven. I used this recipe with gluten free flour (and as per usual had a couple ingredient amount mishaps). I'll update with our opinions after it's cooled and frosted if I remember to.

So I attempted to be a little cook yesterday because I was in a good mood lol. Soo I made a late breakfast, made lasagna and a salad for dinner, and attempted a red velvet cake (my favorite) recipe that I saw on IG. Little did I know, cake flour and cake mix are not the same thing (although deep down in my spirit I felt like they weren鈥檛) 馃槀 soooo everything was going good, cake batter was tasting good and all. Why did my cakes overflow in the oven so I had to transfer some to other pans. Honey cake just falling apart 馃槀 my sister said it was good overall but honey I learned something new yesterday because whew! I will be attempting that again WITH CAKE FLOUR 馃ぃ馃ぃ

I do a lot of baking especially during the holidays. Three years ago I made 12 -250ml bottles of vanilla extract, I used only the best quality vanilla beans and vodka. The longer it ferments the better it gets, and this is truly a gourmet extract.

This is my favorite chocolate chip recipe, so I wanted to share it!
I tried to add clear steps, because I know that's something that used to confuse me when I started baking. This is highly beginner friendly, with ingredients that are easy to find in most stores for average prices.
Ingredients:
2 1/2 cups flour
1 tsp baking powder
1 tsp salt
3/4 cup brown sugar
3/4 cup granulated sugar
3/4 cup butter
1/4 cup unsweetened applesauce (sweetened may add a bit too much sugar, but you can use it if you'd like)
2 large eggs
Appropriate amount of chocolate chips. (Start at 1 cup)
Steps:
1. Move oven rack to just below middle position
2. Preheat oven to 375掳 F
3. Prepare baking sheet with either parchment paper or cooking spray, then set to the side
4. Take out mid-sized mixing bowl and combine flour, salt, and baking powder
5. Cream butter and granulated sugar until fluffy in seperate bowl, of roughly the same size
6. Add in brown sugar and applesauce
7. Mix until fully combined
8. Add in half the flour mixture
9. Mix until combined
10. Add other half of flour mixture
11. Mix until combined
12. Add in one egg
13. Mix until combined
14. Add in second egg
15. Mix until combined
16. Add in chocolate chip cookies, and fold in with spatula until evenly distributed
17. Retrieve baking sheet
18. Scoop as many roughly 1 tbsp scoops as will fit on your baking sheet, keeping each clump about an inch apart in every direction
19. Place baking sheet in oven
20. Bake for 9 minutes
21. Repeat steps 18-20 until all batter is gone
Explanation of what to expect:
Cookies should come out in almost the exact shape they went in with. Will be chewy, and may have a slight scent of apples, but no discernable taste of them. Flour may taste slightly overpowering to some, at which point I suggest finding a drink to neutralize it.

I decided to bake something from it tonight and I went with Page 215 monster cookies except I tweaked my recipe a bit to just use ingredients I already had in my Pantry/Fridge.

Instead of M&Ms I used these White Chocolate Christmas chips, and I had to make my own brown sugar because I was out of the store bought, and I used 1 minute quick oats instead of rolled oats. But I think they turned out really good!

I spent the last week building a paw patrol lookout tower* and then baking a three-tier chocolate fudge cake for it to sit on. Happy 4th birthday to baban! 馃檶
*(cardboard, card, papier mache, acrylic paints, gift wrap inner tube, plastic mesh for the fence, bbq skewers, pva and superglue. Oh and pebbles to weight the bottom so it didn't fall over.)
