Itacho Sushi (板长寿司) is currently holding a Premium Hokkaido Scallop Festival with up to 30 per cent off their range of innovative scallop items. As a seafood lover, I can’t afford to miss this chance to savour the shellfishes. Heading to the branch at ION Orchard on a weekday morning to beat the peak lunch time crowd.

Flipping through the online menu via the tablet, I quickly zoomed in to the Scallop Sushi promotion page and started sending the items to the cart. Took a slightly longer time to decide which are the dishes I wanted as they all look equally delectable. In the meantime, scooped out a small spoonful of wasabi and poured soy sauce over it.

Didn’t have to wait for long before the first plate of sushi was served. From the left are two each of Roasted Salmon Skin Soya Sauce (S$1++ each) and Roasted Salmon Skin Soya Sauce with Cod Fish Caviar Mayo (S$1.20++ each) sushi. The salmon sushi were melt in the mouth soft and so yummy. If not because the restaurant limits each customer to just two pieces per type, I would have order it over and over again.

The three scallop sushi on the right side of the plate are Roasted Scallop Sushi (S$3.50++), Roasted Scallop with Black Truffle Sushi (S$3.90++) and Roasted Scallop with Cod Fish Caviar Sushi (S$3.70++). All three of the scallop items were so fresh and sweet tasting just like those I had in Hokkaido. The toppings on the two of the sushi enhanced the overall flavours to raise it up a notch.

The next plate I ordered is the 3 Kinds Scallop Sushi Set (S$5.80++). The scallops are un-torched and came with different toppings of tobiko mayo (seasoned flying fish roe), black truffle (paste form) and lobster salad with avocado. Again the raw scallops were just so yummy and the toppings complemented the whole package.

The last dish to be served is this Baked Scallop Spicy Salmon Mayo Egg with Rice (S$8.40++). A beautiful dish topped with six scallops, an egg and baked till golden brown. The creamy and spicy salmon mayonnaise completely covered the white rice underneath. The oozing egg yolk added a wholesome goodness to the rice dish. Even as I walked to the cashier to pay the bill, I am already planning on the next trip to try out the other dishes on the menu.

Dagar Brothers — Berlin 1964 (Black Truffle)

Oren Ambarchi’s Black Truffle label has long been a source for challenging, rewarding music across genres from contemporary composition and free jazz to Thai mouth organ and wah-wah’d out solo bass recordings. Now it is becoming a great resource for Dhrupad music as well. Following up archival recordings of the recently departed Amelia Cuni and rudra veena virtuoso Ustad Zia Mohiuddin Dagar is a revelatory set of lost recordings from the Dagar Brothers, two of the most important figures in establishing the documentation and preservation of this important vocal art form.
Dhrupad is the oldest form of Hindustani classical music, characterized by extensive, drawn-out improvisations. Within this lineage, the Dagar family, which includes the Dagar Brothers, their younger siblings and fellow vocal duo Zahiruddin Dagar and Faiyazuddin Dagar, the aforementioned Z.M. Dagar and his son Bahauddin Dagar,  is not just a family, but an  institution. Historically, the Dagars were court musicians, and to give a sense of how important the Dagar family is to Dhrupad, there are four styles of court (or darbārī) Dhrupad, and one of them is known simply as the Dāgar vānī. Ustad Nasir Moinuddin (1919-1966) and Ustad Nasir Aminuddin Khan (1923-2000) were born into this lineage at a critical period, coming of age as India broke free from centuries of British colonial rule. British colonialism had upended Indian court music and, starting in the 19th century, Dhrupad had begun to decline in favor of different styles of Hindustani classical music such as Khyal and Thumri. The development of recording technology further displaced the music from its regal context, as the music was now being presented to a much larger audience than the courts would have allowed. Indian classical music was extensively recorded on 78 rpm records from the very beginning, but the limited timeframe that the records allowed made documenting the lengthy Dhrupad music practically impossible. In the aftermath of decolonization, Dhrupad was in danger of disappearing entirely, and it was in this context that the Dagar Brothers took initiative to preserve their family tradition.
Crucial to this mission was the rise of long-playing records in the 1950s and 1960s, which provided much more space for the expansive improvisations of the Dagar Dhrupad. There were also a number of record labels emerging around this time, such as Ocora and Lyrichord, which were dedicated to producing ethnographic recordings without consideration for commercial appeal. In the mid-1960s the Dagar Brothers made the very first Dhrupad record for the EMI-Odeon label, and went on a tour of Europe organized by the eccentric French historian Alain Daniélou. Daniélou recorded the Dagar Brothers in Berlin during this tour, which remained unreleased until now due to the tape abruptly cutting out just before the brothers finished their performance of Raga Jaijavanti. Fifty years later that recording, along with a live recording made in Berlin around the same time, is now being released by Black Truffle.
The Dagar Brothers participated in these recordings with the intention of documenting and preserving a musical tradition in danger of disappearing (and promoting it to a new audience), but this doesn’t make them any less singular as artists. Perhaps the most striking thing about these releases is the intensity of the brothers’ performances, which ought to single handedly dispel any preconceptions of Indian Classical music as new-agey “chill-out” music. On the performance of Rāga Miyān kī Todī from the live recording, that intensity is present from the very beginning and doesn’t let up during the nearly 40 minute run time. The Dagar Brothers sing in beautiful droning overtones, but when the energy hits peak levels their vocal ornamentations sound like deep, commanding shouts, all perfectly on rhythm. The court music context may make one expect otherwise, but this is deeply powerful, trance-inducing music.
In the present day, Dhrupad is often associated with what is now known as drone music. La Monte Young, who is perhaps more associated with drone than any other composer, famously studied under Pandit Pran Nath, as did Terry Riley, and those two composers helped set the stage for future works exploring long tones. But what makes Dhrupad music so important in understanding the “Western” experimental music it paved the way for isn’t just the drone, but the way in which its practitioners showed the endless sonic possibilities of such seemingly “static” music. There are even some moments of vocal overlap between the two brothers that are somewhat reminiscent of the phasing techniques utilized by Phill Niblock.  But even beyond its importance to experimental music, these recordings are a testament to the living, breathing power of this ancient vocal art form, and the power of music in moving both the mind and the body. The voice, after all, is the original instrument.

For the Braised Fried Fish Maw Seafood Treasure Soup, the staff portioned it into ten smaller bowls before serving it to us. Not sure if it is because I am holding a camera, but my bowl came with more chunks of crab meat and fish maw. Basically, a seafood soup thickened with starch so the ingredients seem to be suspended/frozen in the soup. Black vinegar and white pepper accompanied this soup so feel free to add some to it.

Well, the Roasted Crispy Chicken with Prawn Crackers was warm and tender to eat, it however wasn’t crispy at it. And just like everywhere else in Singapore, they referred to this deep-fried chicken as a roasted chicken. Sprinkle a bit of the salt & pepper before putting it into the mouth. A lacklustre dish but thank goodness, the prawn crackers were crispy though.

This Steamed Hybrid Garoupa in Hong Kong Style was cut into sections just before they served it to us. This hybrid grouper is probably a cross between the giant grouper (Epinephelus lanceolatus) and brown-marbled grouper or tiger grouper (Epinephelus fuscoguttatus) and given the Dragon Tiger Grouper (龙虎斑) name. The fish got to be very fresh to be steamed and cooked with just a simple condiment of soya sauce, julienned spring onions and cilantro leaves for garnish. The end result, sweet springy flesh with collagen like skin that is so good to eat.

The Braised Whole 10-Head Abalone with Sea Cucumber and Spinach was up next but the process of waiting for the next dish to be served was a long one as in-between the hosts are showing us video stories of the newly married couple and plus the live singing by the friends and band. Ten pieces each of the abalone and sea cucumber sitting atop a bed of blanched Popeye’s favourite green vegetable. Why 10 you may ask? Because a table usually seat ten people so the food portions are divided equally so each get a piece of everything (for the expensive ingredients that is). The only complaint for this dish is that the spinach is on the bitter side.

Like an overturned basket or nest, spilling out Deep-Fried Prawns with Black Truffle Mayonnaise Sauce. If there is anything to change for the presentation, I would move the red and green coral lettuces from under the eatable nest and placed it in the nest for a more dramatic effect. Anyway, these truffle gratings lend an aromatic and earthy fragrances to the classic mayo prawns topped with orange flying fish roe. My colleague and I detected a mild spicy hint of wasabi in it but another colleague said it is from the truffle and mayo combo. Differences aside, this is one dish I won’t mind having again.

I always love this noodle served at the end of the dinner courses just before dessert. The Braised Ee-Fu Noodles with Yellow Chives and Straw Mushrooms is a usual staple at wedding due to the fact it is also known as longevity noodles (寿面). Normally, I would consume more than a bowl of the yi mein (伊面) but that night I was already quite stuffed from the dishes served and I was leaving room for dessert. :D

By the time the last dish was up and the clock was ticking closer to 11pm. The warm Teochew Yam Paste with Gingko Nut and Coconut Milk with its gooey and smooth yam (taro) paste and whole gingko nuts smothered in thickened coconut milk is bursting with sweetness and a great comfort to many of us Singaporeans. I liked the fact that the chef tuned the sugar level to just sweet enough as I preferred mine not too saccharine. Anyway, I just had to ask for another bowl as it was just too good to pass up.

Dinner is now over and after shaking hands with the groom, bride and their respective parents, it is time to head to the train station to catch the train home.

“Vibration and resonance are at the heart of everything. Some of it falls within our hearing range and we call it sound.” This is the ethos under which Marja Ahti operates. The Swedish-Finnish sound artist is open to the possibility that all creation, both human and natural, can be a source for her art. Emerging from the Finnish psychedelic folk underground decades ago, her work as Tsembla revolved around samples that she pulled from the internet. Ahti eventually shifted her focus toward sound creation and environmental recording, releasing new works of art under her own name. Across multiple solo and duo recordings, Ahti explores liminality and transformation, the spaces between states. This fluidity within her work, evokes a gradual diffusion or osmosis that she manages to capture as its happening. Her pieces are also visceral. They churn and writhe, the vibrations radiating outward, provoking a satisfying frisson as they waft through the air.
Ahti is interested in minimizing dichotomy in favor of something more tenuous. This tendency is reflected in the raw materials she sources for her compositions, and how she uses them. Both acoustic and synthetic sounds find their way into the mix, along with field recordings and recordings of her day-to-day activities. Ahti weaves each thread in such a way as to make the individual elements second to the overarching tapestry of harmony that she constructs. The harmonic temperament may arise from an electronic feedback loop, a manipulated bell, a garden sprinkler, or the manipulation of small objects, but it unfolds gradually and commands patience from the listener.
With Tender Membranes, Ahti positions our sensory organs as gateways between our inner and outer selves. She has honed her sound art practice such that the compositions are mature in their subtlety. The tonal palette is deep and rich. Dynamically, there is variety, but the transitions feel incredibly gradual. Microscopic shifts in the harmonic field show that Ahti has fine-tuned her technique, blurring the inside/outside binary into an entire spectrum of experiences.
There is also a sense of disorientation at play. It’s difficult to pick out what’s happening in a piece until it has completely unraveled. The process is akin to a well-written story with many twists and turns; it’s only at the conclusion when the true narrative arc reveals itself. Nature plays a huge role across the album: insects, birds, and running water play off Ahti’s synthetic emanations. She emulates the textures of the natural world with her electronics, which provokes the question of whether we’re experiencing reality or an artificial construct. Ahti chooses not to answer this question. She’d rather we succumb to the uncanny beauty of the sounds.
