EGG BIRYANI Have you ever tried instant #biryani ? No, even I didn't too. We learn creating things instantly only when we crave for something but have no time at all. Well, in this case, I didn't prepare this mouth watering #eggbiryani . With leftover #rice , a few #biryanispices , eggs, mint leaves, coriander leaves, green peas and onion fries. Now, what were the ingredients that made it super delicious? That day I have learned that mint leaves and the spices creates an aroma that adds magic to the dish. Preparing this #instantpotbiryani is easy to satisfy your cravings. . . RECIPE: 》In a pan boil water adding 1 #blackcardamom , 2inch #cinnamon , 2 #greencardamom , 5 #blackpeppers , 5 #bayleaves , 4 #cloves till the water is boiled. 》Take a cup of boiled water to soak 1 cup of #greenpeas . Cool the other part of water for a few mins when done. 》Boil 2 #eggs . Fry adding salt and turmeric powder and keep aside. 》Take the left over refrigerated rice (2 cups). Soak in the water for a few mins. 》Meanwhile, deep fry 1 chopped #onion adding #salt And #turmericpowder . 》Now, take out the bay leaves, dry them and prepare a base at the pot. 》Strain rice and add a layer of it. 》Layer the rice with boiled #greenpeas , cleaned #mintleaves and #corianderleaves , fried onions, eggs. 》Add another the layer of rice. Finally, add the last layer of green peas, mint and coriander leaves, fried onions. Also, add 1 tbsp of #clarifiedbutter (#ghee ) and biryani colour. 》Cover and slow cook for 20 mins. 》You will know that the Egg Biryani is ready when the spices will blend well and spread the aroma all over the house the moment the lid is taken out. 》Now cook and enjoy instant biryani anytime anywhere. 😉 . . #livingfoodz #instafoodie #photooftheday #foodbloggersofindia #foodphotography #nikonphotography #heritagecooking #mughalskitchen #instantpot #homecooked (at New Delhi) https://www.instagram.com/p/CBNdqUVgcuW/?igshid=1561u8sgwdsr7

Just updated an extended edit of the spice story, Black Cardamom, set in the Hoang Lien National Park on the northern border of Vietnam next to China for Nat Geo on my website. The park is home to forests of black cardamom, thao qua, an essential ingredient in traditional pho and other Vietnamese dishes. The spice was first planted in the Hoang Lien Mountains in the 1990s as a replacement for opium, a banned crop that once helped prop up Indochina’s colonial economy. The national park, meanwhile, is a symbol of postwar Vietnam’s efforts to protect plant biodiversity. Hence this conundrum: How could a forest be a haven for conservation and cash-crop agriculture at the same time? Indian Cardamom - Queen of Spices
Tumblr media
Cardamom is a spice made from the seeds of several plants in the genera Elettaria and Amomum in the family Zingiberaceae. It is a common ingredient in Indian, Pakistani, Nepali, Sri Lankan, Thai, Lao, and Cambodian cuisine. Cardamom is the world's third-most expensive spice by weight, outstripped in price per weight only by vanilla and saffron. The cardamom plant grows to a height of about 10 feet (3 meters) and has large, fresh green leaves. The plant produces small, yellow-green flowers that grow in clusters. The cardamom fruit is a small, dark pod that contains about 20 black seeds. The pod, seeds, and oil from the seeds are used to flavour food. Cardamom has a strong, unique taste, with an intensely aromatic, resinous fragrance. Cardamom is used as a spice in both sweet and savoury dishes. It is used in Indian cooking as one of the ingredients in garam masala and in masala chai. Cardamom is also used in baking, especially in Scandinavian countries where it is often used to flavour cakes and biscuits. In the Middle East, green cardamom pods are used to flavour coffee. Cardamom is a native of the Indian subcontinent and is cultivated in tropical regions. Cardamom is the world's second-most expensive spice after saffron. Cardamom is used extensively in Indian cuisine, where it is often used in combination with cloves, cinnamon, and black pepper. It is also used in baking, and in flavouring dairy products such as ice cream and yoghurt.
Cardamom Benefits
The health benefits of cardamom include its ability to aid in digestion, relieve stomach discomfort, and act as a diuretic. Cardamom is also a good source of antioxidants, which can help to protect the body against damage from free radicals. Cardamom has been traditionally used in Ayurvedic medicine to treat colds and coughs and is still used for these purposes in some parts of the world.
Cardamom Types
There are three main types of cardamom: black, green, and white. Black cardamom is the strongest in flavour, while green and white cardamom is more subtle. Throwback to this amazing dessert I had at @tappamumbai with @chatorinikki last week. We had an amazing girls date and loads of gossip and advice to share. That's how you become friends ,right? This was a crisp sweet cracker /cookie Flavored with saunf and black cardamom seeds, kind of like a meethi mathi ,topped with caramalised apricots, a scoop of ice cream and this gorgeous sugar caramel squiggle. I love fusion desserts and apricots are love. My only wish... The apricots were chopped up and able to soak up the juices . #justsaying . . . . . . . #dessertlover #dessertbae #apricots #cardamom #blackcardamom #saunf #fennelseeds #fusiondessert #icecream #mumbaifoodlovers #things2doinmumbai #somumbai #trellingmumbai #foodsie #foodstyle #foodphotography #foodporn #dessertporn #icecream #sugarart (at Kamala Mills)

One from my series on Black Cardamom for Nat Geo. Having followed these farmers into the Hoang Lien Son forest, they prepare to set up camp using available deadwood and a simple tarp to build a makeshift tent. The open air tent would serve as their home, dining area, kitchen and most importantly, a flat bamboo bed over the fireplace will help dry their harvest of black cardamom fruit. #vietnam #hoanglienson #blackcardamom #farming #forest https://www.instagram.com/p/B8eBXg1go1m/?igshid=112dwl1d747yl
