Dans le vieux village de Mália en hiver, nous n’avons pas beaucoup de choix puisque la plupart des restaurants et des tavernes sont closes.

Elizabeth and Stablos est un bel établissement décoré avec goût et tradition. Le patron est une caricature mais dans le bon sens du terme, un gars adorable et serviable. Les plats proposés sont typiquement grecs et crétois. La cuisine est bonne.

Comme j’ai déjà eu l’occasion de vous dire, grâce à mes voyages, je suis riche d’expériences culinaires. J’adore faire les recettes en y ajoutant ma touche perso. La plupart du temps, je mixe deux ou trois cuisines de pays différents. Aujourd’hui, j’ai préparé des « biftekia » (burgers crétois). Je vous livre ma recette. Je les ai accompagnés de stamnagathi (xorta) ou chicorée en français mais cela fera l’objet d’un autre post.

𝑰𝒏𝒈𝒓𝒆́𝒅𝒊𝒆𝒏𝒕𝒔 (4 personnes)

-1 kg de viande hachée (600g bœuf et 400g porc)

-1 jaune d’œuf

-1 oignon (à passer au hachoir pour en faire une purée)

-3 cuillères à café de ras el-hanout

-1 cuillère à cage de cumin

-huile d’olive, sel et poivre

𝑹𝒆𝒄𝒆𝒕𝒕𝒆

-mettre tous les ingrédients dans un bol et bien mélanger avec les mains.

-faites des boulettes de taille moyenne et les aplatir un peu

-faites cuire dans un filet d’huile d’olive.
