Sukha Channa Daal
“Steamed Spilt Chickpea Stir-Fry” This tangy and spicy dry daal dish made by steamed split chickpea gram/channa daal is full of nutrients and veggies. We got bored of eating daal the same traditional way, but this variation is super delicious and easy to make. It is like a sauteed daal fry that tastes scrumptious with plain parantha or puris. I added a lot of veggies to make it healthy and…

I have an idea for a cookbook.
Not one I will make, lol, but a concept I'd like to see used in cookbooks in general.
You know how sometimes you'll look at a cookbook and find a recipe that looks fun, but it would require you to buy like, ten spices and sauces and condiments and oils and vinegars that you don't already have, and unless you know cooking really well (I don't) there's no way of knowing which of these things that can be skipped, or substituted?
Well this is my idea.
Picture a risotto recipe.
On one page, the cookbook can give you the most basic version of a risotto possible. Minimal ingredients, low cost, super easy. If you've never made risotto, this is somewhere to start.
On the other page, the cookbook can give a more advanced version. Spices have been added for flavour, stuff have been added for consistency (and the recipe will tell you why that thing was added or changed so you can learn something). This is the cookbook writers favourite version of this recipe. But you don't have to cook that yet if you feel like the basic version is enough. And if you want to, you can add/change a couple of things to the recipe every time you make it, making it progressively more and more delicious.
This is what I want from the next cookbook I buy.

Kaali Khatti Daal (Mummy's recipe)
The combination of brown lentils and green mango is a match made in heaven.
I have fond memories of monsoon days and this daal being cooked by my mummy. I don’t know what’s the relation between rains and this kaali khatti daal, but my mother made it always during the monsoon season. Oh sweet memories! This daal served over rice, eaten along mint chutney, used to be pure bliss. The sour and somewhat flavors of sweet raw mango compliments this sabit masoor (brown lentils)…

Daal with raita
Ingredients for 4 portions:
2-4 onions, finely chopped
4 cloves of garlic, pressed and finely chopped
1 teaspoon dried chili flakes (2,5 if youre brave)
1 teaspoon turmeric
2 teaspoons ground cilantro
2 teaspoons ground cumin
1 teaspoon ground cardamom
0,5 teaspoon curry
0,5 teaspoon dried ground ginger (or 1 tsp freshly grated)
250g dried red lentils
800g canned chopped tomatoes
5dl vegetable broth
400ml coconut milk
olive oil
salt and pepper
(optional) you can put other veggies in there to make it a mixed vegetable daal. carrots, bell pepper, peas, cauliflower, etc. these are sautéd along with the onions
(optional) for a little extra protein, add a dl or two of quinoa along with the lentils. these won't affect the taste at all
(optional) a handful of fresh cilantro, for topping
Raita
1 handful of fresh mint
2dl greek yoghurt
0,5 cucumber
1 clove of garlic
salt and pepper
Preparation:
Sauté onions and garlic in a pot with plenty of olive oil. Once the onions are starting to clear, add chili, turmeric, dried cilantro, cumin, cardamom, curry and ginger, and let this simmer while stirring for a couple minutes.
Wash the lentils thoroughly and add them to the pot, along with canned tomatoes and vegetable broth. Let it simmer under a lid for 30-45 minutes, until the lentils are soft. Stir the pot regularly, and add a little extra vegetable broth if the consistency becomes too firm.
Add coconut milk and taste test with salt, pepper, chili and cumin.
Serve in bowls along with raita, topping the daal with fresh cilantro
Raita:
Wash and finely chop the mint. Press and finely chop garlic. Grate your cucumber coarsely.
Add all the ingredients to a bowl and mix. Taste test with salt and pepper.

Hope one of my friends gets rich so they can hire me as an amateur personal chef. They’ll be like “hey what’s for dinner tonight?” And I’ll go “Well last night at 1am I got sad and made some lentil soup, I can heat that up? Also I tried making brownies but didn’t feel like looking up a recipe & I made cake by mistake, so dessert’s good to go!”
