Dilly Bean Recipe

Making this recipe is similar to normal Dilly Beans. This recipe makes 4 Quarts.

You will need 3 lbs whole Green Beans 1/4 teaspoon Celery Seed (per quart Jar) 1/2 teaspoon Mustard Seeds (per quart Jar) 1/2 teaspoon dill seeds (per quart Jar) Fresh Dill 3 small cloves of garlic (per quart jar) 5 cups vinegar 5 cups water 1 Cup Pickling Salt and 3 Cups of sugar

Before you begin working with the food prep all of your materials. Fill your caner bath with water and turn on the heat so that it is boiling when you are ready to can.

Wash your four quart jars, and lids, in soap and water . Most recipes you see on line will tell you to clean jars in boiling water.  This was how they cleaned things in the old days, back when people made their own soap.  Soap today is able to clean these jars well enough to skip boiling them. Set your jars up in your work space.

Wash your beans in a mix of vinegar and cold water.

Remove the tops and bottoms of the beans. You can do this by hand or with a scissors.

Place 1/4 teaspoon Celery Seed, 1/2 teaspoon Mustard Seeds, 1/2 teaspoon dill seeds, Fresh Dill and 3 small cloves of garlic in each quart jar. Pack beans into jars.

In a large pot bring 5 1/2 cups vinegar and 5 1/2 cups of water and 1 cup pickling salt to a boil. 

Ladle the hot brine mixture into the jars.  Leave 1/4in head space at the top.

Put lids on the jars and place in caner bath.  Make sure that at least an inch of water is above the jars.   Place lid on top of bath and boil for 20min.   Remove jars from bath and allow to stand for 24 hours . If lids do not pop inward, when pressed on, after 24 hours, they are safe to store.

"the unlikely adventures of bitchface and go fuck yourself" was a placeholder title that unfortunately stuck and then formed the cadence pattern for the rest of the books in the series. a lot of my characters have silly affectionate names (dillon = dillybean, pickle; frankie = fanky; etc) too!

The largest one pictured is a Mong cucumber it can actually last all winter and after scraping out the seeds is as crispy and tasty as a fresh cucumber from ur garden! The middle cucumber is a Thai cucumber and although mildly bitter is a sought after delicacy. The last and tiniest is a pickling cucumber nothing special about it 😂 except it’s for pickling 😆. About a week and a half ago we discovered that the pumpkins were growing up the three sisters garden fence and had pulled it down in places. This allowed the deer access to my green beans and they wiped them out. I was unhappy to put it mildly but we shrugged our shoulders and shored up the fence and moved on. What else can you do? I had written them off in my mind because they ate the plant right down to nearly nothing. Imagine my surprise when John sent me pictures of green beans, lots of them. The same day I broke down and bought some because my mother loves dilly beans and she must be appeased. I guess I'll be making more dilly beans than I planned. With any luck I'll get enough to can green beans too. I'll be keeping my fingers crossed. Today's harvest and the last of this batch of tomato sauce. I'll probably do a couple more bushels of tomatoes. It really depends on how many I can get my hands on. I like to put up as many as possible. Then there are the ever-present eggs and Lucy gave a full pint of milk this morning. Yes I realize that container is not a pint but I wasn't about to pour it into a pint jar just for a picture. You'll just have to forgive me. I saved all of the skins and seeds from the tomatoes and I'm dehydrating them for tomato powder. I ended up with 11 cups worth and it filled my dehydrator. My goal is that nothing goes to waste. When they tell you to save for a rainy day it doesn't just mean money, and you absolutely should be saving for a rainy day because I promise you sooner or later it's going to rain. Tomato powder is like having shelf-stable resealable tomato paste and I use it in much the same way. My next project is going to be green beans so right now they're hanging out in my sink getting clean before I stuff them into jars too. Mom has requested more dilly beans so I'm making them. I don't tell my Mom no unless I have no choice. As far as I'm concerned she's a saint and she deserves anything I can give her. I'm pretty sure most everyone feels that way about their mother though. I've included a bonus shot of Sammy my best farmhand. He was looking at me as though I just told him to go milk the chickens. I'm not really sure why. That's all the excitement for today, I think I'm going to be a slug and cuddle with my air conditioner while I deal with those beans. Have a beautiful Thursday my friends, stay safe, stay well.
