mexican style spiced rice (190c) 🍚 🌶️
serves 2 = 380c
one serving = 190c
spice scale ✿ ❀ ❀ ❀ ❀ (not spicy)
~ vegan friendly | oil free

ingredients
100g basmati rice ~ 315c
1/4 tsp turmeric powder ~ 4c
1 clove of garlic ~ 7c
1 large green chilli ~ 7c
1/4 tsp sea salt ~ 0
1 tsp tomato purée ~ 4c
1/4 tsp cumin powder ~ 5c
1/4 tsp dried fenugreek ~ 0
5g fresh coriander ~ 1c
method
boil a kettle of water and rinse the rice in a pot until the water is mostly clear then drain
add the rice, water and turmeric into the pot, stir and cook until for about 8 minutes until the rice is mostly cooked through
whilst the rice is cooking chop up the rest of the ingredients ~ drain the rice and set aside, in the same pot add in the chilli, garlic, a little bit of water and the salt
sweat the chilli & garlic then mix in the tomato paste and a little bit more water, stir and cook for a few minutes
add in the rest of the spices and the rice ~ mix together, turn the heat to low and cover the pot
steam for another few minutes until the rice is fully cooked, make sure to stir in between so it doesn’t stick
stir through the coriander before serving :)
HIIIIII i know i haven’t posted in ages oops honestly i haven’t been cooking as much as i used to due to it being very stressful and more time consuming having to measure everything out, count and track but this was super easy to make so i thought i’d post anyways ~
this is definitely not an authentic mexican rice recipe however it is inspired by the tangy flavours of arroz rojos (mexican red rice) ~ it’s quick, simple but has good flavour and tastes great beside taco style meat (vegetarian for me ofc) also similar to my yellow rice recipe ! <3

Grandmas Zucchini Casserole
Ingredients:
6 cups sliced zuchinni
1/2 cup shredded carrot
1/4 cup chopped onion
1 (8oz) box of herb stuffing mix
1/2 cup melted butter*
1 cup sour cream
1 can of condensed cream of chicken soup*
Recipe:
Preheat over to 350°
Cook zucchini, carrots and onion in salt water for (about) 5 minutes until softened. Drain well.
Combine the sour cream and soup, then fold in the cooked vegetables.
Separately from the veggie mix, mix melted butter and stuffing
Spread half of the stuffing onto bottom of casserole dish. Layer on the vegetable mixture, then top with remaining stuffing.
bake for 25-30 minutes
Notes:
original recipe calls for margarine, feel free to use either of choice
can be easily substituted with any "cream of ___" soup. To make vegetarian, use any vegetable option such as mushroom or celery.
If "cream of ___" soups aren't as accessible, you can probably substitute it with a basic roux and cream cheese/cream or halfnhalf with bullion or seasonings mixed in :)

Italian Sausage Egg Bake:

Ingredients:
8 slices white bread, cubed
1 pound Italian sausage links, casings removed, sliced
2 cups shredded sharp cheddar cheese
2 cups mozzarella cheese
9 large eggs, lightly beaten
3 cups 2% milk
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon fennel seed, crushed
Instructions:
Place bread cubes in a baked dish; set aside. In a large bowl, cook sausage over medium heat until no longer pink; drain. Spoon sausage over bread; sprinkle with cheeses.
In a large bowl, whisk the eggs, milk and seasonings; pour over casserole. Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Bake until a knife inserted in the center comes out clean, 50-55 minutes. Let stand for 5 minutes before cutting.

Simple Pantry Veggie Soup + Life Update :)
Hey guys! As you might have noticed, I haven't posted in a hot minute. I've been wrapped up in several trips/family visits, and honestly just not had time to make new, healthy recipes that I felt proud of. Also, as school starts back I will be busier. Hopefully, though, I'll have more time to experiment with meals and I'll be sure to share. When life gets hectic like the last few weeks have been for me, I turn to shortcuts that still allow me to get in all of my nutrients and veggies. Enter: canned soup + a mix of fresh and frozen vegetables. I love these kinds of recipes because you can really put anything you have on hand in them. No, it's not the healthiest option- most canned soups have high sodium contents and often the vegetables are nutritionally void. But paired with bright green broccoli and kale, plus peppers, carrots, and spices, this easy option made with freezer + pantry staples can be a good one in moderation.
Soup Ingredients: 1 can soup (I used Campbell's 'Well Yes!' brand lentil and vegetable soup), on hand vegetables (good ones to keep in your freezer: broccoli, kale, peas, onion). I used frozen broccoli, kale, and fresh carrots and red bell pepper. Plus seasonings (I used paprika, turmeric, and curry powder.
Chop veggies to desired size. Heat up soup in a small pot with any frozen vegetables. When soup is warm and veggies are mostly thawed, add any other ingredients including seasonings. Cook to desired temperature, then add to a bowl and enjoy.

desi style omelette with yellow garlic rice 🍚 🌶️ 🥚 (173c)
full omelette (2 servings) = 203c
1/2 omlette = 103c
full pot of rice = 140c
1 serving of rice = 70c

ingredients
for the omelette
1/4 large brown onion (53g) ~ 23c
1/2 large green chilli (5g) ~ 1c
1/2 tsp cumin powder ~ 5c
1/4 tsp coriander powder ~ 4c
1/4 tsp salt ~ 9c
4 sprays fry light extra virgin olive oil spray ~ 4c
for the rice
100g white basmati rice ~ 125c
1/2 tsp turmeric powder ~ 0
2 garlic cloves (5g) ~ 7c
1/4 tsp dried fenugreek leaves ~ 0
1/4 tsp salt ~ 7c
garnish
5g fresh coriander ~ 2c
method
boil a pot of water & rinse the rice a few times ~ place in the pot with the turmeric and cook for 10 minutes
in the mean time ~ chop the onion into half moon shapes & then chop them in half, dice up the chilli and garlic, set the garlic aside
in a bowl combine the eggs, coriander powder, cumin powder & salt, whisk this together
spray the fry light around the pan and spread it around, allow this to heat up on a low flame ~ add in the onion, chilli & rip up 1/2 of the fresh coriander and make sure all of this is combined into the egg
pour the omelette mix into the hot pan and allow this to cook for a few minutes until the top is set & you can hear crackling, the bottom should be browned ! turn off the heat and flip the omelette
the residual heat will cook the rest of the omelette ~ drain the rice and transfer it back to the pot, mix in the garlic, fenugreek, salt and rip up the rest of the coriander and mix in !
split the omelette into two and serve 1/2 of the rice and enjoy :D
~ yummmmm this is definitely one of my safe meals ! i’ve been cooking it almost twice a week ever since my gran made it for me…well i added in coriander and cumin when i made it and honestly it’s so much better ! it’s low cal, healthy and has protein, a little bit of fat and lots of flavour :DDD i’m not quite at the stage of using oil to fry anything but the fry light does its job ALSO another really good way to eat this is in the style of a quesadilla ! just place a roti/chapati or wholemeal tortilla on a hot pan & add 1/2 of the omelette to to one side, add some cheese, fold it over and allow it to crisp up, flip and brown the other side too ~ it’s honestly so delicious <3

Tortilla Smash Burgers with Guacamole & Pickled Onions
Let’s just call these Tortilla Smash Burgers irresistible! If you love a regular smash burger, you’ll love these even more! A crispy tortilla replaces the bun so you can really taste what’s inside! Seasoned ground beef, melty cheese and delicious toppings give you a burst of flavor when you take a bite!
A traditional tortilla smash burger (if that’s even a thing) has more of a mayonnaise based sauce and is topped with American cheese, lettuce and tomato, but I decided to switch up the toppings and use one of my favorite combinations…pickled onions and guacamole! I used a Mexican blend cheese as well. The beauty of these is that you can make them different every time and try different flavor combinations. I even had someone ask if ground turkey would be good and I think it would be delicious! The recipe is below and you must make these soon! I promise you won’t be sorry!
Other than the guacamole and pickled onions, I chopped a fresh tomato and added jalapeno slices for a little heat!
I purchased these fun taco stands from Amazon (linked below) and it made serving the smash burgers so easy and made a nice presentation! If you want to feed a crowd, make these ahead, reheat and then add the toppings. I used my counter top griddle and decided that I definitely need an outdoor black stone griddle for next time!
These burgers cook up very quickly and they disappear just as quickly so be sure to make plenty!

Creole Alfredo
Ingredients
3 tablespoons olive oil
3 cloves garlic, chopped (equals 3 tsp minced)
1 cup skinless smoked sausage, sliced
2 chicken breasts, thinly sliced into bite sized pieces
1 tablespoon creole seasoning
2 cups heavy cream
4 cups penne pasta, cooked
1 cup parmesan cheese
¼ cup fresh parsley
Instructions
1. Heat oil in a large pot over med-high heat. Cook the garlic, sausage, and chicken until garlic starts to brown and the chicken is no longer pink.
2. Sprinkle over the Creole seasoning and stir to coat the sausage and chicken.
3. Add the cream and bring to a boil.
4. Add the pasta, stirring until evenly mixed.
5. To finish, add parmesan and parsley, stirring until cheese melts and pasta is coated with a thick sauce.
