The Nerge: Hunting in the Mongol Empire
The peoples of the Mongol Empire (1206-1368 CE) were nomadic, and they relied on hunting wild game as a valuable source of protein. The Asian steppe is a desolate, windy, and often bitterly cold environment, but for those Mongols with sufficient skills at riding and simultaneously using a bow, there were wild animals to be caught to supplement their largely dairy-based diet. Over time, hunting and falconry became important cultural activities and great hunts were organised whenever there were major clan gatherings and important celebrations. These hunts involved all of the tribe mobilising across vast areas of steppe to corner game into a specific area, a technique known as the nerge. The skills and strategies used during the nerge were often repeated with great success by Mongol cavalry on the battlefield across Asia and in Eastern Europe.
Hunted Animals
The Mongols, like other nomadic peoples of the Asian steppe, relied on milk from their livestock for food and drink, making cheese, yoghurt, dried curds and fermented drinks. The animals they herded - sheep, goats, oxen, camels and yaks - were generally too precious as a regular source of wool and milk to kill for meat and so protein was acquired through hunting, essentially any wild animal that moved. Animals hunted in the medieval period included hares, deer, antelopes, wild boars, wild oxen, marmots, wolves, foxes, rabbits, wild asses, Siberian tigers, lions, and many wild birds, including swans and cranes (using snares and falconry). Meat was especially in demand when great feasts were held to celebrate tribal occasions and political events such as the election of a new khan or Mongol ruler.
A basic division of labour was that women did the cooking and men did the hunting. Meat was typically boiled and more rarely roasted and then added to soups and stews. Dried meat (si'usun) was an especially useful staple for travellers and roaming Mongol warriors. In the harsh steppe environment, nothing was wasted and even the marrow of animal bones was eaten with the leftovers then boiled in a broth to which curd or millet was added. Animal sinews were used in tools and fat was used to waterproof items like tents and saddles.
The Mongols considered eating certain parts of those wild animals which were thought to have potent spirits such as wolves and even marmots a help with certain ailments. Bear paws, for example, were thought to help increase one's resistance to cold temperatures. Such concoctions as powdered tiger bone dissolved in liquor, which is attributed all sorts of benefits for the body, is still a popular medicinal drink today in parts of East Asia.
Besides food and medicine, game animals were also a source of material for clothing. A bit of wolf or snow leopard fur trim to an ordinary robe indicated the wearer was a member of the tribal elite. Fur-lined jackets, trousers, and boots were a welcome insulator against the bitter steppe winters, too.

How do snake antivenins work? I always thought you basically used certain synthesize chemical compounds that could bind to the proteins in the venom and neutralize them, and that harvesting snake venom was just so you could study the venom and maybe make more precisely-targeted chemicals, but my friend says that's not right?
Great question - the process of making antivenin doesn't involve making any chemical compounds at all! Snake antivenin is basically just the antibodies from horse blood.
Hear me out.
Snake venom itself isn't a direct ingredient in antivenin, but it's a very crucial part of the process - not just something we need to study. Here's the process for making antivenin.
Venom is collected from snakes. We usually only get a very tiny amount of venom from any one snake, so it can take a long time and multiple snakes to get a useable amount.
An animal, most often a horses, goats, and sheep, are injected with small doses of the venom to get their bodies to produce antibodies against the venom. These animals are naturally resistent to snake venom and will not experience any negative effects from this process. Multiple doses are given to them until they produce enough usable antibodies - this can take months or even years.
Blood is collected from the donor animal.
A complicated process occurs where the antibodies are separated from the blood and are purified. These antibodies, when injected into people bitten by snakes, will prevent the proteins in a specific snake venom from binding to cells.
After purification, that's your antivenin! Antivenins are usually packaged and stored in powder form.
As you can see, making antivenin is complex. It takes a lot of snake venom and a lot of time, and antivenins only work for certain species (there are a few polyvalent antivenins that work for multiple species at once, but there's no one universal antivenin for all snake bites). Antivenin also isn't a perfect cure for snake bites, either; it prevents further damage but it can't reverse damage that's already been done, and it can have some pretty gnarly side effects. My boss at my venom lab has been bitten by venomous snakes, and he says the antivenin feels almost worse than the bite!

I did indeed make Pumpkin Pie Muffins today. Woo!
3/4 cup Brown Sugar. 1/4 cup Vegetable Oil. 2 Eggs. 1 (15 oz) can Pumpkin Puree. 2 scoops Vanilla protein Powder (I used Muscle Milk Pro Series). 2 cups Flour. 1 tsp Baking Powder. 1 tsp Baking soda. 1 tsp Coarse Salt. 2/3 cup Goat Milk. 1 tsp Vanilla Extract. 1/2 tsp Pumpkin Pie Extract. 1 tsp Cinnamon. 1 tsp Ginger. 1/2 tsp Allspice. 1/2 tsp Nutmeg. 1/4 cup Pecans.
Did the first batch without Pecans because I forgot them. Added them for the second batch. So now it's a tossup which one you get. Which I kinda like a bit, ha.
I did mess up the texture a bit somewhere, however ... I think I maybe didn't add quite enough milk, and potentially over-stirred the batter a bit. So it's a bit more cake-like than it is a proper muffin, and a bunch of the bottom sticks to the muffin liner when you pull it away. But the flavor's still really good, so it makes up for it.
Overall, I like the White Chocolate Chip Coconut Muffins better, but these are definitely scratching an itch for me right now.

porridge for champions (only)
you gotta prepare some of this the night before, so that the phytase enzyme in the buckwheat can get to work on the phytic acid in the oats to release the minerals and make them bioavailable and generally make all of this easier to digest and stuff.
combine the following in a jar or saucepan and mix it up:
oat flakes, however much you want to eat idk. you can play with the oats-to-water ratio to make more of a dry/fluffy or a wet/smooth porridge. the range is around 40-110 grams for one portion, depending on what you're going for. a tablespoon of oats is about 10g
½-2 tbsp of buckwheat -- i use raw crushed groats. less processed = richer in enzymes. crushed is a good balance between cooking time and enzyme content, i think
1-2 tbsp sunflower seeds, chia seeds or pumpkin seeds for extra nutrients, variety, texture :) (optional)
pinch of salt
water - soak em. enough to cover the oats etc + a lil extra bc they soak it up and expand. NB if you want dry/fluffy porridge then err on the side of less water, ie just enough to cover the stuff.
cover with a lid and leave at room temperature overnight.
cooking: add some fat. i love using fatty coconut milk or just coconut oil, or goats milk butter or even some kind of animal fat. i turn the heat to medium-high at first to get it all hot while mixing it, and then i leave it on low for a while. takes like 30 minutes or so
completely optional, i usually add some of these b4 i start cooking:
plain protein powder (im a fan of hemp protein personally)
maca and/or ashwagandha
matcha powder - ive really been liking this lately
collagen supplement (if u have an autoimmune condition pls look into healing gut permeability btw. even if u dont have digestive problems. ily)
carob powder my beloved. or cocoa powder. or both
or if u like savory porridge: curry powder, smoked paprika, leek, herbs, pepper
egg

"I'm not going to the zoo," Danny says, folding his arms over his chest.
"The hell you ain't," Eddie says, outraged. "You're the one who was like 'Oh, Mox, we'd love to babysit. No problem!' like a fuckin' suckup, and now you're tryna' wiggle out? Fuck that, bro."
"You never said we had to go to the zoo," Danny says stubbornly. "I don't like the zoo."
"Who doesn't like the zoo? What's wrong with you?"
"I don't like zoos!" Danny says. "They freak me out! Let's go bowling or some shit. Paintball."
"How old do you think Mox's kid is?" Eddie says. Then, "Whaddya mean zoos freak you out. Didn't Chris just have you guys do a photoshoot with snakes or some shit?"
"Yeah," Danny says, and preens. "That was cool as hell. That cobra loved me."
"Yeah yeah, whatever," Eddie says. "They got snakes at the zoo. Problem solved."
"Not just snakes," Danny says. He opens a kitchen cabinet and takes out a can of his bullshit protein powder. Eddie didn't know he was keeping a can here. Danny didn't ask or anything. Eddie watches him slam a scoop into a cup, and doesn't say shit about it.
Instead, he says, "Yeah, like lions and shit. C'mon, whatever, we'll walk around for a bit, get some ice cream, tire her out and—"
WHIRRRRRR The blender's so fuckin loud Eddie has to stop talking and wait for the kid to finish. He's pretty sure Danny keeps it going for way longer than he's gotta, but finally it shuts off and the kitchen is quiet again.
"You're gonna tell me why you're being a weird guy," Eddie says.
Danny's shoulders are tense, and he's refusing to turn and face Eddie, so what the hell. Eddie comes to the mountain. He crosses the kitchen and slides a hand up Danny's back until he reaches the top of Danny's spine. Curls his hand around Danny's neck, and squeezes for a beat, making a little collar of his fingers.
"Cheater," Danny says, but Eddie can feel his body going loose and liquid under Eddie's hand, so Eddie don't give a shit.
"Tell me," Eddie murmurs. Kisses the side of the kid's neck.
Danny's quiet for another beat, and then he says, "I don't like giraffes."
"You don't like giraffes," Eddie repeats.
"Or zebras," Danny says. He finally turns and faces Eddie, his eyebrows knitted together in a scowl. "Animals with eyes on the side."
"Eyes on the—are you fucking with me right now?"
"Man, I knew you'd be like this," Danny says. "That's why I don't tell you nothing. Now you're gonna go tell Mox and he's gonna look at me some more."
"He don't look at you, bighead," Eddie says. "Goats? You scared of a goat?"
"He does look at me. He looks at me like he thinks I should go away and you know it. And I'm not scared of nothing—"
"—Deer? Tell me you're not—"
"—I said they freak me out. You know deer eat meat?"
"So do I," Eddie says. The doorbell rings. He grins, steps forward, kisses Danny hard on his mouth. When Eddie pulls back, Danny sways forward, chasing him. "Come to the zoo," Eddie murmurs. "I'll protect you from the meat eating deer. And I'll make it worth your while."
"Man, fuck you—"
"Yeah, sure," Eddie says, and smirks. "That's on the table."
Danny chokes.

grocery list time~
literally just get these things if you want a vegan low cal life, because you can control portions and make things you enjoy eating with less calories- i made some example recipes under the list:
coffee.
SPICES. please make the investment into SPICES!
->continuation of spices, heres a basic list- cocoa powder, cinnamon, garlic powder, onion powder, chili powder, veggie bouillon powder/cubes, salt, pepper, lemon pepper, etc (you can find more online but please dont forget it)
->and simple sauces like soy sauce, basic hot sauce, mustard, white vinegar, apple cider vinegar, etc.
stevia or agave fruit sweetener. (please make sure whatever you choose you dont buy any sweetener with aspartame!!)
dairy free yogurt (i’ve heard coconut is good)
dairy free butter (earthbalance is my fav by far)
-> you could also make due with olive oil (cooking)
1st milk for normal stuff- unsweet cashew milk or unsweet creamy almond milk
->2nd milk for cooking- i suggest soymilk but creamy coconutmilk works good too
tofu. extra firm and silky work for different things (meat substitutes, egg substitute, diff. milk products substitutes) get either/both
carrots, mushrooms, chickpeas, and cauliflower all make good meat substitutes (bacon, chicken nuggets, pulled pork, etc) if cooked properly
OATS! plain oats are soooo versatile (used as flour, cereal, granola, crust, etc)
ricecakes (i use it as replacement for toast)
Pumpkin or sweet potato (in NO SYRUP canned form, very good for cooking low cal desserts or protein bars)
apple sauce (used for cooking and just yum- can be an egg substitute)
low cal noodle types- chickpea, edamame, shirataki, konjac, cauliflower, zucchini, spaghetti squash, and i think miracle noodle
literally any and all veggies and fruits- but a reminder of basics are broccoli, cucumber, onions, spinach, beets, eggplant, tomato, zucchini, potato, apple, banana, grapes, oranges, pineapple, strawberries, watermelon, mango, etc
WARNING ⚠️ be careful of sugar free drink flavor packets as they contain aspartame and other strange ingredients that ppl have complained of side effects- i would suggest to steer clear of many of the packets and go for a large unsweetened lemonade or fruit punch bin of flavoring so you can make it yourself. please check ingredients for health reasons.
-> HOWEVER, drinks like olipop, simple truth organic, waterloo, and zevia all have flavored water/sparkling water/cola drinks that are aspartame free.
I highlighted things that i think are really important
Veggie dip: yogurt, seasoning spices (ranch seasoning is goated), and a tbsp or lemon or soysauc, all mixed and best used as a “veggie chip” dip, like baked cucumber chips
Literally any cake/protein bar: oats blended, protein powder, 1/2cup apple sauce OR mashed banana, some milk, and whatever toppings you like
Granola: oats, chia seeds, cut up fruit pieces, and maple syrup or honey for binding. mix in bag, bake on baking sheet on pan.
Hot n sour soup: you can use hot n sour packet or make veggie bouillon and add hot sauce, soy sauce, and tsp chili powder. Then (to whichever mix you’ve made) add egg mixing around, and then add extra firm tofu in little cubes. Let the soup mix well and set a little while cooling.
Nicecream: freeze banana. add banana, tbsp of milk, 2 tbsp of yogurt, tbsp of sweetener, and a fruit of choice (a tbsp of protein powder also will help). blend with blender and then let it sit for a minute- add whatever you want on top
my best “toast”: seasalt ricecake, spread 1tbsp vegan cream cheese, and then spread 1.5 tbsp of organic raspberry jelly.

Drop a dish recipe, and I can share my absolutely thrilling recipe for non-specific Scandinavian fish soup.* *I'll be honest, Idk if it's even in any way Scandi, but I cooked it here, so it counts... there's no banana. Fuck bananas.

Stew and Rice

2 pounds of fresh tomatoes 2 large red onions 2 cans of tomato sauce 1-2 pounds poultry (chicken, turkey, whathaveyou) 1-2 pounds beef (or goat or lamb) 1-2 pounds of a white fish (cod or pollock) 4-6 Habanero peppers Maggi cubes Curry powder Thyme Cooking Oil (either Canola or Olive) Liquid Aminos to taste (more conventionally this would be salt, but my mother has high blood-pressure so I'm used to not using salt-to-taste anymore) Rice (typically Parboiled rice but Jasmine or Brown work well too) Optional: Broccoli Mixed Vegetables Plantains
First, after rinsing them, cut the tomatoes into large chunks. Then blend them until smooth with a combination of ½ one of the tomato sauce cans and water. This may take several rounds due to having to pour out a full blender into a pot and starting over. However, when you're on your last round of tomato chunks, make sure to blend in the Habanero peppers as well.
At this point, the tomato/tomato sauce/Habanero mixture should be in a large pot. Cover it and set it to boil on low heat. Your main goal is to boil off the excess water.
While the tomato mixture is boiling down, cut your white fish into large portions. Place them on a baking sheet (or a baking pan lined with foil) and place them into the oven at 400°. The goal here isn't to make the fish crispy but to make it so that the fish won't fall apart when introduced to the stew, so keep an eye on it.
While that's going, chop up your red onions. Set them to the side.
At this point, cut your poultry and your beef/goat/lamb into chunks. Put them into a pot with a handful of your cut onions and 4-5 crushed Maggi cubes. Let them boil, covered, on medium heat until the proteins break down and the meat is tender (around an hour or so).
Check back in on your tomato/tomato sauce/Habanero mixture. It should have boiled down a bit but not all the way. Add in the rest of your tomato sauce (the leftover can and a half) and half of your onions. Stir before covering the pot back up.
NOTE 1: Whenever you uncover the pot, be wary because the mixture is volatile and will splash quite a bit. And the splashes burn no matter how experienced you are.
NOTE 2: Occasionally scrape the bottom with a rubber spatula to prevent any of the stew from catching and burning on the bottom of the pot.
By this point, your fish should be removed from the oven (remember, the goal is to firm it up, not to crisp it up). Once your poultry and beef/goat/lamb are tender enough, you can begin the process of putting everything together.
When the tomato/tomato sauce/Habanero mixture has boiled off all of the excess water, retrieve another pot (seriously, if your stove doesn't look like the Battle of Waterloo by the time you're done, you're doing it wrong) and pour in half a cup of cooking oil. Once heated, add in the rest of your chopped onions and cook until tender.
Then, pour your stew mixture into the pot with the oil and onions to essentially 'fry' the stew mixture (you're really just trying to temper everything to the same temperature and consistency). Carefully add in your fish, poultry, and beef/goat/lamb. Stir while adding in healthy amounts of curry powder and thyme. Depending on the consistency, you may have to add more cooking oil at this point.
Allow this to cook for a few minutes while you grind up more Maggi cubes (5-6). It's preferable to use a mortar and pestle, but if you unwrap several cubes, put them in a bowl, add a tablespoon or two of warm water, and wait for a few minutes for them to crumble, that works too.
Pour that into the pot and stir. Add in a few healthy splashes of Liquid Aminos (or a few pinches of salt-to-taste) and cover. Let this cook on it's own for ten minutes before cutting the heat.
Boil yourself a pot of rice (or use a rice cooker, they are better than sex after all). When the rice is up to snuff, plate out several scoops. Uncover your stew and ladle out one or two scoops (you don't want to drown your rice in stew; keep things balanced). Plate with cooked vegetables (broccoli is my preference but mixed vegetables are another option) and fried plantains.
Grab a glass of wine, a bottle of beer, or a responsible beverage and enjoy!
NOTE: Depending on what part of Nigeria someone's from, they may have a strong appreciation for Ponmo (otherwise known as Kanda). This is basically cow skin. And I fucking HATE IT because eating it is just constant chewing and cooking it is a neverending balancing act of 'if I don't cook it long enough, it's going to be hard and if I cook it too long, it's going to turn into jelly'. I mention this because sometimes people like to add this to stew and rice as well. And the adjustment to the recipe in that case would be as follows: While your poultry and beef/goat/lamb are boiling, clean your Ponmo/Kanda (remove and stray bits of fur or unsavory bits). When your Ponmo/Kanda are clean, just before your poultry and beef/goat/lamb are done boiling, add in the Ponmo/Kanda to make sure it gets some good initial cooking time without going gummy.

I think when I get paid again, I will order some blue spirulina and smoothie cubes to go into smoothies made with goat milk, fruit, etc. That sounds yummy! I can't think of what else I want to add at the moment except maybe protein powder. Maybe someone at Natural Grocer's could help me find a good deal.

pretty good day! i'm happy with the amount of calories and protein i ate. i'm still obsessed with my ninja creami as you can see lol. the peach sorbet was made with literally just peaches as the only ingredient. turned out amazing. i bought some kiwi's to try next as soon as they ripen! the vanilla protein ice cream was made with protein powder, cashew milk, 0 calorie sweetener, and guar gum. the entire pint was 200 calories, and i had about a third of it yesterday.

I usually make protein oats—I usually use cake pop protein powder which lends itself to apple cinnamon cake blended oats very nicely but also oats with the powder topped with fruit is goated…I’m in my mango and blueberry era but CANNOT go wrong with banana and blueberry.
