Dinner last night was at a place called Velvet Taco. Some weird-ass tacos! But really good for seriously inauthentic fusion-y tacos!! From L-R it’s a Kobe bacon burger taco, a Spicy tikka chicken taco, and a Cuban pig taco! The Cuban pig was probably the tastiest and best balanced as a taco. Spitting distance from what I’d think of as “authentic”. The Spicy chicken tikka was my fave “fusion” taco! I would definitely combine tasty Indian food with taco styling anytime!! The Kobe bacon burger was most just alright. I liked the ingredients, but the form factor of a totally normal burger patty shoved in a taco just left me feeling like it could have been done better. Ground taco style beef would be better with those same ingredients. Crispy, thin smash-burgers, cut in strips to fit a taco would be even better!! From popcorn, to hominy, to tortillas and atole; I love it all. Sometimes I can’t seem to wrap my brain around the idea that this vegetable was able to sustain our people. This single vegetable is an essential part to our everyday life and it’s easy to get caught up with life and overlook this simple fact. Our people eat it and use it everyday for foods: tortillas, chips, salsas, teas, tamales and the list goes on. I grew up working on a berry farm til the age of 11, then helped my family’s landscaping business. I recall being angry at the fact that I had to spend my summers working while my friends didn’t; I had to spend my summers waking up at dawn and working under the hot sun while my friends didn’t. Despite all that, I’ve grown to appreciate the land and fruits. I learned how to cultivate it and mold it; the work that it takes to make a single berry grow and have the corn stalks soar high. I just want to insert a thank you to all the agriculture workers who work hard to put food on our plates and theirs. It’s #TacoTuesday in the Nelson household! Far be it for me to be normal. I wanted something vegetarian, but no meat substitutes, and it had to be decadent but also healthy enough. Tall order. Enter BBQ Broccoli Tempura Tacos with Garlic-Lime Tahini Sauce. Yassssss. I battered and Panko breaded broccoli and baked it, and whipped some tahini with lime juice, smoked paprika, salt, garlic powder, and water. I reduced some BBQ sauce with more garlic and lime, and brushed it onto the broccoli when it was done. Corn tortillas. Cilantro. These flavors shouldn’t work together, but they do! No heavy sides - the tacos do all the work . Tonight’s dinner: Marinated Chicken Breasts, Mexican Street Corn (courtesy of @costco and @the_tattoooed_chef) and some Green Beans sautéed in sesame oil, soy sauce and minced garlic and sprinkled with sesame seeds.
