Earlier in the summer I read an incredible non-fiction book called Dispatches From Pluto (by Richard Grant) about a guy from England who buys an old plantation house in Mississippi. 🍑 In the book, he refers repeatedly to his friend Martha Hall Foose whose is a chef from the same area in Mississippi. 🍑 Of course my interest was piqued and I had to check out her cookbooks as well:) ⭐️ A total delight, not only is Martha a wonderful chef but also a wonderful storyteller particularly when it comes to life lived in the Mississippi Delta. Tonight, I’m making one of her okra recipes - which I can tell already is going to be sensational because you soak raw okra in an apple cider vinegar and water bath for an hour before even beginning with it. 🌱 Martha’s cookbooks are not vintage (they came out in 2008 and 2011) but her stories definitely are and she shares so many in her cookbooks. If we could give a vintage award to a modern day chef, we’d certainly give one to Martha:) 🥇 Heirloom memories make the best ingredients for a wonderful meal:) Stay tuned for final photos of the okra dish. Roasted Okra Recipe 

A quick & easy roasted okra recipe, charred on a grill or hot skillet and brushed with an umami glaze & sprinkled with a Xinjiang spice mix. This recipe can be made with a BBQ or a very hot cast iron skillet pan.

South American Chili

Take a walk out of your comfort zone...  You’ve seen these vegetables on the produce department shelves but never really knew what to do with them or how to tell if you have a ripe one.  The chayote should be firm and free of spots.  I found the okra in the frozen section at my local grocer’s so no problems there.

1 med. rutabaga, peeled, diced fine

1 chayote, pitted, diced

2 carrots, diced

2 garlic cloves, smashed

1 med. onion, diced

1 med. green pepper, seeded, diced

2 - 15.5 oz. cans pinto beans with liquid

4+ c. vegetable broth

¼ head cabbage, cored, diced

1 - 12 oz. bag okra, frozen

1 - 15 oz. can tomato sauce

1 t. coriander

1 t. smokey paprika

salt and pepper to taste

Saute rutabaga until just tender then add chayote, carrot, onion, garlic, and green pepper in olive oil until tender.  In a large soup pot, pour in beans, vegetable broth, cabbage, okra and tomato sauce.  Add coriander, smokey paprika, salt and pepper - stir.  Add in sauteed vegetables. Simmer 30 - 45 min. until the cabbage is tender.
