Potato Fish Chowder Cod, potatoes, and clam juice are used to make this creamy, potato-based fish soup. On a chilly winter day, a warm bowl of chowder is comforting. 2 cloves garlic chopped, 1 cup whole milk, 3 tablespoons all-purpose flour, 4 potatoes cut into cubes, 1 pound cod fillets cut into chunks, 1 small onion chopped, 1 bay leaf, 1/2 teaspoon dried thyme, 2 bottles clam juice, salt and ground black pepper to taste, 2 tablespoons butter, 2 stalks celery chopped, 2 cups water

Trout chowder
Puree 1 sweet onion with some vegetable oil in blender until all smooth. Ok to add a spoonful or two of water if necessary, but use as little as possible.
Pour into hot 2qt saucepan and cook until translucent, stirring occasionally.
Meanwhile, cube some Yukon gold potatoes (about 3 per person you are serving)
When the onions are ready, add the potatoes and stir until the potatoes are all covered in onion puree. Add a little more oil if needed to prevent sticking.
Add some white wine (maybe a half cup?) and some Worcestershire sauce (a spoonful or two, to taste). To the blender bucket, add a little water to rinse the onions stuck in the blender and pour into the pot (just enough to about half cover the potatoes). Add a teaspoon salt, and three or four springs of fresh thyme. Bring to gentle boil, stir well, put on the lid, turn heat to low, let simmer 15 minutes. (No stirring, no peeking: keep the steam in the pot).
Then add 1 lb cubed fresh raw steelhead trout (or salmon, or similar) on top of potatoes, put lid on and steam just until fish is cooked (5 to 10 minutes). Take off the heat.
Add fresh ground black pepper, and some heavy cream (optional). Stir gently to avoid breaking up the fish, taste and adjust salt, pepper, Worcestershire to taste. Remove thyme stems. Ladle into bowls & serve with crusty bread and/or crackers.

Mussel and Scallop Chowder

A delicious and hearty Winter warmer, generous with delectable seafood, this Mussel and Scallop Chowder is the perfect dinner on a cold and misty Friday! Have a good one!
Ingredients (serves 3):
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion
1 small shallot
1 small Garden Leek
1/2 teaspoon dried dill
2 large Garden Potatoes 
1 tablespoon unsalted butter
1 cup frozen mussels
1 cup frozen scallops (without coral)
1 heaped teaspoon salt
1 teaspoon freshly cracked black pepper
1 1/2 tablespoon plain flour
1/2 cup dry white wine, such as Bourgogne Aligoté or Entre-Deux-Mers
2 cups water
1/3 cup double cream
Melt butter with olive oil in a large pot over medium-high heat.
Peel and finely chop onion.
Once the butter is just foaming, stir in the chopped onion, and cook, a couple of minutes until softened.
Peel and finely chop shallot. Stir into the pot, and cook, 1 minute more.
Thoroughly rinse Garden Leek under cold water. Thinly slice Leek, keeping just a bit of its tender green part. Stir Leek slices into the pot. Cook, another couple of minutes.
Season with dill.
Peel and dice Garden Potatoes, and stir them into the pot, coating in herbs and fat.
Add butter to the pot. Once it is just foaming, stir in frozen mussels and scallops. Season with coarse sea salt and black pepper. Cook, 3 minutes.
Sprinkle generously with flour, and give a good stir, to coat seafood and vegetables. Cook, one minute more.
Deglaze with Bourgogne Aligoté, gradually stirring it in. Then, stir in water, and bring to the boil.
Once boiling, cover with the lid, reduce heat to medium-low, and simmer, 25 to 30 minutes.
Remove the lid, and stir in double cream. Increase heat back to medium-high, and boil rapidly for a few minutes, until slightly thickened.
thinly slice reserved green part of Garden Leek, and sprinkle liberally on top.
Serve Mussel and Scallop Chowder hot, with a glass of chilled dry white wine, like a good Bourgogne Aligoté or Entre-Deux-Mers.

2023/6/26 이날도 귀찮음을 무릎쓰고 저녁 만들기. ��램차우더 수프 당첨! 냄비에 베이컨을 바싹하게 굽고, 가니쉬 용으로 베이컨은 건져둔다. 남은 기름으로 leek를 부드러워질때까지 볶아주다, 감자, 물, 마늘, 타임 넣고 감자가 익을때까지 끓인다. (난 치킨스톡으로 함) 그 다음 우유를 물과 비슷한 양으로 부은 뒤, 생선류 (이미 익혀진 냉동 홍합, 그리고 신선한 cod 생선살 넣음) 넣고 마저 익혀줬다. 트조에서 사온 냉동 고구마 프라이를 곁들여서 레스토랑에서 외식하는 것과 기분을 내보았다. 이런 건 항상 감자튀김과 먹었던 것 같아서..
두둑한 생선살을 넣었더니 레스토랑에서 먹던 것보다 더 고급스럽게 먹는 느낌. 홍합은 스킵해도 될 것 같아.. 다음에 또 해봐야짓.

Cooking like a Sailor - New England Clam Chowder
However, a warm savory steam from the kitchen served to belie the apparently cheerless prospect before us. But when that smoking chowder came in, the mystery was delightfully explained. It was made of small juicy clams, scarcely bigger than hazel nuts, mixed with pounded ship biscuit, and salted pork cut up into little flakes; the whole enriched with butter, and plentifully seasoned with pepper and salt. - Moby Dick

What Herman Meville describes here is a very famous New England dish - the clam chowder. A chowder is "a soup or stew of seafood (such as clams or fish) usually made with milk or tomatoes, salt pork, onions and other vegetables". Whilst there are different types of chowder, clam chowder is undoubtedly the best known. The definition of chowder varies depending on the part of the country, but most contain clams, potatoes, onions and some form of pork. Some use milk or another type of broth, but this type of dish was very popular on board ships where it was cooked and served in different ways. According to Savouring Gotham: A Food Lovers Companion to New York City, it is believed that New England chowder was introduced to the region by French, Nova Scotian or British settlers and became a common dish in the region around 1700. The chowder grew in popularity over the years and, according to What's Cooking America, was served in Boston as early as 1836 at Ye Olde Union Oyster House (the oldest continuously operating restaurant in the country).
But let's get to the recipe so you can cosy up at home with your copy of Moby Dick and enjoy a nice serving of clam chowder.
What do you need: 1 small onion 1 kilogram of salted pork 2 medium potatoes 1 1/2 cups of water 1 tin with about 200 grams of clams 1 bottle with about 350ml clam juice
1/8 teaspoon of pepper 1 1/2 cup of milk
To prepare:
cut the meat into pieces of about 2.5c and brown in a pan over a medium heat. Then set aside.
chop the onions and fry them in the pan, in the meantime cut the potatoes into small pieces and add them to the onions, cover with water and cook until the potatoes are soft.
add the clams and their juice and season with pepper. Cook over a medium heat until they are steaming.
Add 1 1/2 cups of milk. Heat over a medium heat for 5 minutes.
Add the meat and serve. Best eaten with ship's biscuits or fresh bread, if available.
Enjoy your meal.
