A delicious savoury roasted carrot stew with earthy vegetables and aromatic fresh herbs. Perfect for a cold rainy day, this vegetarian soup recipe is inspired by the carrot stew from Zelda Tears of the Kingdom and Breath of the Wild.
Roasted Carrot Stew
This delicious carrot stew recipe makes 5-6 servings and takes about 90 minutes to make. 
To reduce the recipe time to one hour, skip roasting the carrots and potatoes – just simmer them for 15-20 extra minutes during step seven. Enjoy!

¼ cup oil
1 – 1 ½ cups onion, diced
4 cups carrots, chopped 
4 cups potatoes, diced 
2 tbsp butter

Honey Balsamic Glazed Carrots
Need a last minute side dish for Rosh Hashanah? Carrots are traditional for the holiday and few recipes are as easy as this one.
Bonus: set them up ahead and cook just before you need them.
Best of all: they are exceedingly delicious!

Honey-Balsamic Glazed Carrots
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons Balsamic vinegar
1 pound carrots, peeled and cut into 1/2-inch slices
1 large clove garlic, finely chopped
salt and freshly ground black pepper to taste
2 tablespoons chopped fresh chives (or use the green part of scallion)
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the olive oil, honey and Balsamic vinegar in a small saucepan and bring to a boil over high heat. Cook briefly, just long enough for the honey to soften and become easy to pour. Set aside. Pace the carrots and garlic on the parchment lined cookie sheet. Pour the honey mixture on top and toss the carrots to coat all the pieces. Sprinkle with salt and pepper to taste. Roast for about 30 minutes, tossing the ingredients 2-3 times during that time, or until the carrots are lightly browned and tender. Spoon the carrots onto a serving dish and sprinkle with chives.
Makes 4 servings

Fried Spanish Mackerel, Roasted Carrots, Carrot Sticky Toffee Pudding. Peche. New Orleans, Louisiana. 1.19.2023.
NOTE TO SELF: The mackerel had a tempura batter on it, so the fact that it was "fried" didn't bother me as much as it would have with a cornmeal batter. Also the fish had been de-boned, eliminating my other hangup on fried fish. It was a lot of food, and it was absolutely delicious. The fish, the herb salad stuffed into it, the sweet chili sauce were stupid good. And the carrots with harrissa may be the best carrots I've ever had. The carrot toffee "pudding" was not pudding. It was carrot cake with cream cheese ice cream. Delicious, but the weakest part of the meal. This will be a top ten meal of the year.
